White Soda Bread450 grams (1 pound) pla<strong>in</strong> white flour1 level teaspoon bicarbonate of soda400 mls (14 fluid ounces) buttermilkSaltYou will also need:A large bak<strong>in</strong>g sheet lightly dusted with flour.1. Preheat oven to gas mark 8 or 450F or 230C.2. Sieve <strong>the</strong> flour, <strong>the</strong> bicarbonate of soda and 1level teaspoon of salt <strong>in</strong>to a large bowl.3. Make a well <strong>in</strong> <strong>the</strong> centre and pour <strong>in</strong> almostall <strong>the</strong> buttermilk.4. Us<strong>in</strong>g just one hand, mix toge<strong>the</strong>r <strong>in</strong> acircular motion.5. The dough should be a bit soft so add morebuttermilk if needed.6. Put <strong>the</strong> dough on to a lightly floured boardand wash and dry hands.7. Knead <strong>the</strong> dough very quickly.8. Turn <strong>the</strong> dough over and pat it <strong>in</strong>to a roundshape.9. Cut a cross almost all <strong>the</strong> way through <strong>the</strong>dough.10. Stab each corner of <strong>the</strong> dough with <strong>the</strong> po<strong>in</strong>tof a knife to let <strong>the</strong> fairies out.11. Put <strong>the</strong> dough on to <strong>the</strong> lightly dusted bak<strong>in</strong>gsheet.12. Cut through <strong>the</strong> cross aga<strong>in</strong>.13. Bake on <strong>the</strong> middle shelf of <strong>the</strong> oven for 15m<strong>in</strong>utes.14. Turn <strong>the</strong> heat down to gas mark 6 or 400F or200C.15. Bake for ano<strong>the</strong>r 25 m<strong>in</strong>utes.16. When <strong>the</strong> loaf is tapped and it sounds hollow<strong>the</strong>n it is f<strong>in</strong>ished.17. Serve with <strong>Irish</strong> butter.

Soda Farls350 grams (12 ounces) pla<strong>in</strong> flour1 teaspoon of salt1 heaped teaspoon of bak<strong>in</strong>g soda300 mls (10 ounces) buttermilkYou will also need:A floured bak<strong>in</strong>g sheet.1. Set <strong>the</strong> oven to gas mark 5 or375F or 190C.2. Sieve <strong>the</strong> flour, salt and bak<strong>in</strong>gsoda <strong>in</strong> to a large mix<strong>in</strong>g bowl.3. Make a well <strong>in</strong> <strong>the</strong> centre andpour <strong>in</strong> all <strong>the</strong> milk.4. Mix quickly with a knife until itbecomes dough.5. Put <strong>the</strong> dough on a floured worksurface.6. Knead lightly until it becomes acircle.7. Roll or pat with a roll<strong>in</strong>g p<strong>in</strong>.8. Cut <strong>in</strong>to 4 farls.9. Put <strong>the</strong> farls onto <strong>the</strong> flouredbak<strong>in</strong>g sheet.10. Bake for 40-45 m<strong>in</strong>utes.11. The farls are ready when <strong>the</strong>y aregolden brown.


<strong>Irish</strong> Whiskey Cake1/2 a glass of <strong>Irish</strong> Whiskey2/3 of a glass of sherry6 squares of sponge cake1/2 a p<strong>in</strong>t of whipped creamAlmonds1/2 a cup of jamcustardYou will also need:6 glass dishes.1. Slice <strong>the</strong> squares of sponge cake.2. Spread <strong>the</strong> jam on <strong>the</strong> squares ofsponge cake and sandwich toge<strong>the</strong>r.3. Put <strong>the</strong> sponge cakes <strong>in</strong> glass dishes.4. Pour <strong>the</strong> whiskey and sherry over<strong>the</strong> sponge cakes.5. Use extra whiskey and sherryaccord<strong>in</strong>g to taste.6. Cover with custard.Decorate with whipped cream and almonds.


Pratie Apple8 ounces of potatoes4 ounces of flour3 cook<strong>in</strong>g applesSugarSaltButterHoney1/2 teaspoon of bak<strong>in</strong>g powderYou will also need:A heavy fry<strong>in</strong>g pan.1. Boil and mash <strong>the</strong> potatoes.2. Add <strong>the</strong> flour and salt to <strong>the</strong> potatoes.3. Stir with hands or spoon to make adough4. Roll <strong>in</strong>to a circle.5. Cut <strong>the</strong> circle <strong>in</strong>to four quarters.6. Slice <strong>the</strong> apples.7. Put <strong>the</strong> apples on two of <strong>the</strong> quarters.8. Cover <strong>the</strong> apples with <strong>the</strong> o<strong>the</strong>r twoquarters.9. Seal down <strong>the</strong> edges of <strong>the</strong> dough.10. Cook <strong>in</strong> a heavy fry<strong>in</strong>g pan on a lowheat for 20 m<strong>in</strong>utes on each side.11. Cut a hole <strong>in</strong> <strong>the</strong> top of each pratie.12. Put a large spoon of sugar and honey<strong>in</strong> each hole.13. Put a little butter <strong>in</strong> each hole.14. When <strong>the</strong> sugar, honey and butterhave melted <strong>the</strong>n serve hot with <strong>Irish</strong>cream.


Apple Cake8 ounces of flour3 large cook<strong>in</strong>g apples3 ounces margar<strong>in</strong>e or butter1 beaten egg2 ounces of brown sugar1 teaspoon of bak<strong>in</strong>g powderYou will also need:A cake t<strong>in</strong>.1. Turn <strong>the</strong> oven to gas mark 6 or 400For 200C.2. Sieve <strong>the</strong> flour and bak<strong>in</strong>g powdertoge<strong>the</strong>r.3. Rub <strong>in</strong> <strong>the</strong> margar<strong>in</strong>e or butter.4. Add <strong>the</strong> sugar, <strong>the</strong> beaten egg and<strong>the</strong> chopped apples.5. Mix everyth<strong>in</strong>g toge<strong>the</strong>r.6. Add a little bit of milk if <strong>the</strong> mixtureis too dry.7. Spr<strong>in</strong>kle with sugar8. Bake <strong>in</strong> <strong>the</strong> middle of <strong>the</strong> oven for30 m<strong>in</strong>utes.


Waterford Cake1 pound of flour8 ounces of butter8 ounces of brown sugar8 ounces of sultanas8 ounces of rais<strong>in</strong>s8 ounces of currents4 ounces of mixed peel1 teaspoon of mixed spices4 eggs1 teaspoon of bak<strong>in</strong>g soda1/2 a teaspoon of saltA little bit of Gu<strong>in</strong>nessYou will also need:A greased cake t<strong>in</strong> l<strong>in</strong>ed with greased paper.1. Preheat <strong>the</strong> oven to gas mark 4 or 350F or 180C.2. Cream <strong>the</strong> butter and sugar toge<strong>the</strong>r.3. Add <strong>the</strong> eggs one at a time with a teaspoon offlour.4. Beat <strong>the</strong> mixture between each egg.5. Sift <strong>the</strong> flour with <strong>the</strong> salt, bak<strong>in</strong>g soda and <strong>the</strong>mixed spices.6. Fold <strong>in</strong>to <strong>the</strong> egg mixture.7. Moisten with a little Gu<strong>in</strong>ness.8. Stir <strong>in</strong> <strong>the</strong> fruit and mixed peel.9. Put <strong>the</strong> mixture <strong>in</strong> <strong>the</strong> greased and l<strong>in</strong>ed t<strong>in</strong>.10. Bake <strong>in</strong> <strong>the</strong> middle of <strong>the</strong> oven for 2 hours.11. Turn <strong>the</strong> oven down to gas mark 2 or 300F or150C.12. Bake for ano<strong>the</strong>r hour.


Buttermilk Scones225 grams (8 ounces) of pla<strong>in</strong> flour1 teaspoon of bicarbonate of soda1 teaspoon of cream of tartarP<strong>in</strong>ch of salt25 grams (1 ounce) of butter or block margar<strong>in</strong>e200 mls (7 fluid ounces) of buttermilk1 beaten eggYou will also need:A lightly floured bak<strong>in</strong>g sheet.1. Set <strong>the</strong> oven to gas mark 7 or 425F or 220C.2. Sieve <strong>the</strong> flour, bak<strong>in</strong>g soda and cream oftartar <strong>in</strong>to a large bowl.3. Stir <strong>in</strong> <strong>the</strong> salt.4. Cut and rub <strong>in</strong> <strong>the</strong> butter of margar<strong>in</strong>e until itlooks like breadcrumbs.5. Make a well <strong>in</strong> <strong>the</strong> centre of <strong>the</strong> flour.6. Pour <strong>in</strong> almost all of <strong>the</strong> buttermilk.7. Use a knife to stir quickly until it becomesdough.8. Put <strong>the</strong> dough onto a lightly floured worksurface.9. Roll out <strong>in</strong>to a circle.10. Cut out scone shapes.11. Put <strong>the</strong> scones on <strong>the</strong> lightly floured bak<strong>in</strong>gsheet.12. Brush with beaten egg or milk13. Bake for 15-20 m<strong>in</strong>utes.14. The scones are ready when <strong>the</strong>y are a lightgolden brown colour.15. Serve warm with <strong>Irish</strong> butter and jam.

<strong>Irish</strong> Coffee60 mls of <strong>Irish</strong> Whiskey1 teaspoon of brown sugarFreshly made strong black coffeeDouble cream1. Heat <strong>the</strong> coffee, whiskey and sugarbut do not boil.2. Pour coffee <strong>in</strong>to a glass.Slowly pour a layer of cream over <strong>the</strong> back ofa teaspoon onto <strong>the</strong> top of <strong>the</strong> coffee so that itfloats on top.Black Rock <strong>Irish</strong> Whiskey Punch1 measure of <strong>Irish</strong> Whiskey1 1/2 teaspoons of brown sugarClovesSliced lemon1. Heat a glass.2. Put <strong>the</strong> brown sugar <strong>in</strong> <strong>the</strong> glass.3. Pour over enough boil<strong>in</strong>g water tocover <strong>the</strong> sugar.4. Add <strong>the</strong> whiskey, cloves and slicedlemon.5. Top up with more boil<strong>in</strong>g water.
