Find her Kitchen Witch blog at: www.localfoodlover.blogspot.comWe live on the fringe of thewoods, a mile's walk fromthe Bay of Fundy on the NorthMountain. Christmas here meansa big family trip to the woods tochoose a sparse-but-beautifultree. We're not going to miss theopportunity to build a big roaringfire to sit around. And if you givean Osburn a fire to sit around,she's going to want a snack. Or afull-on meal.For this occasion, my Mom wasbringing baked beans. I wantedto bake brown bread, but withMolasses and Ale Bread1 C. Whole Wheat Flour1 C. All Purpose Flour1/2 C. Oatmeal2 T. Baking Powder1/2 t. Baking Soda1/2 t. Salt3 T. Brown Sugar1/3 C. Molasses1 341 ml. bottle Beeronly an hour before the slatedtrip, that was impossible.I flipped through a few cookbooksand adapted a beer bread recipe tosuit. It's a quick bread, so it onlytakes about 50 minutes from startto finish. I added molasses andused a bottle of St-Ambroise ApricotWheat Ale. It baked up to bea very respectable stand in, withthe added bonus of fruity, yeastyale-iciousness. In this season ofsoups and stews, a loaf of thiswill fit in very nicely at your nextgathering or potluck.Locally, I think this bread wouldbe equally wonderful made withPropeller's Honey Wheat or PaleAle, or anything you like (maybenot stout, but you never know!)One more note: the bread disappearedbefore I could take a picture.Had it lasted, I would haveeaten it toasted the next day witha big piece of cheese. It will keepfor a few days if given the chance.Hoppy New Year!!Preheat oven to 350°. Butter a loaf pan. In a large bowl, whisk the flours, oats, baking powder, baking soda,brown sugar and salt. Add the molasses and beer and stir until just combined. Scrape into the loaf pan andbake for 40-45 minutes, until a toothpick inserted into the bread comes out clean.
