The Vinoteque <strong>stemglasses</strong> are scientifi ctasting instruments. These perfectinstruments are the result <strong>of</strong> researchcarried out on senses and perception. To designand create them, we did not make use only <strong>of</strong>the existing knowledge on wine tasting: all the<strong>stemglasses</strong> underwent strict <strong>sensory</strong> analysistests carried out at the Centro Studi Assaggiatori,in order to compare their performances with thetechnical stemware that is used internationally forwine tasting (i.e. the ISO stemglass).According to the statistics provided by thishuge database it is evident that in Vinoteque<strong>stemglasses</strong>, each wine expresses itself in asignifi cantly different way compared to commonglasses. Differences are perceived distinctivelyduring all the phases <strong>of</strong> the tasting process: visual,olfactory, gustatory-tactile and retro-olfactoryphases.ACCADEMIA 5


During the visual examination, the infl uence <strong>of</strong> the material on the wine colour is almostinexistent: the shade is true to life and with no purple shadows. The colour is extremelyimportant; the most recent <strong>sensory</strong> studies prove that consumers assess a productusing mainly their sight and the colour is able to infl uence their olfactory and gustatory perception.Furthermore, this phase anticipates a wealth <strong>of</strong> information on the health <strong>of</strong> the wine, its degree <strong>of</strong>evolution, its structure and typology.The following olfactory examination is crucial as the true character <strong>of</strong> a wine; its richness and itselegance are specifi cally expressed in this phase. As soon as the stemglass is brought to the nosethe fi rst pronounced impression <strong>of</strong> the wine is formed - the olfactory sensations have an immediateimpact on the Taster’s emotions, even at a subliminal level. It is at this time that the brain decideswhether to drink or reject the wine, the quantity <strong>of</strong> wine to drink or whether to choose it again in thefuture.At this stage, the role <strong>of</strong> the stemglass is not only to enhance the smell appropriately; thanks to itsshape and its dimensions, each Vinoteque stemglass is conceived to enhance some aromas andto keep others subdued, according to the type <strong>of</strong> wine. The aim is to maximise the pleasure andfacilitate the analysis, by immediately identifying possible defects.Finally, when a sip <strong>of</strong> wine is taken, taste, tact and smell come into play. The gustatory sensations<strong>of</strong> wine (acid, bitter, sweet) are combined with tactile sensations (body, alcoholic heat, astringency)and the aromas, reaching the nasal sensors through the air that passes through the back <strong>of</strong> themouth. The pleasantness <strong>of</strong> a wine strictly depends on the balance <strong>of</strong> all these sensations - thestemglass plays a crucial role in measuring out the fl ow into the mouth in a specifi c way for eachwine and distillate, enhancing structure and smoothness where necessary, and by limiting theperception <strong>of</strong> acid or alcoholic heat where prominent.6


In order to taste these sensations the choice <strong>of</strong> the stemglass according to the specifi c wine is <strong>of</strong>utmost importance stemglass. Often, even wines <strong>of</strong> the same varietal present different <strong>sensory</strong><strong>characteristics</strong> which can be enhanced only with a specifi c stemglass. This is why winemakers orrestaurant owners have to demonstrate their competence not only by taking care <strong>of</strong> the products<strong>of</strong>fered, but also by providing the customers with the right quality-assessing instrument for theirproduct so that it can be enjoy it at its best. Like a work <strong>of</strong> art.Each Vinoteque stemglass was studied for a category <strong>of</strong> wine with specifi c <strong>sensory</strong><strong>characteristics</strong>.These results have been achieved thanks to in-depth studies on all the <strong>characteristics</strong> <strong>of</strong> the<strong>stemglasses</strong> (materials, size, and geometrical features)in accordance with the <strong>sensory</strong> outcome: theperception <strong>of</strong> aromas and the fl avours <strong>of</strong> wines, the physical conditions that favour this perception,without ignoring the <strong>sensory</strong> and emotional impact that the stemglass shape has on Tasters.The two methods employed for the <strong>sensory</strong> tests on the Vinoteque <strong>stemglasses</strong> and which arecertifi ed by several Italian universities are :1. The Advanced Big Sensory Test ® , a detailed <strong>sensory</strong> analysis test based on the Aroma Chart(“Albero degli Aromi”) <strong>of</strong> the corresponding category <strong>of</strong> wine or distillate, which measures up t<strong>of</strong>i fty different visual, gustatory-tactile, and olfactory parameters.2. The Analogical-Affective Big Sensory Test ® assesses the esthetic, emotional, and functionalimpact as well as the physical interaction between the Tasters and the tasting instrument bymeasuring fi fty parameters.Each test is carried out blindly, by a group <strong>of</strong> tasters who analysed all the samples individuallydescribing their perceptions in writing. The gathered data is processed statistically in order toobtain synthesis parameters and check parameters, thus guaranteeing reliability, credibility andcomprehensiveness <strong>of</strong> the obtained results(as reported in each <strong>of</strong> the Vinoteque stemglassspecifi cations).ACCADEMIA 7

The holding <strong>of</strong> the stemglass during the wine tasting is facilitated by its physical balance. The size<strong>of</strong> the head space was designed to deliver the best combination <strong>of</strong> the aromatic molecules that thewine can express at service temperature.The different shapes <strong>of</strong> the body:• facilitate the swirling <strong>of</strong> the wine in the stemglass;• improve the balance <strong>of</strong> the different aromas in the head space;• convey the aromatic molecules to the nose (with the right concentration and balance);• guide the wine towards specifi c areas <strong>of</strong> the tongue ensuring the appropriate amount <strong>of</strong>\wine at every sip;• guarantee the perfect contact between the lower lip and the rim <strong>of</strong> the bowl, avoidingannoying drops on the mouth edge.Vinoteque <strong>stemglasses</strong> were designed to develop aromas that represent the wine personality withintensity and persistence thus suggesting high quality and pleasantness.Obviously, in order to achieve this, all the temperatures recommended for each wine as well as theright service quantity should be respected (white wines: 7 - 10 cl; red wines 10 – 16 cl).The sizes and shapes <strong>of</strong> each bowl were designed according to the typical aromas <strong>of</strong> differentwines, considering that the lighter molecules tend to have a higher concentration in the upper part,medium weight molecules in the mid-part and the heavier ones in the head space closer to theliquid surface.The aromas distribution in the head space depends on the shape and the size <strong>of</strong> the volumecontained between the liquid surface, the stemglass walls and mouth. This is why the same winepresents a different olfactory pr<strong>of</strong>i le when poured into different <strong>stemglasses</strong>. The correct volumeand shape <strong>of</strong> the head space <strong>of</strong> the Vinoteque <strong>stemglasses</strong> tunes the distribution <strong>of</strong> the differentaromatic molecules allowing the Taster to fully explore and enjoy the different aromatic notes duringany olfactory assessment.Figure 2: Aromatic distribution <strong>of</strong> Vinoteque Super 800.10

The development <strong>of</strong> legs and tears is strictly linked to the surfaceconditions <strong>of</strong> the bowl <strong>of</strong> the stemglass, namely to its wettability. Lastly, one is able to appreciatethe perlage (chain <strong>of</strong> fi ne bubbles): when this is fi ne and persistent it denotes a high quality levelin sparkling wines.12

Founded in 1990, eachyear the Centre carries out thousands <strong>of</strong> testson consumers in order to assess the perceivedquality <strong>of</strong> products and services. Nowadays,it owns one <strong>of</strong> the biggest archives in Italywhich refl ects the changes in taste and trends.The Centro Studi Assaggiatori participatesin research with many Italian and foreignUniversities. Tastersfi nd it elegant and modern, pleasant and with an obvious charming design which makes it suitablefor both experienced consumers and young, demanding consumers. When handled, each part <strong>of</strong>the stemglass works to provide a relevant experience: its body reveals its preference for aged andprominent red wines. It is defi nitely suitable for sophisticated restaurants and chic wine bars.The Super 800 stemglass according to the <strong>sensory</strong> analysisThe Super 800 stemglass performs better than the ISO stemglass with fl oral and fruity wines; it isextremely adept at identifying defects.With the Barbera d’Asti it emphasises the fl oral notes <strong>of</strong> rose, violet, honey and beeswax. It is more elegant, ample and comfortable when compared to the ISOstemglass, although it maintains its prominence and sobriety. One <strong>of</strong> its strengths is the thinnes<strong>of</strong> the stem that confers uniqueness and good taste. It is most suitable for aged red wines andprominent wines and is highly regarded for special occasions in both wine bars and restaurants.The Riserva stemglass according to the <strong>sensory</strong> analysisThe Riserva stemglass <strong>of</strong>fers the taster a different experience in comparison with the ISO stemglass,including its visual appearance: the greater transparency <strong>of</strong> this special stemglass reveals a liveliercolour <strong>of</strong> orange shades in the wine. In the olfactory phase, the differences identifi ed derive fromon the specifi c aspects <strong>of</strong> the different wines.In the Valcalepio Riserva the typical notes <strong>of</strong> the red and black fruit are identifi able and Morellocherry especially is even more evident ranging from jam to the sour black cherry in alcohol. It feelscomfortable when held in the hand and conveys a feeling <strong>of</strong> importance. It is considered suitable foryoung wines; ideal for restaurants and wine bars.Fresco according to the <strong>sensory</strong> analysisThe Fresco stemglass is unique in its ability to enhance specifi c notes <strong>of</strong> white wines, as well as theirqualities, and defects, if present.With the Chardonnay, the Fresco stemglass, when compared to the ISO stemglass, emphasisessome <strong>of</strong> the most attractive notes, from the fl oral aromas, specifi c notes such as jasmine, wisteria andacacia blossom as well as various other fl owers. It is ideal for special occasions, especially in elegant and special settings such as restaurantsand wine bars.The Perlage stemglass according to the <strong>sensory</strong> analysisThe particular geometrical shape <strong>of</strong> this stemglass, in terms <strong>of</strong> appearance, <strong>of</strong>fers a distinctly differentperformance in comparison with the ISO stemglass: the subtlety <strong>of</strong> the perlage is especially emphasisedin Champagne. The direct manner in which it conveys the liquid to the mouth enhances freshness andstructure according to the initial <strong>characteristics</strong>. This effect must be seen in relation to the notion <strong>of</strong>synaesthesia and to the ability to emphasise certain background aromas which are not detected withthe ISO stemglass. As a matter <strong>of</strong> fact, in the Prosecco, as well as in the Trento Doc and Champagne,the Perlage stemglass highlights certain vegetal notes such as cut grass and aromatic herbs thatpsychologically increase the perception <strong>of</strong> freshness.
