There were 275dairies in Dutchess County in the 1970s andnow there are just 26. Hudson Valley Freshfarms are currently preserving 5,000 acres ofopen land, significantly contributing to agriculturesustainability.At first, the co-op sold 400 pounds of milka week in six stores in the Hudson Valley.Now, it sells 40,000 pounds a week in marketsthat have extended to <strong>New</strong> <strong>York</strong> Cityand Long Island.“It’s growing every month,” Simon saidabout the demand for the milk, which he wantsto “brand, like the Napa Valley does for wine.”Hudson Valley Fresh is served at the <strong>New</strong><strong>York</strong> governor’s executive mansion, a practicestarted by former Gov. Eliot Spitzer andcontinued by David Paterson. <strong>New</strong> <strong>York</strong>University, Bard College, Vassar College,Millbrook School, The Dutchess DaySchool, and the Culinary Institute ofAmerica also serve the cooperative’s milk.Two years ago, Hudson Valley Fresh startedselling in Whole Food stores in <strong>New</strong> <strong>York</strong>City, which Simon said came about becausethe chain’s vice president drove past his farmand saw a Hudson Valley Fresh truck andrecalled tasting the milk.“They came to us,” he said, noting thatthe milk’s reputation has grown so muchthat there are food stores and restaurants,including the upscale Eli’s Manhattan,whose owner, Eil Zabar, will not serve milkfrom any other dairy.Having the support of the retail owners,Simon said, is key. It is part of HudsonValley Fresh’s whole marketing philosophy;once consumers are convinced to try themilk, they will find it tastes so good thatthey’ll become loyal customers and be willingto pay a little more for it than for conventionalmilk. That’s why member farmsregularly participate in tastings in <strong>New</strong> <strong>York</strong>City and other places in the region wherethe milk is marketed.“You have to get the farmer out to meetHUDSON VALLEY FRESH DAIRY COOPERATIVE producers strive for the highest qualitymilk and their customers are willing to pay a premium price for it.the public,” he said. “You have to meet theconsumer, face-to-face.”Simon’s philosophy, and his willingness tocommit his own money to get the cooperativegoing, has been greatly responsible forthe success of Hudson Valley Fresh in a timewhen many dairy farmers are struggling tostay in business. He also lobbied the industrialdevelopment agency in DutchessCounty to give the cooperative grant fundsfor marketing initiatives to build trust andconfidence in the milk.Davenport agrees that the promotionalcomponent is important. “The consumerhas to be convinced to try it, because if theydo, they’ll come back for more,” he said.
