SWEET HISTORY: <strong>Dorchester</strong> <strong>and</strong> <strong>the</strong> <strong>Chocolate</strong> Factorywww.bostonhistory.org/bakerschocolate/He concluded that “although a great saving to <strong>the</strong> manufacturer might be made, I believeif this preparation were left off it would be a serious detriment to <strong>the</strong> good keepingqualities of <strong>the</strong> goods.” 88Tracking <strong>the</strong> consistency <strong>and</strong> quality of <strong>the</strong> chocolate-making process had been part ofBaker’s procedures for decades, but in 1934 <strong>the</strong> company officially established a qualitycontrol laboratory. This lab developed a series of codes to mark products so <strong>the</strong>y could bequickly identified in case of a customer inquiry. 89Baker’s Breakfast Cocoa gained popularity not only because of its purported healthybenefits, but also <strong>the</strong> purity of its ingredients. The easy-to-prepare Breakfast Cocoacompeted against <strong>the</strong> Dutch Cocoa o<strong>the</strong>r companies were advertising. The process ofcreating Dutch Cocoa involves <strong>the</strong> use of chemicals that help make <strong>the</strong> chocolate milder,<strong>and</strong> much quicker to make. In order to compete in <strong>the</strong> market, Baker’s condemned <strong>the</strong>dutching process <strong>and</strong> promoted <strong>the</strong> purity of <strong>the</strong>ir chocolate to separate Baker’s from <strong>the</strong>competition. Magazine advertisements stated that “for more than one hundred years thisestablishment has made its cocoa preparations absolutely pure, using no patent process,alkalies, or dyes.” By <strong>the</strong> 1880s <strong>the</strong>y also used chemical analysis <strong>and</strong> chemist’s testimonialsin addition to doctor’s endorsements to help prove <strong>the</strong>ir claims. 90LA BELLE CHOCOLATIEREThe familiar image of La Belle Chocolatière (<strong>the</strong> beautiful chocolate girl) has gracedBaker’s product packaging <strong>and</strong> advertisements for nearly one hundred <strong>and</strong> thirty years.The legend of Baker’s well-known trademark – La Belle, as she is affectionately known –began in <strong>the</strong> 1870s.
