Boomerang TheoryA customer approached me and asked, “What’s with theboomerangs?”While shopping here, you may have noticed that many associateshave a golden boomerang on their hat, name badge,or collar. Everyone receives it at orientation, and some havebeen wearing theirs for more than 25 years!Why are they wearing a boomerang? Well, this idea camefrom a Grocer friend in Dublin, Ireland—Feargal Quinn, aleader in customer service and a really cool guy. It was a wonderful place to bringthe family and participate in organized activities such asswimming or boating. It was a place where families madelasting memories and had relaxing vacations. Feargal’sfather always taught him that the most important thing wasto do whatever it takes to make your guests happy so theywill want to come back to ”holiday camp” the next year.Learning from his experiences at the “holiday camp”, Feargaloften said “Operating a business should be like throwinga boomerang – If you do it right, the boomerang will comeback.” Thus, the boomerang theory. Tomato & Avocado Saladwith Buttermilk DressingSERVES 4 | PREP 20 MinS¼ cup buttermilk3 Tbsp mayonnaise2 Tbsp flat-leaf parsley, minced1 Tbsp shallots, minced1 Tbsp fresh thyme, minced1 tsp cider vinegar½ tsp black pepper1/8 tsp sea salt1 garlic clove, minced2 yellow tomatoes, cut into ½-inch slices2 red tomatoes, cut into ½-inch slices½ medium cucumber, cut into ½-inch slices1 cup cherry tomatoes, halved1 small red onion, cut into ½-inch slices, grilled2 ears of grilled yellow corn, shucked from cob1 ripe avocado, peeled and slicedCombine the first 9 ingredients in a small bowl; stir witha whisk. Chill buttermilk mixture until ready to serve.Arrange 2 slices each of yellow tomato, red tomato,and cucumber on 4 plates. Top each serving with ½cup cherry tomatoes. Divide corn, onion, and avocadoevenly among plates. <strong>New</strong>! <strong>Ancient</strong> <strong>Grain</strong> <strong>Bread</strong>Lately, I have heard from my friends and customers alikethat they are “trying to not eat bread.” This is one that isgoing to change your mind. Along with all of the hype surroundingeliminating grain from the diet (which health careprofessionals strongly discourage), there are two emergingfood trends coming on strong, those being chia seeds andquinoa. “Chia seeds?” you ask. You may be laughing rightnow thinking of the “cha-cha-cha-chia” commercials withplants growing out of pots that resemble green hair. Yeah,THAT chia. I first heard about chia seeds from one of myco-workers, Sandy. She is always eating healthy, and oneday alongside her salad I saw a cup full of seeds soaking inwater. I curiously questioned her about the contents, andshe filled me in on why these little seeds are so good forus. Chia is a seed that comes from a desert plant that datesback to the Mayan and Aztec times. The word itself means“strength” in Mayan, and the grain is high in omega-3 fattyacids, protein, fiber, antioxidants, and calcium. They canalso be absorbed by the body without being ground (flaxseedsmust be ground to absorb these nutrients), and havea nice, mild, nutty flavor. They add texture to foods such asyogurt, vegetables, rice dishes, or in our case, bread.The other component to our new bread is quinoa. Pronounced(kēnwä), it is believed to have begun growing inSouth America in the Andes region. One of the key foodsof the Inca Empire, quinoa dates back to 1200 A.D.. Thescientific name for quinoa is Chenopodium quinoa and it’sreferred to by many researchers as a “pseudocereal”, aterm used to describe foods that are not grasses but canstill be ground into flour. Quinoa is high in protein, omega-3fatty acids, and has shown in some studies to haveanti-inflammatory benefits.If I haven’t convinced you yet, it gets better. We mix theseancient grains into our sprouted grain bread. Sproutedgrains are made from wheat berries that are first sproutedinto a plant which reduces the starchy portion of the grain,making the body metabolize the grain more like a plantthan a starch.
