Themoisture content isapproximately 6% beforedrying and 3% after. It isimportant that the dryingcapacity is higher than theshelling capacity in case ofperiods of heavy rainfallbecause the drying operationwill be lengthened since thekernels will absorb themoisture very quickly. Sundrying, where the kernels arespread out in thin layers understrong sunshine is possible,however artificial dryingbecomes necessary formedium or larger-scaleproducers. Drying usually takes six hours, ata temperature of around 70°C. A uniformtemperature throughout the drier is essentialto avoid under drying or scorching. Figure 5and 6 shows a Practical Action tray dryer,details of which are available on request.It is in the dried condition the kernels aremost vulnerable, being both brittle andsusceptible to insect infestation. Therefore,at this stage, they must be handled with careand moved to the next stage of peeling asquickly as possible.PeelingAt this stage, the testa is loosely attached tothe kernel, although a small amount ofkernels may have already lost the testaduring the previous operations.
