You may notice there has been a slight change to our esteemed <strong>Home</strong> <strong>Couture</strong><br />
logo. However, for all the <strong>Home</strong> <strong>Couture</strong> purists out there, please don’t panic, as<br />
it is a small change, in the shape of a + located to the left of <strong>Couture</strong>.<br />
The + is certainly symbolic: as the new logo reflects the editorial change in<br />
<strong>Home</strong> <strong>Couture</strong>. While everything that our readers love in <strong>Home</strong> <strong>Couture</strong> will<br />
remain the same, we have simply added to the editorial content… hence the<br />
+. Yes, the new <strong>Home</strong> + <strong>Couture</strong> has broken down the barrier of design – by<br />
combining editorial on fashion in addition to interiors.<br />
Our flagship section “Stylish Living” now also includes expert opinions on current<br />
trends in the world of fashion as well as the world of interiors. This issue, we<br />
have focused on the vintage side of both fashion and interior design – mixing<br />
vintage fashion with shabby chic interiors; conveying this feeling of inter-dependence<br />
between both facets of the design world.<br />
“Seasonal Living” now contains seasonal trends in fashion as well as interior<br />
design – our journalists are there to witness both industries blossoming with<br />
new and exciting products throughout the year.<br />
Our “Gourmet Corner” has expanded significantly. The kitchen has always<br />
remained the showpiece of our homes, and we have decided to explore other<br />
culinary paths within this section. We now have a wine column, an “In Vogue”<br />
food section and a recipe of the month, in this instance from a Michelin-star chef<br />
based on the island, as well as regular interviews with world-renowned chefs<br />
and in-depth local restaurant reviews.<br />
Now, to the online additions… Not only is our much-anticipated online store set<br />
to open in September this year but we also have the launch of our interactive<br />
E-Zine, which will go live at the end of July. The E-Zine will feature design news<br />
and trends, product reviews and news on luxury property, both locally and internationally,<br />
the only difference being that everything will be interactive – allowing<br />
you to read “Boutique Chic” then book the hotel room, or browse “In Vogue”<br />
then purchase the product there and then from your tablet or PC.<br />
<strong>Home</strong> + <strong>Couture</strong> represents all of our efforts to give you, the reader, more. This<br />
issue marks the first of many benefits that we will continue to provide to our<br />
valued readers. Over the next few months we will be expanding to new <strong>area</strong>s<br />
and developing our digital platforms to ensure we are ahead of the game in the<br />
publishing industry.<br />
So we now invite you take this new + to mean exactly what it was created to<br />

London design office Doshi Levien and designer<br />
Sebastian Herkner both have pieces in<br />
production for Italian furniture manufacturer<br />
Moroso. Doshi Levien’s latest offering is the<br />
Chandigarh sofa, paying homage to modernist<br />
architect Le Corbusier; while Sebastian<br />
Herkner has launched a coat armchair and<br />
a complementary Bask basket doubling as a<br />
side table.<br />

The Marq on Paterson Hill, Signature Tower<br />
in Singapore is the first luxury apartment building<br />
that is fully decorated by French luxury<br />
design house Hermès. Built in collaboration<br />
with SC Global Developments, the expansive<br />
apartments feature a carefully curated combination<br />
of Hermès furniture, fabrics, accessories<br />
and artworks.<br />
Green Sound<br />
Eco-made have come up with a sustainable<br />
design to enhance the loudspeaker of your<br />
iPhone. The Eco-Amp is an environmentally<br />
friendly amplifier made from FSC Certified<br />
100 per cent Post Consumer and Alternative<br />
Fibre paper, and printed with soy-based ink.<br />
The design is based on the same principles<br />
as the classic gramophone.<br />
Cultural eveninGS<br />
The acclaimed annual commission at<br />
London’s Serpentine gallery has been designed<br />
by architects Herzog & de Meuron and<br />
Beijing-based artist Ai Weiwei. The 12th pavilion<br />
has a plane of water that is now floating<br />
above the lawn of the gallery. Also, throughout<br />
summer, public talks (“Park Nights”) are being<br />
organised by the Serpentine for visitors.
SoothinG ComFort<br />
These knotty pouffes designed by Praguebased<br />
design studio Kumeko are made from<br />
soft jersey tubes stuffed with highly resilient<br />
foam. The tubes are plaited and weaved together<br />
to create a knotted ball and a lining that<br />
is filled with polystyrene balls. The cushion<br />
adjusts easily and moulds to your body, making<br />
it extra comfortable.<br />
aquatiC Complexity<br />
The aquatics centre designed by Zaha Hadid<br />
for the London 2012 Olympic Games features<br />
an undulating wave-like roof that critics originally<br />
speculated would be too complex to<br />
build on time – but it is now completed and<br />
ready for July. Six curved concrete diving<br />
boards stick out like tongues across one pool<br />
at the end of the main hall.<br />
Sleek FuSion<br />
Loehr is a small family business that creates<br />
and manufactures premium furniture for the<br />
luxury market – a fusion of traditional craftsmanship<br />
and modern design. The DL 2 Euclides<br />
easy chair is part of its debut collection.<br />
Sleek and minimal in design, it is upholstered<br />
in leather or Kvadrat fabric cushion and comes<br />
in polished stainless steel or powdercoated<br />
steel.<br />
SuStainable ShadeS<br />
Italian fashion house Gucci continues its<br />
commitment to the environment by using<br />
biodegradable materials in products such as<br />
sunglasses and packaging. The hardware is<br />
all made from recycled metal, paired with mineral<br />
glass lenses, and the other parts comprise<br />
bio-based materials from sustainably<br />
managed forests and natural wax.<br />

The building‘s façade was completed in January<br />
2008, but the OMA-designed CCTV headquarters<br />
in Beijing will finally open its doors<br />
this year. Rem Koolhaas’ reinvention of the typical<br />
skyscraper forms a looping tower with a<br />
dramatic cantilever, representing the architectural<br />
firm’s first major project in China as well<br />
as its largest overall building.<br />

Parisian fashion house Louis Vuitton‘s latest<br />
artistic collaborator is 82-year-old Japanese<br />
multimedia artist Yayoi Kusama. Together<br />
they present a limited edition collection of fashion<br />
items under the name Infinitely Kusama.<br />
Yayoi Kusama is considered to be one of the<br />
most significant and influential artists working<br />
today, most notably known for her obsession<br />

Why We<br />
make art<br />
The reasons for artists to create their works of art are very<br />
diverse. Some make art for fun and adventure, some<br />
want to build bridges between themselves and the rest of<br />
humanity, and others want to reunite and record fragments<br />
of thought, feeling and memory. All their motives are deeply<br />
personal.<br />
But what is art? For me the best definition for art that I have<br />
come up with, and which seems to work best for me, is that<br />
anything anyone calls art is art. This comes from my belief<br />
that there is nothing intrinsic about art.<br />
We cannot do a chemical analysis to determine if something<br />
is art or not. Instead, I feel that calling something “art” is<br />
really just a subjective way of indicating value – which could<br />
be aesthetic, cultural, monetary, etc.<br />
Art has no judgment and can never be wrong; you can do<br />
anything freely as it is self-expression in abundance. All<br />
artists have one thing in common and that is their commitment<br />
and dedication to their subject – and that they are just<br />
doing what they feel they were born to do.<br />
I make art primarily because I enjoy the process of creating.<br />
In a project I really look for something that resonates with<br />
life as I see it and speaks to our experience as humans.<br />
I like expressing emotions in my paintings, so that others<br />
viewing them may interpret them in a similar way.<br />
I tap into my instincts and intuition, letting my inner emotions<br />
and spontaneity guide me while I am painting. Bringing<br />
materials together into a form, distilling and shaping<br />
movement, creating a context, working until something feels<br />
cohesive and complete… this is a process that feels incredibly<br />
powerful to me, something that really keeps me going.<br />
Whatever the reasons for creating art, an inner compulsion<br />
exists and I continue to honour this internal imperative. If<br />
I didn’t I would feel horrible. I would be a broken human<br />
being.<br />
So, whether or not attempting to make art is noble or selfish,<br />
the fact remains that I will continue to do it nevertheless.<br />

ironically it is the opposite of<br />
what is considered as chic: Shabby Chic designs<br />
are not at the forefront of what is fashionable; nor<br />
are they exclusive and unattainable to the majority.<br />
On the flipside, Shabby Chic products are not<br />
shabby either: they exude quality as they have to<br />
be able to stand up to the test of time.<br />
Naturally weathered artefacts make great additions<br />
to the home and truly epitomise shabby chic<br />
ideals. The style was first created in beach-front locations<br />
in California and San Francisco, mainly due<br />
to the abundance of naturally weathered artefacts<br />
being washed up on the shore. Driftwood, maritime<br />
rope and other such nautical items were constantly<br />
being added to bathrooms and outdoor <strong>area</strong>s in<br />
conjunction with pre-existing modern utilities that<br />
helped to transform the rugged and shabby items<br />
to a level of unique chic.<br />
There is a sense of reminiscence that accompanies<br />
Shabby Chic, especially when using such natural<br />
artefacts. Each weathered object has it’s own<br />
story to tell, filling the chosen room with a sense<br />
of omniscience and wisdom. An object such as<br />
driftwood may look like junk when it is discovered<br />
in its natural environment, but when it is added to a<br />
bathroom complete with modern utilities it obtains<br />
a form of deliberation and purpose – adding character<br />
and intrigue.<br />

certainly injects an air of mystique into<br />

Worn décor and finishes to walls, ceilings<br />

that your weathered objects will populate.<br />
Roughly sanding down painted walls or<br />
deliberately chipping paint off surfaces<br />
creates that worn, weathered look. This<br />

“chic” part of this interior style. After all,<br />
so far we have discussed how to destroy<br />
your walls and furniture. But there is one<br />
element of Shabby Chic that transforms all<br />
the destruction to a higher tier of aesthetic<br />
consciousness – or, at least, allows you<br />
to veer away from the impending fear of<br />
turning your home into a shed.

The romantic aspect is what truly categorises<br />
Shabby Chic. Romantic colour palettes<br />
such as sky blue, soft pinks, off-whites and<br />
neutral beiges are one means of injecting<br />
your interior with a romantic atmosphere.<br />
Add quaint lighting such as wall sconces<br />
or crystal chandeliers, decorative pillows<br />
adorned with lace or floral patterns, and<br />
your Shabby Chic ambience is really pulled<br />
together beautifully.<br />
Combining the vintage, weathered and romantic<br />
elements of your Shabby Chic interior<br />
with modern styling can have astounding<br />
effects. Designers have found seamless<br />

where all fashion trends have been<br />
explored? Are modern designers simply<br />
regurgitating designs from by-gone eras?<br />
Are styles that we’ve all seen before simply<br />
tweaked each season then sent down the<br />
catwalks with the proclamation that they<br />
are somehow “new”? And if this is the case<br />
then why be a slave to trends? Why not<br />
think vintage?<br />
Marcelle Symons, former partner in Paul<br />
and Joe, and creator of One Vintage, a<br />
luxury brand that “sources beautiful pieces<br />
from the last century and lovingly reconstructs<br />
them into unique, contemporary<br />
styles with an air of old-school glamour”,<br />
states that the “One” in One Vintage stands<br />
for “one-off, one and only, just the one”.<br />
These pieces are timeless and, unlike<br />
modern fashion trends that change with<br />
the season’s vintage clothes, transcend the<br />
trends and can be worn for as long as the<br />
wearer wishes.<br />

The high streets are piled high with designer<br />
imitations so choice is limited if the<br />
current trends are not suited to our body<br />
types. However, choosing vintage means<br />
there are decades of styles to choose<br />
from. As stylist Bow Harris explains,<br />
“Shopping for vintage has become ever<br />
more popular with my clients and this is<br />
great news for me. Finding styles to fit different<br />
women’s figures can prove difficult.<br />
However, when I shop vintage styles I have<br />
decades of clothes to pick from.” When<br />
asked what era suits what body shape<br />
Harris says, “If you have an hour-glass<br />
figure try ‘50s vintage dresses. If you have<br />
a more boyish physique try the ‘20s flapper<br />
style. There’s something for everyone<br />
and we all look unique rather than looking<br />
like clones.“<br />
Indeed uniqueness is cited as the main<br />
reason that vintage fashion has exploded<br />
in recent years. Vintage fashion offers individuality<br />
that is rare in the current climate.<br />
Charlie Brear, owner of The Vintage Wedding<br />
Dress Company, cites uniqueness<br />
as the single most important reason for<br />
starting her company. “I wanted to take the<br />
trepidation and hard work out of finding a<br />
unique dress to get married in.” At a time<br />
where brides can purchase a wedding<br />
dress from Monsoon or Marks and Spencer,<br />
it’s no wonder that Brear has seen an<br />
upsurge in people wanting an exquisite<br />
piece that cannot be found elsewhere.<br />
The trend has been embraced by luxury<br />
retailers. Luxury online clothing giant<br />
Net-A-Porter stocks One Vintage, while<br />
luxury brand Matches stocks vintage<br />
pieces including beautiful vintage Chanel<br />
handbags.<br />
It is no coincidence that the upsurge in<br />
popularity of vintage clothing has coincided<br />
with the rise of cheap, fast fashion.<br />
With throwaway fashion and cheap<br />
designer imitations dominating the high<br />
street is it any wonder that fashion lovers<br />
have been taking to vintage in their<br />
droves? Designer pieces were once<br />
coveted in part because of their rarity. But<br />
these days the catwalk is ripped-off within<br />
weeks by the high street, turning fashion<br />
into a throwaway commodity with the fast-<br />
There are downsides to the growing interest<br />
in vintage clothing. Mainstream retailers<br />
such as ASOS allow anyone to sell<br />
vintage through their ASOS Marketplace<br />
shop. Not a bad thing in itself but sellers<br />
are selling items from the 1990s, purporting<br />
them to be vintage and confusing<br />
buyers in the process.<br />
So how is vintage defined? Jackie, a<br />
consultant at vintage boutique Mela Mela,<br />
says it is defined as “an item of clothing<br />
that is at least 20 years old”.<br />
Where once shopping for vintage fashion<br />
was a niche pastime left mainly to fashion<br />
stylists, designers, trend consultants and<br />
set designers now it‘s an open market and<br />
everyone wants a piece. More mainstream<br />
retailers are jumping on the vintage bandwagon,<br />
and the price of vintage clothing<br />
and accessories continues to rise. Many<br />
small traders are being forced to swallow<br />
the rising costs rather than pass them on<br />
to customers who could simply search for
stylish living<br />

and find items themselves.<br />
Jackie tells me, “We’ve seen a huge upturn in popularity<br />
over the last four years. The downside is that<br />
vintage clothes are harder to come by and when we<br />
do find them they are more expensive. We like good<br />
products and good fabrics so our costs have risen<br />
but the quality has not been compromised.”<br />
When probed on why she thinks vintage has become<br />
so popular she points to celebrities. “Celebrities such<br />
as Lily Allen, who opened her own vintage shop, have<br />
helped bring vintage to a wider audience.“ Celebrities<br />
often wear Vintage <strong>Couture</strong> on the red carpet with<br />
spectacular results. Natalie Portman wore a vintage<br />
dress by Dior at this year‘s event and, in doing so,<br />
stood out from the A-list crowd.<br />
Need another reason to buy vintage? The more<br />
vintage clothing we buy, the less we throw away; and,<br />
where cheap clothing is piling up as landfill after only<br />
a few wears, buying vintage means that‘s just one<br />
more dress that is not being thrown in the bin. Buying<br />
vintage is good for the environment.<br />
If you’re left in any doubt as to whether buying<br />
vintage is a good idea the list of positives speaks<br />
for itself: unique, timeless quality, more choice and<br />
environmentally friendly.<br />
Harris tells me, „My most favourite item is a vintage<br />
Chanel dress. I wear it as much as I can and it never<br />
dates. I could never buy anything current that I would<br />
wear as much.“<br />
And, if you’re tempted to buy something simply<br />
because it’s on trend, remember: fashion changes,<br />
style is immortal.<br />

Pilotto pulled the flowers from the summer collections and grew them into larger,<br />
bolder floral prints, then spread them over a summer staple: the cigarette<br />
trouser. Pilotto wasn’t alone. The floral cigarette trousers are back in a big way.<br />
Team with matching top and this combo will last you into 2013. Or wear yours<br />
with black spiked heels and a peplum top to keep them current.<br />
Erdem took an altogether more feminine approach, weaving delicate floral patterns<br />
through the entire collection. Their ladylike A-line skirts and floral dresses<br />
walked straight out of summer into autumn so keep yours out and wear with<br />
tights and heels as the nights draw in.<br />

LuxuriOus Lace<br />
After exploding onto the spring<br />
catwalks, luxurious lace skips into autumn.<br />
Woven into most of the autumn/<br />
winter collections, lace is a trend that<br />
will last. Lanvin displayed gorgeous<br />
strapless lace cocktail dresses. Dolce<br />
and Gabbana offered a mixture of<br />
elegant white lace, which was prominent<br />
in the spring/summer collections,<br />
and gothic black lace worn with head<br />
pieces and large jewellery.<br />
Keeping lace current this autumn<br />
requires gold jewellery or an intricate<br />
head-piece a la Dolce & Gabbana.<br />

Why not belt up your gorgeous red<br />
dresses with a belt-cinched waist?<br />
They were all over the catwalks, most<br />
notably at Alexander Mcqueen and<br />
Burberry, and every exit at the Mulberry<br />
show was styled with a skinny<br />
belt. This is an easy trend to wear<br />
because belts worn on the waist are<br />
flattering on all shapes. They create<br />
curves where there are none and draw<br />
the eye to the smallest part of the<br />
body when we want to disguise some<br />
pounds.<br />
This season belts came in all shapes<br />
and sizes, adorned with glitter, flowers<br />
and jewels. Get extra trend points<br />
with a bow belt, as seen at Burberry,<br />
and utilitarian green which is perfect<br />
worn with summer pastels. Colourful<br />
contrasting waist belts added that little<br />
something extra at Chanel, Cacharel<br />
and Jonathan Saunders. Belts<br />
were skinny and subtle at Cacharel,<br />
Mulberry and Victoria Beckham. So<br />
whichever belt you bought in the<br />
spring will look fabulous worn over<br />
coats, dresses, jumpers and skirts.<br />

Wiggle into autumn with your spring<br />
peplum designs as it makes a welcome<br />
return to the autumn catwalks. Peplum,<br />
the short ruffle that sits at the natural<br />
waist, appears in nearly every collection<br />
this season on dresses, tops, skirts and<br />
beautifully constructed jackets.<br />
The trend has been embraced on the<br />
red carpet as seen on Emma Watson,<br />
Blake Lively and Michelle Williams.<br />
On the catwalks the peplum dress<br />
appeared in a rainbow of colours at<br />
Lanvin. Burberry Prorsum went for a day<br />
look, teaming their peplum skirts with<br />
tights, boots and short jackets. Etro and<br />
Bottega Veneta created statement peplum<br />
cocktail dresses, best worn with a<br />
smile and a pair of heels. Feminine and<br />
elegant, last season’s peplum silhouette<br />
can be updated with glittering make-up<br />
and luxurious gold shoes.<br />

in red<br />

The summer brights trend saw red make<br />
a splash and it returns this autumn. The<br />
red cocktail dress as seen at Lanvin is<br />

worn head-to-toe at Kane and Saunders<br />
while House of Holland, Antonio Berardi<br />
and Clements clashed it with pink.<br />
If you’re brave enough, go top to toe red<br />
in new season jumpsuits, full-length coats<br />
and dresses as spotted on the Valentino<br />
catwalks. Or team your spring/summer<br />
red trousers, skirts and dresses with a red<br />
winter coat a la Marni and Valentino for<br />
cool summer evenings. Update your look<br />
with new season shoes – vertiginous,<br />
sparkling Mary Janes.<br />
And, as for accessories, why not try<br />
gloves? Wear them long and leather or<br />

Winter White<br />
Designers often shy away from<br />
winter white, professing that it<br />
is more suited to the sun. This<br />
season is different. Winter white<br />
has been embraced on an epic<br />
scale. And what better way to<br />
brighten up cold, cloudy days than<br />
by deflecting clouds with bright<br />
whites. White exploded onto the<br />
Alexander Mcqueen catwalk in<br />
the form of skater skirts, fitted<br />
jackets, silk and leather dresses.<br />
The models wore mirrored visors<br />
that covered their faces, which<br />
allowed the crowd to focus on the<br />
main event, the clothes. Mirrored<br />
visors seem extreme? Simply team<br />
your spring jackets with an autumn<br />
cocktail dress such as the turquoise<br />
number from Lanvin.<br />
Sheer, white shirts and blouses<br />
have been embraced for the<br />
second half of the year so wear<br />
them with autumn leather or tuck<br />
them into an up to date A-line skirt.<br />

Already a huge icon in the fashion industry, Malene produces<br />
some of the most innovative and beautiful items sought after by<br />
women all over the world.<br />
“By Malene Birger” is a brand that is synonymous with success<br />
and integrity, truly reflecting the personal sense of style, impeccable<br />
workmanship and attention to detail that Malene has<br />
become world renowned for.<br />
“By Malene Birger” has been the recipient of numerous design<br />
awards and recognitions, including “Brand of the Year” at the<br />
DANSK Fashion Awards 2011.<br />
However, it would seem that Malene’s latest exhibition is slightly<br />
out of the ordinary. Malene will be unveiling her talent for art –<br />
exhibiting her paintings for the first time in Mallorca. Set to take<br />
place in the gallery of Toni Esteva, a celebrated architect and<br />
friend of the late Joan Miro, Malene’s exhibition is expected to<br />
be a very exciting proposition for fashion enthusiasts and artists<br />
alike.<br />
“You have always been an artist,“ said Toni Esteva, when he<br />
first met Malene and saw her pictures. She was very touched<br />
by this comment, because the Mallorcan architect has a great<br />
understanding of art and is a very spiritual man. He immediately<br />
felt the strength of her paintings and had not the slightest<br />
doubt about showing them in his gallery.<br />
The question has to be asked as to why such a successful and<br />
sought after fashion designer needed to turn her hand to another<br />
discipline. But, like many true pioneers of design, Malene’s<br />
sole motivation for this latest venture is to express herself. Whether<br />
her medium differs from canvas, to fabric or even to interior<br />
design, Malene’s love for expression of shape always remains<br />
evident in her work.<br />

Alfred Lichter was 12 when Kandinsky’s “Dreamy Improvisation” provided his first encounter<br />
with art, and he says the work has never lost its intensity for him. Another “revelation”<br />
was August Strindberg’s essay “On Accident in Artistic Creation”, which enunciated the<br />
kind of art he had always been searching for. “Towards the end of a long life, I consider it<br />
a privilege to be accepted into the service of the kind of art which disregards any personal<br />
vanity, and validates only the final outcome.” Validation of this remarkable artist’s life is also<br />
confirmed at his Alarós foundation, where examples of essential works from different phases<br />
of his artistic production are presented in a permanent exhibition, with a special emphasis<br />
on his late work, including “Windows”, illustrating his understanding of the meaning<br />
of art: “to open windows to the spiritual world – an alternative concept to our materialistic<br />
and conflict-filled earthly existence”.<br />
What prompted you to move to Mallorca in<br />
1982?<br />
Mallorca’s nice weather. I‘ve always preferred<br />
southern climates, because living through<br />
the Russian winters as a soldier during the<br />
war left me with a constant fear of the cold.<br />
Is there any particular element in your<br />
work that characterises the Mediterranean<br />
lifestyle?<br />
On Mallorca my paintings have become<br />
more colourful and more joyful.<br />
You currently have an exhibition, “The Path<br />
II“, continuing to 28 July, and then “Insights“,<br />
from 4 August to 4 October. What<br />
can we expect to see in your “Insights“<br />
show?<br />
“Insights“ will be an exhibition of works by<br />
Heidi Stein and myself, and I have therefore<br />
chosen to show very recent paintings done in<br />
the past few months. They are an expression<br />
of my current state of mind.<br />
You must have been delighted when two<br />
German art patrons provided the impulse<br />
to set up the Alfred Lichter Foundation in<br />
2011, to preserve your artistic oevre. What<br />
do you believe is your main legacy in the<br />
world of art?<br />
To restore dignity to art.<br />
You describe the “unexplainable“ as being<br />
the essence of pure art. Now, at 95, do you<br />
believe you’ve unlocked the mystery of that<br />
essence? Are you now as close as you believe<br />
you can get to it?<br />
My lifelong search for the essence of art has<br />
made me realise that this search is identical<br />
to the search for the meaning of our existence.<br />
It is the search for what we call God:<br />
the great unknown, cosmic intelligence or<br />
creation. It has led me to discover the “spiritual<br />
world“, the all-encompassing source of<br />
energy for all possible forms of existence.<br />
What work are you most proud of?<br />
I understand myself as a messenger delivering<br />
information originating with a higher<br />
power. There can be no question of pride.<br />
What – or who – inspired you to become an<br />
artist?<br />
My early love of modern art. My first art<br />
teacher, Mr. Lange, who kindled my love for<br />
modern painting. Unfortunately, this occurred<br />
at the same time as Hitler‘s rise to power.<br />
Hitler denounced all the art we both loved as<br />
“degenerate“, leaving me and my art teacher<br />
speechless.<br />
What was the first style you experimented<br />
with as a young artist? And in what ways<br />
has your style evolved over the past eight<br />
decades?<br />
I have always searched for the essence of<br />
art. It made me journey like a vagabond<br />
through all the many artistic styles, always in<br />
search of this essence. With my Capriccio<br />
paintings, I have now found a way to come<br />
closer to this goal.<br />
How you would define your current style?<br />
I hope that every new painting I complete<br />
now manages to open a window or a door to<br />
the spiritual world, which for me is the only<br />
real world.<br />

specifically organic furniture is made<br />
of 100 per cent natural material and<br />
manufactured in a way that is respectful<br />
to the environment. In reality, life is<br />
rarely so perfect and manufacturers aim<br />
instead to keep the ecological footprint<br />
in manufacturing and materials as low<br />
as reasonably possible, whether as a<br />
gesture to help our planet or a gimmick<br />
to boost their marketing!<br />

Often this means taking a step back<br />
from technological advancements and<br />
looking at how generations before us<br />
created the wonderful pieces of furniture<br />
that, in many cases, have outlived the<br />
more modern pieces we buy (and throw<br />
away) today. The most environmentally<br />
friendly type of furniture is secondhand<br />
– but that’s not of much interest<br />
to our department stores and furniture<br />
warehouses already struggling to survive<br />

in this period of global uncertainty.<br />
Instead, buyers sourcing ranges of<br />
environmentally friendly furniture have<br />
to look for products made from either<br />
organic natural or recycled materials with<br />
no volatile organic compounds (whether<br />
manufactured or naturally occurring,<br />
these are organic chemicals which when<br />
released into the air can be harmful to<br />
the environment or health).
These buyers will be on the look out for welldesigned<br />
and marketable furniture ranges<br />
made from sustainable wood, as certified by<br />
the Forest Stewardship Council (FSC). This<br />
certification acts as a guarantee that the wood<br />
is a product of socially and environmentally<br />
responsible forestry (so addressing issues of<br />
human exploitation as well as deforestation)<br />
grown in an <strong>area</strong> where the forests and surrounding<br />
eco-systems continue to be maintained.<br />
Among the most popular sustainable<br />
woods used to create environmentally friendly<br />
furniture are bamboo, certain types of teak<br />
and other sustainably grown hardwoods.<br />
Alternatively, you can find furniture made from<br />
recycled materials. Nowadays, this can be a<br />
whole lot more exciting than restored antique<br />
furniture. Table bases made from the recycled<br />
steel of old bridges, 100 per cent recycled<br />
plastic kitchen cupboards, recycled cardboard<br />
dining chairs, sofas stuffed with soy-based<br />
foam, hemp fabric bed covers and cushions<br />
coated in cotton, wool, silk and natural latex<br />
coloured by vegetable dyes – the ingenuity<br />
and inventiveness behind some of the ideas<br />
and designs is amazing.<br />
This new commitment to environmentally<br />
friendly interior design and decoration is taking<br />
its time to get to the high street. Many of our<br />
favourite stores have realised that ecological<br />
is the way forward but have not got much<br />
further than outlining their desires for greener<br />
suppliers and working practices. And,<br />
although most have committed themselves<br />
only to reducing (rather than omitting) the<br />
use of volatile organic compounds, some are<br />
introducing more remarkable examples to their<br />
product lines, and making them available to<br />
consumers throughout Spain.<br />
El Corte inglés has realised that mothers are<br />
among those most concerned with ensuring<br />
that their children are protected from harmful<br />
chemicals used in manufacturing today. The<br />
store has introduced a number of products<br />
to address this need, starting with the simply<br />
designed Miniguum mini crib. Made in Spain<br />
from bamboo and MDF, it’s ideal for baby’s<br />
first few weeks. When baby’s too large for the<br />
mini crib, turn it upside down to use as a side<br />
table or store toys inside.<br />
Globaldeco, a nationwide chain with stores<br />
in Menorca, Sevilla, Almería, Murcia and<br />
Marbella, has introduced MDF and veneer<br />
ecological ranges of modern and stylish living<br />
room units (shelves, wall-mounted cupboards<br />
and sideboards). In common with many other<br />
furniture stores such as SuMobel and Natuzzi,<br />

they also now stock contemporary designer<br />
sofas in ecological leather. This presents an<br />
interesting compromise as entirely environmentally<br />
friendly or organic sofas are still presenting<br />
a challenge to most retailers who have<br />
to ensure that the required high standards of<br />
fire retardancy are adhered to.<br />
Banak importa has long realised the<br />
significance of importing good-quality and<br />
well-designed ecological furniture. Its ranges<br />
cover most rooms of the house as well as the<br />
garden, and include ecological rattan tables<br />
and chairs for use outside, sustainable teak<br />
living and dining room furniture, and comfortable<br />
chairs for dining and relaxing covered in<br />
eco-leather.<br />
on Mallorca, Nat Palma’s store concentrates<br />
on selling pieces of furniture crafted<br />
from reclaimed Indonesian teak. Its dedication<br />
to sustainable and ecological production of<br />
individual pieces of furniture is truly inspiring<br />
and surprisingly affordable.<br />
Not only is Roche Bobois one of the finest<br />
retailers of high quality furniture in Spain, but<br />
it also leads the way in ecological furniture.<br />
It has been working with designers such as<br />
Christophe Delcourt since 2005 to create<br />
fantastic contemporary and ecological limited<br />

this issue we are invited into the kitchen of one of mallorca’s michelinstar<br />
chefs, Fernando Pérez arellano from Zaranda sa torre, who reveals<br />
how to prepare a popular signature dish at the restaurant: seafood tartar<br />
and cruciferous vegetables with grapefruit dressing.<br />
Arellano worked in top restaurants around the world<br />
(Patrick Guilbaud in Dublin, Le Gavroche in London,<br />
Don Alfonso 1890 in Naples, Maison Pic in Valencia<br />
and Can Fabes in Barcelona) before he and his wife<br />
Itziar Rodríguez (who runs the dining room) opened<br />
Zaranda in Madrid in November 2005, where they<br />
gained their first Michelin star. Five years later, they<br />
moved Zaranda to Mallorca’s Hotel Hilton Sa Torre<br />
and within just a few months the restaurant was one<br />
of five Mallorcan establishments honoured with a<br />
2010 Michelin star.<br />

Stony sea urchins (erizos)<br />
preparation:<br />
Place cockles and goose neck barnacles in a vacuum<br />
pack with a spoonful of salted water (150 grams<br />
water/10 grams salt) and cook for six minutes at<br />
72ºC. Then cool in cold water.<br />
Ingredients – crISpY rED cabbagE:<br />
100 gr red cabbage juice<br />
100 gr potato flour<br />
preparation:<br />
Mix the ingredients in a blender and smooth out<br />
over a very thin silpat. Steam in the oven at 100ºC<br />
for one minute. Allow to dry in the oven at 100ºC for<br />
30 minutes. Place in a sealed plastic container with<br />
silica gel.<br />
Ingredients – caULIFLoWEr pUréE:<br />
900 gr boiled and strained cauliflower<br />
25 gr virgen olive oil<br />
60 gr strained water from cauliflowers<br />
35 gr red grapefruit juice<br />
preparation:<br />
Boil the cauliflower in salted water with olive oil. Pass<br />
through a straining cloth, pressing hard until the mix<br />
is dry. Place in a thermomix and salt to taste. Add<br />
the other ingredients. Cool and place in a strainer.<br />
Ingredients – grapEFrUIt VInaIgrEttE:<br />
75 gr red grapefruit juice<br />
1 gr grated grapefruit<br />
100 gr virgen olive oil<br />
0.5 gr salt<br />
preparation:<br />
Mix all the ingredients together as a vinaigrette and<br />
add to a bottle for dressing.<br />

Cauliflower<br />
Romanesco broccoli (aka roman cauliflower)<br />

Brussels sprouts<br />
preparation:<br />
Shape into florins and blanch in boiling salted water<br />
for 15 seconds. Cool in iced and salted water.<br />
In the case of the Brussels sprouts, cut out the<br />
hearts first, blanch for one second only, then cool<br />
the same way.<br />

Pour and smooth out the cauliflower puree on a<br />
13x7 centimetre flat dish. Dress the cruciferous<br />
vegetables with the grapefruit vinaigrette and the<br />
seafood (prawns, scallops, goose neck barnacles<br />
and oysters) with chopped spring onions. Place on<br />
top of the puree.<br />
Fry the red cabbage at 210ºC in olive oil, drain and<br />
add salt to taste. Place on the plate and add a few<br />
sea urchin tips.

The man<br />
behind the chef<br />
What made you decide to become a chef?<br />
The idea of becoming a chef came about for two reasons. I was<br />
18 and living in Dublin with the intention of improving my English,<br />
and I had to cook for myself. On the other hand, to pay for my stay<br />
I worked in a hotel kitchen as a dish-washer, where I discovered an<br />
inherent restlessness to become a chef.<br />
What was the fi rst dish you prepared?<br />
I love chicken curry and one day I tried to make it. After five hours<br />
in the kitchen of my apartment, I don’t know but perhaps because<br />
of mounting hunger, it tasted fantastic and I thought I was the most<br />
talented chef in the universe, and that gave me the definitive encouragement<br />

Each restaurant has its own style, so the differences can be infinite.<br />
In general terms, I believe we create honest cuisine, with recognisable<br />
tastes and flavours, and very much based on our immediate<br />
environment.<br />
Are there any particular ingredients that defi ne your cooking?<br />
In winter, game; and in general, seasonal produce, especially those<br />
from the Balearic sea.<br />
What ingredient can you not do without in the kitchen?<br />
Pimentón de la Vera (paprika produced in Cáceres).<br />
What is the most important message you give to your team?<br />
Effort is more important than talent.<br />
What haute cuisine trends are on the rise at the moment?<br />
Lightness, simplicity and a focus on the local, or native.<br />
Are there any signifi cant differences between Mallorcan, Andalucian,<br />
Catalan, Basque, etc., chefs?<br />
As I noted before, chefs and their restaurants are a world apart from<br />
each other, though obviously we are also influenced by our respective<br />
traditional recipes, local ingredients and kinds of clients.<br />
What is the secret to gaining a Michelin star? And holding on to it?<br />
Paying attention to detail, precision in the kitchen and consistency.<br />
The best way to hold on to it is to work towards obtaining a second<br />
one.<br />
The best tip for a home cook?<br />
Take care with the cooking times, don’t over-season and ensure your<br />
various dishes are well-balanced.<br />
Do you have any special goal for 2012?<br />
Keep working hard to secure a little sister for our (Michelin) star –<br />
she’s been alone for too many years and getting bored.<br />

of sherry<br />

Even before claret was known outside France,<br />
sherry had a flourishing export market and was<br />
drunk in England in Shakespeare’s time. Foreign<br />
merchants started the export trade, giving many<br />
bodegas their original Anglo-Saxon names (e.g.<br />
Williams, Humbert, Domecq, Garvey, Croft, Sandeman,<br />
Osborne, Harvey, Byass).<br />
Unless it comes from the enchanted triangle<br />
formed by the towns of Jerez de la Frontera, El<br />
Puerto de Santa María and Sanlúcar de Barrameda<br />
this remarkable wine cannot be referred to as<br />
sherry.<br />
Unlike the young Rueda or Albariño white wines<br />
that are riding high currently, sherry’s popularity<br />
has been declining over recent times, but there<br />
are several good reasons why you should consider<br />
becoming a sherry-lover.<br />
Historically the most under-priced wine in the<br />
world, a good dry sherry will cost around € 6, and<br />
you are buying something that has taken hundreds<br />
of years to produce. Forget vintage sherry,<br />
since there is no such thing, although occasionally<br />
a date on a bottle signifies the year that the barrelageing<br />
process started for that particular wine.<br />
After the grape pressing the fermented must<br />
decides for itself what it is going to turn into –<br />
Fino, Manzanilla, Amontillado, Oloroso or Palo<br />
Cortado – another unique characteristic of sherry.<br />
Once it has made up its mind it is introduced into<br />
the multi-tier solera ageing system, where it will<br />
take years to travel (manually, not by gravitation)<br />
from the top row of wooden barrels that is the first<br />
stage to the floor-level, ready-for-bottling, stage.<br />
During this period it will have assumed the<br />
characteristics of the solera, meaning it will taste<br />
the same as the original wine produced hundred<br />
years previously already in the barrels. Providing<br />
only limited amounts are drawn off for bottling, the<br />
quality of the solera will remain constant. There is<br />
no other wine in the world that is capable of being<br />
blended with older wines in order to take on their<br />
characteristics. The magic of sherry…<br />
But this wonderful business has changed, although<br />
not necessarily forever. The golden age<br />
of sherry was probably the last half of the 20th<br />
century when demand outstripped supply, and if<br />
you belonged to a sherry family you almost did not<br />
have to work.<br />

There were around 800 Domecq family members<br />
in Jerez, for example, of whom 180 worked in the<br />
bodega. The rest lived off them and the dividends<br />
that were declared each year. Few people in Europe<br />
enjoyed as good a life as the so-called sherry<br />
barons, and the vast sums they invested in horses<br />
(a Jerez must), breeding bulls (for bullfights),<br />
country estates, motor cars and travel has never<br />
been acknowledged.<br />
People drink less sherry (more fool them!), mainly<br />
in the traditional export markets, although any<br />
Andalucian feria will see mind-boggling quantities<br />
being consumed.<br />
Or maybe we can expect a rebirth. Finally it has<br />
been acknowledged that sherry was sold too cheap<br />
to satisfy northern European demand for a lowcost<br />
source of alcohol. It is totally illogical that you<br />
can buy a bottle of wine that has needed, ultimately,<br />
300 years to bring it to maturity, for a few euros,<br />
when even a mediocre young red wine from any<br />
Spanish region will cost the same or more.<br />
And don’t forget one thing: the older amontillados<br />
and olorosos are naturally dry wines. They may<br />
have been sweetened for certain export markets<br />
but the sugar level is as low as any other wine with<br />
a 16º alcohol level.<br />
The vastly-reduced number of bodegas that still<br />
produce this magic brew (there is no room here<br />
to go into why a “flor” forms only on the surface of<br />
finos) have very sensibly realised that they were<br />
under-selling their product. They are rummaging<br />
around in the cobweb-steeped cellars to find butts<br />
of wine that have been there for centuries, often<br />
reserved for family members, and bottling them.<br />
These old wines are not cheap but, even if they<br />
cost 20 euros, how can any wine aficionado deny<br />
that this is price worth paying for a significant<br />
chunk of the history of the oldest wine-producing<br />
region in Spain?<br />
In Britain celebrity chefs are recommending sherry<br />
to pair with their cuisine, and it is the perfect wine<br />
to accompany Asian food, especially Indian. Tapa<br />
bars have sprung up all over northern Europe. Ten<br />
years ago Marks &Spencer UK stores sold five types<br />
of sherry, three of them sweet. Now they offer<br />
12, principally finos and manzanillas, and sales<br />
are up 18 per cent.<br />

Gitana is known anywhere in the<br />
world where manzanilla sherry<br />
is drunk, and has won many<br />
awards (€ 5). A very interesting<br />
old sherry is the Manzanilla<br />
Pasada Pastrana, which is<br />
deeper and richer in taste owing<br />
to its superior age, and since<br />
this type of manzanilla is always<br />
of limited production it may be<br />
best to buy it direct from the<br />
bodega (€10).<br />
La Gitana can be found in any<br />
supermarket in the Baleares and<br />
on the Costa del Sol, or both<br />
sherries are available direct from<br />
the winery, lagitana.es.<br />
barbadillo is one of the oldest sherry houses still family-run. Its Manzanilla<br />
Solear from the bodegas in Sanlúcar de Barrameda is an industry standard, and at<br />
around €6 another gift to wine lovers. Barbadillo‘s Cuco Oloroso Seco is likewise<br />
amazingly good, and much appreciated by connoisseurs of mature sherries (€15).<br />
There is a range of Very Old Rare Sherries and a manzanilla en rama (bottled direct<br />
from the barrel by hand).<br />

premium, rather than low-price,<br />
sherry can have a market that<br />
compares with the best Riojas<br />
or Ribera del Duero wines. Its<br />
manzanillas and finos are some<br />
of the best and I dare not even<br />
quote the price as you will think<br />
it is a printing error. However,<br />
the range of very old wines<br />
“Vinos de la Sacristia” come in<br />
at around € 50 for the half-litre<br />
flask – and are at 20º alcohol<br />

Sweet summer<br />
scents<br />
a favourite perfume is sometimes<br />
used by doctors to rouse a patient<br />
from a coma, so the effect of scent on<br />
our psyche should not be underestimated.<br />
A garden is the perfect place to play with<br />
scent, and to enjoy on a daily basis the myriad<br />
combinations that Nature offers us.<br />
Plants use scent for several reasons, not<br />
only for our human pleasure! Bees and insects<br />
are attracted to many plants by scent,<br />
to pollinate them, in the same way that plants<br />
with repellent smells keep predators at bay<br />
and protect themselves from attack by birds<br />
or creatures intent on eating them. Many living<br />
creatures including humans use scent<br />
to attract a mate with natural pheromones<br />
(or, in the case of humans, sometimes by the<br />
use of manufactured perfumes).<br />
In our Mediterranean climate there are<br />
thousands of scented plants that release<br />
their perfume into the warm air of spring and<br />
early summer. Drought-tolerant plants often<br />
have tough, oily leaves which release their<br />
pungency as you brush past them; others<br />
loose their perfume into the night air as the<br />
dew comes down upon their petals.<br />
One of the first signs of spring in our climate<br />
is the brilliant yellow flowering of the Mimosa<br />
trees, bursting into bloom in mid-February as<br />
winter draws to a close. Mimosa flowers have<br />

IS PERHAPS THE MOST EVOCATIVE,<br />
RECALLING IN AN INSTANT MEMORIES<br />
OF A TIME, A PLACE OR A PERSON,<br />
IN-STANTLY TRANSPORTING US TO<br />
ANOTHER MOMENT OF OUR LIVES.<br />
a delicate, lemony scent which perfumes an<br />
entire house with just a few branches. These<br />
cost a fortune at a London florist, and grow<br />
happily here for nothing, the prettiest variety<br />
being the feathery leaved Acacia dealbata.<br />
Plant this in a sheltered, sunny spot and<br />
prune immediately after flowering (even<br />
harshly), to encourage vigorous and strong<br />
growth. Mimosa will tolerate salt air and dry<br />
winds, and is an excellent choice for an island<br />
garden. As spring advances we enjoy<br />
the fragrant deep pink flowers of Daphne<br />
odora and Syringa vulgaris, commonly<br />
known as “mock orange”.<br />
Then comes the glorious, heady, evocative<br />
scent of citrus blossom, lemon, lime, orange<br />
and grapefruit, which for several weeks perfume<br />
the morning and evening spring air in<br />
the gardens of the Mediterranean.<br />
Pittosporum tobira bears very fragrant,<br />
creamy-white flowers in spring, and can be<br />
used as a hedge or a shrub, or grown in a<br />
pot to line a driveway. Wisteria sinensis has a<br />
short flowering season here, but the pleasure<br />
its glorious scented racemes bring for those<br />
weeks is worth every second. It will cover<br />
a wall or a pergola with its attractive green<br />
foliage, as will climbing Rosa banksiae, the<br />
white form of which is the most scented in<br />
spring.

Then there is glorious Jasmine in all its varieties.<br />
This perennial climber may take a year or<br />
so to establish, but once it has it will give years<br />
of pleasure with its heady summer scent.<br />
Jasminum officinale and Jasminum polyanthum<br />
are particularly recommended and will<br />
grow in sun or shade.<br />
As summer approaches evergreen Datura<br />
starts to bloom. Officially renamed as Brugmansia,<br />
all varieties produce exquisite, often<br />
heavily-scented blooms, and will grow well in<br />
sheltered <strong>area</strong>s, preferably with a little dappled<br />
shade, and in containers. Brugmansias are<br />
not frost hardy, and must be protected if exposed<br />
in winter.<br />
Recommended are Brugmansia candida<br />
“Knightii”, B. arborea, B. aurea and B. suaveolens.<br />
The scent is released at night and will<br />
perfume your entire garden.<br />
My other all-time favourite is the wonderful<br />
Cestrum nocturnum, or Galan de noche as it<br />
is known locally. This deciduous shrub bears<br />
tiny creamy-white flowers in high summer, and<br />
releases a scent at night like the most heady<br />
| <strong>Home</strong> couture magazine<br />
of expensive perfumes. It is a must for summer<br />
gardens, and may be planted near the<br />
outside dining <strong>area</strong> for maximum effect, or<br />
under a bedroom window.<br />
Everyone knows the common Oleander<br />
which blooms so beautifully alongside the<br />
highways here. This, though poisonous, is a<br />
useful garden plant as it can be clipped into<br />
an impressive flowering hedge, grown in pots<br />
by a pool, or allowed to spread at the back<br />
of a wild <strong>area</strong>. Its intoxicating perfume is released<br />
throughout the long summer months.<br />
Less showy, but equally lovely is the tough<br />
little Pelargonium graveolens, the lemonscented<br />
geranium whose leaves smell divine<br />
as you brush past them in the flower bed, and<br />
keep away mosquitoes.<br />

Many aromatic plants have medicinal uses<br />
as well as culinary or aesthetic ones. Amongst<br />
these are many common herbs easily grown in<br />
the Mediterranean garden. Whether for eating<br />
or for using as a herbal remedy, the beneficial<br />
effect of a plant is greater the closer it is grown<br />
to the home of the person consuming it. For<br />
this reason it makes sense to have a kitchen<br />
garden, or grow herbs and other edible plants<br />
in containers, on windowsills or balconies.<br />
I find the latter to be particularly useful, as it is<br />
easy to remember to water pots and window<br />
boxes, and weeds are easily controlled. The<br />
following basic 10 herbs and plants all have<br />
a variety of properties that make them ideal<br />
components for a kitchen garden “starter-kit”:<br />
Lavender – analgesic anti-depressant, antiseptic<br />
and an aid to sleep, this comes in many<br />
varieties and is easily grown here.<br />
Garlic – antiseptic, a natural antibiotic and<br />
anti-fungal agent, which can also be used to<br />
worm domestic pets as well as for making our<br />
food taste delicious.<br />
Lemon – stimulates the immune system, digestive,<br />
astringent, bleaching.<br />
aloe vera – naturally antibiotic, used for<br />
burns and gastric problems.<br />
calendula (pot Marigold) – anti-inflammatory,<br />
antiseptic, anti-fungal.<br />
thyme – antiseptic and antibacterial.<br />
rosemary – analgesic, promotes hair growth<br />
and shine, energising as an infusion.<br />
camomile – soothing, calming, sleep aid, internal<br />
disinfectant and diuretic, bleaching hair<br />
rinse.<br />
Mint – cooling, stimulating, decongestant.<br />
basil – expectorant, laxative, antispasmodic,<br />
deters insects, particularly flies.<br />
rue – repellent to insects, aromatic.<br />
Sage – soothing, calming, fire retardant,<br />
bee pasturing.

How important are gardens to the overall design of a home?<br />
I am particularly passionate about the design aspect of gardens.<br />
In my mind, outdoor living is a huge part of what being<br />
and living in Mallorca is all about. They are the first impression<br />
that a visitor gets and, thanks to the local climate, folks<br />
often spend just as much time outdoors as inside.<br />
What are the main factors you take into consideration when<br />
designing a garden?<br />
We are lucky here in Mallorca as we have a fantastic canvas<br />
of dramatic topography and a rich palate of wonderful<br />
and often aromatic<br />
plants to work<br />
with. However, designing<br />
a garden<br />
is not just about<br />
which flower<br />
looks pretty next<br />
to another, how to<br />
best contrast textures<br />
or creating<br />
flow and rhythm.<br />
These elements<br />
are of course very important, but practicalities should be the<br />
designer’s largest consideration. Plants are living creatures<br />
and all have distinct likes and dislikes, whether its soil quality,<br />
water supply or any of the other long list of variables. On top<br />
of that, you have the logistical pain of converting the often<br />
rocky or rubbly ground into something that plants might consider<br />
habitable. And of course irrigation, terracing, drainage,<br />
maintenance levels… and, most importantly, personal taste.<br />
During these times when many people will have a more limited<br />
budget than before, are there ways to keep costs down without<br />
unduly affecting the final result?<br />
Proper ground preparation is the key to a beautiful and<br />
healthy garden, and no short cuts should be taken. Costs<br />
can be cut in plant size, finishing details or the size of the <strong>area</strong><br />
to be landscaped, but not in preparing the ground.<br />
How would you describe your design style?<br />
I tailor all my gardens to best suit the architecture and local<br />
topography, as well as all of the above listed practicalities;<br />
however, if I were to best describe my design style, I would<br />
have to call it a kind of “Mediterranean chic”. I work a lot with<br />
many of the Med classics – lavenders, cypresses, olives and<br />
such. But I have to admit I also like a nice lawn with a colourful<br />
herbaceous border.<br />
Presumably, ongoing maintenance is just as important as design<br />
and preparation…<br />
Yes, I also have a maintenance side to my company. I see this<br />
as a necessity as no matter how beautifully designed your<br />
garden is, if you neglect it, it will start looking neglected pretty<br />
quickly. I like my gardens to develop the way that I intended<br />
them to, and I have trained up a team of good people to<br />
make sure they do just that.<br />

All the herbs listed here can be used for<br />
home remedies, in cooking, as natural<br />
cosmetics or as household cleaning preparations,<br />
and most can be used in their<br />
raw state as leaves and flowers in essential<br />
oils. It is not really practical to produce<br />
essential (or aromatherapy) oils at home<br />
as a long distilling process is required.<br />
However, as a short cut one can steep<br />
the herbs in a base oil available from the<br />
chemist, and use the aromatic result as<br />
a basis for natural cosmetics or in the kitchen.<br />
This oil is not as potent as a distilled<br />
essence, but is still worthwhile and fun to<br />
make with little effort.<br />
With a little research it is easy and cheap<br />
to make home-made herbal ointments,<br />
infusions, floral “waters”, sachets, potpourris,<br />
bath essences, air fresheners and<br />
“burning” or massage oils. Perhaps in these<br />
times of recession we should go back<br />
to basics, and start “making our own” as<br />
our grandmothers used to do.<br />

Pour boiling water onto a sprig or two of<br />
mint leaves, add a small sprig of rosemary<br />
and steep for five or 10 minutes before<br />
straining. The resulting “tea” will give an instant<br />
and lasting energy boost much better<br />
for you than a caffeinated drink.<br />
Finally…<br />
Cut and spread herbs such as bay,<br />
thyme, rosemary, sage and lavender in<br />
the sun to dry. When dry store them in a<br />
sealed container for use in winter, or place<br />
dried lavender heads in a pretty dish and<br />
use to scent your bedrooms. A drop of essential<br />
oil from time to time will revive the<br />
scent as it fades.

changing Face of Spanish property investors<br />
The average real estate agent in the street will<br />
happily give you their opinion on the state of<br />
the property market at this moment in time.<br />
Their emphasis, however, may change depending<br />
on whether you’re looking to buy or to<br />
sell. To the buyers, the agent will enthusiastically<br />
extol the virtues of buying right now while<br />
the market is on its knees – the only chance<br />
you’ll get to snap up that bargain property. To<br />
the sellers, their demeanour may appear more<br />
downcast, full of woe about how difficult it is to<br />
sell even the best property without hammering<br />
down the price by 40 per cent – and that’s only<br />
the start.<br />
To be fair, they have got a point whichever<br />
way the conversation goes. There are great<br />
bargains to be had as some owners find<br />
themselves having to sell at very low prices or<br />
risk losing their properties. Equally, the challenges<br />
in selling as a profession are increasing<br />
every day. Changing regulations, over-inflated<br />
cadastral values and a virtual credit block have<br />
forced many agents out of business. But, for<br />
those able to think out of the box and adjust<br />
their working practices to meet the changing<br />
needs of the market, the opportunities are out<br />
there for the taking.<br />
Perhaps the most important factor for agents<br />
to consider when updating their marketing<br />

focus has been the changing demographic<br />
of the average property buyer in Spain today.<br />
Traditionally, overseas buyers have come and<br />
gone but the domestic market has remained<br />
consistent. As a rule, the Spanish have always<br />
been more disposed to owning property rather<br />
than renting. Families tend to live in a home<br />
that has been passed down to them, while<br />
renting out the small apartment they bought<br />
earlier in their lives together. Others divide their<br />
time between two properties, living in convenient<br />
centrally located apartments during the<br />
working week and winter months, then decamping<br />
to their country or beachside retreats for<br />
the summer.<br />
Huge levels of unemployment and general<br />
financial insecurity have taken their toll on<br />
young Spanish adults and many have now<br />
had to rent or continue living with relatives.<br />
Those who were able to buy before the property<br />
crash are struggling to pay their high mortgages<br />
and, in the more unfortunate cases,<br />
finding themselves forced out of their homes.<br />
The problem will be exacerbated, according to<br />
Spanish savings bank CatalunyaCaixa, by the<br />
reduced demand for housing now that the financial<br />
crisis is restricting family sizes. Another<br />
reason why Spain will become yet more reliant<br />
on foreign property buyers in the future…<br />

Despite the economic climate, Spain is still<br />
a great place to holiday or live. Visitors from<br />
northern Europe appreciate the relaxed<br />
attitudes, particularly towards children and<br />
families, the long sunny days and the mild<br />
winters, not to mention the first class health<br />
system, multilingual services and accessibility<br />
of the Spanish islands and coastal <strong>area</strong>s to<br />
networked airports around the world.<br />
Different <strong>area</strong>s of Spain have always appealed<br />
to different nationalities of foreign visitors and<br />
residents. The Balearic Islands have traditionally<br />
held more appeal for the Germans;<br />
Marbella and towns further west on the Costa<br />
del Sol have welcomed the Brits; the Scandinavians<br />
often preferred Mijas, just west of<br />
Málaga. The Irish were keen to build on inland<br />
plots while the Spanish Madrileños wanted a<br />
place big enough for their family and domestic<br />
staff to enjoy the month of August; the nearer<br />
the beach, the better.<br />
But, when the German economy started to<br />
experience problems of its own in the early<br />
2000s, its citizens were the first to withdraw<br />
their investments from Spain. With hindsight,<br />
their timing was excellent. The profits realised<br />
from their sales at the height of the Spanish<br />
property boom have enabled many German<br />
Spanophiles to return now that Germany is<br />
back on a surer footing and once more the<br />
largest economy in Europe.<br />
These returners to the market are finding that<br />
prices have fallen considerably over the past<br />
five years, up to 40 per cent in some cases.<br />
In addition, there is far more quality property<br />
on the market at realistic prices. It’s no longer<br />
a case of having to snap up a shoddily built<br />
apartment just to get on the ladder! Resale<br />
properties are proving more popular than new<br />
despite the government’s attempts to boost<br />
the “direct from developer” market with tax incentives.<br />
Instead, investors are aiming for top<br />
luxury properties, like the frontline beach villas<br />
with great sea views which continue to sell on<br />
the Costa del Sol and Mallorca, where these<br />
properties are holding their value much better.<br />
Today’s buyers tend to be over 50 years old,<br />
cash rich, professional or self-employed,<br />
retired or contemplating early retirement, and<br />
enjoying a medium to high standard of living<br />
in their home country. As well as Germans,<br />
the property market is attracting successful<br />
Belgian, Dutch, Scandinavian, Swiss, Russian,<br />
Arab and Chinese investors. Many have been
playing the waiting game, anticipating<br />
exactly the right moment to buy<br />
property in Spain to maximise their<br />
investment in the future.<br />
Russian international property portal<br />
Prian.ru claims that 20 per cent<br />
of visitors to their site are looking<br />
to buy properties in foreign resort<br />
<strong>area</strong>s for holidays, and 20 per cent<br />
for retirement, while 27 per cent intend<br />
to emigrate. In our experience,<br />
many of those choosing Spain fall<br />
into the latter category, settling their<br />
families here for a better lifestyle,<br />
even if the husband is still commuting<br />
or working remotely.<br />
The recent strengthening of the UK<br />
pound should increase British confidence<br />
in the market. For several<br />
years, Brits have felt priced out of<br />
in the know<br />
the market and, to some extent, the<br />
resorts as holiday destinations where<br />
restaurants, shops, hotels and<br />
apartments were all deemed too<br />
expensive as the euro and pound<br />
hovered around parity.<br />
New entrants on to the Spanish<br />
property scene should restore other<br />
nationalities’ faith in the security<br />
of bricks and mortar combined<br />
with the benefits of sunshine and<br />
a healthy Mediterranean lifestyle. If<br />
more can be done to make sensible<br />
lines of credit available to foreigners<br />
and increase legal certainty, thereby<br />
diminishing fears of illegal builds<br />
or homes that are to be demolished,<br />
foreign investment in Spanish<br />
property will continue its upwards<br />
struggle.

THE RENTAL TRILOGY<br />
RENTALS OF BUSINESS PREMISES<br />
In the final of a three-part series, alejandro bellapart<br />
looks at the legal rental regulations applying to business<br />
premises.<br />
Should you be the owner of business premises, they may<br />
be rented out freely to third parties at will. The Spanish Civil<br />
Code protects tenants and landlords fully, and this article<br />
holds good for both parties. The Urban Rentals Law (Ley de<br />
Arrendamientos Urbanos – or LAU) also takes into account<br />
rental of business premises and is applied with priority over<br />
the Civil Code.<br />
Prior to acquiring such premises for personal use or to rent<br />
out, it is a good idea to check with the local town hall to define<br />
exactly what activities may be carried out therein, whether<br />
located in town or on an industrial estate. This is a sensible<br />
precaution before purchase, on the one hand, and renting on<br />
the other.<br />
The parties should study all aspects of their proposed contract<br />
in detail, to ensure that no surprises occur at a later date. The<br />
tenant should be aware that he needs the landlord’s approval<br />
of his planned activity on the premises. Should he wish to<br />
change his business, the landlord has to approve the change.<br />
Rent must be paid in advance, as well as a cash deposit to<br />
ensure that the premises are handed back to the owner in<br />
proper condition at the end of the agreed term. It is normal for<br />
the established rent to be raised annually by the percentage of<br />
the latest Consumer Price Index.<br />
Tenants pay for services and utilities and the community and<br />

local taxes, though not the town hall Impuesto Sobre Bienes<br />
Inmuebles (IBI), and are also required by law to obtain the official<br />
licence for their activities. Should the landlord have such<br />
a licence, then the tenant will need to have it changed into his<br />
name for the duration of tenancy.<br />
No building works may be undertaken without the owner’s<br />
written authorisation and such works eventually revert to the<br />
owner on termination of the contract. At times, depending on<br />
the extent and type of works, a mutual agreement might be<br />
made about certain elements or characteristics of the works,<br />
but this is a matter for discussion – as indeed are all the terms<br />

one of the windows, is the perfect place to<br />
relax and enjoy the panoramic view.<br />
One excellent innovation is a private entrance<br />
to the owner’s cabin from the main deck,<br />
while the other stairway fitted here leads to<br />
two guest cabins in the centre of the yacht:<br />
a double on starboard and a twin room portside.<br />
The full-beam VIP cabin is located towards<br />
forward and features an extension of<br />
the day <strong>area</strong>s. All the cabins have en-suite<br />
bathrooms, and the day head is on the main<br />
deck.<br />
The cockpit features a large teak table with<br />
seating for up to eight: a comfortable sofa<br />
and four foldable chairs, which can be stored<br />
in the base of the table. An elegant stairway<br />
to the right provides easy access to the flybridge.<br />
A second, smaller living-room has<br />
been created on the foredeck, with a teak table,<br />
six-seater sofa and sundeck.<br />
The sundeck can be shaded by an awning<br />
with easy manual opening, and the flybridge<br />
is surmounted by a fibreglass hard top. The<br />
special advanced shape of the hard top enhances<br />
the flybridge layout, providing shade<br />
from the sun‘s rays in the pilot station and<br />
small living <strong>area</strong>, which consists of two sofas<br />
and a teak table with seating for up to eight<br />
and is separated from the sundeck by a centrally-fitted<br />
whirlpool, which can be replaced<br />

In these times of economical recession to invest<br />

To stimulate the market, a new law was passed<br />
in May stating that buyers of property until the<br />
end of 2012 have the right to a 50 per cent discount<br />
on any capital gains profit made on the<br />
house when they come to sell. Plus, if buying a<br />
new construction, the IVA (VAT) will be charged<br />
at four per cent instead of the normal eight per<br />
cent, making buying on the island even more<br />

distributed evenly onto the ground through all the<br />
walls, instead of the load being borne only at given<br />
points. From a building physics point of view,<br />
the advantages lie in the walls, mostly made of<br />
aerated concrete blocks (YTONG), which regulate<br />
the indoor temperature. The cavities between<br />
the bricks and concrete blocks are insulated in<br />
such a way as to ensure an even transfer of heat<br />
through the wall, which prevents condensation<br />
and mould growth. The horizontal damp-proof<br />
barrier under all the masonry makes it impossible<br />
for moisture from the soil to penetrate.<br />

Rainer Hencke-Steiner and a range of highly<br />
reputable Spanish architects, all of whom have<br />
a proven track record of reliability, expertise and<br />

master craftsmen, and for the structural calculations<br />
required in building the company works<br />
with Keller, a firm of engineering consultants in<br />
Tübingen.<br />
