I will introducethe subject this week and get into instructions for each vegetablenext week. Back in the late 40s and early 50s on our farm mymother froze a lot of vegetables. We had a 20 cubic foot freezerand she kept it full with veggies and venison. Freezing ourbountiful harvest is an easy way of preserving our produce,but the foods will not keep as long. In freezing the organismsthat cause spoilage become inactive. However, they don’t die.<strong>The</strong> bacteria can’t grow as long as the produce remains frozen,but once it is thawed, they will begin growing once again. Youshould be aware of some changes in your vegetables beforeyou start freezing. Foods may become mushy when thawedbecause ice crystals cause damage in the cells of the foods.If you keep foods frozen for too long or if they are frozen inimproper containers (I recommend double bagging) it willcause freezer burn. This will cause the color and taste of thefoods to be changed for the worse. Such food is still safe toeat in this condition, but it is not be as appealing. You can also freeze in your canning jars, plasticcontainers (such as butter or cottage containers), aluminumfoil, plastic wrap, and freezer paper. You will need to allowfor the food to expand as it freezes, so be sure to leave plentyof space for this process. Not leaving this room for expansionwill cause your containers to leak in your freezer and makean icy mess to clean up later. Freezing Vegetables is muchlike freezing fruits, only you won’t be adding sugar. Insteadyou will be blanching them (heating in boiling water for 2to 3 minutes and then immediately cooling in cold water)before packing into containers and freezing. Blanching killsthe enzymes that age vegetables. Blanched foods will tastefresher when taken from the freezer. Submerging in cold waterstops the cooking process.You will need to leave a head space on some of yourvegetables.Some vegetables darken after they are cut, and to preventthis darkening you will need to use an anti-darkening agent. Anatural anti-darkening solution that can be used is a teaspoonof lemon juice to a quart of water.
