<strong>Rabbit</strong> Stew1 rabbit, cut <strong>in</strong>to 4 parts 1 No. 2 can tomatoesWater3 tablespoons sugar3 cups diced Irish potatoes 1 /4 pound butter or margar<strong>in</strong>e3 tablespoons m<strong>in</strong>ced onions 3 /4 cup catsup1 /2 cup chopped celery 2 tablespoons worcestershire sauce2 teaspoons salt 1 cup cream-style corn1 /2 teaspoon pepperPut the rabbit meat <strong>in</strong> a deep boiler and cover it with water. Cook slowly until the meat is tenderand ready to leave the bone. Remove the meat from the broth and set aside to cool. Add the nexteight <strong>in</strong>gredients to the broth and cook 10 m<strong>in</strong>utes. Pull the meat from the bones and chop it <strong>in</strong>tosmall pieces. Add the meat to the broth; simmer for 20 m<strong>in</strong>utes. Add the catsup, worcestershire sauce,and corn. If the stew is too thick, add a small amount <strong>of</strong> water. Season to taste.Barbecued <strong>Rabbit</strong>3 pounds rabbit meat, cut <strong>in</strong>to serv<strong>in</strong>g-size pieces Salt and pepper, to tasteFlour3 tablespoons vegetable oilSauce:<strong>Rabbit</strong> Recipes1 cup cider v<strong>in</strong>egar 2 teaspoons hot red pepper sauce1 teaspoon salt 2 tablespoons worcestershire sauce1 /2 cup vegetable oil 1 /4 teaspoon chili powder2 tablespoons brown sugar 1 cup tomato juice1 tablespoon paprika 1 /4 cup chili sauce or catsup1 teaspoon dry mustard 1 /2 chopped onionCayenne pepper, to tasteRoll the meat pieces <strong>in</strong> a mixture <strong>of</strong> flour, salt, and pepper. Heat the oil <strong>in</strong> a heavy skillet or roaster.Brown the meat on all sides over moderate heat, about 20 m<strong>in</strong>utes. Meanwhile, comb<strong>in</strong>e the <strong>in</strong>gredientsfor the sauce <strong>in</strong> a saucepan. Cover and cook over low heat for 15 m<strong>in</strong>utes; pour the sauce overthe meat. Cover the pan and bake at 325 o F until the meat is tender (about 45 m<strong>in</strong>utes). Uncover thepan and place it under the broiler. Broil 15 m<strong>in</strong>utes or until the meat is brown. Serves 6.Note: The sauce, when made without the vegetable oil, makes a good overnight mar<strong>in</strong>ade. This recipemakes about 1 1 /2 cups <strong>of</strong> sauce.14
