*Lime: I’m not sure if it is traditional or if it is my tradition to serve with a wedge of lime with each bowl ofPosole, but a squeeze of fresh lime juice over Posole at serving time wakes up the flavors and adds themost <strong>de</strong>lightful taste! You simply must try it!Simple Margaritas1 6 oz. can Frozen Limea<strong>de</strong> Concentrate, thawed6 oz. Tequila2 oz. Triple SecFill blen<strong>de</strong>r ¾ full with crushed ice. Pour in limea<strong>de</strong> concentrate, tequila and triple sec. Blend untilsmooth. Rim margarita glasses with wedge of fresh lime and dip into margarita salt or acombination of ½ salt and ½ sugar.Naturally, you can alter the taste of your Margaritas by using top shelf liquors and substitutingGrand Marnier for the Triple Sec. It’s all according to your preferences. You can add fresh limejuice if you like it tart and if it is too tart, you can add a splash of orange juice, which will take off thebite. You can also add partially thawed frozen raspberries or strawberries for fruity Margaritas!Mexican Salsa4 Cups Fresh Tomatoes, peeled, see<strong>de</strong>d and chopped1 Cup Green Onions, chopped (or red onion if you prefer)1 4 oz. can of chopped green chilies, undrained2 or more Jalapeno or Serrano peppers, chopped2 cloves Garlic, minced1 Tab. Freshly squeezed Lime Juice or more to taste½ Tsp.¼ CupGround CuminFresh Cilantro, chopped, or more to tasteSalt and Pepper to tasteCombine all ingredients and chill at least one hour.This is a very basic salsa, you can add chopped avocado, rinsed and drained canned black beans,roasted corn kernels, chopped jicama, chopped mango, etc.Guacamole2 Large, ripe Avocado, peeled and pitted1 Tab. Freshly squeezed lime juice¼ CupOnion, finely chopped1 clove Garlic, mincedSalt and Pepper to tasteOptional:1 Roma tomato, peeled, see<strong>de</strong>d, and chopped finely1-2 Jalapeno or Serrano chiles, see<strong>de</strong>d and chopped finelyMash up the avocadoes with a fork or mixer. Add the lime juice and blend well. And the remainingingredients, combining until you reach the consistency you prefer. <strong>For</strong> best quality, serveimmediately or cover tightly and chill until serving time.Happy <strong>Cinco</strong> <strong>de</strong> <strong>Mayo</strong>!!
