They check once again prior to processing in thecannery.We must emphasize that motivation for their fastidiousness isnot fear <strong>of</strong> exposure <strong>and</strong> ensuing penalties, so that the argumentmight be made that where pr<strong>of</strong>its far exceed penalties, they wouldtake the risk <strong>of</strong> using non-kosher fish.
