Mostappliances use R134a refrigerant, but are notgoing as cold as the <strong>Anti</strong>-Griddle. <strong>The</strong><strong>Anti</strong>-Griddle does not employ the use of liquidnitrogen or dry ice, which are much more volatileand dangerous to handle.How do I prepare the <strong>Anti</strong>-Griddle for use?We simply recommend a light coating of panspray or olive oil, applied and gently rubbed intothe surface prior to turning the machine on. Thiswill allow for more non-stick surface.Many chefs use parchment, plastic wrap or acetateto reduce freezing of product to the surface andallow for easy transfer and release.Small silicone molds will allow for rapid freezing ina variety of forms and shapes.What type of tools can I use on the <strong>Anti</strong>-Griddle?We commonly use a small, offset spatula. To avoidscratching the surface, a plastic or silicone utensilcan be used; however, it is not necessary. Minorscratches to the surface will occur over time withuse.
