RecipeCoconutRaspberrySliceIf you love coconut, you’ll love this slice! It’s quick and easy to make and uses cheap ingredientsthat are always in your pantry. It’s a favourite of ours, so we’d like to share it with you.Base:90g butter1/2 cup castor sugar1 egg1 cup plain flour1/2 tsp baking powder1/2 cup raspberry jamTopping:2 eggs1/2 cup castor sugar2 cups coconutMethod:Cream butter, sugar and egg in a bowl untillight and fluffy. Stir in sifted flour and bakingpowder. Spread mixture evenly over base ofgreased slice tray.Warm the raspberry jam in the microwave tomake it slightly runny and easier to spread.Spread the warmed jam over the base mixtureevenly.For the topping: In a bowl beat eggs lightlywith a fork.
