Anthony’s Out to Lunch
Cuba Libre Restaurant & Rum Bar
I’ve always wanted to visit
Cuba. Maybe it’s the allure of
the forbidden fruit since the
government imposed embargo
currently prevents us from drinking
Havana Club rum, smoking the
finest Cohiba cigars, or even dining
on any of the delicious cuisine.
Luckily for the American people,
many Cubans have made their way
to the United States to share their
culture with us. And lucky for me,
Cuba Libre Restaurant and Rum
Bar is just a short drive down the
Expressway to the Quarter at the
Tropicana in Atlantic City.
So when I awoke from
another one of my Havana
daydreams and needed a Cuban
fix, I made a couple calls and
headed out to the Trop. I took
one step into the Quarter with my
buddies, Charlie and K-Mo, and
immediately heard the Latin music
luring me in. Then, I smelled the
garlic and slow roasted pork and I
knew I was in the right place.
When our server, Grecia,
came to the table I was already
putty in her hands. I would have
ordered anything she suggested.
Thankfully, she was well-versed
in the menu, and became the tour
guide on our culinary journey.
First, she suggested we start with
a couple of cocktails. I sipped
my way through a magnificent
Mojito Aniversario ($12) made
with Bacardi Solera Rum, Grand
Marnier, juice from raw sugar
cane, an aromatic herb called
hierba buena, fresh lime juice,
and a splash of soda water. K-mo
ordered a Grilled Pineapple
Mojito ($11), while Charlie threw
down the Housemade Caipirinha
Infusion ($10). (Pronounced Kai-
Pee-Reen-Ya). The tasty beverages
were so refreshing and a little too
easy to drink.
But then we encountered a
problem. Every item on the lunch
menu sounded so fantastic that
we had no idea what to order. Our
savior, Grecia, stepped in again
and told us not to worry. We could
order a combination off of the
small plates and share everything.
That young lady is a true genius!
We followed her advice and
started by ordering a selection of
three different accompaniments
from the Mariquitas Cubano
section ($11). We chose Black
Bean Hummus, Haitian Eggplant
Spread, and the Mushrooms
Escabeche. The dips were served
with crispy fried plantain,
malanga, and yucca chips. The
different combinations made for
a fun way to start off the meal.
Forget potato chips, now I want
fried malanga, with a side of black
bean hummus for lunch every day!
Next, we chose three small
tasting plates from the Piqueos
section ($15). The Cesar de
Orient was crispy spring rolls of
spicy chorizo and shrimp piled
above a roasted garlic-Caesar salad
with a crumbled Cotija cheese.
The Albondigas were sweet glazed
meatballs made with beef, pork,
and pine nuts resting above a
pickled carrot and cilantro slaw.
But my absolute favorite starter
was the Camarones a la Parilla —
which were a skewer of Cuban
pesto-marinated, grilled shrimp,
with white sweet potato chips, and
served over an arugula salad with
a lemon-vinaigrette — simply
legendary dish.
Shortly after our appetizer
party finished, the entrees
arrived. Charlie devoured Mama
Amelia’s Empanadas ($20). The
four different deep fried pastries
contained a mixture of (1) ground
beef, olives, and raisons, (2)
hand-chopped chicken, corn,
sweet peppers, and Monterey
Jack cheeses, (3) shrimp, creamy
spinach, and pine nuts, and finally,
By Anthony Previti
(4) pulled pork, roasted poblano
peppers and charred tomatoes.
Who wouldn’t be happy with that
deep fried variety show?
K-Mo loved his Guava
BBQ Rib Sandwich ($13). The
shredded pulled pork was perfectly
tender. The guava added a subtle
sweetness, yet was balanced by the
heat of the jalapenos. The meat
was topped with a creamy slaw and
sandwiched by a toasted sesame
brioche roll. He looked like a kid
on Christmas as he chomped his
way to barbecue heaven.
As for me, there was never
any doubt that I would order the
El Cubano sandwich ($16.5). The
classic pressed Cuban sandwich
is layered with a sour orange
marinated pork loin, Genoa salami,
ham, melted provolone and Swiss
cheeses, and slathered with a
mustard-pickle relish. This badboy
is one of the best sandwiches
ever created. It’s meaty, cheesy,
mustardy, and on crispy bread.
Every daydream should end with a
sandwich like this …
As you can see, Chef
Guillermo Pernot’s recent trips
to Cuba have inspired some
adventurous new items on the
menu at Cuba Libre. Hopefully,
some day the embargo will be lifted
and we all can see and taste firsthand
the wonders of Cuba. Until
then, just take a trip to Cuba Libre
and enjoy a daydream of your own.
