a taste of europe celebrating five years of the Center for European Studies
For information about A Taste of Europe contact the Center for European Studies University of Florida Box 117342 Gainesville FL 32611-7342 (352) 392-8902 Acknowledgements It is nearly impossible to assess how many hands, hearts, and brains helped to bring this cookbook to fruition. It was our first project of this scope and magnitude. The Director of the Center for European Studies, Dr. Amie Kreppel, introduced the initial concept. CES Outreach Coordinator, Gail Keeler organized and edited the project with substantial assistance from Brano Kovalcik (Academic Programs Coordinator and Petia Kostadinova (Assistant Director). We are indebted to our student assistants who did much of the networking, background research, editing, and organization of material. They are: Jessi Axe, Georgia Bianchi, Magda Giurcanu, Edward Grodin, Evgenia Ilieva, and Caleb Kizelewicz. Some faculty and staff were so enthused about the project that they roped others into giving a recipe or helped to authenticate recipes. Thanks to: J. Robert Buchler, Yvette McKinney, Holly Raynard, Ronald H. Schmidt, Zachary Selden, and Maria Skirk. One of the reasons this book is so visually appealing is due to the fortitude and creative thinking of our wonderful graphic designer, Jane Dominguez. Jane is the Senior Art & Publications Production Specialist for the University of Florida College of Liberal Arts and Sciences Communication & Outreach Department. We went to her with just an idea. She helped us turn it into a reality and stuck with us through all the revisions. Special thanks to our support team: Pat Bartlett, Alex Burak, Tom Kostopoulos, Felissa Scott, and Ewa Wampuszyc. We are most grateful to our 50 contributors who shared family recipes and cultural information in addition to translating and converting their own recipes. Financial support for the production of this cookbook came from the US Department of Education through the Title VI program, and the College of Liberal Arts and Sciences through its continued support for the Center for European Studies. We are also grateful to Bob Morales at Drummond Press, who made it possible for us to print the cookbook the way we imagined.
