Editor’s Letter<br />

Changing times<br />

I love to watch for the cues from nature that tell us<br />

that the season is changing. The falling of autumn<br />

leaves signals that summer is behind us and that<br />

it’s time to think about winter holidays and the<br />

variety of opportunities that are available. We<br />

have pondered the changing face of luxury travel<br />

before, but now we see that it is becoming more<br />

about embracing ‘uniqueness’ - and this can be<br />

construed in many different ways. So, that is what<br />

we at <strong>LUXURY</strong> magazine are on the continual search for - something different,<br />

something unusual, something truly memorable.<br />

In this issue we travel to Jordan and visit the ancient ruins of Petra, travel<br />

by train on the privately owned Indian Maharaja and explore the cuisine<br />

temptations within the amorous city of Paris.<br />

We also reveal the unexpected diversity that is found in Macau, give a first<br />

hand account of Singapore Airline’s first class and visit Samoa’s Sinalei<br />

Reef Resort & Spa through the eyes of a volunteer who recently went to help<br />

rebuild the beachfront gardens that were destroyed after last year’s tragic<br />

tsunami.<br />

This issue also signifies a change with regard to our retail travel partner, which<br />

is now United Travel. We welcome all our new readers and are excited by this<br />

change that will lead <strong>LUXURY</strong> magazine on a new and exciting passage. Our<br />

It’s a wireless world these days, and<br />

soon you’ll be able to download videos<br />

to your laptop in mid flight. A new<br />

service called Gogo video is primed for<br />

take-off this year.<br />

It will work a little like the iTunes Video<br />

Store, with users able to tap into the<br />

plane’s on-board WIFI to download TV<br />

shows and movies. The files will remain<br />

available for viewing for up to 24 hours,<br />

so you can press play, stop and pause<br />

to your heart’s content.<br />

Five star luxury coming to Tonga<br />

We all know what a friendly and<br />

delightful place this corner of the Pacific<br />

is. Now the island group is about to get<br />

Jordan<br />

The fascinating world<br />

Story : Melanie Hawkins. As our plane touched down in Amman, the capital<br />

of Jordan, I was brimming with eagerness to immerse myself into this country.<br />

Intrigued by what I had read about this land, so steeped in ancient history I was<br />

keen to experience it all first hand.<br />

We met our driver and soon were on a journey through the countryside. I<br />

had expected a relatively barren landscape but was surprised at the presence<br />

of numerous orange and olive groves as well as rows of grape vines. More<br />

temperate than its other Middle Eastern neighbours, there is definitely a<br />

significant Mediterranean feel to the landscape.<br />

As we meandered into an old town called Madabar, we were astounded to find<br />

a 19th century Greek Orthodox church called St. George. The town itself has<br />

historically significant Byzantine era mosaics, with the most famous one being<br />

the mosaic map inside the church. Unearthed in 1864, the mosaic was once<br />

a complete map with 157 captions (in Greek) of all major biblical sites from<br />

Lebanon to Egypt. The mosaic work was completed in 560AD and was originally<br />

made up of more than two million pieces. Unfortunately only about one third of<br />

the piece has survived through time but it is still a remarkable work of art.<br />

While in Madabar, our driver bought for us some freshly cooked falafels - crisp<br />

on the outside yet so light on the inside - a delicious staple food found in this<br />

part of the world and a wonderful start to our immersion into the local cuisine<br />

and culture.<br />

Our journey continued onward through more rocky and barren terrain, past<br />

goats and camels grazing on their fodder and the intermittent traditional-styled<br />

concrete houses. Our first stop was the Dead Sea and our initial glimpses were<br />

from a vantage point high above. A misty pinkish haze hovered above the<br />

opposing mountains of Israel that border the far shore. This land-locked body of<br />

water is 80km long and sits as the lowest water mass on earth at 410m below<br />

sea level. An impressive marvel of nature and popular destination for people all<br />

over the world to visit - seeking the health benefits of the water and mud so rich<br />

in minerals like magnesium, sodium, potassium and bromine.<br />

Perched on Zara Cliff overlooking the sea, it captures the<br />

historical story of the area, the impact of humanity and the<br />

efforts underway to save this endangered sea. Since 1998,<br />

the sea has been dropping on average by 1m per year and<br />

talks are in place to rectify this through a joint agreement<br />

between Jordan and Israel. The survival of the sea is pertinent<br />

to Jordan in so many ways.<br />

We arrived at one of the beaches and observed at first<br />

to see how people handled the ‘floating’ phenomenon,<br />

made possible by the extremely concentrated salt content.<br />

Enthusiastic to try it for ourselves, we discovered it was<br />

indeed incredible. The water felt quite silky on our skin and<br />

the tiniest drop of it on our tongues confirmed the super<br />

intensity of the salt. There was a strong breeze causing waves<br />

to form so we couldn’t take the popular photo of one reading<br />

the newspaper while relaxing buoyantly upright – but that<br />

didn’t matter. The fact was that we were there and savouring<br />

every minute of this unusual experience.<br />

Day two had us rising early for the continuing drive South to<br />

the ancient city of Petra. This busy town made famous from<br />

the Hollywood movie ‘Indiana Jones and the Last Crusade’<br />

is the gateway to the ancient ruins of the once thriving<br />

metropolis of Petra. Just as we arrived, the temperature<br />

dropped to 9°C and it began to rain. We arranged our guide,<br />

who promptly told us how happy he was to see the rain. He<br />

went on to say that it only rains twice a year in Jordan and<br />

today was one of those days. He assured us that Petra is very<br />

beautiful in the rain.<br />

More than 2000 years ago the nomadic Nabataean people<br />

from Arabia settled in Jordan and made Petra their capital.<br />

Highly skilled traders, they conducted business from afar as<br />

China and India through to Egypt, Greece and Rome. Petra<br />

became a prosperous trading post and impenetrable from<br />

attack due to the narrow siq (meaning gorge) entrance on<br />

one side and a large mountain range bordering the other.<br />

The Romans, and many other cultures, also had influence on<br />

the city and you can see evidence of this in the architecture<br />

and carvings.<br />

The walk down into the heart of Petra really sets the scene<br />

for what is further ahead. You first pass through a wide valley<br />

in between pale sandstone hills – in Arabic it is called bab-assiq<br />

(gateway to the gorge). This leads to the siq – the natural<br />

break in the rock where the towering sandstone cliffs sweep<br />

and flow with ease and all the way two water systems can<br />

be noticed running along the walls. These first signs of early<br />

innovation as well as life size camel carvings provide a look<br />

back to the time where the city existed on a thriving trade<br />

made possible by the camel. In Nabataean times, weary<br />

traders would pull in with their dusty caravans overflowing<br />

with exotic textiles, aromatic spices, heady-smelling perfumes,<br />

frankincense and myrrh. These days, horses pulling chariots<br />

travel at high-speed through the canyon, barely brushing<br />

past us in areas where the pathway narrows.<br />

But if the sheer magnitude of the siq isn’t awe-inspiring<br />

enough, the first glimpse of what is termed ‘The Treasury’<br />

had a strong emotional impact on me. We first catch a<br />

glimpse through the rock faces then we suddenly emerge<br />

into an open area with this grandiose structure rising so<br />

majestically above. It was nothing short of breathtaking -<br />

the workmanship, the symbolism and meticulous design<br />

elements have all been so carefully preserved - you could just<br />

stand there all day admiring this truly palatial edifice.<br />

Wandering further down into the central part of the city<br />

where local Bedouin sell their wares as well as ‘transport’ by<br />

donkey and camel, I can’t help but cast my mind back to past<br />

millennia’s where the traders would conduct their business.<br />

There is so much to explore and there is still about 80% of<br />

the city still to be uncovered. Another of the more spectacular<br />

facades is that of the Monastery. It is quite a climb – 900 steps<br />

cut out of smooth rock lead to a place of great sacredness.<br />

Like the other structures, it is beautifully carved although<br />

less decorative than The Treasury. Towering upward toward<br />

the brilliant blue sky, the magnitude is intense – even the<br />

doorway is several storeys high.<br />

They say the best time to view Petra is early morning or as the<br />

sun sets. This is when the light cast onto the pink coloured<br />

rock makes the ancient structures radiate a rose colour, and<br />

hence the name ‘The Rose City’.<br />

As we wander back through this forgotten city I feel fortunate<br />

to be able to see and experience it all first-hand. On the drive<br />

back to Amman I confirm with myself my ever-increasing<br />

aspiration to keep exploring the earth’s forgotten worlds.<br />

Six Senses Evason Ma’In<br />

Dead Sea, Jordan<br />

Set in an oasis-like valley below commanding mountain-sides, Melanie Hawkins experienced<br />

the hospitality, cuisine and spa at this property recently revamped and re-opened as Evason<br />

Ma’In, and part of the Six Senses group.<br />

It’s not often you find a resort located in one of the worlds most<br />

breathtakingly beautiful and spiritually significant locations.<br />

We caught our first glimpse of Evason Ma’In set many metres<br />

below us on the winding road we were navigating from the<br />

mountainous terrain above. A series of signs indicating how<br />

many metres we were below sea level (the final one being<br />

264m) confirmed that we had arrived at the oasis that would<br />

be our relaxation place for the next few days.<br />

Evason Ma’In has a dramatic backdrop with the key attraction<br />

and focal point being Hammamat Ma’In – the naturally<br />

heated waterfalls ranging in temperature from 65˚C at the<br />

top to 40˚C in the bathing pool. King Herod from Biblical<br />

times is said to have frequented these healing springs and<br />

even built a villa near by.<br />

The Six Senses founders identified Ma’In and its benefits and<br />

set about reconfiguring and transforming the existing resort<br />

so that it bore their philosophy as well as their signature look<br />

and feel. The ambience is completely in sync with the feel of<br />

the environment from the lobby through to other areas like<br />

the Brown Bar terrace, where low-lying tables are surrounded<br />

by generous numbers of comfy cushions under the shade of a<br />

leafy tree and latticework overhead.<br />

The rooms are styled as you would expect with a Six Senses<br />

property – lots of wood and other natural earthy textiles<br />

accented with colourful cushions. Spacious and not overbearing,<br />

the outlook to the waterfall or desert is a highlight.<br />

Our suite had two generously sized rooms each with<br />

ensuites. The master bedroom’s bath was positioned to<br />

overlook the vista of gardens and the river that flows past<br />

the spa complex below.<br />

The temperature was quite mild during our stay in November<br />

so open windows were opted for over air conditioning.<br />

This also allowed for the energising sound of water falling<br />

several metres to the rocks below – a definite feature of<br />

the location.<br />

Wandering down to the base of the waterfall there is a rock<br />

ledge where towels and bottles of cool water are laid out.<br />

It’s an unusual sensation to dip ones feet into a warm stream<br />

then tip-toe across avoiding the really hot pockets of water<br />

flowing past to eventually stand under the cascading torrents<br />

of warm water – quite a contrast from the heart-stopping<br />

plunge into New Zealand’s crisp streams and waterholes. The<br />

natural hot-water spring spurts out 65˚C water into a small<br />

catchment area that flows down a large waterfall and into<br />

a number of natural rock pools. Once here, the water cools<br />

down. The net result is water that is around 30-45˚C in the<br />

lower pools. It’s an incredible experience. This waterfall’s<br />

natural minerals combined with those found in the Dead Sea<br />

inspire the spa’s menu of treatments and products.<br />

Another highlight of Evason Ma’In is the spa. The Six Senses<br />

Spa ethos is one we have come to love over the years. It really<br />

takes spa culture to the next level where your inner soul is<br />

blessed for it. What we found really interesting though is that<br />

the Ma’In spa experience is heightened even further. This is<br />

largely due to the fact that it is set around another warm<br />

waterfall and guests can enjoy a soak pre or post treatment.<br />

A cave carved out of the rock exudes steam and if you can<br />

bear the intense heat. There are therapeutic benefits plus<br />

the added novelty of being in a naturally created steam cave<br />

rather then a man-made one. While soaking in the mineral<br />

pool, an attendant brought me a delicious berry sorbet and<br />

later a ginger tea and assorted dried fruit and nuts.<br />

Six Senses have developed a philosophy entitled ‘SLOW LIFE’.<br />

At the spa, treatments are in-tune with this and allow the<br />

body and consequently the mind to slow down, unwind and<br />

begin to accept a pace of life that is at ease and accepting<br />

of ‘just being.’ Using high quality, chemical free, indigenous<br />

ingredients, spa experiences combine Dead Sea salts and<br />

mud, organic Jordanian extra cold-pressed virgin olive oil,<br />

fresh olives, ripe dates and the therapeutic thermal waters of<br />

the Ma’In hot springs.<br />

The dining options are quite extensive and include: ‘destination<br />

dining’ in locations like the cliff top overlooking the waterfall<br />

or the dramatic desert; authentic zarb experience in-line with<br />

Bedouin tradition, which is set outdoors under olive trees;<br />

dining in the wine cellar or at the Chef’s table with a specially<br />

prepared and customised menu.<br />

We experienced a special evening in the cellar where Chef<br />

Hamzeh Foul treated us to some delicious dishes including<br />

spicy hummus foam, deconstructed lasagne with scallops and<br />

almond balsamic dressing. Accomplished Sommelier Jumat<br />

Mamat wine matched every dish with ease. We enjoyed<br />

sampling some local Jordanian wine to complement our food<br />

and savouring the delicate flavours.<br />

There is also Senses of Arabia for a fine dining exotic Middle<br />

Eastern experience and a cultural food infusion, or Panorama,<br />

located overlooking the Dead Sea with spectacular sunset<br />

views across to the twinkling lights of Jerulsalem. Here, you<br />

can sample Arabic tastes with a hint of Lebanese style.<br />

Breakfasts are very memorable at Evason with an extensive<br />

array of options – several cooking stations, each uniquely<br />

different (for eggs, omelettes, pancakes and so on), local and<br />

international dishes, all with health and well-being in mind.<br />

For example, innovative juices and condiments including bee<br />

pollen granules to sprinkle over cereal or toast! Although<br />

essentially a buffet, it doesn’t really feel like it as so much of<br />

the selection is cooked personally for you and a lot of care<br />

and attention has been given.<br />

No oasis would be complete without an outdoor cinema!<br />

And this outdoor cinema is set in a truly unique spot. Near<br />

the bottom of the valley with massive rock hills either side<br />

lies a small flat area that the hotel staff transform into a<br />

fascinating movie-going experience. As the flickering lights<br />

from the screen light up the massive natural formations<br />

around you and the stars twinkle in the intensely dark sky<br />

above, you can’t help but feel like you’ve stumbled across<br />

something very special.<br />

There is a lot to do at Evason Ma’In, but not in a way that is<br />

going to stress you out but rather chill you out. It is all about<br />

‘just being’ and enjoying the Jordanian landscape and the<br />

well-being benefits of this interesting place.<br />

A running tour appeared like the perfect way to see Rome.<br />

Evading the traffic, avoiding the queues and getting a<br />

workout at the same time are the benefits of the sightjogging<br />

experience. Though at 7am, when the sweet scent<br />

of freshly-baked pastries wafts through the lobby of the<br />

Kolbe Hotel, I am questioning my decision. And when<br />

my running guide Pasquale offers an initial disclaimer to<br />

suggest that Rome’s modern day version of gladiatorial<br />

battle is known as road rage, the late morning tour bus<br />

seems like a good option. “Rome is not runner friendly, it’s<br />

really hostile,” Pasquale says as we make our way out of<br />

the hotel. “Let’s try whenever it’s possible to stay close to<br />

the sidewalks.”<br />

Rome is such a feast of historical monuments that after<br />

only two minutes we were bypassing the Mouth of Truth<br />

(Bocca della Verita) – the giant coin-shaped mask. It is now<br />

a tourist photo-spot because of its mythical reputation as<br />

a lie-detector, biting off the hand of those liars who dare<br />

place their arm into its mouth. “The real origin of this mask<br />

is that it was an entry point for the sewerage of the town,”<br />

Pasquale cautions with his take on Roman history. “Think<br />

twice if you want to stick your hand into it now.”<br />

Amazingly Rome had barely woken so the roads and<br />

footpaths were nearly vacant as we made our way from<br />

Tiber Island to the Teatro Marcello and Piazza Venezia<br />

inside the first 12 minutes. “Let’s cross even though it’s<br />

not allowed here, let’s do it the Italian way,” Pasquale<br />

says while cutting a path towards the Trevi Fountain. He<br />

has been taking sight-jogging tours for six months after a<br />

chance meeting with the franchise’s owner. “Since I am a<br />

runner and I love the town I found this very interesting and<br />

intriguing. Even for someone who lives here it’s a great way<br />

to discover some corners of the town that you never go to<br />

otherwise.” His refreshing spin on Rome history is a good<br />

distraction from the running as we breeze past postcard<br />

icons like Trevi Fountain and the Spanish Steps in the first<br />

30 minutes. A polite wave is all I have time to offer the<br />

Pope as we bypass the Vatican to take in other areas that<br />

have recently been used as backdrops in the film Angels<br />

and Demons, including Piazza Navona.<br />

Despite Pasquale’s enthusiasm for running, I am not convinced<br />

I am ‘sight-jogging’ or rather that I am the sight that is jogging<br />

in Rome. As we saunter pass the awakening cafés, locals look<br />

over their morning espresso with glances of ‘are you crazy’.<br />

“The running culture in Italy is developing, but not really truly<br />

established yet,” he explains. “We are getting, nowadays,<br />

more events and more running competitions.”<br />

By the time I return to Kolbe Hotel, I’m feeling better than<br />

expected having ticked off several must-sees all within an<br />

hour. With a view of the Roman ruins on Palatine Hill from my<br />

bed, I don’t need to lift another foot for at least a few hours.<br />

Well, unless it is to sample some well-earned pastries.<br />

Truffles in Tuscany<br />

“Is there a train station in Borgo San Lorenzo?”, the Italian<br />

train station attendant quizzes me, the tourist. This is<br />

reassurance my destination in the emerging Tuscan area of<br />

Mugello will offer Italian serenity; even the locals are unsure<br />

where it is. In addition to an escape from the tourist path, the<br />

Mugello also happens to be one of the few locations in the<br />

world where the elusive white truffle can be unearthed.<br />

Country resort Monsigor della Casa offers the chance to<br />

experience the bliss of the Italian countryside and a range of<br />

local activities including a truffle hunt on its 200ha property.<br />

In addition to several villas and apartment buildings for<br />

guests, the property sits adjacent to the 16th Century estate<br />

of Giovanni della Casa, who is attributed with writing one of<br />

the first books on etiquette. Though perhaps more fortuitous<br />

nowadays is that the grounds outside his former residence<br />

happen to be the area where the truffles can be found.<br />

Our search for Tuscan riches is led by the resort’s welcoming<br />

owner Alessio and Gianni, a truffle expert. Gianni has bred his<br />

dogs to specifically hunt truffles, which took years of training.<br />

Despite the dogs not being traditional truffle hunting breeds,<br />

Gianni believes they have a more focused scent. The dogs are<br />

initially set free in an area away from the truffles so they can<br />

expend some energy before the serious work begins.<br />

Our hunting is technically pre-season as I’ve arrived before<br />

the peak period of mid-October, though after ten minutes<br />

Alessio is apologetic that we have not already found a haul<br />

of truffles. What impacts on the truffle is how much it rains<br />

in July and August, he says. If it is too dry in July and August<br />

then there will be fewer truffles. “The good thing about<br />

looking for truffles is at least if you don’t find truffles you get<br />

a nice walk,” Alessio adds. But he didn’t need to appease me,<br />

as it took only a few minutes more for the first truffle to be<br />

found. It was one of the more common black varieties and<br />

the size of a walnut.<br />

Shortly after that, the second, third and fourth truffles are<br />

found, but still no white.<br />

“People in Australia, Italy and France have been able to<br />

farm the black truffle, but nobody has been able to farm<br />

the white truffle. That’s what makes it so special,” Alessio<br />

says. However, the towering trees, moist climate and Tuscan<br />

terrain are all believed to be clues to the mystery of where<br />

white truffles are found.<br />

As if perfectly scripted for a movie, our canine hunters scour<br />

the remaining ground to uncover a white truffle, even if it is<br />

a small sample. It is barely white, almost yellow or golden on<br />

the outside. Its pungent earthy smell is stronger than the black<br />

truffles we had found. After 30 minutes the dogs have combed<br />

the area and uncovered enough for tonight’s dinner.<br />

A marriage between fried eggs and truffles is the locals’<br />

preferred way to experience the delicacy. However, the chef<br />

has something else in mind and delivers truffle shavings over<br />

grilled provolone cheese. This is a taste of the Tuscan lifestyle<br />

that won’t be forgotten anytime soon.<br />

Sphinx, pyramids, pharaohs and mummies all evoke vivid<br />

images of ancient Egypt. But so should a sip of cool frothy<br />

beer or a bite of warm crusty bread, because it is said both<br />

are credited to the inventive genius of ancient Egyptians: an<br />

unnamed brewer and an equally obscure baker. Perhaps it is<br />

from the land of Egypt that the expression “the sands of time”<br />

originates; it would be entirely appropriate.<br />

My home for the next four days from Luxor to Aswan was<br />

aboard the Steam Ship Sudan, an authentic steam ship built<br />

at the dawn of the 20th century. My cabin on the starboard<br />

side in the prow (that’s the right hand side at the pointed end<br />

of the ship) was more like a hotel suite and far bigger than the<br />

cabins I’d been used to at sea as a young man in the navy. The<br />

décor seemed frozen in time with its retro, classic and refined<br />

charm, and large bay windows opening onto the Nile breeze.<br />

First stop: Luxor and a visit to the temple of Karnack, the<br />

temple of Amon Ra, and the temple of Luxor, one of the most<br />

majestic because of its suspended mosaics. That was enough<br />

of the Temple thing for me… now to find food. After asking<br />

around, I found myself in a local souk (market) just north of<br />

the Luxor Temple. It was full of the smell of spices, fresh fruit<br />

and vegetables and stall holders bartering their wares with<br />

the locals. Tolerance and good humour is required as every<br />

Egyptian has a special price for you.<br />

Sofra Restaurant, an old Arabic word that means dining<br />

table and is a synonym for generosity, can be found not far<br />

from the railway station on Mahameed Farid Street. Mezzes<br />

traditional dishes like baba ghanoug (roasted aubergine,<br />

sesame oil, lemon, parsley and garlic) with tahina dip and<br />

served with a glass of chilled fresh pomegranate juice - ‘good<br />

for the prostate’. Foul moudamas (dried fava beans cooked in<br />

tomato with garlic and olive oil) was perfect. But the dish that<br />

really was sensational was the hamam mahsi pigeon stuffed<br />

with rubbed wheat, onion and fresh herbs then chargrilled.<br />

Next was roz bil haleeb - a traditional rice and milk dessert<br />

with rose water syrup and a sprinkling of nuts. To finish, a<br />

Next day it was off to the Necropolis of Theban, the valley of<br />

Kings and Queens, and a visit to the temple of Ramsey the<br />

Third of Medinet-Habou… all of which can only be described<br />

as – well there are no words. Dinner that night was aboard the<br />

Sudan; gentleman in black tie and ladies in evening gowns, the<br />

Champagne flowing like the Nile. Dinner was wonderful with<br />

a selection of cold and hot mezzes to start with - split lentil<br />

salad, torshi (pickled and preserved vegetables), flat breads,<br />

yoghurt cucumber dill and mint dip, gebna bil tamten (fresh<br />

white cheese), sambousa which is crispy pie filled with various<br />

fillings and ta’mia patties made from white beans. Our table<br />

of four shared the tagin lahma bil kawerma veal and pearl<br />

onion with red peppers and garlic. This was a more refined<br />

version to the traditional tagine where the bones and skin are<br />

left in the dish. To finish - sweet cardamom infused coffee.<br />

Later, we tied up alongside Aswan, Egypt’s sunniest southern<br />

city. With a distinctively African atmosphere, it’s small enough<br />

to walk around with the most beautiful setting on the<br />

Nile. El-Dokka Restaurant, located on a small island behind<br />

Elephantine and reached by a five minute ferry ride, was<br />

the local recommendation for dinner. The restaurant is a bit<br />

touristy but the fish and lamb tangerine were excellent. Just<br />

don’t forget to tip the ferry man on the return trip, he gets<br />

very grumpy if you don’t. Great local food can also be found<br />

at the many restaurants along the corniche.<br />

After four days sailing, the Nile is at its most beautiful here<br />

in Aswan with its banks of emerald green, islands covered in<br />

palm trees and tropical plants flowing through desert sands.<br />

No one has torn down sphinx or pyramids in order to erect<br />

skyscrapers in Egypt. In some other parts of the world they<br />

have placed little value on the past erecting edifices to praise<br />

the gods of wealth, yet Egypt remains, as always, a land and<br />

a people quietly aware of their ancient roots but absorbed<br />

in their daily tasks, all carried out with typical Mediterranean<br />

disdain for time, bustle, or punctuality.<br />

It was dark and it was raining, the warm tropical shower woke<br />

me from my plane induced slumber. It helped this Palagi to<br />

acclimatise to the tropical heat. It was delightful. Sam, one<br />

of the friendly resort tour guides, had delivered me safely<br />

from the airport. I had arrived at a deserted. I was quickly<br />

shown to my garden falé as the rain began to increase in<br />

intensity. The fale had been well prepared for my arrival. The<br />

air conditioning was on and the bed was turned down – it is<br />

always the little things that count most.<br />

I knew I was near the ocean as I could hear the waves crashing<br />

on the reef. They sounded close, almost too close. It was an<br />

uneasy feeling in light of the tragic tsunami that had raged<br />

havoc on this pristine coastline only four and a half months<br />

earlier. And that was the reason I was here.<br />

So after a fretful but very comfortable night I woke to a<br />

glorious tropical morning, still warm but refreshingly cool<br />

at this early hour. My fear had been completely unnecessary<br />

– there was no obvious sign of any tsunami damage what<br />

so ever.<br />

From a design perspective the gardens were thoughtful and<br />

also thought provoking. The contrast of fine and coarse<br />

textures, pointed and arching habits, form and flowers.<br />

Coconut Palms, Traveller’s Trees, Lipstick Palms, Screw Pines,<br />

Frangipani, Cordylines, Philodendrons, Gingers, Heliconias,<br />

Hibiscus and so many more delightful tropical plants all<br />

positioned for maximum effect. Everywhere I looked I<br />

appreciated what I saw. Within moments I could tell that<br />

whatever work I was to do would have a lot to live up to.<br />

I continued walking towards the sound of the ocean. I took<br />

one step too far - my paradise was lost! There is literally a<br />

line that demarks the extent of the wave. Above it life is<br />

beautiful, life is normal but below it there is damage, huge<br />

damage. The majority of Sinalei Resort is built on the hill and<br />

survived intact but what was on or near the beach was a total<br />

write-off. This included The Presidential Suite, the Island that<br />

“Frangipani, Cordylines, Philodendrons,<br />

Gingers, Heliconias, Hibiscus and so<br />

many more delightful tropical plants all<br />

positioned for maximum effect.”<br />

I think it is very important at this point to note that no<br />

guests were hurt at the resort. The resort’s tsunami / disaster<br />

warning system was activated by the staff in plenty of time.<br />

Sad as the events were on that terrible morning, the resort’s<br />

management had been sufficiently prudent to install this<br />

system some time before. Having seen what I saw and having<br />

been told about the alarm system I felt relaxed and very<br />

comfortable for the rest of my stay. In geological and tsunami<br />

terms there is probably no safer beach to be relaxing on than<br />

on this one, as repetitive tsunamis are rare in the geologic<br />

record and separated by many centuries or millennia.<br />

I had, like many before me, volunteered my services. Sinalei<br />

Reef Resort & Spa is the backbone of the local economy.<br />

The best way to help was to volunteer as I believe that the<br />

sooner the resort reopens the sooner the local economy<br />

will bounce back. As a Landscape Designer I wanted to<br />

help restore the natural beauty that once abounded on this<br />

The more I walked the more surprised I became. The stunning<br />

pool (well pools really) were carved naturally into the gardens<br />

and led to the giant Samoan falés (traditional meeting<br />

houses) which turned out to be the main bar and restaurant.<br />

It was jaw-dropping. You really have to see it for yourself! I<br />

The owners, a truly remarkable Samoan family, have taken<br />

this opportunity to re-develop the resort into one that sits<br />

comfortably on the world stage, where guests expect quiet<br />

distractions like hot rock massages in a private beauty falé<br />

lapped by the high tides of the South Pacific and private flame<br />

lit dining at the end of a long jetty over the sparkling reef.<br />

Unlike many resorts, both large and small, that I have stayed<br />

at, here at Sinalei the atmosphere was happily infectious.<br />

Although there is an underlying feeling of sadness the<br />

outlook is very positive. The attitude of the staff, (they are<br />

all friendly, willing and able), along with the tropical climate,<br />

traditional architecture, delicious food, striking gardens and<br />

a cool cocktail or two make a very tangible atmosphere that<br />

makes you, when all is said and done, sad to leave.<br />

Even though the restaurant was only set up to cater for a few,<br />

the food was excellent. The resort’s new Chef and Food &<br />

Beverage manager, Ernst and Pim are a husband and wife team<br />

who are Dutch/Indonesian and Thai. They work exceptionally<br />

well together. The food and service is exquisite.<br />

from the boat and taken straight to the kitchen. Fresh is best!<br />

The sirloin steak was great as were the lighter lunch options.<br />

Breakfast was also a highlight. I had never tasted a proper<br />

palm ripened banana before – wow!<br />

I successfully got the re-landscaping started and hopefully<br />

I have left some designs upon which the management and<br />

garden team can build. When the resort is once again open<br />

to the public it will be Samoa’s finest and probably one of<br />

the Pacific’s best value for money high-end resorts. It would<br />

make the perfect honeymoon destination with great food,<br />

great accommodation at very fair prices, lovely people, great<br />

service and a wonderful, safe setting with some of the most<br />

impressive gardens I have ever seen.<br />

I am not a journalist and I am not receiving any reward for<br />

writing this yet I have travelled to 80 plus countries by hook<br />

or by crook, by various means and with various means from<br />

the shallowest to the deepest of pockets and strange as it<br />

may sound and sad as it was, the tsunami has made this a<br />

better and a safer place to spend your well earned holiday<br />

dollars. I would be very surprised indeed if you did visit Sinalei<br />

(as you should) and not go back for a second holiday some<br />

time in the future. I know that I will go back soon and keep<br />

going back. Life, and holidays in particular, are too short to<br />

be disappointing.<br />

10.10pm. After a long but comfortable flight, we step out<br />

of the airport into the steamy Bangkok night. We’re tired but<br />

happy to be here - now all we need is a soft bed and a plush<br />

hotel room. Accommodation has been booked in the Heritage<br />

Baan Silom and an air-conditioned taxi is waiting to whisk us<br />

there. Bliss!<br />

7.00am. The tropical morning reveals our hotel as a low-rise<br />

colonial-style building in the heart of the Silom shopping district.<br />

The architecture and décor evoke a bygone era but the facilities<br />

are ultra-modern. There’s even a Starbucks in the shopping<br />

arcade (though that’s not exactly why we came here).<br />

8.10am. We’re huge fans of Thai food, and surprisingly energetic<br />

after our late-night arrival. The famous floating markets sound<br />

like a great way to spend a few hours, so we arrange a car and<br />

driver to take us to Damnoen Saduak, about an hour away. The<br />

Bangkok traffic is just as I recall from previous visits – constantly<br />

swirling and buzzing around this city of six million – but there<br />

are a few more skyscrapers and motorways than I remember.<br />

9.25am. Damnoen Saduak market is centred on a network<br />

of canals that link two rivers, with charming old Thai houses<br />

adding to the ambience. The waterways are crowded with little<br />

boats expertly piloted by old ladies offering everything from<br />

fresh mangoes to sizzling hot noodles. The latter are cooked<br />

while you wait, in a tiny brazier that’s precariously perched in<br />

the boat.<br />

the Thai kingdom, and then promptly forgotten about. In 1957<br />

it was dropped from a crane, and cracks in the stucco revealed<br />

the gold underneath. Now housed in its own temple, it’s an<br />

astonishing vision of richness. The surface is polished to such a<br />

sheen that the edges seem to disappear.<br />

3.45pm. Jet lag is starting to catch up and energy levels<br />

are flagging. Back at the hotel, we ask about a traditional<br />

Thai massage. Sure enough, that can be arranged at a tiny<br />

but exquisite local spa. No oils are used and we recline on<br />

comfortable couches while the skilled hands stretch limbs,<br />

free up joints and knead muscles. It’s always a pleasure to put<br />

yourself in the hands of a skilled practitioner who knows exactly<br />

how to tune up your body.<br />

8.35pm. We’ve seen a lot of Bangkok from street level – now<br />

it’s time to head for the heights. 61 floors up, the Vertigo Bar<br />

at the top of Banyan Tree Hotel is Bangkok’s highest drinking<br />

spot. There’s no roof so we sit out on the deck and catch the<br />

evening breeze while watching the lights twinkling in this<br />

sprawling metropolis. A cold Singha beer and a mojito or two,<br />

and then we’ll be ready for some of the freshly grilled seafood<br />

we can smell cooking.<br />

11.30am. The market is winding down but we’re still raring<br />

to go. We ask our driver to take us to one of Asia’s greatest<br />

treasures – the gold Buddha of Wat Tralit.<br />

JUST ACROSS THE WATER.<br />

12.50pm. Almost three metres tall and weighing five tonnes,<br />

this statue is the largest solid gold Buddha in the world. It has<br />

an amazing history too. Dating from around the 13th century,<br />

it was covered in stucco when Burmese invaders threatened<br />

Helen Naldrett-Jays took her daughters along to<br />

test the subcontinent’s new luxury train journey.<br />

Standing on a well-swept train station platform on a warm<br />

Delhi night, Indian folk dancers spun and stamped in swirling<br />

skirts, accompanied by enthusiastic musicians, as our dark<br />

blue train pulled in to view.<br />

Delhi had given us unforgettable sightseeing and experiences.<br />

We had walked barefoot through temples, sat with local<br />

women in the massive Jama Masjid mosque, devoured superb<br />

food at the city’s most famous restaurants: Bukhara and The<br />

Spice Route, and haggled on Connaught Place. But Delhi was<br />

just the beginning. We were in India to embark on a new<br />

train journey: The Indian Maharaja, the first privately owned<br />

luxury train in India.<br />

The Indian Maharaja began operating a seven night routing<br />

at the end of last year, following a newly devised itinerary<br />

between Delhi and Mumbai. Extensive and smartly run, the<br />

itinerary incorporates extraordinary sights, classic Indian<br />

heritage and culture, music, wildlife and some essential<br />

shopping. It is a package delivered with great charm and<br />

justifiable pride by India’s leading tour operator, TCI Limited,<br />

partnered with the Taj Group who provide the 5-star food,<br />

beverage and housekeeping services on board the Indian<br />

Maharaja train.<br />

As the dancers twirled on the platform and the train appeared,<br />

our assembled group couldn’t help but applaud. The red<br />

carpet now unfurled, we were ushered along it toward our<br />

carriage and to a solicitous welcome from Javed - a calm,<br />

courteous gentleman, dressed in red, with a turban crisscrossed<br />

in gold thread. While Javed had our bags stowed in<br />

our rooms, we were plied with drinks and refreshing cold<br />

towels in our carriage’s private sitting area.<br />

This fast became our daily routine on-board the Indian<br />

Maharaja. After the hurly-burly of each stop along the route,<br />

Javed would bow us graciously back into our carriage. It was<br />

a haven of peace, a sanctuary of hot showers, generously<br />

poured pre-dinner drinks, delicious food, a massage in the<br />

on-board spa or a manicure with gentle Aanu in the salon.<br />

The Indian Maharaja on-board team are sourced from<br />

amongst the best India has to offer in terms of hospitality and<br />

tourism - and it shows with their seamless professionalism<br />

and attention to detail. Look a little closer and that seamless<br />

professionalism is nothing short of miraculous. The train and<br />

its company are at the mercy of India’s massive national train<br />

system and all the grinding bureaucracy and breakdowns that<br />

it can involve. Against all odds and with some discreet fast<br />

talking on cellphones, the tour managers and the on-board<br />

staff make this luxury train service run as smooth as silk.<br />

As much a miracle as the train service itself, is the cuisine<br />

produced by the on-board chefs, closeted in their spotless,<br />

shining steel kitchens. All meals are multi-course affairs with<br />

plenty of variety. For dinner, for example, there is a choice of<br />

three entrées, followed by a soup course, then a choice of<br />

three European mains - one meat, one fish, one vegetarian;<br />

or instead one might select ‘The Indian Experience’. The latter<br />

arrives splendidly served on a silver platter with a mound of<br />

excellent Basmati rice, fresh rustic bread and dollop of fruit<br />

chutney. The platter is then ringed with five little fragrant<br />

bowls of different dishes - exquisitely and subtly spiced. For<br />

those who can manage it, there is a choice of two or three<br />

puddings, coffee and some very quaffable local wine with<br />

which to wash it all down. Beautifully served, under soft lights<br />

with sparkling crystal and crisp table linen, it is a genuine<br />

effort to drag oneself from the velvet banquette and waddle<br />

down the train to the welcome sight of a turned-down bed.<br />

There is no denying it: as a passenger on-board the Indian<br />

Maharaja train, one is blissfully, luxuriously cocooned. Rest<br />

assured, however: the ‘real India’ is waiting at every stop.<br />

Never, in fact, has India been ‘real-er’ than on an Indian<br />

train station platform. Hawkers sell peanut brittle and<br />

cheaply printed postcards of air-brushed Bollywood stars<br />

and cricketers; bustling women in bright saris carry wideeyed<br />

toddlers on their hips and heave bulging bags; dusty<br />

workmen, heads wrapped in rags, with protruding knees<br />

and grey faces crouch together to eat; office clerks in neatly<br />

ironed trousers stretch out to doze, their faces hidden<br />

under folded newspapers and their shiny shoes unlaced and<br />

arranged tidily beside them; tiny walnut skinned women in<br />

cable knit cardigans shuffle and children sprint through the<br />

crowd; radios bawl, beggars beg and a syrupy disembodied<br />

voice, indistinctly calls the arrival of the next train over a<br />

tinny speaker system. Trains rumble and humanity pulses just<br />

outside the train door.<br />

The added joy of train travel is, of course, that one’s<br />

accommodation is mobile. You unpack just the once and as<br />

each day breaks, there is a new and, in India: an extraordinary<br />

destination to be explored.<br />

The Indian Maharaja stops in Agra for an early morning visit<br />

to the Taj Mahal and a chance to watch that huge dome, its<br />

marble warming to a light gold and its silhouette sharpening<br />

as the sun climbs.<br />

Then follows the Pink City of Jaipur, and capital of Rajasthan -<br />

a desert region renowned for its palaces, jewels and textbook<br />

views of classical India. As the sun strikes the Amber Fort’s<br />

walls high on the hills above Jaipur, visitors board patient<br />

elephants at its base to be transported up the ramparts. Across<br />

the valley floor, a harsh landscape of rugged mountains rises,<br />

with ancient fortified walls and towers running up and down<br />

the ridges and shadowy crevasses.<br />

Downtown, there are hair-raising rickshaw rides. Spluttering<br />

engines and car horns fill the air, a cattle beast stampedes<br />

scattering pedestrians, exhausts fume and food fries, the<br />

brilliant colours of market stalls dazzle. Huge banyan trees<br />

erupt out of broken asphalt with their monstrous aerial roots<br />

squeaking with bats and birds. Best of all is the general sense<br />

of delicious terror as you are bumped over pot holes and<br />

survive the relentless wave of oncoming traffic.<br />

And while the life of Indian streets beats on, the Indian<br />

Maharaja train offers ever changing views from its windows<br />

as well as remarkable experiences for its guests: tiger spotting<br />

in the grasslands of Ranthambore National Park, a banquet<br />

at the ornate City Palace of Udaipur; and the increasingly<br />

rare opportunity to visit the Ajanta Caves. One day soon, this<br />

jaw-dropping complex of 30 caves, carved and decorated by<br />

Buddhists in 200BC will be closed, protecting the delicate<br />

decoration from the very breath of travellers like us.<br />

Snug in our beds, the train rattles through one final night and<br />

day breaks on the outer limits of Mumbai – that vivacious,<br />

brutal, cosmopolitan city.<br />

Javed is there to bow us onto the platform at Mumbai’s<br />

famous Chhatrapati Shivaji station. With great dignity, he<br />

removes his ornate red and gold hat and like a conjurer,<br />

produces a ‘farewell’ card from inside it for my daughters.<br />

Stepping gracefully back onto the Indian Maharaja train,<br />

Javed waves and closes the train’s navy blue door behind us,<br />

shutting out the roar of Mumbai.<br />

A stopover was required in Dubai at the conclusion of our<br />

Jordan visit en route back home. It had been some time<br />

since our last visit to this glittering city and we were keen<br />

to take in the new architectural developments that we had<br />

been reading about in the news.<br />

On a previous trip we had stayed at the InterContinental Dubai<br />

on Dubai Creek and had thoroughly enjoyed the experience. A<br />

new development - Dubai Festival City - had recently opened<br />

with restaurants, golf course, marina, shopping, residential<br />

living and of course the new InterContinental Dubai Festival<br />

City – plus being close to the airport, it seemed an obvious<br />

choice for our stay.<br />

I was impressed from the onset. The elegant foyer in chocolate<br />

and cream colours, adorned with marble and elegant flower<br />

arrangements, instantly captured my attention. The mood<br />

continued into our guestroom, which extended sensational<br />

views out to Dubai’s skyline. I particularly enjoyed the tactile<br />

feel of the room and the emphasis on the attention to detail<br />

– like fresh flowers, designer books and the availability of<br />

technology exactly where you need it. The bathroom also<br />

had superb use of space and a unique ‘wet zone’ where the<br />

process of bathing could occur across a large space that was<br />

sealed by glass doors.<br />

The InterContinental’s first rate restaurants, fine bars,<br />

bespoke day spa as well as access to a championship golf<br />

course and vast shopping complex further verified that this<br />

new development is making a plausible mark within an<br />

environment where competition is fierce. Definitely on my list<br />

for a top Dubai stopover.<br />

Ultra-chic in Hong Kong<br />

The neon-lit, urban action in Hong Kong can be thoroughly<br />

intoxicating. It can also be a little tiring – and that’s when you<br />

need a cool, modern oasis to retreat to. The W in Kowloon fits<br />

the bill most admirably.<br />

As with all W Hotels, the design and details reflect the uniqueness<br />

of the location. Influences of old and new, local and global, come<br />

together in playful harmony. A vibrant but sophisticated colour<br />

palette soothes the nerves and all modern indulgences are on<br />

hand to restore body and soul.<br />

With skyline views from all its 393 rooms, you’ll feel you’re in<br />

the middle of the action, while also being cradled in a peaceful<br />

luxury. Chill out with a cocktail in one of the bars and make<br />

plans to explore the night. Take a dip in the heavenly rooftop<br />

pool – there can be no better way to shake off the humidity of<br />

a Hong Kong summer.<br />

also represents original Czech architecture, with a distinct Art<br />

monumental structure of the building at large, enhanced by the<br />

all-white design, contemporary artwork and furnishings from<br />

MOMA. There is also a private lap pool and full terraces offering<br />

panoramic vistas. For guests who like to keep friends and family<br />

close, floors are flexible allowing guests to book half a floor<br />

including 12 bedrooms.<br />

Dubai may have been getting all the press lately, but the other<br />

cities in the United Arab Emirates are obviously lifting their game<br />

to compete. After staging the hugely successful Formula One<br />

Grand Prix race last year, Abu Dhabi obviously feels it has as much<br />

to offer the luxury traveller as its flashy neighbour. The Yas Hotel<br />

certainly sends that message.<br />

Asia is famous for its luxury resorts and deftly gracious service.<br />

The W Hong Kong certainly delivers all this, but with a dash<br />

of post-modern style. A very smart option for your next Hong<br />

Kong stopover or Asian excursion.<br />

Mamilla Hotel lobby<br />

With just 39 rooms and three exquisite suites, the Buddha-Bar<br />

Hotel offers a superlative base for your Prague adventure. Upstairs,<br />

a mezzanine bar and lounge accommodates over 100 guests.<br />

Dinner is served downstairs in the restaurant seating up to 150<br />

guests, who can choose from a mesmerising menu of mostly Asian<br />

cuisine inspired by the signature dishes of the Buddha-Bar in Paris.<br />

Cutting edge style comes to the fore in Poland<br />

Take a look at the new Andels Hotel in Poland’s second largest<br />

city, Lodz. For a start, it has one of the most stunning entrance<br />

foyers you are ever likely to see. The time-honoured red-brick<br />

façade hides the entrance so well that your first reaction on entry<br />

is likely to be a gasp of surprise. The location is great also, being<br />

near the famous Piotrkowska street, Europe’s longest boulevard.<br />

Arguably the most contemporary hotel in the city, Andels is<br />

a cut above most. Following careful restoration work, the<br />

historical building which formerly housed a weaving mill was<br />

The Catalan capital is a self-confident place. Basking on the<br />

Mediterranean coast of Spain, it serves up an intoxicating<br />

mix of old world tradition and contemporary style. The<br />

cathedral, designed by Gaudi, is one of those buildings that<br />

truly deserves the over-used adjective “iconic.”<br />

So what are your options if you want to stay in a hotel with<br />

something of the same quality? We’re pleased to report that<br />

Story: Jackie O’Fee. One of the greatest pleasures of<br />

travelling is surely the food. Whether it be trying something<br />

unusual and slightly scary at a ramshackle roadside stall<br />

in Hanoi or eating tomatoes, mozzarella and crusty bread<br />

washed down with wine from a little brown jug in the hills<br />

above Florence, it is often the meals we experience overseas<br />

that evoke our best travel memories once home.<br />

No doubt it was with that very pleasure in mind that two<br />

Parisian women Marion Willard-Valès and Aurélie Mahoudeau<br />

set up their company “Succulent Paris”. Both keen foodies,<br />

these women have travelled extensively and know the joy<br />

of eating your way around the world. At home, the longtime<br />

friends saw a niche for tourists in Paris to enjoy and<br />

understand the Parisian passion for all things gourmet, not<br />

and connections of a local.<br />

Our half day market tour begins when we meet our new<br />

friends at 9am at the market on Rue de Levis in the 17th<br />

Arrondisment (Metro: Villiers), where under the expert<br />

guidance and tutelage of Marion and Aurélie we wander<br />

along the street stopping to look at the fabulous food on<br />

offer. This isn’t a market as we know it; rather a couple<br />

of streets. Like most of Paris, retailers of a similar genre<br />

have clustered together, which makes this area a foodie<br />

destination. There are stalls set up outside many of the food<br />

stores - both offering fresh produce and ready-to-eat meals.<br />

All of which add up to a brilliant browsing experience and<br />

you don’t have to endure the touting you often associate<br />

with other markets.<br />

Whether you require an entire pig or just one of their ears,<br />

you can easily buy any or all of it at the local boucherie or<br />

the cooked and cured version at the charcuterie. There is a<br />

store which specialises in game, with whole rabbits stacked<br />

alongside guinea fowl and pheasant. I now know that the<br />

largest prawns I think I’ve ever seen hail from Madagascar<br />

and are readily available at the local poissonnerie. It’s not<br />

just browsing though, as the Succulent Paris girls ensure that<br />

you are learning as you walk, giving excellent explanations:<br />

how the French buy their oysters (by size) or what the dish<br />

that looked and smelled so delicious even at 9:30am was<br />

(Papet Vaudois; a leek and sausage cassoulet) and how it is<br />

prepared. These women are not only happy to show you their<br />

neighbourhood and share their passion for food but will offer<br />

expert ingredient knowledge, tips and ideas for cooking the<br />

various goods you’ll see.<br />

were offered many of the little morsels to try. My favourite: a<br />

cardamom coated chocolate ball which had just the right hit<br />

of sweetness to cut through the light spice. Obviously, in this<br />

shop buying was de rigueur.<br />

Succulent Paris hosts, Marion and Aurélie<br />

With Aurélie and Marion providing introductions we met<br />

the proprietor of Androuet, the local fromagerie since<br />

1909 who passionately explained the absolutely daunting<br />

array of cheeses in his store, many that he had personally<br />

sourced from cheesemakers from all over France. His sales<br />

assistant obligingly cut a sliver here and there for us to<br />

taste, all the while a steady stream of customers came in<br />

and made their purchases.<br />

Along the way, we were introduced to a variety of traditional<br />

and not so traditional food merchants, from the new and<br />

fast growing French obsession: a tea shop, where we could<br />

smell and taste teas from across the world, to a honey shop.<br />

If you love honey this would surely be your idea of heaven<br />

(and yes, we spied some Manuka honey from New Zealand<br />

on the shelves). Further along the road was Oliviers and Co,<br />

an olive oil store where olive oil from virtually every corner<br />

of the world (except New Zealand – we noticed) was made<br />

into all incarnations possible; from skincare and cosmetics<br />

through to tapenades, the store was stacked high with the<br />

glowing green stuff and a huge array of vessels to either<br />

store or serve it in.<br />

A definite highlight for me was les Délices d’Alys, a gorgeous<br />

little sweet shop and chocolatier whose owner is famous for<br />

making her own praline. Admittedly, I’m not just a chocolate<br />

lover, but rather a crazed stalker of the stuff. Although the<br />

sweets on offer were pretty and clever, it was the row upon<br />

row of the delicious chocolates that held me enthralled. Once<br />

again, after the introductions were made (they were in French<br />

and probably said something like, “you can see that this<br />

woman loves chocolate, sorry about all the drooling”), we<br />

The tour portion of our morning over, it was time to sample<br />

some delicious food. This is where we began to feel very<br />

spoiled indeed, as we were taken to Aurélies’ beautiful<br />

family apartment, a mere five minutes walk from the market.<br />

This in itself is a rare treat for a tourist offering as it gives a<br />

glimpse into Parisian family life. Relaxing over a lightly chilled,<br />

crisp glass of wine, while the divine smells wafting from the<br />

kitchen set our stomachs rumbling, we took the opportunity<br />

to get to know our hostesses a little better. My sister was<br />

particularly interested to hear about the eating habits of<br />

typical French children, being certain they must all be junior<br />

gourmands. She was delighted to learn that children across<br />

the world share a love of junk food, eschew anything too<br />

smelly or strong, dislike vegetables and generally drive their<br />

parents mad with fussiness!<br />

We enjoyed a truly scrumptious light lunch of mushroom<br />

crème served with savoury madelines which were still warm<br />

from the oven, followed with a mouth-wateringly good<br />

cheese and ham tariflette and we were given the recipes so<br />

we could recreate the dishes at home. Meanwhile, Aurélie and<br />

Marion gave us details of other food destinations closer to<br />

our accommodation and made restaurant recommendations<br />

handy to our area, information that was invaluable after a<br />

couple of hit and miss meals.<br />

The opportunity to match great food with the insights of a<br />

local is an absolutely unbeatable combination. After all, who<br />

hasn’t felt a trip is made all the more special for the fact<br />

that they’ve eaten where the locals eat, shopped where the<br />

locals shop and experienced a slice of life beyond the tourist<br />

Mexico’s history has been dominated by civil war, European<br />

intervention, a long domestic dictatorship and perhaps the<br />

most important event in the twentieth century, the Mexican<br />

Revolution. The country’s increasing manufacturing output,<br />

rich natural resources and major exports have resulted in a<br />

significant recovery in the economy.<br />

Never<br />

Use direct or frequent eye contact when in conversation with<br />

your Mexican business associates. Mexicans tend not to make<br />

direct eye contact as a sign of respect.<br />

Be aware that<br />

Time is considered to be flexible and relaxed, and is therefore<br />

unlimited. The word “mañana” is closely linked with the<br />

Mexican concept of time. In literal terms it means ‘morning’<br />

or ‘tomorrow’, however it is also a way of saying ‘later’.<br />

When hearing it in this context, you should expect things<br />

to be done some time in the near future, without great<br />

urgency or specific dateline in mind. Consequently, business<br />

meetings will run at a slower pace and your associates may<br />

take longer to reach a decision. Punctuality and time keeping<br />

are less closely observed; therefore, planning a tight daily<br />

schedule when doing business in Mexico should be avoided.<br />

Watch out for<br />

Formalities: Respect is a key component in Mexican business<br />

culture and is reflected in the extensive use of professional titles<br />

and the formal ‘you’ (usted). Mexicans place great emphasis on<br />

showing respect to others, especially to elder and more senior<br />

members of the group.<br />

The family network: As a collectivist culture, the family unit<br />

is a dominating factor of daily life and the close ties between<br />

extended families and communities can have a major influence<br />

on individual behaviour.<br />

The final word<br />

Working hours are generally 9 to 5, but may extend until 7pm<br />

from Monday to Friday. Translate all your marketing literature<br />

and any other documents for your business dealings into Spanish.<br />

Failure to do so may jeopardise your business potential.<br />

Unexpected in<br />

Macau<br />

Bordering the Guangdong Province in China and only a<br />

short ferry ride from Hong Kong, Macau has massively<br />

boomed over the last few years thanks to its gambling<br />

laws and reputation as the Las Vegas of the East. But<br />

if you think that all Macau has to offer travellers is<br />

multiplex casino after multiplex casino, then you’re in<br />

for a surprise. Macau has a rich and interesting history<br />

that has resulted in a curious blend of Chinese and<br />

Mediterranean (5% of the population is still made<br />

up of Portuguese and Macanese; people with mixed<br />

Portuguese, Chinese and/or African blood) that’s seen<br />

in everything from buildings to food, to the world class<br />

museums and open squares. So read on here for some<br />

unexpected surprises you’ll find in Macau…<br />

The local cuisine<br />

Just like in other parts of Asia, food plays an important<br />

role in Macau, but what makes the cuisine so unique is<br />

the multicultural influences of the Portuguese, Macanese<br />

and Chinese. You can also expect to see plenty of cheap<br />

Portuguese wines and ports, although traditional Chinese<br />

wines are quickly gaining favour. Discover the abundant and<br />

Historic Centre of Macau<br />

To fully appreciate Macau’s diverse history, put aside at least<br />

a day to explore the 25 buildings in two zones that were<br />

officially declared as UNESCO Heritage sites on 15 July 2005.<br />

From around the mid 16th Century until 1999, Macau was<br />

under Portuguese administration and this area celebrates the<br />

over 450 years of history between the two cultures. The sites<br />

include A-Ma Temple - the oldest building in Macau dating<br />

back to 1555, a section of the old city wall from around 1569,<br />

Dom Pedro V Theatre - the first western-style theatre in China,<br />

Lou Kau Mansion - a good example of the mixed architecture,<br />

and various piazza’s (or squares) to name just a few.<br />

Macau Tower<br />

Now don’t be thinking that Macau doesn’t have anything<br />

for the adventure seeker… how about a jump from the 10th<br />

tallest tower in the world? Macau Tower offers a ‘sky jump’,<br />

a controlled aerial journey on three cables 233 metres above<br />

the ground that only takes 20 seconds to complete. But<br />

as you plunge from the platform, unlike bungee jumping,<br />

there’ll be no rebounding or hanging upside down so you can<br />

fully enjoy the rush of adrenalin and the view.<br />

Macau Grand Prix<br />

November is the month to be in Macau and experience<br />

first hand not only one of the most challenging circuits<br />

in the world with its fast straights, tight corners and<br />

uncompromising crash barriers, but also the only one<br />

that features both cars and motorcycles… that’s a double<br />

whammy for petrol heads and racing lovers!<br />

And last but not least, who would want to miss out on<br />

what must surely be Asia’s shortest cable car ride at a<br />

grand total of 80 seconds! And since you survived that<br />

Rotorua has long been known for its geysers and sulphurous mud pools. With<br />

so much thermal energy in the region we thought it would be worth visiting<br />

and experiencing some spa treatments. We visited the Polynesian Spa for<br />

thermal remedies, Peppers on the Point for a couple’s time out and Careem<br />

Wellness Spa for a 2-day alternative healing experience.<br />

Couples Spa Retreat - Peppers on the Point<br />

What a great way to spend the night before Valentine’s day, at<br />

the exclusive Peppers on the Point resort where the location is<br />

everything. Once an old Maori pa site, this stunning lakeside<br />

property is rich in local history and only a short ten-minute drive<br />

from the centre of Rotorua.<br />

The eclectic range of accommodation caters for a variety of<br />

travellers with a choice from self-contained Lake Villas to<br />

spacious Suites. The main lodge mansion retains the charm<br />

and design of the 1930s and includes a large entertaining area<br />

with a mixture of modern luxury furnishings, antiques and art.<br />

There is also a beautiful private chapel in the grounds, with<br />

breathtaking views of Lake Rotorua and Mokoia Island - the<br />

perfect setting for our mini retreat.<br />

Our Lake Cottage Suite was fabulous with a generously sized<br />

bedroom, well-appointed bathroom (complete with massage<br />

shower) and beautiful furnishings. It was extremely private with<br />

its own outside deck area and spa bath. It’s obvious that the<br />

team at Peppers has spent a lot of time thinking of every detail<br />

ensuring the best possible experience for everyone - after all it’s<br />

the little things that count.<br />

After soaking up the peace and tranquility of the afternoon,<br />

all guests gathered in the main dining area for what was to be<br />

a thoroughly enjoyable night. Dinner was a set menu, which<br />

included pre-dinner bubbles and canapés followed by a four<br />

course gourmet meal, which was divine - highlights for me<br />

included the marinated snapper canapés, salmon cooked to<br />

perfection and a chocolate tart with green tea ice cream.<br />

Peppers also have a fabulous spa offering and I was very much<br />

looking forward to our couple’s spa treatment the following<br />

morning. They have a dedicated spa suite accommodating up<br />

to three people and treatments that have been created with<br />

the surrounding environment in mind, like the Peppers Volcanic<br />

Body Wrap and the Peppers Volcanic Hot Stone Massage. The<br />

therapeutic massage we each received relieved all our tension<br />

from the week and relaxed our muscles. My therapist was really<br />

in tune with my body, which made a difference.<br />

My overall impression of Peppers on the Point was excellent.<br />

With welcoming and hospitable staff combined with a relaxed<br />

atmosphere in a picturesque setting, this resort excelled as an<br />

ideal spot for a couple to have some time out from the rest of<br />

the world.<br />

Alternative Healing - Careem Wellness Spa<br />

Feeling burnt out, run down and in need of taking some time<br />

out for yourself? Well Careem Wellness Spa might be the<br />

answer. Set in a calming position overlooking Lake Okareka, this<br />

alternative homely-styled spa has a comprehensive range of<br />

therapeutic treatments.<br />

Owner Carol Bannister has a wealth of knowledge and<br />

qualifications in naturopathy, herbal medicine, aromatherapy,<br />

complementary medicine and spa therapy. Her vision is for<br />

people to escape everyday life and retreat into a sanctuary filled<br />

with soothing sounds and caressing aromas.<br />

Carol personally greeted me with a cup of warming ginger and<br />

caraway seed tea and told me her background of working as<br />

an occupational therapist before developing her own unique<br />

spa concept - providing a holistic view of health and wellness<br />

in a peaceful setting.<br />

All products used in Carol’s treatments are natural and the<br />

herbs are picked fresh each day for the type of spa treatment<br />

you are about to indulge in.<br />

Day One had me soaking in an aromatherapy spa bubble bath<br />

filled with fresh herbs from the garden. Then on to a nurturing<br />

one hour aromatherapy facial - using natural handmade skin<br />

care products. Next was a 1-hour therapeutic massage before<br />

a tasty light lunch complemented with homemade baking. At<br />

the end of my day I left looking glamorous after an application<br />

of natural mineral makeup.<br />

Day Two involved a two hour ‘Spa Zone’ treatment. This entailed<br />

visiting ‘spa stations’ for hands and feet - much like circuit<br />

training at the gym only a lot more enjoyable. I finished off the<br />

circuit with a Zen Chi massage to ease out the last little aches.<br />

My two day experience was just a taste of what Carol can offer<br />

– from a Food Retreat where you can learn about ‘superfoods’<br />

and how to fine tune your body’s nutritional needs to a 5-day<br />

detox with on-going plan of action. Carol caters to the rundown<br />

and stressed. She will help you find out what your body needs<br />

to feel alive. I came away feeling relaxed, revitalised and gave a<br />

mental note to self - must take more time out.<br />

Thermal Remedies - Polynesian Spa<br />

Located at the well-known home of thermal pool bathing and<br />

often voted as one of the Top Ten medicinal spas in the world,<br />

the Polynesian Spa offers re-energising therapies that work<br />

in conjunction with the healing properties contained in the<br />

mineral waters that can be found here.<br />

The lakeside treatment rooms have large windows that open<br />

out to the natural vegetation and sparkling lake beyond. With<br />

the sound of birds twittering and the relaxing touch of the<br />

therapist, it was easy to drift in and out of consciousness.<br />

I was experiencing the Rotorua Thermal Mud Body Polish. I<br />

felt a soothing coolness at first as the therapist painted on the<br />

concoction. This was soon replaced by a warm sensation as the<br />

healing minerals began to take effect and the therapist buffed<br />

it off. The Polynesian Spa specializes in Aix Spa Massage,<br />

which incorporates a flowing massage treatment with aromatic<br />

coconut oil while jets of warm water spill onto your back. This<br />

is an indulgent addition to any of the spa treatments and will<br />

leave your skin feeling hydrated and smooth. And after any<br />

treatment, guests can wander back to the lakeside pools to do<br />

one final soak before concluding their visit.<br />

The complex also has a Spa Essentials shop with one of the most<br />

extensive ranges of spa products that I’ve ever come across. So<br />

with my bag filled with geothermal mud, bath salts and body<br />

lotions I felt satisfied that I might prolong the benefits of the<br />

Staying at Dubai Marriott Harbour Hotel & Suites is excellent value<br />

for money. The size of our suite was completely unexpected at<br />

220m 2 , with three very spacious bedrooms, each with ensuite, a<br />

large lounge with adjacent balcony and apartment style kitchen.<br />

L’Occitane amenities were a nice touch. Best of all though were<br />

the views with excellent vantage points overlooking the city,<br />

Dubai Marina, Palm Island and the ocean beyond.<br />

The benefit of the oversized suites is that they can be tailored to<br />

meet the specific needs and seating requirements of a visiting<br />

conference or meeting group. The multi bedroom suites also<br />

Singapore Airlines Boeing 777<br />

Singapore Airlines has long set the standard in product innovation<br />

and service excellence, particularly when it comes to the Business and<br />

First class offering. Phil Harrison had the pleasure of experiencing<br />

their First Class Product on a recent flight from Singapore.<br />

You succumb to the indulgence long before you board,<br />

entering a private and luxurious First Class check-in area at<br />

Changi Airport’s sensational new Terminal Three. Checkin<br />

was a breeze, as was the fast-track immigration process.<br />

We were soon in the First Class Lounge, relaxed and looking<br />

forward to our evening flight home.<br />

First Class is located in the forward area of the Boeing 777<br />

and with only two rows with eight seats in total, the cabin<br />

felt intimate and exclusive. The ambience is aesthetically<br />

stunning; Singapore Airlines certainly seem to set the trend<br />

for interior detail and design. As my wife and I settled into our<br />

luxurious seats, we were each offered a chilled glass of Dom<br />

Perignon and a restaurant style menu. As we considered the<br />

gastronomic options, there seemed little doubt that the airline<br />

could easily deliver the comfort and service promised by its<br />

reputation as “best in the skies”.<br />

Let’s start with the seat… the first thing you notice is just<br />

how wide it is. At 35 inches it’s considerably larger than any<br />

other in its class. Both the seat and its surround, that provides<br />

the private cocoon effect, are upholstered in fine-grain Italian<br />

leather with mahogany wood trim. The distance between<br />

each seat is a generous 71 inches and the 1-2-1 configuration<br />

of the two rows allows direct aisle access from every seat. The<br />

electronic controls are user friendly and allow for numerous<br />

comfortable seating positions. The real test, especially for<br />

long haul flights, is how the seat performs in the all important<br />

sleeping position. Dressed in our complimentary Givenchydesigned<br />

sleeper suits and terry-cloth socks (not quite as silly<br />

as it sounds), we watched as the flight attendant converted<br />

our seats into substantial sized, fully flat beds. An exceptional<br />

feature of these seats is that rather than just reclining into a<br />

180 degree position, they fold back on themselves to form a<br />

perfectly flat, mattress-like surface with no indentations. Your<br />

bed is then made up with crisp sheets, soft duvet and fluffy<br />

pillows. The verdict? Very comfortable with plenty of space to<br />

allow for a good night’s sleep.<br />

At meal time, I liked the cleverly designed dining table, allowing<br />

you to adjust the height to perfectly suit your seating position.<br />

Dining is at your leisure; order whenever you’re ready. On this<br />

flight, the menu was conceived by Australian Celebrity Chef,<br />

Matt Moran. I opted for a light supper, selecting just one<br />

of the four courses on offer – a succulent moist lamb rump<br />

in a delicate pepper sauce, expertly presented on Givenchy<br />

tableware. Fine wine aficionados are well catered for; whether<br />

their palate be sated by a glass of the house Dom Perignon,<br />

Krug Champagne, or a 2nd growth Bordeaux, satisfaction is<br />

certain and the variety extensive. At breakfast the decadence<br />

continued with poached eggs and caviar followed by a<br />

surprisingly good espresso.<br />

For your entertainment pleasure, a generously sized 23-inch<br />

LCD is at your disposal. With surround sound, noise cancelling<br />

headphones and KrisWorld providing ample viewing options,<br />

it’s a home theatre experience at 35,000 feet. For me, just<br />

as important as the extra luxuries that First Class affords, is<br />

the overall quality of the in-flight service. And this is where<br />

the crew excelled. From the moment we boarded to the time<br />

we touched down in Auckland, the service was at all times<br />

gracious and attentive but also discreet. So, for the ultimate<br />

in First Class travel, Singapore Airlines continues to set the<br />

benchmark. Spoil yourself, but be warned, this form of travel<br />

is highly addictive.<br />

Affordable luxury in Africa<br />

In case you haven’t noticed, the FIFA World Cup is kicking<br />

off in South Africa. Football fans will be in heaven for<br />

a few intense weeks and the eyes of the world will be<br />

focused on this amazingly colourful country.<br />

All this attention is having a remarkable spin-off for travellers<br />

whose interests stretch beyond sport. The South African<br />

tourist industry is booming and travel links are much more<br />

convenient than before. South African Airways (SAA) has laid<br />

on additional internal flights to meet heightened passenger<br />

demand in June and July and the airline will operate 24 hours<br />

a day during the period.<br />

According to SAA’s Head of Australasia, Thevan Krishna,<br />

South Africa offers huge value to Kiwi travellers, from<br />

backpackers to high-end tourists.<br />

“Travelling to Africa has never been easier with a great range<br />

of fare options,” Thevan said. “While traditionally people had<br />

to fly via Sydney, now a much easier option is on Air New<br />

It gets better. The low rand and competitive airfares make<br />

South Africa a compelling destination for a high-end holiday.<br />

of this diverse land. South Africa offers sunshine, fabulous<br />

Maserati GranCabrio<br />

What I love most about good cars is their ability to combine old world racing<br />

heritage with current design and engineering concepts. Maserati for me is the best<br />

representation of a super-car, not only because it has a long running racing pedigree<br />

and beautifully crafted cars, it also adds two vital ingredients in making it my<br />

favourite carmaker. One is that the brand is Italian and the other is that their rarity<br />

makes them that much more compelling.<br />

I know the German carmakers win hands down on reliability<br />

and engineering, but Italian cars are such great drivers’ cars.<br />

Ask anyone truly into cars, and they’ll tell you the same. It’s<br />

the combination of stunning good looks, heart-wrenching<br />

sound and the overall feel that makes them so special.<br />

And it’s not just about the rarity either. The fact that Maserati<br />

only make super-cars means you know that you are driving<br />

something very special. There won’t every be a hot-hatch<br />

Maserati anytime soon, so driving one means that you have<br />

made it… you’ve got one of the best cars money can buy…<br />

and wait for it… it’s not a Ferrari. It’s a Maserati. So not only<br />

have you ‘made it’ but you’re cool as well!<br />

But, I’m here to talk about the new GranCabrio. It’s the<br />

convertible version of the GranTurismo released last year. And<br />

it’s a stunner. Just look at it. It’s so breathtakingly beautiful,<br />

I can’t stand it.<br />

Maserati has a long history in making convertible cars -<br />

more than 50 years in fact. But the GranCabrio is the first<br />

convertible with two back seats.<br />

It’s powered by a 4.7 litre V8 delivering 440hp and 490Nm of<br />

torque. The power is put on the road by a six-speed automatic<br />

gearbox that gets you 100km/h in 4.2 seconds. And a top<br />

speed of 280km/h.<br />

Out on a winding country road is where we had the most<br />

fun. The roof down not only allows you to take in the sun<br />

and smells of a sun-drenched autumn day, it’s also a chance<br />

to hear every engine and exhaust note playing beautifully<br />

together. I feel filthy rich, better looking - and young enough<br />

to enjoy it!<br />

It’s practical too, especially if you have children or friends.<br />

The back seats come in handy, and there’s more room back<br />

there than you’d think. The boot however, isn’t huge. It’s a<br />

struggle to fit the luggage of just one traveller let alone two,<br />

but this convertible is still more usable than most in its class.<br />

Much of its structure has been substantially stiffened to<br />

compensate for its lack of roof, while all bodywork behind<br />

the doors has been re-worked to accommodate the softtop<br />

and a pair of roll bars. In the event of a roll-over, these<br />

burst straight through the rear window to protect the rear<br />

passengers. The windscreen has also been strengthened for<br />

the same reason.<br />

All this strengthening and extra safely comes at a weight<br />

handicap. But it’s not too bad. At just over 100kg, it makes<br />

almost no change to the characteristics of the hard-top.<br />

Amazing really. Throw the car into ‘Sport’ mode and you get<br />

more exhaust note, a sharper throttle response, a more eager<br />

transmission and firmer suspension.<br />

While it’s not as nimble as a Porsche, or as wild as a Ferrari,<br />

we think it’s more fun, more elegant, more civilised and<br />

more for the discerning driver. And, did we mention that<br />

it’s drop-dead gorgeous too? It can be driven on weekends<br />

or used as a everyday car. You can throw it through the<br />

winding bends of a forgotten country road, or drop the kids<br />

off at school. It’s really that versatile and we love it. Do we<br />
