Work at the Icario winery is based on three fundamental components:<br />
culture, wine and Tuscany.<br />
Culture is the keystone, the origin and justification of the winery's mission:<br />
Andrea and Alessandra Cecchetti's commitment to the ongoing quest<br />
for perfection is reflected in the range and production of stylish,<br />
characterful wines representing a coherent balance of terroir, tradition,<br />
research and innovation.<br />
Icario wine is the result of obsessive attention to the land, and therefore<br />
the vines, and in the cellar.<br />
A constant commitment through research, knowledge and passion poured<br />
into the Cecchetti family's 6,000 vines per hectare on the Podere Fucile<br />
estate makes fine quality, very stylish wine worthy of its terroir of origin<br />
in full respect of the best traditions.

Innovation and tradition: the <strong>ICARIO</strong> winery<br />
The Icario winery was designed according to the most advanced<br />
technological precepts currently available, based on principles<br />
of functionality, innovation and perfectly natural blending with<br />
the extraordinary surrounding environment among the green hills<br />
of Valdichiana and Val d'Orcia.<br />
The architectural style makes a strong impact, thanks to the use<br />
of hand-broken Sienese stone for the exterior and the use<br />
of a geometrical network of steel beams and glass surfaces in the design<br />
of the interior space.

The highly technological fermentation process is counterbalanced<br />
by traditional ageing in oak. This all takes place in distinctive areas designed<br />
to accommodate the wine's various production phases and guarantee<br />
a high standard of excellence from the arrival of the grapes, placed high up<br />
outside, through to bottle ageing which is carried out in the underground<br />
area of the building.<br />
Technological and traditional materials exist side by side making this<br />
a modern building that is also strongly rooted in the local traditional<br />
architectural style.

The Icario Arte cultural project<br />
Andrea and Alessandra Cecchetti<br />
have designated part of the winery for cultural exhibitions<br />
open to the public and offering a programme<br />
focusing principally on Contemporary Art.<br />
The Cultural Project organises two important exhibitions per year<br />
- one individual and one collective.<br />
Exhibitions by leading national and international contemporary artists<br />
will be held in succession at the Icario winery,<br />
in order to involve a wide and varied section of the public<br />
including art enthusiasts and thus promote<br />
the whole Montepulciano area.

Scrupulous manual selection<br />
of the grapes grown in the Podere<br />
Fucile estate, and ageing in small<br />
French oak barrels give this wine<br />
its lingering, harmonious qualities<br />
and enable it to achieve excellent<br />
balance after a long ageing period<br />

This reflects our ongoing research<br />
into the quality of Vino Nobile which<br />
focuses on one leading feature, aside<br />

Grapes:<br />
100% Sangiovese.<br />
Harvest Method:<br />
By hand in crates.<br />
Vinification and Ageing:<br />
The grapes are removed whole from the stalks. Fermentation and maceration takes place in<br />
vats at 25-30°C for 20-25 days. The wine is then drawn off and kept at 18-20°C to allow<br />
malolactic fermentation. This is followed by refinement in French oak barriques of 225 and<br />
500 lt. capacities. After 18 months the wine is bottled and then refined for a further 8-10<br />
months before to release on the market.<br />

10.000 bottles (only produced in the best years)<br />

Alcohol content 14,5%; Total Acidity 5,5 g/l; Net dry extract 31,00 g/l<br />
Tasting notes:<br />
Very intense ruby red. Ample, spicy, ripe red berries and jam nose. Clean, rich, concentrated<br />
on the palate, lengthy and elegant<br />

A great wine ideal with roast and grilled meat, game and mature cheeses. Excellent with<br />

Vino Nobile di Montepulciano D.O.C.G.<br />
A wine able to inject energy<br />
and drive into the classic Tuscan<br />
excellence that made Vino Nobile's<br />
name famous.<br />
In conformity with the winemaking<br />
tradition of the Montepulciano area,<br />
the grapes are always fermented gently<br />
to obtain soft, elegant tannins<br />
while preserving the full body typical<br />
of the best Sangiovese.<br />
After 18 months' ageing in small oak<br />
barrels and barriques,<br />
Vino Nobile Icario spends another<br />
6 months ageing in the bottles<br />
to achieve full maturity before release.<br />
This noble wine reaches our tables<br />
clothed in ruby red, well-structured<br />
and confident with spicy aromas<br />
but ready to offer its own unique<br />
and balanced personality.

capacities. After 18 months the wine is bottled and then refined for a further 6 months<br />
before to release on the market.<br />

Rosso <strong>ICARIO</strong> I.G.T. Toscana<br />
Rosso Icario is a skilled<br />
and never commonplace teacher.<br />
It educates our palate, opening<br />
the door to the Icario universe<br />
and the philosophy of wines with<br />
more considerable structure.<br />
Obtained from Sangiovese, Merlot and<br />
Teroldego grapes, it undergoes<br />
a short fermentation which enhances<br />
the fresh cherry and raspberry aromas<br />
with studied complexity<br />
thanks to around 6 months ageing<br />
in oak barrels.<br />
The product is youthful, yielding<br />
generous aromas and sensations<br />
every day, transforming the ritual<br />
of a good meal into a continual<br />
discovery.

30°C for 15-20 days. The wine is then drawn off and kept at 18-20°C to allow malolactic<br />
fermentation. This is followed by refinement in tradiotional French oak casks of 3.500 lt.<br />
capacities. After 10 months the wine is bottled and then refined for a further 4 months<br />
before to release on the market.<br />

Nysa - I.G.T. Toscana Bianco<br />
Icario has tenaciously stepped up<br />
to the challenge of pursuing quality<br />
in a great white wine,<br />
designed and produced with the same<br />
scrupulous and constant care<br />
the winery devotes to its red wines.<br />
Thus in the extraordinary combination<br />
of Montepulciano's microclimate<br />
and terroir the Cecchetti family<br />
has brought to life Nysa,<br />
a white wine that combines<br />
the elegance and softness<br />
of Pinot Grigio grapes with<br />
the structure and aromatic qualities<br />
of Gewürztraminer.<br />
Fermented and aged for six months<br />
in 500 litre French oak tonneaux,<br />
this great wine is the fruit of our<br />
ongoing research into quality,<br />
and the desire to pursue progress<br />
ignoring prejudice.

Pliocene of medium clay mixture.<br />
Grapes:<br />
60% Pinot Grigio, 30% Gewurztraminer, 10% Pinot Nero.<br />
Harvest Method:<br />
By hand in crates.<br />
Vinification and Ageing:<br />
The grapes are gently destemmed and soft-crushed. The must is placed in new 500 lt.<br />
French oak barriques where it ferments and remains for about 6 months.<br />
During this time the lees are stirred twice a week to keep them in suspension.<br />
After this period the wine is bottled and then refined for a further 6 months before<br />
to release on the market.<br />
Production:<br />
3.000 bottles<br />
Main analysis:<br />
Alcohol content 13,5%; Total Acidity 5,6 g/l;<br />
Tasting notes:<br />
Nysa is a structured white that unites the elegance and smoothness of Pinot Grigio, with<br />
the potential and flavour of Gewuztraminer, and includes a small percentage of Pinot Nero<br />
who leaves into the wine a particular amber colour. The bouquet is rich, with a range of<br />
notes from floral – rose – to fruity – apple and citrus.<br />

10°- 12°C.<br />
Serving suggestions:<br />
It is particularly recommended for pairing with pasta and risotto, roasted fish or white<br />
meats.<br />
