Roasted Brussels Sprouts With Raisins<br />

Holiday dinners always have a vegetable, it’s a rule. What they<br />

usually don’t have is a vegetable that is worth the valuable real<br />

estate on your plate amid other delicious dishes. It’s time to<br />

change that.<br />

Roasted brussels sprouts take a notoriously unappetizing vegetable<br />

by children (and adults) and completely changes their<br />

option. They get crunchy, savory, even slightly sweet – kind of<br />

like popcorn. Folding in some golden raisins or cranberries<br />

ensures the perfect mix of salty and sweet, and the pistachios<br />

round it out. Give your guests and family a reason to add a little<br />

more green to their plate this holiday season.<br />

Ingredients<br />

16 ounces brussels sprouts<br />

2 tablespoons extra-virgin olive oil<br />

1/4 tsp. salt<br />

1/4 tsp. pepper<br />

1 tablespoon balsamic vinegar<br />

1 1/2 tablespoons golden raisins (can substitute dried cranberries<br />

or cherries)<br />

1 1/2 tablespoons pistachios<br />

Instructions<br />

Pre-heat your oven to 400 degrees.<br />

Wash the brussels sprouts and cut them in half. Remove and<br />

discard any outer leaves that look wilted.<br />

Toss the brussels sprouts on a large rimmed baking sheet with<br />

the olive oil, salt and pepper. Transfer to your pre-heated oven<br />

and roast for 35 minutes. Remove from the oven and add the<br />

balsamic vinegar, raisins and pistachios. Stir gently. Return the<br />

baking sheet to your oven and roast for an additional 5-10 minutes.<br />

Remove and serve.<br />
