Avocado and bacon crostini<br />
( Serves 4-6 )<br />
Crostini base<br />
• Cut slices of French<br />
or ciabatta bread,<br />
drizzle with a little<br />
olive oil and bake for<br />
15-20mins until crisp.<br />
Topping<br />
• 1 tbsp mayonnaise<br />
flavoured with lemon<br />
and garlic *<br />
• 1 ripe avocado (a mood<br />
enhancing food)<br />
• 2 rashers streaky bacon<br />
or pancetta, lightly<br />
grilled<br />
• 1 tomato, finely<br />
chopped<br />
• 1 small handful of pine<br />
nuts<br />
Flavour mayonnaise by adding a little lemon zest, juice<br />
and garlic. Mix in well, then spread a spoonful on<br />
each slice of bread, add a little chopped tomato and a<br />
few pine nuts. Next add a layer of sliced avocado. Cut<br />
the grilled bacon into thirds and place on top of the<br />
avocado. Finish with a sliver of Parmesan.<br />
