FOOD and DRINK Chef Allister takes the helm at South Sands Hotel, Salcombe <strong>Devonshire</strong> magazine talk to Allister about his background, work and future culinary aims Q - Please tell us what it is, about this little boutique hotel in Salcombe that lured you away from London A - Moving out of London and back down to the West Country (having been born and bred in Plymouth) has always been part of my longterm exit strategy. Having worked in London for 27years for big corporate hotel and retail companies such as Harrods, Le Merdien and Hilton, the appeal of getting back on the stoves, and essentially the part I love was just too great an opportunity to miss. Of course it also helps that it happens to be one of the most stunning beachside hotels in the country. Q - How does your past experience enhance your work at South Sands Hotel A - Being in central London for a long time, exposed me to some amazing chefs, products, companies, people, skills and situations. Having the ability to pull on those experiences from culinary techniques and skills, leadership and life skills that I gained looking after large teams - if I can share what I have seen and done with the team in South Sands, it will be another building block in supporting the success of South Sands Hotel. Q - What will be your kitchen legacy? A - I am a strong believer in developing and mentoring of the team. There is only so much you can achieve by yourself, working in a kitchen isn’t a solo affair, it’s a big team effort. I have been lucky enough to support some talented people who’ve gone on to run their own successful kitchens around the world serving great food. Q - Please tell us about some of the most exciting projects you have worked on and why? A - Some of the most exciting projects happened during my time at Harrods, its not often you get the opportunity to work alongside Thomas Kellar or Massimo Bottura and pick up tips and tricks from culinary superstars. Also, whilst I was there, cooking for some seriously big celebrity A-listers on their events and functions, it was exciting and challenging all rolled into one. Q - Tell us about your cooking style? A - I would say my cooking style is simple, understandable and tasty. There is no point in creating dishes and menus that no one but yourself understands. Q - Does your geographical location tend to inspire the dishes you create? A - I definitely think being here at South Sands, being exposed to the sea, elements and nature and the amazing products we have here in the West Country from the likes of Phillip Warren (our butchers) to Simon Richardson (our forager), it does influence what I put on the plate and I don’t know anyone who isn’t inspired by what we have at South Sands and in the South West, just capturing even a little of that essence and creating dishes should be every chefs bucket list.
