Comprised of two farms on opposite ends of the<br />

breathtak<strong>in</strong>g Franschhoek W<strong>in</strong>e Valley, Cabrière is<br />

extraord<strong>in</strong>ary. Its rich history, whimsical sett<strong>in</strong>g, seductive<br />

approach to w<strong>in</strong>e, and its magnetic proprietor, make each<br />

visit a seductively decadent affair.<br />

The farm’s ethos is based on the <strong>co</strong>re belief that w<strong>in</strong>e is<br />

grown – not made. W<strong>in</strong>e is more than what is <strong>in</strong> the bottle<br />

– it is an exceptionally <strong>in</strong>timate experience. In the heart of<br />

the Cabrière v<strong>in</strong>eyards lies an unassum<strong>in</strong>g sundial, its pillar<br />

bear<strong>in</strong>g a unique <strong>in</strong>scription: ‘Sun, Soil, V<strong>in</strong>e, Man’. These<br />

four words form the crux of the Cabrière philosophy.<br />

Cabrière is a w<strong>in</strong>e farm steeped <strong>in</strong> history and local<br />

lore. Orig<strong>in</strong>ally granted to a French Huguenot farmer, Pierre<br />

Jourdan, on 22 December 1694, it has formed a vital part of<br />

the Franschhoek W<strong>in</strong>e Valley for over 300 years.<br />

Pioneer<strong>in</strong>g is <strong>in</strong>tr<strong>in</strong>sic to Cabrière, and throughout its<br />

development and evolution it has always rema<strong>in</strong>ed true<br />

to this heritage. In 1982, a pioneer<strong>in</strong>g legacy <strong>in</strong> m<strong>in</strong>d, the<br />

v<strong>in</strong>eyards were replanted <strong>in</strong> the tradition of the Champagne.<br />

The w<strong>in</strong>es and méthode champenoise that Cabrière now<br />

create, are products of the pivotal decision, made over 28<br />

years ago, to focus on the classic Chardonnay and P<strong>in</strong>ot<br />

Noir cultivars.<br />

CABRIèRE<br />

Thanks to the <strong>co</strong>urageous, un<strong>co</strong>nventional decisions<br />

made then, Achim von Arnim, the famed proprietor, and the<br />

Cabrière team, <strong>co</strong>nt<strong>in</strong>ue to add to the farm’s spirit today,<br />

by specialis<strong>in</strong>g <strong>in</strong> an entic<strong>in</strong>g range of champenoise which<br />

has been named after the orig<strong>in</strong>al Cabrière trailblazer and<br />

founder, Pierre Jourdan.<br />

The Pierre Jourdan Tast<strong>in</strong>g Cellar, situated adjacent<br />

to the Haute Cabrière Cellar Restaurant, offers guests<br />

an exclusive w<strong>in</strong>e experience. The auditorium <strong>in</strong> the<br />

maturation cellar, which is equipped with additional tast<strong>in</strong>g<br />

facilities, presents visitors with the rare opportunity of<br />

enjoy<strong>in</strong>g Pierre Jourdan and Haute Cabrière w<strong>in</strong>es <strong>in</strong> their<br />

‘natural habitat’.<br />

Every Saturday Achim von Arnim and his son, Takuan,<br />

treat guests to the ultimate <strong>in</strong> w<strong>in</strong>e theatre. Visitors are<br />

whisked away on an <strong>in</strong>timate journey through Cabrière’s<br />

history and w<strong>in</strong>e philosophy. The use of the famed French<br />

cavalry sabre to open bottle after bottle of Pierre Jourdan<br />

Cap Classique adds the perfect amount of dramatic flair to<br />

this exceptional adventure.<br />
