Our Appellations 

At a Glance 

Exploring Ontario’s Wine Country will take you through a range of 

unique regions that we designate as appellations. An appellation 

is a geographical area that combines factors of climate, weather 

and soil composition (also known as terroir) to create distinctive 

styles and flavour profiles in wine. 


Sunny days, cool breezes, bright fruit 

• Ontario’s southernmost region benefits from warm temperatures and a 

long growing season 

• The increased sunshine, and the warm, shallow waters of Lake Erie afford 

excellent ripening conditions for more full-bodied wines 

This appellation now includes a new sub-appellation known as the

Origin: Every VQA wine label shows where the grapes are grown – look for it

Taste adventurously. 

Here are five simple tips to keep your wine adventure 

relaxing, fun, and free from headaches. 

PLAN YOUR DAY 

First, do your research. Find the wineries that interest you then use the maps in this guide to 

plan a route. Second, don’t try to cover too much ground. Try 4 or 5 wineries, with a stop for lunch 

at one of their many restaurants. The best part of having so many wine regions close by is that 

you can always come back! 

TASTE RESPONSIBLY 

Wine is a beautiful thing, but it’s still alcohol, so be sensible. Choose a designated driver or 

arrange for a hired car. you also don’t have to swallow every drop. Tasting rooms have spittoons 

to dispose of wine you don’t want to drink. Finally, make sure to eat a hearty breakfast and snack 

en route, so you’re not tasting on an empty stomach. 

PRESERVE YOUR PALATE 

you’re there to taste, so why interfere with your sense of smell or taste? Avoid wearing strong 

colognes or perfumes and stay away from chewing gum and spicy foods. Also, the staff at 

the winery should serve you a progression from light to fuller bodied wines. Generally, you 

should start with sparkling and whites then move to rosé and reds. 

ASK AWAY 

Here’s the rule: there are no dumb wine questions. Winery staff will be happy to help you learn 

about wines, grapes and the region as a whole. Besides, there are probably a few other people in 

the room wondering the same thing. 

LOVE IT? BUY IT 

Many of Ontario’s best wines are only sold at the winery store. So if you fall in love with a vintage 

at the tasting bar, you should grab a few bottles to take home. Some wineries will even waive your 

tasting fees if you purchase a bottle. In the summer, it’s also a good idea to bring a cooler to 

protect your bottles from the sun and heat. 


Wine Country Tasting Tips 

Before you bring home the best of Wine Country, you’ll want to do 

plenty of tastings. The tasting bar should be fun, not intimidating, 

so use these simple tips to get more out of every glass. 

Just remember: See, Swirl, Smell, Swish. 

See THE COLOuR. 

Hold your glass up to the light and take note of the colour. 

This gives you a hint about the grape varietal – and indicates age of the wine or vintage. 

SWirl THE GLASS. 

Gently twirl the wine and watch how it coats the glass. 

A more viscous wine is said to have “legs” – more alcohol and body. 

SMell THE “NOSE” OF THE WINE. 

Get in there! Start with soft sniffs and then stick your whole nose in the glass to take it all in. 

Think about the aromas you smell, from berries to spice to smoke. 

SWiSh THE WINE AROuND YOuR MOuTH. 

Don’t be dainty. Let the wine contact every part of your tongue. Describe the experience. 

Sweet or dry? Light or full bodied? Do you taste the aromas you smelled? 

Remember: spitting is not considered rude, which is why most wineries have spittoons lined up at 

the bar. 

Keep in mind: tasting is subjective, so there’s no “wrong” answer. The more time you take tasting, 

the more you learn which regions and grapes you like better. And it’s a lot of fun along the way.

WINE FLAVOURS ARE INFLUENCED By: 

Sweetness 

Residual sugars from the grapes balance with acidity to build flavour. 

Acidity 

Another element natural to the grape that creates tartness and brightness. 

Tannin 

The astringency or “chewiness” of some wines that gives them structure. 

It can come both from grape skins and oak barrels.

ACIDITY 

Acid is an essential balance for the natural sugars and tannins also present in wines. 

Acidity creates bright freshness, helps define fruit flavours and allows a wine to age properly. 

AGING 

Many wines benefit from aging, both in the barrel and in the bottle. It can help develop more 

complex and balanced flavours. In general, reds take/need more time to age. 

APPELLATION 

Simply put, where the wine is from. An appellation is an area that combines factors of climate, 

weather and soil composition (terroir) to create distinctive styles and flavour profiles in wine. 

BODY 

How “heavy” the wine feels in your mouth, its viscosity and consistency. This is determined both by 

the level of alcohol and the intensity of flavours. Higher alcohol can give wines a richer mouth-feel. 

FERMENTATION 

How juice becomes wine. Fermentation is a chemical process that uses yeast to turn the sugars 

in grape juice into alcohol. While consuming sugars, yeast also produces carbon dioxide, which is 

what adds carbonation to sparkling wines. 

NOSE 

In other words, a fancy term for how it smells! The nose is just as important as the tongue in 

wine tasting. The “nose “ of a wine can have notes of fruit, spice, wood, herbs and flowers. 

The more you taste, the more you’ll identify signature aromas in different wines. 

TANNIN 

A natural astringent chemical found in grape skins and oak barrels, it adds structure and elegance 

to wines. A natural preservative, it also helps a wine age. Tannin is more present in red wines, 

as the juice spends more time in contact with the skins. 

VERAISON 

The late growing stage when grapes begin to ripen, take on colour and produce more natural sugars. 

This pivotal time determines the important balance of sweetness and acidity. 

VINTAGE 

This term is often misused. A vintage refers to the year of the growing season that produced a 

particular wine. These can vary widely because of weather, temperature and humidity, with the 

same vines producing very different wines from year to year. 

VITIS VINIFERA 

If you’ve ever tasted wine, chances are you’ve had vitis vinifera. This is the Latin name for the 

species of grape used in almost every modern wine. Originating in Europe, it’s now cultivated 

around the world, bred over centuries into the varieties you know, such as Chardonnay, 

Cabernet Sauvignon, Pinot Noir and hundreds more.

of Sandbanks Provincial Park and the snaking Bay of Quinte,

One of the first County wineries, Black Prince was established in 

2001. The well-appointed tasting centre offers the largest selection 

of wines in the area. Situated on 50 acres right in Picton, the 10-acre 

vineyard includes Chardonnay, Pinot Gris, Cabernet Franc, Merlot, 

and some hybrids and now features an onsite barrel maker and 

vinegar cellar housed in a restored 19th century two-storey barn 

and cooperage suitable for hosting special events.

Located on a storied and glorious 206-year-old farm overlooking 

the lake, the winery has become a must-visit County touchstone 

with great views and ambience. Its unique strand of ancient beach 

soils and the sure hands of winemaker Vida Zalnieriunas have 

produced classically styled Pinot Noirs and Chardonnays along with 

rare finds such as Muscat, Chenin Blanc and St. Laurent.

now one of the largest wineries in the County. The 65-acre vineyard

Come try the wines of Derek Barnett, 

one of Canada’s best winemakers. 

In 2004, County-born Lanny Huff opened his modest, 

state-of-the-art winery. French winemaker Frédéric Picard crafts 

elegant Chardonnay, Pinot Gris, Riesling, Merlot-based reds and 

sparkling wine from South Bay vineyards. The Inn opened in 2006 

followed by the popular Oeno (art) Gallery in 2009 and its 

Sculpture Garden in 2011. The patio, open daily, is a great place

The Lacey family purchased the property in 1982 and dug into the 

Hillier clay-loam soils of their property on Closson Road in 2003 to 

plant what would become 10 acres. They made their first wines in 

2007. The focus is on hand-crafted, small-production wines from 

their estate vines. Winemaker Kimball Lacey is sinking his County 

roots deeper every year while Liz Lacey runs the well-appointed 

tasting room and retail store.

Norman Hardie worked for the best producers of Pinot Noir and 

Chardonnay in Burgundy, Oregon, California, New Zealand and

Sandbanks estate Winery 

Named for the County’s landmark sand dunes, Sandbanks is located 

on the historic Loyalist Parkway. While owner and winemaker 

Catherine Langlois’ award-winning Riesling and Cabernet Franc

Forget the sickly sweet “blush” of the ‘70s and ‘80s. Today’s rosés are often dry, combining fruit with 

refreshing acidity to make a perfect summer sipper or a versatile pairing with food, year-round. 

Rosé is made with a wide range of red varietals, from Pinot Noir and Gamay Noir to Cabernet Franc 

and Merlot. Like reds, their colour comes from maceration (leaving juice in contact with the skins)

in 1983 with Chardonnay, Gamay Noir and Vidal Blanc, and since

aging are crafted by Amélie Boury from grapes grown on the

Colaneri is a family-owned winery that hand-harvests grapes to

I’m going to the United States. What are the rules for 

bringing wine across the border? 

When travelling from Canada to the U.S. each adult 

over the age of 21 is allowed one litre of wine. Any 

additional wine is subject to an IRS tax of 21 cents per 

additional litre regardless of the wine’s price. 

*Please verify with Customs for any updates or 

new policies. 

I’ve never been to a winery. 

What should I expect? 

First and foremost, you should expect an open, 

friendly and hospitable environment. Many people are 

intimidated by visiting wineries but here in Ontario, 

staff realize they’re ambassadors not just for their 

label, but for the entire region. They’ll assist you and 

answer any questions you might have, because they 

really enjoy talking about wine. As for the wineries, 

they vary in size and each one is pleasantly unique. 

Most wineries are comprised of a retail area where 

bottles are on display and related items such as 

corkscrews and stemware can be purchased, and a 

tasting bar where you can typically sample some 

wines for a small fee. 

I’m eager to go on a wine tour. 

How should I approach this? 

Most wineries offer tours of their vineyard and winery, 

typically for a small fee. Visitors will learn about the 

history of the winery, see how the wine is produced 

and taste some of the wines. To start, consult the 

winery listings for more details on winery tours, but it’s 

also best to call in advance to book a tour, find out 

what times they offer these sessions and the types of 

tours that they host. 

Where can I eat in Wine Country? 

Many wineries have onsite restaurants and bistros. 

Casual patio fare is often available during the summer 

months. The regions also boast wonderful restaurants 

that offer local foods and local wines. Or stop by a 

farmers’ market and pick up the makings for a picnic 

lunch – refer to the winery listings for which wineries 

have picnic space. 

I’m interested in having wine shipped directly to my 

home – what’s the policy around this? 

While many wineries offer the direct shipment of 

wine to your door in Ontario for a small fee, shipping 

standards can vary from winery to winery. It’s best to 

ask a retail associate what the specific standards of 

the winery are before placing an order. 

If travelling with wine, 

what’s the best way to keep it? 

Above all, make sure the wine is not left in direct 

sunlight and is secured to prevent excessive movement. 

Once a bottle is opened, 

how long will the wine last? 

On average, opened wine will be fine for up to three 

days. It’s important to properly seal your wine and, 

if it’s white, keep it in the refrigerator, while if red, 

store it at room temperature. 

Is there a recommended way 

to age Ontario VQA wines? 

There are a number of determining factors when it 

comes to aging wine, such as the vintage and the 

varietal. If you’re at a winery, put the question to one 

of their staff. Otherwise, the following are a few 

guidelines to follow with respect to aging wines: 

• For fresh unoaked white wines and rosé wines – 

up to one year 

• Oaked white wines – one to two years 

• Ontario red wines – between two and five years 

• Ontario Icewine and fortified wine – between 

five and 10 years 

All varieties of wine (including Icewine) should be 

stored horizontally in a cool, dark and dry place. 

What is VQA Ontario? 

VQA is a system that regulates wines of origin, 

ensuring the wine is made from 100% Ontario grapes 

and meets specific quality and labeling standards. 

It is Ontario’s version of appellation control that 

has existed in Europe’s great wine regions for 

over 60 years. 

VQA is all about place. Our wines reflect their inherent 

tie to special places in Ontario – Niagara Peninsula, 

Lake Erie North Shore, Prince Edward County – places 

where the soil, the slope, the sunshine, the warmth, 

the rainfall and the craftsmanship yield distinct grapes 

and exceptional wines. 

Find out what special place your wine comes from by 

looking for the region or sub-region name between the 

VQA letters on the label. 

Vintage variation 

Each unique growing season has an impact on the 

growth of the grape vine and the fruit it produces, 

and in turn the wine made from that harvest. Wine 

character can be a delicate thing and knowing about 

each vintage can help predict what the potential is for 

its wines. Seasonal conditions can also vary between 

appellations and even between micro-climates within 

a small appellation. 

Recent vintages of 2010 and 2012 offered stellar reds 

as they were a bit warmer and 2011 and 2013 were 

cooler so aromatic whites thrived. But remember 

grapes are just one part of the equation – the 

winemaker’s skills shine through in every wine and 

every vintage. 

What is Icewine? 

An Ontario treasure, Icewine is a luscious, intensely 

flavoured wine made from grapes that have been left 

to freeze naturally on the vine. With almost ideal 

climate conditions for the reliable annual production 

of Icewine – warm summers to ripen the grapes and 

cold but not too cold winters – Ontario has produced 

Icewine every year since 1984, when it was first 

produced commercially. Icewine pairs well with 

desserts, but also matches easily with spicy and 

savoury foods. Serve Icewine in a traditional white 

wine glass and allow 1.5 ounces per person.
