Exploring Ontario’s Wine Country will take you through a range of<br />

unique regions that we designate as appellations. An appellation<br />

is a geographical area that combines factors of climate, weather<br />

and soil composition (also known as terroir) to create distinctive<br />

styles and flavour profiles in wine.<br />

LAKE ERIE NORTH SHORE<br />

• Ontario’s southernmost region benefits from warm temperatures and a<br />

long growing season<br />

• The increased sunshine, and the warm, shallow waters of Lake Erie afford<br />

Plan simply.<br />

Taste adventurously.<br />

Here are five simple tips to keep your wine adventure<br />

relaxing, fun, and free from headaches.<br />

PLAN YOUR DAY<br />

First, do your research. Find the wineries that interest you then use the maps in this guide to<br />

plan a route. Second, don’t try to cover too much ground. Try 4 or 5 wineries, with a stop for lunch<br />

at one of their many restaurants. The best part of having so many wine regions close by is that<br />

you can always come back!<br />

TASTE RESPONSIBLY<br />

Wine is a beautiful thing, but it’s still alcohol, so be sensible. Choose a designated driver or<br />

arrange for a hired car. you also don’t have to swallow every drop. Tasting rooms have spittoons<br />

to dispose of wine you don’t want to drink. Finally, make sure to eat a hearty breakfast and snack<br />

en route, so you’re not tasting on an empty stomach.<br />

PRESERVE YOUR PALATE<br />

you’re there to taste, so why interfere with your sense of smell or taste? Avoid wearing strong<br />

colognes or perfumes and stay away from chewing gum and spicy foods. Also, the staff at<br />

the winery should serve you a progression from light to fuller bodied wines. Generally, you<br />

should start with sparkling and whites then move to rosé and reds.<br />

ASK AWAY<br />

Here’s the rule: there are no dumb wine questions. Winery staff will be happy to help you learn<br />

about wines, grapes and the region as a whole. Besides, there are probably a few other people in<br />

the room wondering the same thing.<br />

LOVE IT? BUY IT<br />

Many of Ontario’s best wines are only sold at the winery store. So if you fall in love with a vintage<br />

at the tasting bar, you should grab a few bottles to take home. Some wineries will even waive your<br />

tasting fees if you purchase a bottle. In the summer, it’s also a good idea to bring a cooler to<br />

protect your bottles from the sun and heat.<br />

Wine Country Tasting Tips<br />

Before you bring home the best of Wine Country, you’ll want to do<br />

plenty of tastings. The tasting bar should be fun, not intimidating,<br />

so use these simple tips to get more out of every glass.<br />

Just remember: See, Swirl, Smell, Swish.<br />

See THE COLOuR.<br />

Hold your glass up to the light and take note of the colour.<br />

This gives you a hint about the grape varietal – and indicates age of the wine or vintage.<br />

SWirl THE GLASS.<br />

Gently twirl the wine and watch how it coats the glass.<br />

A more viscous wine is said to have “legs” – more alcohol and body.<br />

SMell THE “NOSE” OF THE WINE.<br />

Get in there! Start with soft sniffs and then stick your whole nose in the glass to take it all in.<br />

Think about the aromas you smell, from berries to spice to smoke.<br />

SWiSh THE WINE AROuND YOuR MOuTH.<br />

Don’t be dainty. Let the wine contact every part of your tongue. Describe the experience.<br />

Sweet or dry? Light or full bodied? Do you taste the aromas you smelled?<br />

Remember: spitting is not considered rude, which is why most wineries have spittoons lined up at<br />

the bar.<br />

Keep in mind: tasting is subjective, so there’s no “wrong” answer. The more time you take tasting,<br />

the more you learn which regions and grapes you like better. And it’s a lot of fun along the way.<br />

WINE FLAVOURS ARE INFLUENCED By:<br />

Sweetness<br />

Residual sugars from the grapes balance with acidity to build flavour.<br />

Acidity<br />

Another element natural to the grape that creates tartness and brightness.<br />

Tannin<br />

The astringency or “chewiness” of some wines that gives them structure.<br />

It can come both from grape skins and oak barrels.<br />

ACIDITY<br />

Acid is an essential balance for the natural sugars and tannins also present in wines.<br />

Acidity creates bright freshness, helps define fruit flavours and allows a wine to age properly.<br />

AGING<br />

Many wines benefit from aging, both in the barrel and in the bottle. It can help develop more<br />

complex and balanced flavours. In general, reds take/need more time to age.<br />

APPELLATION<br />

Simply put, where the wine is from. An appellation is an area that combines factors of climate,<br />

weather and soil composition (terroir) to create distinctive styles and flavour profiles in wine.<br />

BODY<br />

How “heavy” the wine feels in your mouth, its viscosity and consistency. This is determined both by<br />

the level of alcohol and the intensity of flavours. Higher alcohol can give wines a richer mouth-feel.<br />

FERMENTATION<br />

How juice becomes wine. Fermentation is a chemical process that uses yeast to turn the sugars<br />

in grape juice into alcohol. While consuming sugars, yeast also produces carbon dioxide, which is<br />

what adds carbonation to sparkling wines.<br />

NOSE<br />

In other words, a fancy term for how it smells! The nose is just as important as the tongue in<br />

wine tasting. The “nose “ of a wine can have notes of fruit, spice, wood, herbs and flowers.<br />

The more you taste, the more you’ll identify signature aromas in different wines.<br />

TANNIN<br />

A natural astringent chemical found in grape skins and oak barrels, it adds structure and elegance<br />

to wines. A natural preservative, it also helps a wine age. Tannin is more present in red wines,<br />

as the juice spends more time in contact with the skins.<br />

VERAISON<br />

The late growing stage when grapes begin to ripen, take on colour and produce more natural sugars.<br />

This pivotal time determines the important balance of sweetness and acidity.<br />

VINTAGE<br />

This term is often misused. A vintage refers to the year of the growing season that produced a<br />

particular wine. These can vary widely because of weather, temperature and humidity, with the<br />

same vines producing very different wines from year to year.<br />

VITIS VINIFERA<br />

If you’ve ever tasted wine, chances are you’ve had vitis vinifera. This is the Latin name for the<br />

species of grape used in almost every modern wine. Originating in Europe, it’s now cultivated<br />

around the world, bred over centuries into the varieties you know, such as Chardonnay,<br />

Cabernet Sauvignon, Pinot Noir and hundreds more.<br />

One of the first County wineries, Black Prince was established in<br />

2001. The well-appointed tasting centre offers the largest selection<br />

of wines in the area. Situated on 50 acres right in Picton, the 10-acre<br />

vineyard includes Chardonnay, Pinot Gris, Cabernet Franc, Merlot,<br />

and some hybrids and now features an onsite barrel maker and<br />

vinegar cellar housed in a restored 19th century two-storey barn<br />

the lake, the winery has become a must-visit County touchstone<br />

with great views and ambience. Its unique strand of ancient beach<br />

In 2004, County-born Lanny Huff opened his modest,<br />

state-of-the-art winery. French winemaker Frédéric Picard crafts<br />

elegant Chardonnay, Pinot Gris, Riesling, Merlot-based reds and<br />

sparkling wine from South Bay vineyards. The Inn opened in 2006<br />

followed by the popular Oeno (art) Gallery in 2009 and its<br />

The Lacey family purchased the property in 1982 and dug into the<br />

Forget the sickly sweet “blush” of the ‘70s and ‘80s. Today’s rosés are often dry, combining fruit with<br />

refreshing acidity to make a perfect summer sipper or a versatile pairing with food, year-round.<br />

The Niagara Escarpment is a natural wonder, rising 500 metres<br />

The Rennies are micro vintners who own one of the oldest vineyard<br />

sites on the Beamsville Bench. Shiraz Mottiar and Graham Rennie<br />

reflect the unique terroir of the Rennie vineyard and hand-harvest<br />

the Rennies’ best Bordeaux varietal fruit to produce rich,<br />

full-bodied and balanced “Super Niagara” wines utilizing a<br />

One of the first sibling winemaking teams in Niagara, Mauro<br />

Colaneri is a family-owned winery that hand-harvests grapes to<br />

I’m going to the United States. What are the rules for<br />

bringing wine across the border?<br />

When travelling from Canada to the U.S. each adult<br />

over the age of 21 is allowed one litre of wine. Any<br />

additional wine is subject to an IRS tax of 21 cents per<br />

additional litre regardless of the wine’s price.<br />

I’ve never been to a winery.<br />

What should I expect?<br />

First and foremost, you should expect an open,<br />

friendly and hospitable environment. Many people are<br />

intimidated by visiting wineries but here in Ontario,<br />

staff realize they’re ambassadors not just for their<br />

label, but for the entire region. They’ll assist you and<br />

answer any questions you might have, because they<br />

really enjoy talking about wine. As for the wineries,<br />

they vary in size and each one is pleasantly unique.<br />

Most wineries are comprised of a retail area where<br />

bottles are on display and related items such as<br />

corkscrews and stemware can be purchased, and a<br />

tasting bar where you can typically sample some<br />

wines for a small fee.<br />

I’m eager to go on a wine tour.<br />

How should I approach this?<br />

Most wineries offer tours of their vineyard and winery,<br />

typically for a small fee. Visitors will learn about the<br />

history of the winery, see how the wine is produced<br />

and taste some of the wines. To start, consult the<br />

winery listings for more details on winery tours, but it’s<br />

also best to call in advance to book a tour, find out<br />

what times they offer these sessions and the types of<br />

tours that they host.<br />

Where can I eat in Wine Country?<br />

Many wineries have onsite restaurants and bistros.<br />

Casual patio fare is often available during the summer<br />

months. The regions also boast wonderful restaurants<br />

that offer local foods and local wines. Or stop by a<br />

farmers’ market and pick up the makings for a picnic<br />

lunch – refer to the winery listings for which wineries<br />

have picnic space.<br />

I’m interested in having wine shipped directly to my<br />

home – what’s the policy around this?<br />

While many wineries offer the direct shipment of<br />

wine to your door in Ontario for a small fee, shipping<br />

standards can vary from winery to winery. It’s best to<br />

ask a retail associate what the specific standards of<br />

the winery are before placing an order.<br />

If travelling with wine,<br />

what’s the best way to keep it?<br />

Above all, make sure the wine is not left in direct<br />

sunlight and is secured to prevent excessive movement.<br />

Once a bottle is opened,<br />

how long will the wine last?<br />

On average, opened wine will be fine for up to three<br />

days. It’s important to properly seal your wine and,<br />

if it’s white, keep it in the refrigerator, while if red,<br />

store it at room temperature.<br />

Is there a recommended way<br />

to age Ontario VQA wines?<br />

There are a number of determining factors when it<br />

comes to aging wine, such as the vintage and the<br />

varietal. If you’re at a winery, put the question to one<br />

of their staff. Otherwise, the following are a few<br />

guidelines to follow with respect to aging wines:<br />

• For fresh unoaked white wines and rosé wines –<br />

up to one year<br />

• Oaked white wines – one to two years<br />

• Ontario red wines – between two and five years<br />

• Ontario Icewine and fortified wine – between<br />

five and 10 years<br />

All varieties of wine (including Icewine) should be<br />

stored horizontally in a cool, dark and dry place.<br />

What is VQA Ontario?<br />

VQA is a system that regulates wines of origin,<br />

ensuring the wine is made from 100% Ontario grapes<br />

and meets specific quality and labeling standards.<br />

It is Ontario’s version of appellation control that<br />

has existed in Europe’s great wine regions for<br />

over 60 years.<br />

VQA is all about place. Our wines reflect their inherent<br />

tie to special places in Ontario – Niagara Peninsula,<br />

Lake Erie North Shore, Prince Edward County – places<br />

where the soil, the slope, the sunshine, the warmth,<br />

the rainfall and the craftsmanship yield distinct grapes<br />

and exceptional wines.<br />

Vintage variation<br />

Each unique growing season has an impact on the<br />

growth of the grape vine and the fruit it produces,<br />

and in turn the wine made from that harvest. Wine<br />

character can be a delicate thing and knowing about<br />

each vintage can help predict what the potential is for<br />

its wines. Seasonal conditions can also vary between<br />

appellations and even between micro-climates within<br />

a small appellation.<br />

Recent vintages of 2010 and 2012 offered stellar reds<br />

as they were a bit warmer and 2011 and 2013 were<br />

cooler so aromatic whites thrived. But remember<br />

grapes are just one part of the equation – the<br />

winemaker’s skills shine through in every wine and<br />

every vintage.<br />

What is Icewine?<br />

An Ontario treasure, Icewine is a luscious, intensely<br />

flavoured wine made from grapes that have been left<br />

to freeze naturally on the vine. With almost ideal<br />

climate conditions for the reliable annual production<br />

of Icewine – warm summers to ripen the grapes and<br />

cold but not too cold winters – Ontario has produced<br />

Icewine every year since 1984, when it was first<br />

produced commercially. Icewine pairs well with<br />

desserts, but also matches easily with spicy and<br />

savoury foods. Serve Icewine in a traditional white<br />

wine glass and allow 1.5 ounces per person.<br />
