Chicken Salad<br />

Ingredients<br />

1x Chicken breast<br />

1x teaspoon of coconut oil<br />

Pinch of mixed herbs and spices<br />

5x vine tomatoes<br />

1x sweet Potato<br />

Half an avocado<br />

Spinach<br />

Cheese<br />

Additional herbs and spices if desired<br />

Olive oil<br />

Directions<br />

1. Drizzle oil into a pan<br />

2. Dice chicken breast into desired size<br />

3. Chop tomatoes and add both diced chicken and<br />

tomatoes to pan - leave to cook, moving around the pan to<br />

avoid burning<br />

4. Chop half an avocado into chunks, add to washed spinach<br />

5. Take sweet potato and bake in oven or microwave<br />

6. Once chicken and tomatoes are cooked add them to the<br />

avocado and spinach and mix together. Add dressing<br />

if desired<br />

7. Once potato is baked, cut open and add cinnamon or<br />

butter if desired

Quinoa Salad<br />

Ingredients<br />

1x Cup of unwashed quinoa<br />

Half a courgette<br />

Half an avocado<br />

Two large mushrooms<br />

1x carrot<br />

20g mixed seeds<br />

Pinch of salt & pepper<br />

Pinch of onion seeds<br />

Mixed greens<br />

Sun dried tomatos<br />

2 x tablespoons of mustard<br />

Olive oil<br />

Directions<br />

1. Wash quinoa in cold water<br />

2. Add to pan with 2 cups of water and boil for 20/30 mins<br />

3. Chop tomatoes, courgette, avocado, mushrooms and carrots<br />

mix together with cooked quinoa<br />

4. Add seeds to pan and brown lightly<br />

5. Chop sundried tomatoes into small peices, mix mustard and<br />

olive oil together then add aundried tomatoes to make sauce<br />

6. Add quinoa to mixed green and top with seeds

Pasta Bake<br />

Ingredients<br />

1x150g of frusilli fasta<br />

1x Jar korma sauce<br />

Pinch of mixed herbs and spices<br />

Half a head of brocolli<br />

100ml single cream<br />

Seasame oil<br />

Directions<br />

1. Chop potato into chunks and cook in boiling water for<br />

20/30 mins<br />

2. Boil 400ml of water and add pasta, cook for 15/20 mins<br />

3. Cut broccoli into smaller heads and boil for 5/10 mins<br />

4. Once cooked, add the pasta, potatoes, broccoli to an oven dish,<br />

coat in korma sauce and cream, drizzle desired amount of<br />

sesame oil over ingredients<br />

5. Bake for 20/30 minutes, until browned
