Thanks to plenty of warm and humid days earlier this year,<br />

passionfruits are popping off the vines, resulting in a consistent<br />

flow of excellent quality fruit.<br />

Nick Hornery, a second-generation <strong>Australian</strong> passionfruit<br />

grower from NSW, is pleased that the influx means Aussies can<br />

keep enjoying passionfruit well into the cooler months.<br />

“We’ve been busy picking around 15,000 passionfruits a day on<br />

average. Our vines are flush with flowers, and we’re expecting a<br />

great winter crop with a slightly tangier taste.”<br />

Nick is one of 190 passionfruit farmers in Australia who work<br />

seven days a week to deliver top quality fruit to store shelves<br />

around the country. Nick enlists a team of locals to help collect<br />

the fruit and has help from his family, including his four-year-old<br />

son Gus, who loves tractor rides around the farm.<br />

Although it is available all year round, passionfruit experiences a<br />

peak in summer and winter. With over 15 years in the passionfruit<br />

industry, Nick shares his top tips to enjoy this sweet treat during<br />

this peak season.<br />

Picking and storing your fruit<br />

• Pick ripe fruit that is plump, smooth and heavy for its size –<br />

wrinkly does not mean ripe!<br />

• Passionfruit lasts up to one month in the fridge and two weeks<br />

in the fruit bowl – keep them in a plastic bag to maximise<br />

freshness. Add passionfruit to a cheese platter in place of<br />

quince paste for a touch of sweetness.<br />

• Add passionfruit to classic baked desserts for a fragrant<br />

twist. Mix into tarts, pudding, slices or icing, or drizzle over<br />

cheesecake or pavlova.<br />

• Add passionfruit to your morning smoothie or on top of your<br />

morning porridge for a fibre boost.<br />

COUNTRY OF ORIGIN LABELS<br />

New Labels for Consumers<br />

In March <strong>2016</strong> the Federal Government announced that there will be significant reforms to Australia’s Food labelling for<br />

all food available for retail sale in Australia. After many years of consumer complaints, lobbying by consumer groups and<br />

Media including <strong>Buy</strong> <strong>Australian</strong> magazine the government has conceded that the current system needed overhauling and a<br />

new Country of Origin labelling system was needed.<br />

This is a major win for consumers, the old labelling system was confusing at best. The new Country of Origin Labelling will<br />

show consumers where the product is made, packaged and grown at a glance, giving consumers the ability to make more<br />

informed choices.<br />

You can expect to see new Country of Origin labels as early as July 1 <strong>2016</strong>, business do have two years to sell existing stock<br />

so it won’t be in full effect until mid 2018.<br />

The Country of Origin Labelling has been created using a series of bar charts designed to be consistent, easily<br />

recognisable, and most importantly, easy to understand. Let’s have a look and see what you can expect to see on your<br />

supermarket shelves.<br />

PRIORITY FOODS<br />

All food available for retail sale with the exception of Non priority foods. (See next page for Non priority foods)<br />

The proposed country of origin labels for priority food grown and produced in Australia will identify two key things:<br />

1. That the food was grown, produced or made in Australia – indicated by the kangaroo logo<br />

2. The phrase stating that the food was grown, produced or made in Australia.<br />

Below, for products that are not 100% grown and produced in Australia the bar chart shows the percentage of <strong>Australian</strong><br />

ingredients in the food by ingoing weight and is stated in the phrase.<br />

Imported products will carry their own Country of Origin label stating their country of origin.<br />

There is also a label for when there is a blend of <strong>Australian</strong> and imported ingredients.<br />

Coon toastie truck<br />

Swimming Australia and iconic <strong>Australian</strong> brand COON<br />

Cheese have joined forces in the race to Rio and beyond with<br />

the pair forming a two-year partnership that will commence<br />

on Monday March 21st until 2018.<br />

This partnership will see an <strong>Australian</strong> made and much<br />

loved brand, COON Cheese, play an active role at Swimming<br />

Australia national events with their reach also extending<br />

beyond the sporting fan to people far and wide across the<br />

country through the COON Cheese Toastie Truck.<br />

The Coon Cheese Toastie Truck will travel the country,<br />

attending a wide range of events with $1 from every $2<br />

COON Cheese Toastie sandwich going back to support the<br />

Swimming Australia Junior Dolphins Program.<br />

The Junior Dolphins Program is a national initiative<br />

encouraging children to join their local swimming club and<br />

introduce them to the sport of swimming - a fun and exciting<br />

activity and a valuable life skill.<br />

Swimming Australia Chief Commercial Officer Chris Forbes<br />

said, “This is a perfect partnership for Swimming Australia,<br />

aligning with an iconic brand that will be supporting the<br />

development of future stars – and helping our fans to enjoy<br />

their events with great tasting toasted cheese sandwiches.<br />

Following on from the announcement of the Seven Network<br />

as our broadcast partner last year and Bio Island as the<br />

official nutrition partner just days ago, this is another step<br />

forward for Swimming Australia,” Forbes said.<br />

In addition to the Coon Cheese Toastie Truck, the<br />

Dolphins brand will appear on COON Cheese packaging in<br />

supermarkets around Australia.<br />

The General Manager of Marketing at COON Cheese, Ted<br />

Food Allergy Week<br />

Notice anything strange in late May, did you see people walking around with just one fingernail painted? Well if you did it<br />

was all for a good cause. May 15-21 was Food Allergy Week, a fantastic initiative by Allergy & Anaphylaxis Australia (A&AA)<br />

to help raise awareness of the prevalence of food allergies, and the best way communities can work together to support<br />

people with food allergy to minimise their risk and help manage emergencies when they happen.<br />

Australia has one of the highest rates of food allergies in the world and the incidence is increasing at an alarming rate.<br />

Did you know:<br />

• One in 10 children born in Australia today will develop a life threatening food allergy.<br />

• According to the latest <strong>Australian</strong> statistics released in 2015, hospital admissions for anaphylaxis due to food allergy<br />

increased by over 50 per cent in the seven years between 2004 and 2012.<br />

• The biggest increase in hospital admissions for anaphylaxis due to food allergy has been among children five to 14,<br />

where admissions have more than doubled. This group is at greatest risk of fatal anaphylaxis.<br />

• Anaphylactic reactions now account for 1 in every 500 hospital admissions for children aged 5-14, with rates also<br />

increasing in older teens and young adults.<br />

Nuts about Nuts<br />

If you are nuts about nuts then you have not only been enjoying a great variety of tasty treats<br />

but you have also been doing your body a favour as nuts are known to have many nutritional health benefits.<br />

The increase in nut consumption in Australia and around the world has risen rapidly over the past ten years. A fact that<br />

might surprise many is that the <strong>Australian</strong> Tree nut industry is <strong>Australian</strong> horticultures largest industry (3 times larger than<br />

table grapes and citrus), and also <strong>Australian</strong> agriculture’s largest export industry (reaching export values of over $1 billion<br />

in 2015). This growth has in large part been driven by rising global consumer demand, which is the result of greater focus on<br />

health and healthy diets. (e.g. Mediterranean diet).<br />

So what is everyone going nuts over. Nuts were once off the waist watchers’ diet for being too high in fat, but over the last<br />

few years a leading health awareness initiative - Nuts for Life, has been changing the way we think about these wholesome<br />

little nuggets.<br />

The aim of the Nuts for life programme is to educate the public, health advocates, health professionals and the media<br />

about the health benefits of a daily healthy handful of nuts. The recent <strong>Australian</strong> Healthy Survey (2011-13) found on<br />

average <strong>Australian</strong>s eat just 6 grams of nuts a day, well short of the 30 gram serving size recommended in the <strong>Australian</strong><br />

Dietary Guidelines.<br />

Tree nuts include: Almond, Brazil nut, Cashew, Chestnut, Hazelnut, Macadamia, Pecan, Pine nut, Pistachio and Walnut.<br />

(Peanuts are not included as they are actually legumes).<br />

What does 30grams of nuts looks like? Well it’s about...<br />

• 20 almonds<br />

• 10 brazil nuts<br />

• 15 cashews<br />

• 4 chestnuts<br />

• 20 hazelnuts<br />

• 15 macadamias<br />

• 15 pecans<br />

• 2 pine nuts<br />

• 30 pistachio kernels out of shell<br />

• 9 walnuts<br />

Or the amount of nuts that fits in an espresso cup, on a post it note or in a shot glass<br />

Research tells us that, compared with those that don’t eat nuts, those who do eat nuts:<br />

• Tend to have a better diet quality<br />

• Tend to have a lower body mass index (BMI)<br />

• Are less likely to gain weight over time<br />

• Are less likely to be at risk of obesity, heart disease, type 2 diabetes, metabolic syndrome<br />

• More likely to have normal levels of blood cholesterol and blood glucose<br />

• And are more likely to live longer.<br />

Our market research has found one of the key reasons why<br />

<strong>Australian</strong>s don’t eat nuts every day is their concern about<br />

nuts causing weight gain. However, international research<br />

has found nuts do not cause weight gain and there are many<br />

reasons why:<br />

• Nuts help satisfy appetite – healthy fats, fibre and<br />

protein in nuts help control appetite<br />

• Less fat absorption – we don’t absorb all the fat in nuts;<br />

some is trapped with fibre and excreted in stools<br />

• GI lowering effect – adding nuts to meals with<br />

carbohydrates slows digestion and slows the rise in<br />

blood glucose, keeping you feeling satisfied for longer<br />

• Improved insulin response – nuts make the body more<br />

sensitive to insulin, whereas insulin resistance leads to<br />

weight gain<br />

Better compliance – people enjoy nuts, and we all know<br />

people stick to a healthy eating plan for longer if it contains<br />

foods you enjoy. Better compliance to a healthy eating plan<br />

leads to greater weight management success.<br />

Nuts are available all year round, except for fresh chestnuts<br />

which are only available over Autumn and early winter.<br />

Frozen chestnuts and other chestnut products such as<br />

chestnut flour, are available all year round.<br />

Once you have your nuts at home it’s best to store them in<br />

an air tight container in the fridge or freezer. They will keep<br />

for 6-12 months if stored well. Remember to bring then<br />

back to room temperature before eating to bring back the<br />

nutty flavours. We like to zap them in the microwave for 30<br />

seconds – nothing beats the taste of warmed nuts!<br />

Many years ago Nuts for Life analysed the recipes in<br />

women’s, food and health magazines to determine what<br />

are the most common types of recipes published and what<br />

are the most common types of recipes that use nuts as<br />

SunSalt/Murray River Salt has been owned and operated by Duncan and Jan Thomson since 1983. The business began<br />

producing salt from the unlimited supply of underground saline water at Hattah, North West Victoria.<br />

extract value-added salts from inland brines.<br />

In 2000, SunSalt registered Murray River Salt and began producing premium gourmet salt flakes utilising<br />

concentrated brine from the Mourquong Salt Mitigation Basin, which is located 13 kilometers northwest of Mildura<br />

in New South Wales.<br />

The concentrated brine is pumped up from an ancient inland sea and makes its way to crystallizer ponds. The brine is<br />

evaporated by the sun and crystallizes over the summer months where it is then harvested and transported to a nearby<br />

processing plant to be washed, dried and packaged. The water from the aquifer is highly mineralized, which gives the<br />

salt flakes their distinctive pink hue and soft flavour. This natural salt contains no additives or preservatives and is full<br />

of trace elements such as magnesium and calcium, whereas normal table salt has all the minerals washed out of it.<br />

Murray River Salt flakes are considered essential by foodies and top chefs across Australia and more recently<br />

Prep Time: 5 minutes<br />

Cook Time: 10 minutes<br />

Servings: 4<br />

Ingredients<br />

4 brioche buns<br />

400g <strong>Australian</strong> leg ham,<br />

sliced<br />

4 slices medium hard cheese<br />

(Jarlsberg)<br />

4 large dill pickles, sliced<br />

length wise<br />

½ cup quality mayonnaise<br />

2 tbsp seeded mustard<br />

2 tsp olive oil<br />

Method<br />

1. Heat a griddle pan over<br />

medium heat and grill the<br />

brioche rolls until golden<br />

and warmed through.<br />

Remove and set aside.<br />

2. Use the oil to grill the<br />

sliced ham on the griddle<br />

for 2 minutes on each side.<br />

Turn off the heat and stack<br />

the ham into 4 portions<br />

and top with Swiss cheese.<br />

3. Spread the base of each<br />

roll with seeded mustard<br />

and the top of each roll<br />

with a good dollop of<br />

mayonnaise.<br />

4. Transfer the grilled ham<br />

and cheese onto the base<br />

of each roll, top the cheese<br />

with a sliced dill pickle.<br />

5. Replace the top of the bun<br />

and serve immediately<br />

Notes: This burger can also<br />

be made with fat toast or<br />

• 4 lean Pork medallions, leg or butterfly steaks<br />

• 2 tsp finely grated orange rind<br />

• 60 mL (¼ cup) fresh orange juice<br />

• 1 tsp red chilli paste<br />

• 1 tsp finely grated ginger<br />

DIRECTIONS<br />

1. Combine marinade ingredients in a non-metallic bowl,<br />

add the pork, cover and chill for 30 minutes. Turn once.<br />

2. Pre-heat the grill to medium-high and cook for 6 minutes<br />

on one side, 2 minutes on the other then rest for 2 minutes.<br />

3. Rest the Pork for a few minutes before serving.<br />

Serves: 4<br />

rating: easy<br />

prep time: 15 min<br />

Makes: 20 squares<br />

Melt N Mix,<br />

no baking required!<br />

Ingredients<br />

100g Copha<br />

¼ cup icing sugar<br />

150g white chocolate, melted<br />

100g pink marshmallows,<br />

halved<br />

100g raspberry jellies, halved<br />

100g caramel popcorn<br />

½ cup shredded coconut<br />

Method<br />

1. Line the base and sides of<br />

a 15 x 30 cm slab tin with<br />

baking paper.<br />

2. Melt the Copha in a small<br />

saucepan over a low heat.<br />

Stir in the icing sugar until<br />

well combined.<br />

3. Melt the white chocolate<br />

in a large bowl in the<br />

microwave on 50% power<br />

for 1 minute. Stir and<br />

microwave for a further 30<br />

seconds, stir until smooth.<br />

4. Add the Copha mixture<br />

to the chocolate and fold<br />

through all the remaining<br />

ingredients, coating well.<br />

5. Press the mixture evenly<br />

into the lined tin and allow<br />

to set in a cool place or<br />

refrigerate.<br />

6. When rocky road is set, cut<br />

into squares with a warm<br />

sharp knife and store in<br />

an airtight container until<br />

required. Rocky Road may<br />

also be drizzled with pink<br />

chocolate to decorate.<br />

Indian Beef Cashew Pine Nut Pilaf<br />

Servings: 6<br />

Ingredients<br />

1 tablespoon low fat natural<br />

yoghurt<br />

2 teaspoons basic Indian curry<br />

powder<br />

2 tablespoons water<br />

450g lean rump steak,<br />

trimmed and cut into 1.5cm<br />

pieces<br />

1/2 onion, chopped<br />

1/2 teaspoon cumin seeds,<br />

toasted<br />

1 1/4 cup basmati rice<br />

1 cup salt reduced chicken<br />

stock<br />

2 cups water, extra<br />

200g canned chickpeas<br />

1 tablespoon sultanas<br />

1/3 cup toasted whole cashews<br />

1 tablespoon toasted pinenuts<br />

1/2 cup chopped coriander<br />

1 lebanese cucumber, finely<br />

diced<br />

200g low fat natural yoghurt,<br />

extra<br />

Method<br />

1. In a large bowl mix<br />

together yoghurt, curry<br />

powder and water. Add the<br />

beef and marinate for 1-2<br />

hours.<br />

2. Heat a little cooking oil<br />

spray in a non stick frying<br />

pan over medium low heat.<br />

Cook the beef in batches,<br />

until just browned on the<br />

outside (but not cooked<br />

through). Set aside.<br />

3. Wipe out the pan and spray<br />

with cooking oil spray.<br />

Cook the onion and cumin<br />

seeds for 8-10 minutes<br />

or until well browned.<br />

Remove from heat.<br />

4. Place the rice in a pan with<br />

the onion mixture, stock<br />

and extra water. Simmer<br />

until liquid is all absorbed.<br />

5. Place meat on top of rice,<br />

along with chickpeas.<br />

Cover, remove from the<br />

heat and stand for 10<br />

minutes. Stir meat and<br />

chickpeas through rice,<br />

with sultanas, nuts and<br />

coriander. Serve with<br />

cucumber yoghurt.<br />

Sweet Potato Soup with Feta & Pine Nuts<br />

Servings: 6<br />

600g orange sweet potato,<br />

peeled and cut into 3cm cubes<br />

6 cups chicken or vegetable<br />

stock (salt reduced preferred)<br />

½ teaspoon finely grated<br />

ginger<br />

1 long red chilli, seeded and<br />

finely chopped<br />

50g raw pine nuts<br />

100g reduced fat feta, roughly<br />

crumbled<br />

1 tablespoon baby basil leaves,<br />

to serve<br />

6 slices dark rye bread, to<br />

serve<br />

Method<br />

1. Place the sweet potato,<br />

onion, ginger, chilli and<br />

stock in a large saucepan<br />

over medium heat. Bring<br />

to the boil, reduce the heat<br />

and simmer for 20 minutes<br />

or until sweet potato is<br />

soft. Remove from heat<br />

and cool.<br />

2. While the soup is cooling,<br />

heat a small saucepan over<br />

low heat. Add the pinenuts<br />

and cook until golden.<br />

Remove from the heat and<br />

set aside.<br />

3. Once cooled slightly,<br />

process the soup in batches<br />

in a food processor or<br />

blender and return to the<br />

pan. Heat again, then<br />

divide between bowls and<br />

top with feta cheese, basil<br />

leaves and pine nuts. Serve<br />

with dark rye bread.

Remember when we used to get those little milk cartons at Primary School every<br />

day? Turns out our teachers and parents were onto something! A glass of milk<br />

every day is just what most kids need to lead a healthy life as adults. However, a<br />

recent study discovered that, compared to non-organic classified dairy products,<br />

we should be choosing organic milk as it contains double the health benefits.<br />

The study was completed by the British Journal of Nutrition in Newcastle,<br />

England, and was the largest systematic review of its kind led by an international<br />

team of experts.<br />

The results are as astounding as they are pleasant. The British Journal found that<br />

organic milk as well as organic meat contain a whopping 50% more beneficial<br />

omega-3 fatty acids than non-organic classified dairy and meat products.<br />

Omega-3 fatty acids are the so called ‘essential fats’ within the human body and<br />

crucial for our systems, as they have been shown to help prevent and control<br />

common diseases of modern society. Omega-3 fatty acids also can help in the<br />

prevention of heart disease and stroke, lupus, eczema and rheumatoid arthritis<br />

as well as assist to normalise and regulate cholesterol. They also may play an<br />

important role in protecting from cancer and other conditions.<br />

Most importantly to note is that the human body can’t produce omega-3 fats<br />

itself - humans have to consume omega-3 fat rich foods, such as fish, nuts and<br />

leafy vegetables to be able to benefit from their positive properties. ‘The results<br />

from this study are amazing, but come as no surprise to us here at <strong>Australian</strong><br />

Organic’ comments <strong>Australian</strong> Organic CEO Paul Stadhams. ‘Certified organic<br />

farming methods result in nutritional differences between certified organic and<br />

non-organic crops like fruit and vegetables, so it is natural to see positive changes<br />

in dairy as well!’<br />

The <strong>Australian</strong> Certified Organic Standard 2013 requires certified organic cows to<br />

have access to a healthy diet. According to the British study, natural pasture can<br />

contain high levels of clover which has been found to increase omega 3 fatty acid<br />

concentrations. However, it’s not just about fresh milk!<br />

The nutritional differences also apply to certified organic dairy like butter,<br />

cream, cheese and yoghurt - which is great, because these are products people<br />

consume on an everyday basis. ‘This research confirms everything the <strong>Australian</strong><br />

Organic and our standard stand for,’ says Chief Certification Officer for <strong>Australian</strong><br />

Certified Organic, Mr Michael Baker. ‘The way we grow our food, what we feed<br />

our animals and how we treat them has a massive impact on the quality of the<br />

produce we consume. We have always gone further than just saying that synthetic<br />

additives and conservatives are bad for your health – in our opinion it’s not just<br />

about the things you leave out, it is about the things you add as well! It’s nice to<br />

see this scientifically backed up.’<br />

According to <strong>Australian</strong> Organic’s 2014 Marketing Report, the dairy product<br />

segment has grown dramatically since 2009. This is largely due to rising organic<br />

milk sales, driven by increased demand of consumers who have realised that the<br />

certified organic industry is the real deal and not just a marketing hype.<br />

Dairy is the fastest growing sector within the certified organic sector and<br />

there is little expectation the demand in this market sector is slowing down<br />

any time soon.<br />
