SOUTH
OF THE
BORDER
When the Europeans arrived in Latin
America they incorporated some new
foods into their diets, and also learned
how to make their favourite dishes
with local ingredients using Latin
American cooking methods. They
introduced European foods
such as pigs, chickens, cows, goats,
citrus trees, wheat and almonds.
This blending of cuisines is behind
some of the diverse and delicious
recipes in this section.
Each Latin American country has
its own unique dishes that are as
varied as the countries themselves,
but their cooking styles have certain
things in common.
Meat, usually pork or beef, is central
to their diet. It is often eaten with the
spicy sauces (salsas) for which they
are famous. Corn, peppers, beans,
rice, root vegetables and tropical
fruits are staples.
