When the Europeans arrived in Latin<br />
America they incorporated some new<br />
foods into their diets, and also learned<br />
how to make their favourite dishes<br />
with local ingredients using Latin<br />
American cooking methods. They<br />
introduced European foods<br />
such as pigs, chickens, cows, goats,<br />
citrus trees, wheat and almonds.<br />
This blending of cuisines is behind<br />
some of the diverse and delicious<br />
recipes in this section.<br />
Each Latin American country has<br />
its own unique dishes that are as<br />
varied as the countries themselves,<br />
but their cooking styles have certain<br />
things in common.<br />
Meat, usually pork or beef, is central<br />
to their diet. It is often eaten with the<br />
spicy sauces (salsas) for which they<br />
are famous. Corn, peppers, beans,<br />
rice, root vegetables and tropical<br />
fruits are staples.<br />
