A TALE OF LOVE! SHAKESPEARE’S BIRTHPLACE RECREATED IN GINGERBREAD One of Stratford’s own culinary kings has created a Shakespeare themed edible labour of love for Christmas. Phil Bailey, Head Chef at The Falcon Hotel, has painstakingly built a replica of Shakespeare’s Birthplace out of gingerbread. Can you smell if from there? Trained at Stratford College, Phil was Head Chef at both The Belfry and Billesley Manor before returning to Stratford to The Falcon where his remit is to develop the restaurant. He said, “At 16 I was classically trained in pastry by a French chef but it’s been a while since I’ve tackled gingerbread. I’m hugely competitive with myself and a stickler for detail; so it became a labour of love.” Meticulous research by Phil included sourcing architectural plans and photographing Shakespeare’s Birthplace from all angles. It took 36 hours of experimenting and hard graft, to recreate the tiniest details of the building, from historic beams to leaded windows replicated in intricate icing; then festive details were added including a snow-covered roof, snowman, presents and Father Christmas. “The hardest bit was the construction, but I’m really pleased with the end result” he said. “I loved adding the finishing touches of sugar-spun trees and Father Christmas stuck in the chimney.” IF YOU’D LIKE TO SEE THE GINGERBREAD SHAKESPEARE BIRTHPLACE, VISIT THE FALCON HOTEL BEFORE CHRISTMAS!
