Canterburys Westgate Hall, the former drill hall in the<br />
centre of Canterbury, which was saved from demolition by<br />
a group of volunteers from the local community has been<br />
offering a unique glimpse into the local produce markets.<br />
The farmers and makers market started in April this year,<br />
running on the 3rd Saturday of each month, it combines great veg<br />
and baked goods along with a real community feel and has brought<br />
farmers and makers face to face for the first time. With Christmas<br />

The Weald Smokery has added a lovely new product to<br />
its range of traditional smoked food, the Royal Fillet of<br />
smoked salmon. This is smoked in the traditional brick<br />
kilns over smouldering local oak shavings, then the<br />
prime fillet is cut out so that it can be cut horizontally into<br />
medallions which could be served with a wasabi sauce or<br />
similar. This makes an ideal starter or canape and would<br />

The Mulberry Tree’s award-winning chefs<br />
