"Smoke end carbon are our biggest<br />
enemies when we barbecue,"<br />
said Chef Marcus Haight of The<br />
Lark restaurant in West Bloomfield.<br />
What Haight is referring to are<br />
carcinogens, cancer-causing<br />
agents believed to be in smoke<br />
and in chemical reactions that<br />
take place when we barbecue.<br />
"You can get a terrific smoked<br />
flavor in foods without prolonged<br />
exposure during cooking," said<br />

foil pouch in which the fish<br />
sits on top of diced carrots, celery<br />
