restaurant with dining establishments in Queenstown, Auckland, Dunedin, Hamilton, and, as of last month, Christchurch. Of all cuisines in the<br />
world, I was interested to know, what it was about Malaysian food that has inspired the pair and how do Josh and Fleur go about creating<br />

Why did you choose Malaysian Food?<br />
I’ve always had a love of malaysian food. the difference with madam<br />
Woo is we try to focus on traditional dishes. We don’t try to<br />
westernise versions of fusion or mixed Asian cuisine. [those at madam<br />
Woo] are the best possible versions of malaysian dishes. the way the<br />
team do this is by travelling over to malaysia and experiencing as much<br />
of the culture and food as possible. Jane Leon, who is malaysian born,<br />
has been with us since the beginning and travelled over with us. When<br />
we get there we eat as much food as possible! We have a trip coming<br />
up soon with 10 of our chefs going.<br />
What is one of your most favourite dishes?<br />
Nasi lemak. this is a very traditional dish; malaysia’s national dish. there<br />
are a lot of variations, but most include coconut rice, sambal, peanuts,<br />
egg, cucumber. the best way to eat it is to mix it all together. It’s<br />
absolutely delicious. It’s a dish you can eat any time of day. If you turn<br />
up at someone’s house, they probably will have nasi lemak ready. At<br />

four left – I was absolutely devastated that I missed out.<br />
What do you love most about travelling to Malaysia?<br />
It’s all about the food. Life in malaysia is based around the food, it’s<br />
so well celebrated. they are so fanatical about certain dishes they will<br />
travel from place to place to get certain dishes.<br />
How do you define the flavours you use?<br />
We’ll go and try the same dish in about five different places and really<br />
try to knuckle down what they do differently – is it the temperature of<br />
the wok? We are pretty organised; we have a big list of places to go and<br />
people on the ground who will take us to exactly where we need to go.<br />

What is your favourite dish on the menu, and why?<br />
Char kway teow is my favourite dish on the menu with prawns, rice<br />
noodles and lap cheong (traditional Chinese pork sausage). It is such<br />

I simply love Asian food of any sort. malaysian cuisine is such a varied<br />
cuisine with Chinese, Indian and Nonya all in the same place. It is a very<br />
interesting cuisine, influenced by its neighbouring countries.<br />
What are your favourite places to eat, shop and experience in<br />
Malaysia?<br />
Every time we go to Malaysia I find something new to like. I prefer to be<br />
in the villages rather than big cities. every place has a different version of<br />
a national dish, so we are always discovering new flavours. To be honest,<br />
when I am there I don’t shop I just eat, which is a great job to have.<br />
What do you think we could learn from Malaysian culture?<br />
We can learn a lot from malaysian culture and especially their cuisine.<br />
they love to combine textures and contrast savoury with sweet in a<br />
range of their traditional dishes. Some of these flavours and pairings are<br />
just delicious, and I think they resonate well with New Zealand palates.<br />
How is Madam Woo a different experience from a traditional<br />
Malaysian restaurant?<br />
madam Woo food is very authentic and traditional. most of the food<br />
we serve can be found anywhere in malaysia; we just serve it in a more<br />
modern, funky environment with fun, fast service to create a whole<br />

While at its essence architecture is about providing shelter, warmth<br />
and a functional living space, it is also about eliciting a response.<br />
driven by the ethos that architecture should be ‘visually powerful,<br />
intellectually elegant and above all timeless’ tobin Smith and Blair<br />
Paterson of CoLab architecture are producing results that are<br />
getting people talking.<br />
“Whether you love it or hate it, getting feedback means we have<br />
done our job,” laughs tobin.<br />
Emerging from a long-standing friendship the collaboration<br />
between these two talented designers resulted in a design firm<br />
destined to forge its own way in our post-quake city.<br />
“right from the start we knew we wanted be part of the new<br />
architectural language of Christchurch and reference what the city<br />
has lost through a new style of building,” tobin says.<br />
Nestled on a prominent Fendalton site, one of their most recent<br />
designs embodies exactly that. While embracing their characteristic<br />
minimal palette of natural, honest materials, at a closer look the<br />
property reveals it is a new take on the traditional family home.

For homeowner and builder Blaine horton the brief was simple:<br />
create something unique while reworking the typical family home.<br />
“there is beauty to be found in simplicity,” enthuses tobin, “and this<br />
was an opportunity to showcase that. our focus was on not being too<br />
complex, or shape making for the sake of it. But rather to pull back the<br />
ideas and achieve a timeless end result.”<br />
From the street, the two-storey gabled form, with its single level<br />
adjoining pavilion, ignites a sense of familiarity, drawing on the ’60s<br />
and ’70s modernist style of architecture that dotted pre-quake<br />
Christchurch.<br />
Part of the success on the exterior is the uninterrupted lines of the<br />
vertical cedar paneling across both the home and the garage. “the<br />
cladding over the garage is flush mounted,” explains Tobin. A design<br />
decision that transforms a mundane, essential component of the home,<br />
into something beautiful.<br />
While inside the simplicity of the design continues, there is no<br />
disguising that the home is something special. Welcomed into a double<br />
height, voluminous entry you are enveloped in a light, bright interior –<br />
in total contrast to outside.<br />
“It is a nice surprise,” offers tobin. “there is a sense of connection<br />
achieved between inside and out, with the black cedar paneling running<br />
the length of the entry and up the stairwell, but this is off-set by the<br />
contrast of the white living space and windows out to the garden.”<br />
Breaking the mass of the house, the entry provides a beautiful<br />
connection between inside and out, and also between the upper<br />
and lower levels with a custom-made floating staircase leading to the<br />
master suite and two of the three double bedrooms.<br />
Painted resene Black-White, the interior colour palette is simple in<br />
its offering, but vast in its appeal with, once again, a sense of elegance<br />
and timelessness drawing you in. running the length of the gabled<br />
pavilion is the heart of the home, the open-plan kitchen/living/dining<br />
area. Essential to family life the large space effortlessly acts as one, while<br />
is also seamlessly able to function as individual spaces with a considered<br />
lighting plan working to provide definition.<br />
Breaking down the requirements of a traditional family home, tobin<br />
and Blair recognised the need for privacy when it came to family<br />
bedrooms (all discreetly tucked away on the upper level) and multiple<br />
living spaces.<br />
the southern side of the home (located behind the garage) is single<br />
storey in its form and houses a formal living area and guest bedroom.<br />
this wing of the home brings a sense of longevity to the livability of the<br />
home, with the second living area providing scope for a growing family,<br />
and the guest bedroom and bathroom the option for an alternate<br />
master should the stairs become too much.<br />

Breaking down the scale of the traditional family home and<br />
reorganising it into something contemporary and modern, this simple<br />
design is a showcase of restraint and considered thinking. Paving the<br />
way forward for a new style of architecture, for Christchurch to call<br />
its own.

It’s a commonly held belief that acquisition<br />
of property is a means of wealth creation<br />
if it is done correctly – what it isn’t, is a getrich-quick<br />
scheme.<br />
I’ve worked with individuals and syndicates who<br />
have purchased and accumulated property in a<br />
single-minded pursuit of building a substantial<br />
nest egg. Some have done spectacularly well<br />
and sit on considerable portfolios, and others<br />
have seen their hopes and their funds depleted.<br />
Both groups started with the same dreams and<br />
desire, expecting to benefit from rental incomes<br />
or increases in capital values, but there are some<br />
significant differences in their approach.<br />
Here’s where I’d like to share my observations<br />
of factors that helped rather than hindered the<br />
investment process.<br />
A Plan<br />
Having a specific plan as to where to purchase,<br />
how much to invest, what would happen if<br />
interest rates go up or if long periods of vacancy<br />
occur, is integral to overall success.<br />
Get a Plan A, have a back-up Plan B, and then<br />
keep assessing it. Look at others who have<br />
successfully managed the ups and downs of the<br />
market and ask for tips.<br />
Join the local property investors’ group and<br />
use a business-like approach to the process of<br />
developing a portfolio. Don’t listen to people<br />
who don’t have investments (note plural: one<br />
rental does not make an expert).<br />
Location<br />
Location will always dominate any real estate<br />
discussion or decision, and this is especially<br />
important when you are considering rentals.<br />
Amenities, schools, recreational facilities and<br />
good public transport add to the desirability of<br />
a property and its rental potential. The purchase<br />
of a small, cheap “orphan” out in the middle of<br />
nowhere is close to pointless if you expect to<br />
use it as part of your investment strategy – and I<br />
have seen people purchase these – so don’t!<br />
In Christchurch, there are numerous suburbs that<br />
fit the bill beautifully for rental, including those<br />
who favour a densely managed room-by-room<br />
scenario close to the educational facilities.<br />
Do your research, remembering that high quick<br />
returns for university semesters might not look<br />
so good if they are accompanied by lengthy<br />
vacancies, irate neighbours and regular repair<br />
bills for insufficient care of the property.<br />
Finally, Be Pragmatic<br />
The ‘Best Buy Ever’ will come along again<br />
tomorrow. Be kind to tenants who treat your<br />
property like their home; they are precious and a<br />
little thoughtfulness from an owner goes a long<br />
way.<br />
And when it all goes well, pat yourself quietly on<br />
the back. You are in the minority, no matter what<br />
anyone else says.<br />

Wood is a defining material of this style with timber cabinetry at its<br />

Not so long ago the contemporary kitchen was all about curves<br />
and soft edges, then we moved towards a preference for angular,<br />
sharper lines, before curves came back into fashion. Now the<br />
contemporary kitchen is about embracing a combination of textures<br />
to achieve an air of drama and sophistication. Think brushed<br />
metal tapware, paired with glossy cabinetry behind which hide the<br />
appliances. Streamlined, uncluttered and linear. Touches of wood<br />

Brought up in rural Marlborough, Rebecca Rose lives and works in<br />
Titirangi, Auckland, and her work is represented throughout New<br />
Zealand and internationally. Rose began her career as a landscape<br />
designer, but subsequently studied sculpture, blending her knowledge<br />
and interest of the landscape with her new artistic path. Her talents<br />
are now securely within that field.<br />
Her first works were figurative, often made of concrete. Rose had<br />
an interest in the cycles of life and developed work based on the<br />
passing of her grandmother. Government House in Wellington bought<br />
part of her group, Gathering, an aptly named and placed work for this<br />
public space.<br />
More recently Rose has been working with metal, creating<br />
landscape sculpture, which resonates in meaning with the natural<br />
environment. She takes her inspiration from nature, be it a walk along<br />
the beach or through the forest. Rose feels a strong interconnection<br />
with all things in nature and mankind and seeks to express this in<br />
her work. Her work is not dark or full of hidden concepts but light,<br />
accessible in meaning and form, provoking interest and contemplation.<br />
Modern engineering technologies of software design and laser<br />
cutting have allowed artists scope to create larger metal pieces with<br />
seemingly intricate patterns with accuracy impossible by hand. More<br />
and more artists are using a collaboration of the computer and the<br />
laser cutter to produce complex forms in materials from paper to<br />
metal. Rose incorporates this technology in some of her work. She<br />
can create models of work to show a prospective client or to submit<br />
an idea for a show, such as the Bondi Sculpture by the Sea.<br />
INDUSTRIAL<br />
Repeated patterns found in natural forms or tessellated<br />
mathematical shapes are able to executed: branching tree designs, leaf<br />
growth can be cut in varying shapes and sizes. Rose is fascinated with<br />
the hidden meta-physics and mathematical patterns found in nature,<br />
repeated patterns found from the smallest cellular structure to the<br />
universe. Computer-aided designs can aid the production of these.<br />
The final piece, however, still requires skill and dexterity of<br />
additional forming and welding, but it does allow artists and craftsmen<br />
a new and exciting medium. The success of the work is in the design<br />
and resolution of the final piece. A fine example of this is Sea Whirl, a<br />
large circular disc hanging from a tree branch where the wind and light<br />
create an aesthetic dance.<br />
Part of Rose’s philosophy is a desire for interaction with her<br />
work. Her recent work Sea Anemone, bought for Cottesloe Beach,<br />
near Perth, Australia, is six metres in diameter. Sea Anemone<br />
demonstrates Rose’s versatility as an artist. The subject matter is<br />
relevant to the site, and the construction also takes the site into<br />
consideration. It is made of painted hand-pulled tubular steel, designed<br />
and engineered to withstand the rigours of a busy public beach. Rose<br />
particularly enjoys the sight of children playing on and around this<br />
playful work.<br />
Rebecca Rose wishes to spread love and joy through her work<br />
and does so through the careful design and execution of sophisticated<br />
pieces that grace both public and private domains. She has shown<br />
her work throughout New Zealand and nearby at Art in a Garden,<br />
Flaxmere, Hawarden.<br />

WHAT THe ARCHITeCT<br />
WAS THINKING – Maybe!<br />
Richard Dalman gives us the answers to last month’s quiz and a further<br />
insight into Christchurch architecture.<br />
Did you take up my challenge last month and<br />
test your observational skills of Christchurch’s<br />
architecture? The design of many buildings are<br />
inspired by their location, sense of purpose or<br />
clever ideas – let’s check how many answers<br />
you got right.<br />
The JB’s Discounter on the corner of Hills<br />
Road and Dudley Street has been designed as<br />
a “bag of lollies” – very appropriate for a dairy.<br />
Knox Plaza in Victoria Street was conceived as<br />
a ribbon that wraps around to form an internal<br />
courtyard. I like how this looks like a small<br />
village of buildings and positively relates to<br />
Knox Church next door.<br />
The louvres on the Young Hunter building<br />
in Victoria Street are fixed horizontally to<br />
the north as that is better to shade the sun<br />
when it is high in the sky to the north, and the<br />
vertical louvres facing the street work better<br />
when the sun is lower to the west.<br />
I remember the late Paul Holmes and the<br />
architect of the Christchurch Casino, Bill<br />
Gregory, discussing at the opening how the<br />
building had been designed as an erupting<br />
volcano – take a look at the entrance next<br />
time you visit!<br />
The BreakFree Hotel on Cashel Street<br />
(formerly Hotel So) has louvres that are<br />
painted yellow on one side and orange on the<br />
other. This gives the impression of the building<br />
changing colour as you walk by. When you are<br />
front-on to the building the louvres are almost<br />
invisible!<br />
The 11 concrete fins on the new Salvation<br />
Army Building represent the Army’s 11 Articles<br />
of Faith.<br />
The award-winning building that features<br />
cut-out ceiling panels that create dappled light<br />
shadows is the ilex building in the Botanic<br />
Gardens.<br />
While the cardboard tubes appear to hold<br />
up the roof of the Transitional (Cardboard)<br />
Cathedral, it is actually the LVL timber beams<br />
hidden within them that provide much of<br />
the structure. Apparently, the thickness of<br />
the cardboard in the tubes available in New<br />
Zealand was too thin, unlike other cardboard<br />
tubes that the architect, Shigeru Ban, has used<br />
for similar post-disaster projects around the<br />
world.<br />
It is the regional lounge at the Christchurch<br />
International Airport that has been described<br />
as follows: “The folded form of the ceiling finds<br />
its origins in the Southern Alps which are a<br />
backdrop, the large timber truss represents the<br />
old timber trussed bridges found throughout<br />
the South Island, and the organic forms of the<br />
café and bespoke seating are found along the<br />
coastline as the forest meets the ocean with<br />
kelp swaying at the ocean edge.” While this<br />
may sound like a bit of waffle, have a look next<br />
time you are in the space and see what you<br />
think.<br />
What is Christchurch’s best new building?<br />
Top of my list is the Transitional (Cardboard)<br />
Cathedral. And the best refurbished building,<br />
well, I vote for Mountfort’s Great Hall in the<br />
Arts Centre.<br />
I will write about both of these buildings<br />
another time. In the meantime, keep<br />
experiencing the buildings, both old and new,<br />
and look out for the ideas behind them, and<br />
what makes them great or otherwise.<br />

What led to your career in aviation?<br />
I was often found at Ardmore airfield when I was a kid, hanging around<br />
the small planes. One day a pilot asked me if I wanted a ride, that<br />
was it. Since then I have always been around aviation in one way or<br />
another.<br />
Does your family share your love of flying?<br />
My wife loves flying, although it’s usually in an A380 on its way to<br />
Dubai. My son is planning to be a pilot and my daughters simply go<br />
along with my madness and make me feel like all my ideas are good<br />
ones, clever girls.<br />
What is the most common question someone asks before their<br />
first flight?<br />
It’s not what people ask but more often what they tell. That they never<br />
really thought they would find themselves taking the controls of a light<br />
plane, although always wanted to try, then it’s how long before they<br />
can fly by themselves and when can they take their friends and family<br />
for a flight.<br />
Can you recall your first lesson?<br />
My first lesson was at Fairoaks, just west of London in January 1988. I<br />
was asking those same questions, when can I fly myself, etc. Time does<br />
not take away the excitement and fear of that first solo flight, if time<br />
takes those memories from you, you are no longer a pilot.<br />
How do you define success?<br />
I am successful as long as I continue to start each day wanting to make<br />
something good happen and end each day with the people who rely<br />
on me – family, friends and work colleagues – looking forward to<br />
tomorrow so we can do the same thing again. There is no success<br />
that does not involve everyone you touch in your life feeling you have<br />
contributed to their success.<br />

• Mulch reduces the damage to trunks from machinery (such as lawn<br />
mowers and line trimmers);<br />

Applying mulch in an urban environment somewhat replicates that<br />
of a natural forest where the soil is covered with leaves and organic<br />
matter providing nutrition and an optimal environment for root<br />
growth and mineral uptake.<br />
For mulch to provide its many benefits, it does need to be applied<br />
correctly. Too much mulch can cause problems, so it is recommended<br />
to apply a layer 5-10cm deep. If the layer is too deep on wet soils, it<br />
can lead to an excess of moisture around the roots, which in turn can<br />
lead to root rot. As a general rule, mulch should be applied out to the<br />
edge of the tree’s crown. This ensures the majority of the root system<br />
is covered.<br />
The layer of mulch should look like a doughnut with a cleared space<br />
around the trunk. Because mulch holds water, it cannot touch the<br />
base of the tree’s trunk as you then risk rotting the root crown.<br />
Avoid using mulch containing fresh grass clippings as it heats up<br />
while it decomposes and can affect the pH level of the soil, both of<br />
which are detrimental to the health of the tree.<br />
Mulch can be organic or inorganic. The inorganic mulches, such as<br />
stones and rubber, do not need to be replenished, but they do not<br />
benefit the tree nutritionally. Organic mulches, such as wood chip,<br />
bark nuggets and leaves, decompose and therefore do need to be<br />
replenished, but the decomposition process results in improved soil<br />
quality, fertility and weed suppression.<br />
Trees add so much to our landscape that it really is worth the<br />
investment to ensure their longevity. If a tree is properly maintained<br />
with a regular pruning and mulching regime, it will provide you and the<br />
community with benefits for generations.<br />

The real cost<br />
of Landscaping<br />
Designing and building the architecture of your landscape<br />
deserves the same planning as the architecture of your<br />
home. Most of us commence a building project or<br />
renovation with a clear idea of the budget available- the<br />
same approach is appropriate for landscaping.<br />
Good communication is key to completing any landscaping project<br />
successfully. Any idea of the range or budget you are prepared to spend on<br />
your landscaping should be communicated to your landscape architect from<br />
the outset.<br />
The same landscaping project can be designed and constructed in a<br />
multitude of ways, with different cost structures- which will ultimately result<br />
in different quality results. Some projects will last and some won’t.<br />
The concept of ‘quality’ landscaping is nebulous, many cheaper landscapers<br />
claim quality work- but what exactly does this mean? Ensuring landscaping<br />
is constructed to a high industry standard is far more quantifiable than<br />
subjective claims of ‘quality’ landscaping.<br />
Following correct industry practice will best ensure the longevity of your<br />
project. Attention to detail should be given to every aspect of the projecthardscaping<br />
such as decking should be constructed to a high finish including<br />
oiling or staining. Take care to ask how less readily visible aspects of the<br />
project will be managed, for example ensuring plantings are in soil well<br />
fertilised with organic matter and properly hydrated. Some landscapers<br />
whittle down costs through using less exacting techniques.<br />
Once the project is completed, and the invoice paid, many landscapers<br />
consider that the end of the association- even when problems arise<br />
due to poor workmanship. Check what the landscaper’s policy iswill<br />
they stand behind their work and resolve any flaws which arise<br />
post completion?<br />
• Wood prices fluctuate throughout the year. Many landscapers only<br />
buy as and when needed, meaning higher prices are passed on to<br />
clients. Purchasing wood supplies when prices are lower enables the<br />
saving to be passed on to clients. Check whether the wood supplies<br />
are ethically sourced.<br />
• Ensuring design and construction complies with the required<br />
health and safety standards, meets the appropriate building<br />
code and has necessary consents is vital. Some landscapers<br />
avoid consents altogether which may create a significant headache -<br />
especially when it comes time to sell! Using a landscape architect<br />
who doesn’t cut corners legally and is comfortable navigating council<br />
processes will ultimately save time, money and stress.<br />
• Construction undertaken by numerous subcontractors is less efficient<br />
and usually more costly. A company which can manage the entire<br />
project in house will ensure a seamless transition throughout the<br />
project to completion.<br />
• Pools are notoriously hard to accurately cost. An estimate of $40,000-<br />
$80,000 generally won’t include the cost of installation or necessary<br />
landscaping such as fencing, paving and paths.<br />
• Often landscaping projects can damage parts of your property<br />
(eg lawns). Many landscapers won’t reinstate or repair<br />
consequential damage.<br />
Expending 10% of your property value will provide minimal landscapingbasic<br />
plantings, a lawn with batten edging and no hardscaping. 15% will<br />
provide a middle ground budget whereas 20% of the value of your property<br />
will result in notably high end landscaping which will accentuate your home<br />
and maximise your outdoor living potential.<br />
Use a design process which formulates a realistic build budget that works<br />
with your lifestyle and property. A collaborative and transparent approach<br />
with your landscape architect should avoid any nasty surprises.<br />
Good landscaping highlights the aesthetics of your home, improves street<br />
appeal and better utilises space for improved outdoor living. You will recoup<br />
landscaping costs when it comes time to sell- and in the mean time you can<br />

What’s the Big Deal?<br />
Elly McGuinness takes a look at the sugar debate,<br />
and gives us some realistic advice.<br />
Recipes and nutrition plans centred on sugar-free, low-sugar, or freefrom-refined-sugar<br />
meals and snacks can be found a plenty on the<br />
internet, and in modern cookbooks.<br />
Why move aWay fRom the sWeet stuff?<br />
a diet high in sugar can:<br />
• lead to accelerated tooth decay.<br />
• Be highly addictive, leading your brain and body to want more.<br />
• Cause insulin spikes and troughs which, over time, challenge the<br />
body’s ability to use insulin effectively and increases the risk of type ii<br />
diabetes.<br />
• Cause energy peaks and troughs rather than steady energy<br />
throughout the day.<br />
• lead to excess storage of body fat. sugar that is required for energy<br />
is burned off. after that, the liver and muscles store some. anything<br />
remaining after this is stored as fat.<br />
But don’t I need some?<br />
all carbohydrate foods will eventually be broken down into sugar<br />
inside the body. this includes foods like fruit, vegetables, grains and<br />
legumes. so, if you are eating a balanced diet your body and brain will<br />
be getting plenty of it. it will also be in a more sustaining form, allowing<br />
a gradual release of energy throughout the day, rather than the energy<br />
spikes and troughs experienced with high-sugar foods.<br />
aRe less RefIned optIons BetteR?<br />
Cane sugar, whether it be white or ‘raw’, and even more so ‘high<br />
fructose corn syrup’ (HFCS) are the most refined forms of sugar that<br />
can have the largest negative impact on the body. this is because, in<br />
the refining process, the nutrients have been removed making the end<br />
product a very unnatural thing for the body to deal with.<br />
Unrefined alternatives include honey, fresh dates and pure maple<br />
syrup. these will provide nutrition for the body and will not impact<br />
it in the same way that sugar will. For example, honey has a lower<br />
glycaemic index than sugar, meaning it will release sugar into the body<br />
more slowly. Unrefined alternatives can still result in insulin spikes and<br />
are best consumed alongside other foods that are primarily fat and/or<br />
protein based.<br />
Beware of any sugar alternatives on offer, whether they are natural<br />
sweeteners such as stevia, or claiming to be ‘less refined’, such as<br />
brown rice syrup. Reliance on or craving for any form of sweetener<br />
(even unrefined ones) is a signal to your body that there’s something<br />
missing in your overall nutrition picture.<br />
Practical tips to help you reduce your sugar intake:<br />
• Avoid processed juices and fizzy drinks. Instead, have a couple of<br />
serves of fresh fruit and/or berries which will provide you with a<br />
sweet fix along with fibre and nutrients. Add squeezed lemon or<br />
herbs, such as mint, to fresh water for flavour.<br />
• Significantly reduce packaged and highly processed foods, which<br />
often contain hidden sugars. if you must eat something from a<br />
packet, check for added sugars – anything ending in ‘ose’ (lactose,<br />
glucose, dextrose, sucrose…), and hFCs.<br />
• Dressings and sauces are usually high in sugar. Make your own, so<br />
you know what’s going into them. Balsamic vinegar and olive oil can<br />
make a simple, tasty salad dressing<br />
• select baking recipes with sugar substitutes such as dates, pure maple<br />
syrup (not the stuff with sugar added!) or honey. also ensure there<br />
are protein/fat based foods in the recipes, such as nuts or seeds.<br />
this will lower the glycaemic index of the food and slow down the<br />
release of sugar into your body.

On the central-eastern coast of the North Island, Hawke’s Bay is a<br />
genteel farming and vineyard region that covers an enormous valley<br />
flanked by two tumbling rivers. Since the 1970s, due to its fertile<br />
soil, the region has become home to a growing number of excellent<br />
wineries. It makes the perfect weekend getaway from Christchurch.<br />

scenery has been said to bring a tear to the eye of even the toughest<br />
of men. This possibly has something to do with the fact there is one of<br />
the world’s most prestigious golf courses at the top. Before you reach<br />
this, however, you’ll notice signs not seen on everyday roads: “mind<br />
the kiwis” – that is not us, but the actual flightless bird. American<br />
philanthropist and multi-millionaire owner Julian Robertson has spent a<br />
fortune protecting New Zealand wildlife and built a bird sanctuary on<br />
the property, complete with a large predator-proof fence that sinks a<br />
metre and a half into the ground.<br />
Te Mata Peak<br />
One of the most loved attractions by locals and tourist alike, the<br />
famous peak stands at 399 metres above sea level at the western<br />
boundary of the bountiful Heretaunga Plains. The panoramic views<br />
are breathtaking in all directions. On a clear day you can see as far as<br />
Mt Ruapehu. The peak lies on the edge of the dramatically uplifted<br />
limestone hill country, cut through by the Tukituki River.<br />
Wine Tours and Tasting<br />
Hawke’s Bay has many of the country’s most renowned wineries,<br />
many with exquisite restaurants to match.<br />
Craggy Range, named Best New World Winery 2014, is situated<br />
at the base of Te Mata Peak and surrounded by views of the rugged<br />
cliff face. The famous Terroir Restaurant is reminiscent of the French<br />
countryside, with a view of the rambling hills and vineyard.<br />
Black Barn, a small, exclusive vineyard situated on the Te Mata hills,<br />
faces north. Best known for its premium Bordeaux-style red varieties,<br />
such as merlot, cabernet sauvignon and cabernet fran, as well as a<br />
fabulous farmers’ market, cheese shop and gourmet gift store. It’s<br />
certainly on the must-visit list.<br />
Te Mata Estate was established in 1896 and is one of New<br />
Zealand’s oldest wineries. They produce some of the country’s top<br />
quality reds. They don’t have a restaurant, but a visit to their cellar<br />
door is a must.<br />
Elephant Hill was designed by Queenstown-based architect John<br />
Blair in 2008. The winery’s distinguishing feature is the exterior<br />
cladding in natural green pre-patinated copper. The design was<br />
inspired by the Pacific Ocean. The stunning outdoor restaurant<br />
overlooks the vines with the coast beyond.<br />

Club. Take a step back in time – where women are only allowed in the<br />
front parlour – and enjoy genteel provincial New Zealand at its best.<br />

It was only a matter of time before the new 2-litre turbocharged<br />
engine stretched across more Lexus product.<br />
Last year the four-cylinder unit first arrived in the Lexus NX sport<br />
utility vehicle, it then found its way into the IS sedan, and it is an<br />
option in the RC, a two-door sport coupe and, as you would guess,<br />
it is badged RC200t.<br />
I’ve long been an RC series fan. The 350 with its 3.5-litre V6<br />
engine is a stunner, delivering vivid performance and fitting in well<br />
with the concept of manageable power and reasonable economy.<br />
The same could be said of the new 200t, it has stunning economy<br />
(7.3l/100km or 39mpg) and its 180kW (5800rpm) is more than<br />
adequate for the RC’s concept. Sure, it gives way 53kW to the 350,<br />
but that is negligible, it’s not often you can exploit an engine’s true<br />
potential, and the RC200t delivers honest power and still imparts<br />
the fun factor.<br />
Lexus also rates the twin-camshaft, 16-valve unit with 350Nm<br />
of torque, and if you take into account the areas where maximum<br />
torque is produced – 1650rpm to 4400rpm respectively – it has a<br />
solid flow of energy across the rev band.<br />
There’s a global trend towards smaller-capacity turbocharged<br />
engines and Lexus’ entry is a true gem. It is smooth, silent and very<br />
flexible. It works through an eight-speed automatic transmission<br />
unimpeded; the latter provides a seamless ratio spread and<br />
changes which are almost undetectable, bar the needle shift on the<br />
tachometer.<br />
In true sports car fashion, the RC200t drives through the rear<br />
wheels, which is pretty much as Lexus hallmark, and it offers an<br />
involving driving experience. There is something about rear-wheeldrive<br />
which contributes to a pure handling feel, encouraging driver<br />
input. You also get a deliberate feel of control from the rear<br />
with the fully independent multiple links controlling suspension<br />
movement and keeping the wheels in constant contact with the<br />
ground, that on top of the most amazing feedback from the front.<br />
While it is like steering on velvet, there is definite feel which<br />
encourages quick turn-in. It is forceful yet delicate in the same<br />
movement.<br />
I took the test car on the gorgeous road to Lake Coleridge<br />
Village. It has a mixture of corners, fast and slow, which really tests<br />
chassis control. The RC200t served to prove it is a true touring<br />
car. It sits low at just 1395mm; consequently, there is a low centre<br />
of gravity, so body movement is well contained. The spring and<br />
damper rates are a mix of what is needed to control balance and<br />
allow for freedom and absorption for comfort.<br />
When powering out of a corner, there is just enough power<br />
to test grip at the rear. In saying that there is plenty of grip on<br />
offer through sticky Bridgestone Potenza sport specification tyres<br />
(265/35 x 19in), and with the traction control settings there is little<br />
to suggest the RC200t would oversteer, although that could be<br />
manufactured by disengaging the TCS. I don’t do that in any car, and
the RC200t can still be an engaging drive without making it tail happy.<br />
It is also a car that uses different size tyres front to rear. The<br />
combination of grip and control, along with the involving nature of the<br />
steering has an end result of desire; the 200t is a driver’s car of true<br />
genius.<br />
It looks the part, too. The edgy, coupe-type styling is eye-catching<br />
and suggests definite sporty appeal. Inside, there is the sporty/luxury<br />
combination which Lexus does so well; it is well specified with all of<br />
the Lexus trim detail that makes the brand so appealing.<br />
In terms of figures, the Lexus RC200t delivers the goods. It can<br />
cut out a standstill to 120km/h time of 7.5sec and lunge through a<br />
highway overtake in around 5sec (80km/h to 120km/h). According<br />
to its comprehensive onboard fuel usage readout, it will also sip fuel<br />
instantaneously at the rate of 6l/100km (47mpg) at 100km/h, the<br />
engine very unstressed at 1600rpm. Lexus also claims a 230km/h top<br />
speed, if laws allowed.<br />
All in all the 200t has respectable all-round performance. It also sits<br />
well at $102,900 for the F Sport model as tested. This represents a<br />
$23,100 saving over its V6 stablemate, and by my reckoning makes it a<br />
very desirable purchase.<br />
I’m quite smitten with Lexus product, there’s just enough sporty<br />
appeal and, of course, as a luxury brand there is no skimping on<br />
detail. The RC200t is beautifully built and feels fabulous to be in as a<br />
driver, and as a passenger, too, for that matter. Sure, the rear is a little<br />
tight to access, but, once seated there, two occupants can be made<br />
comfortable.<br />
For me, I see the 200t as a driver’s car and one that excels in all<br />
situations. I’d expect nothing less from Lexus as a brand. Also, I simply<br />
can’t wait to drive more vehicles across the Toyota/Lexus line-up with<br />
the fabulous turbocharged four-potter.<br />

MeTHod<br />
Preheat oven to 180°C. Line the base of a 23cm springform cake tin with<br />
baking paper. Grease sides of tin well or spray with baking spray.<br />
In an electric mixer, beat egg whites. In a pot, place sugar and water and<br />
simmer for 2-3 minutes. Remove syrup from heat and add to egg whites. It will<br />
puff up beautifully. Add egg yolks. Blend through gently – do not over-mix.<br />
Sift cornflour, flour and baking powder then fold gently through egg-white<br />
mixture. Bake sponge for 15-20 minutes. Remove from oven then pick up the<br />
sponge in the tin and drop it from a height of 30cm. Not upside down!<br />
Once cool, remove from the tin and cut sponge in half, and smear base with<br />
whipped cream then top with drained peaches and passionfruit syrup. Place<br />
other sponge half on top and dust with icing sugar.<br />
Note: Adele likes to mix the peaches and passionfruit into the whipped cream<br />
and uses that mix to sandwich the sponges together.<br />

Valley Inn Tavern is situated on a leafy corner in Heathcote<br />
Valley. Surrounded by hills, the iconic establishment was rebuilt<br />
following the 2010 earthquakes. The triangular building now stands<br />
prominently on the winding village streets. The tavern is especially<br />
attractive on a sunny summer’s day when locals spill onto the<br />
outdoor courtyard.<br />
Valley Inn is the perfect spot to share an alfresco beverage or<br />
a hearty meal with friends. The spacious yet secluded courtyard<br />
features large, established peppercorn trees that provide ample<br />
shade from the sun. Twisting and turning, the family trees act as<br />
living playgrounds with knotted ropes that kids actively climb while<br />
their parents socialise. The tavern itself is reminiscent of an elegant<br />
British heritage establishment, complete with friendly Kiwi service.<br />
We started off our leisurely meal with bacon-covered scallops,<br />
which were both light and juicy. A delicious mix of sweet and<br />
creamy, the colourful dish was served on top of crispy potato gratin<br />
and sautéed spinach.<br />
Next up, we tucked into fresh Akaroa salmon. Drizzled with<br />
balsamic vinaigrette, the main dish pairs nicely with grilled broccoli,<br />
kumara, tomatoes and onions. Having visited on Tuesday night,<br />
which was coincidentally Steak Night, we also sampled the rib-eye<br />
steak served with sunny-side-up eggs and chips. The delicious cut<br />
of steak was cooked to perfection.<br />
Valley Inn is all about good honest food cooked well. The<br />
neighbourhood tavern is laidback, appealing to families, older<br />
couples and twenty-somethings alike. Drawing in an eclectic mix of<br />
patrons, the garden bar and restaurant plays host to weekly events.<br />
Be sure to stop by the next time you’re in the neighbourhood<br />
or make a point of visiting if you’re craving classic Kiwi dishes. You<br />
won’t regret a trip to Valley Inn Tavern, a community hub that<br />
exudes both comfort and familiarity. With birds chirping to<br />
the sound of lively conversation, you’ll find that the hours quickly<br />

Post-quake Christchurch has forced a new type of eatery to take<br />
centre stage in our culinary landscape. we’ve learnt to cross town<br />
for a good coffee and to align with local businesses that provide<br />
what we want – a warm, welcoming environment that offers style,<br />
service, and some sort of connection. open since June 2016,<br />
Magnitude Café and Roastery delivers on all counts.<br />
with a décor of warm wood and colour accents via on-trend<br />
lighting fixtures and Scandi chairs, it is the coffee-roasting machine<br />
that will make its mark as you enter. Each week, in the early hours,<br />
the monster roars into life, creating a range of blends to be sold<br />
as beans or ground coffee. the house blend served by the café is<br />
‘French’, a dark roast described as having a full, strong flavour and a<br />
punch of medium citrus acidity. I was eager to sample the goods.<br />
Upon ordering, I was pleasantly surprised to be asked when<br />
we would like our cappuccino and half-strength latte to arrive:<br />
“Straight away, or with breakfast?” A question often missed, yet so<br />
appreciated.<br />
to eat it was Eggs Florentine ($14.50) that won me over,<br />
especially with its choice of rosti: kumara; potato and herb; or<br />
mozzarella and bacon. Upon recommendation, I opted for the<br />
latter, while my partner-in-dining-crime was encouraged to choose<br />
waffles, with berries and yoghurt ($12.50).<br />
our fellow café-mates were treated equally as well. Regular<br />
patrons were recognised not only by name, but by cabinet food<br />
or protein shake order. (I’m told they’re just as friendly towards<br />
children, with the highchairs, kids’ table and colouring supplies<br />
backing this up.)<br />
I believe you don’t know what you’re missing until you are<br />
served a decent cup of coffee. Like a good glass of wine, I was able<br />
to sip and enjoy every mouthful of mine. My tablemate was much<br />
the same, appreciative of her single-shot drink still delivering that<br />
pick-me-up punch. It’s encouraging to be told another grinder will<br />
soon grace the café counter, as I would be keen to try others in<br />
the seven-strong coffee range produced on site.<br />
The waffles hit the spot and the eggs were on the money.<br />
Jealous glances from beside me were confirmed when my dining<br />
date said, “I’d come back just to try the rosti!” Portion size was just<br />
right, too.<br />
there are plugs under the tables for laptops, large tables to<br />
accommodate meetings, and free fluffies for the next generation<br />
of coffee lovers. you can host an event here after hours or simply<br />
drop in to buy a bag of coffee. the cabinet is ever-evolving and<br />
even the breakfast menu is incredibly customisable. For once, it’s all<br />
about you.<br />
with a logo that incorporates the Christchurch skyline, a<br />
faultline and a coffee bean, perhaps it isn’t surprising this café<br />
resonates so well with a Cantab looking for more than just<br />

Rockets lit the heavens as local windows, and probably some dentures,<br />
were rattled by the explosions overhead. This was not a re-enactment of<br />
the Battle of Waterloo, but Sparks 2017, where music and gunpowder<br />

Treasures from the golden days of motorcycle racing sat silently<br />
on their pedestals, like heroes in a classical pantheon, at<br />
Mike Pero’s new Motorcycle Gallery. The grand opening saw<br />
enthusiastic guests milling around, appreciating the collection<br />
of superb engineering, whilst outside, visiting riders arranged<br />
their two-wheeled mounts in ranks of shining beauty. Celebratory<br />
fare was proffered, to attendees’ delight, interrupted only<br />
by the formalities of the opening ceremony. With the red<br />
ribbon severed, the partying continued, bringing joy to the<br />
gathering who lingered to browse the gleaming display.<br />

Under the long shafts of imminent twilight, picnickers dallied on the<br />
lawn as within the Golden Room, all was made ready for the concert<br />
ahead. Visiting baritone Eike Wilm Schulte was guest starring alongside<br />
Dorothee Jansen, presenting an evening of German opera selections<br />
as part of the Fourth Annual Lansdown Narropera Festival. Scenes<br />
from The Magic Flute, Fidelio and The Mastersingers of Nuremberg,<br />
were brought to life by the narrator and voiced to perfection by the<br />
two singers. After the velvet night fell, the audience held spellbound<br />
throughout, gave loud thanks for the uplifting musical treasure which,<br />
for a brief moment, was theirs.<br />

were about to be presented. Luscious platters and cooling glasses<br />
were circulated amid the social chat, the opulent surroundings<br />
making for an easy-going atmosphere. At the party’s height, the<br />
latest offerings from the wide world were shown, after which it was<br />
time to make small talk once more. Soaking up the comfort of the<br />
elegant store, guests enjoyed the hospitality until the descent of<br />
evening heralded the hour to journey home.<br />

CARMEN WITH L’ARLESIENNE<br />
Treachery, deceit and jealousy were abroad one recent night, thankfully<br />
not in the city but on the Isaac Theatre Royal stage when the Royal New<br />
Zealand Ballet (RNZB) presented Carmen with L’Arlesienne. The music of<br />
Georges Bizet partnered with the choreography of Roland Petit brought<br />
the stories to the minds and hearts of Christchurch. With feline grace and<br />
power, the dancers enacted the spectrum of emotions, which drive the two<br />
tales, one set in sunny France, the other in fi ery Spain. The VIP pre-show<br />
party for guests of the company was the perfect overture to the spectacle<br />
of dance and dramatic excellence.<br />

Cool rain teemed down sending folk scurrying for cover which,<br />
happily, was to be found at McKenzie and Willis. In the car park a<br />
magnifi cent marquee had sprouted under which Oarsome O’Fare<br />
was getting into full swing. Sushi, sandwiches and other treats<br />
were passed around, the abundantly laden platters eagerly fallen<br />
upon and divested of the goodies. Throughout the store, guests<br />
thronged, chatting or listening to the various school musicians<br />
displaying their prowess. The hubbub within the tent was excited<br />
as auction items were perused and bids proffered. The fortunes of<br />
Canterbury schools’ future rowing luminaries are secure, thanks<br />
to the generosity of those who attended.<br />

OPERA AT PEGASUS BAY<br />
An ocean of brollies sprouted on the grassy knoll, shielding faces<br />
from the sun as sweet strains of Mozart lifted on the breeze, fi lling<br />
the glade. Centre stage at Pegasus Bay Winery was the Christchurch<br />
Symphony Orchestra presenting an afternoon of opera and musical<br />
delight. Well loved and timeless arias rang about the green, leafy<br />
amphitheatre, rivalled only by the crickets and birds. Prior to the<br />
concert and during the interval, guests mingled, partaking of the<br />
fi nest fare. The day of artistry and excellence culminated in a lively<br />
can-can, complete with audience participation!<br />

In this modern age, there are many table manners that are, quite<br />
simply, out of date. for example, the concept a woman must never<br />
finish her entire meal, but leave half of it on the plate. Perhaps a good<br />
diet tip, but it’s now offensive to your host to do so.<br />
Today, we are faced with the issues of smartphone manners, which<br />
alone could fill an entire book. The simple answer is to pick your<br />
moments: your dinner guest might not appreciate selfies, and your new<br />
boss less appreciative of food photography for Instagram, especially<br />
over a business lunch.<br />
There are, though, some manners that have and will not change. To<br />
ensure you’re not offending anyone we suggest taking a look at our list.<br />
1. Let’s start by keeping it simple. Napkins belong on the lap.<br />
2. The back should be straight without rigidity; unless you are sitting<br />
next to someone, you really detest.<br />
3. About elbows, the only place they should be anchored to is the<br />
ribs. never on the table, but always down near the sides.<br />
4. use your soup spoon in a motion away from the table edge and<br />
leave the spoon in the soup plate when done.<br />
5. The little finger should never be crooked.<br />
6. Food should be kept in the centre of the plate away from the flat<br />
rim; this is also common sense to avoid unseemly accidents.<br />
7. You should only cut one thing at a time, and refrain from layering<br />
food on to your fork.<br />
8. Two bites should never be taken from the same forkful; if you<br />
are doing this, we suggest you re-read this article at least 10<br />
times a day.<br />
9. About where to leave utensils mid-meal (see diagram)<br />
10. And after a meal (see diagram)<br />
11. The mouth should be wiped before drinking to keep the edge of<br />
the glass attractively clean.<br />
12. And please hold your wine glass by the stem rather than clutched<br />
it in your hand like a baboon.<br />
13. Always break bread into pieces before buttering.<br />
14. Salad should not be cut with a knife, nor shoved in one’s mouth.<br />
We’ll leave the complications of this one with you to figure out.<br />
15. never dip one’s utensil into a condiment or re-dip in to anything.<br />
16. Any food served by your guest that is already portioned should<br />
never be refused.<br />
17. Fingers should never be used to push food onto the fork – yes<br />
we know it’s obvious but still must be said.
