Maximize Your Profits with Catering<br />

You pay the same amount of rent each month<br />

whether you cater or not. You pay your managers<br />

no more, whether you have one dollar or $1,000 in<br />

pre-booked catering jobs due to go out before you unlock<br />

your doors.<br />

Oftentimes a 10 percent increase in sales – very<br />

doable with catering – will lead to a doubling of profits.<br />

Catering also helps your labor costs. You can utilize your<br />

crew for catering jobs during down time.<br />

Due to the higher check averages of catering, you can<br />

get a higher return on your advertising investment as well.<br />

<strong>The</strong> Keys to Catering Success<br />

1) Evaluate Your Current Strengths – Do you have a<br />

chef with culinary talent? Take an inventory of your<br />

staff and their strengths as well as a physical inventory<br />

of what equipment you have to help you start catering.<br />

Operators that start small and grow can be more<br />

successful. You won't have a second chance to<br />

impress a client.<br />

2) Determine Your Menu and Catering Packages –<br />

Catering clients expect you to think for them. <strong>The</strong>y<br />

expect you to sell them packages and determine<br />

quantities for them. Consider creating packages of<br />

varying price points that include an entree, salad or<br />

sides, and bread. You can include drinks, desserts, and<br />

paper goods, or use them as up-sells.<br />

3) Develop a Pricing Strategy - Call your local catering<br />

competitors and play prospect. Get menus and determine<br />

where the catering marketplace is. You want to<br />

price your services to be a good value and typical to<br />

your concept. You may want to offer at least three pricing<br />

options: low, medium, and high. It appeals to the<br />

three buying personalities and assures you maximize<br />

your catering sales without relying on employees that<br />

aren't master salespeople.<br />

4) Layout Your Catering Pieces – Once you've determined<br />

your menu, studied your competition’s packages,<br />

and calculated your prices, it's time to design<br />

and print catering menus. Until you've refined your<br />

menu, avoid expensive high volume printing. You can<br />

design a simple 8-1/2" x 11" flyer and copy to colored<br />

paper, or design a four-color glossy catering brochure.<br />

Places like Kinko's can cost effectively design and<br />

print four-color menus with small output through their<br />

digital copiers.<br />

5) Market, Market, Market – Start fishing where the fish<br />

know you – your current customers. Include catering<br />

menus in all deliveries and carryout orders, and if you<br />

have seating, design tabletents, "grab-one" menus,<br />

and even restroom signs to let your customers know<br />

you now cater. If you have a customer database, mail<br />

them a letter and catering menu announcing your new<br />

service. Uncover as many catering niches as possible<br />

and go to them.<br />

From free samples to local offices to more formal tastings<br />

for a holiday party committee, the quality of your food and<br />

your professionalism will do all the selling. Don't make the<br />

mistake of assuming catering is just about good food. A<br />

businesswoman who trusts you with her company's board<br />

meeting or client appreciation event cares more about not<br />

being embarrassed. She also does not want a career as<br />

a party planner. You'll be expected to be responsive and<br />

customer centered. From handling billing to knowing<br />

client preferences, the easier you make your catering<br />

clients' lives, the more business they'll trust you with.<br />

Layer 3-4 oz. of cooked, skinned, deboned, and shredded Genuine <strong>Broaster</strong> Chicken ® or new <strong>Broaster</strong>ie ® Chicken,<br />

Paoli Dairyland Shows Compassion<br />

When an employee's neighbor lost their house in the<br />

devasting storm that ripped through the small community<br />

of Paoli, Indiana, and surrounding towns the first<br />

week of June, Paoli Dairyland, which had just recently begun<br />

serving Genuine <strong>Broaster</strong> Chicken ® , wanted to help. A F-3 tornado<br />

caught the community unaware and ransacked many homes<br />

and businesses. Paoli Dairyland's new owners, Elmer & Lynn<br />

Sullivan, stepped up to the plate and helped fill plates for many of<br />

these people who had lost so much.<br />

A “Caring and Concerned Citizen and Victim” wrote this in a<br />

Letter to the Editor of the Paoli News Republican following the disaster:<br />

“... I also want to take the time to put out a big ‘thank you’<br />

to the new owners of Paoli Dairyland, Elmer & Lynn Sullivan! For<br />

being new ‘out-of-town’ business owners they were caring, compassionate,<br />

and generous enough to donate enough [<strong>Broaster</strong>]<br />

Chicken and all the fixings, drinks, ice, and tableware to help feed<br />

the victims of this disaster in a time of crisis ...”<br />

It just goes to show that people will take notice when a business<br />

does or doesn't take an interest in the community it serves.<br />

We applaud Paoli Dairyland for stepping up and helping out<br />

in the wake of such a disaster! And thank you to Stoker's, their<br />

authorized <strong>Broaster</strong> distributor, for sharing this story with us.<br />
