Let the Games Begin!<br />

This month, all eyes will be on Rio de Janeiro, Brazil, for the opening<br />

ceremony of the Games of the XXXI Olympiad. NBC will televise coverage<br />

of the games from <strong>August</strong> 5th through <strong>August</strong> 21st on their family of<br />

networks, in addition to streaming it live on NBCOlympics.com. The<br />

summer Olympics feature competitions in 28 sports to include swimming,<br />

volleyball, boxing, gymnastics, fencing, cycling, track and field, and even<br />

trampoline! It's time to cheer on your country's athletes as they (hopefully)<br />

Fun Facts About Left– Handers<br />

Did you know that <strong>August</strong> 13th is International Left– Handers Day? In honor<br />

of this quirky holiday, here are some interesting facts about left– handed<br />

folks. Lefties are often better at multitasking and are more likely to pursue<br />

creative careers. It is said that left– handed college graduates go on to<br />

become more wealthy than right– handed graduates. They are better at 3D<br />

perception and seeing underwater. And, out of the seven most recent U.S.<br />

presidents, four have been lefties, including President Barack Obama.<br />

Children's Books for All Ages<br />

Even though a book may be intended for a younger audience, that doesn't<br />

mean you won't enjoy it as an adult. You will appreciate reading these<br />

classics, whether alone or with your grandchildren! Charlotte's Web by E.<br />

B. White –A wonderful and timeless tale of friendship and sacrifice. Tuck<br />

Everlasting by Natalie Babbitt – This novel asks the question: What if you<br />

could live forever? The Lion, the Witch and the Wardrobe by C. S. Lewis<br />

– Four siblings discover the land of Narnia, which is trapped in a never–<br />

ending winter and ruled by the evil witch.<br />

Melon Salad With Honey– Lime Dressing<br />

Nothing is quite as refreshing as cold melon on a hot summer day. This fruit<br />

salad will be so popular at your next event, you will see the bottom of the<br />

bowl before you know it! Dice one cantaloupe, one honeydew, and one<br />

small seedless watermelon, removing any seeds or melon rind. Place all of<br />

the fruit into a large bowl. Finely chop 1⁄4 cup of fresh mint leaves and<br />

sprinkle over the top of the fruit. In a small bowl, whisk together 1⁄3 cup<br />

honey and 1⁄4 cup freshly– squeezed lime juice. Pour dressing over fruit<br />

and gently toss to coat. Cover and refrigerate to chill. Serve cold.<br />

This year’s Olympic Games in Rio de Janeiro, Brazil represent a<br />

season of change and renewal for athletes and spectators alike.<br />

For the first time in Olympics history, the Games are being held in<br />

South America and in a Portuguese-speaking country. Golf and<br />

rugby are making a comeback in Rio, chosen from among the<br />

seven sports whose federation leaders applied to the International<br />

Olympic Committee to be included in 2016. Golf was last included<br />

in the 1904 Summer Games in St. Louis, Missouri, while rugby was last<br />

included in the 1924 Games in Paris, France.<br />

In addition to these firsts, Kosovo and South Sudan are new<br />

additions to this year’s list of competing countries. For these<br />

countries, only recently declared independent, the 2016 Games<br />

represent hope and opportunity. South Sudan’s National Olympic<br />

Committee chair, Wilson Deng Kuoirot, reflects that efforts to<br />

rebuild South Sudan’s sports infrastructure, after months of the civil<br />

war conflict, have fostered a sense of unity among the nation’s<br />

sixty-four tribes.<br />

The Rio Games take place between <strong>August</strong> 5 and 21 and<br />

feature more than 15,000 athletes from 206 countries who will be<br />

competing in 28 sports.<br />

For busy weeks, try these easy-prep pulled pork sandwiches. Let your slow<br />

cooker do the cooking while you’re away!<br />

INGREDIENTS<br />

3 tbsps brown sugar<br />

2 tsps chili powder<br />

1 tsp mustard powder<br />

½ tsp ground cumin<br />

Salt and pepper<br />

1 boneless pork shoulder, 3-4<br />

pounds, trimmed of excess fat<br />

2 tsps vegetable oil<br />

½ cup apple cider vinegar,<br />

plus more to taste<br />

3 tbsps tomato paste<br />

6 hamburger buns<br />

Barbecue sauce and<br />

coleslaw, prepared, for<br />

serving<br />

DIRECTIONS<br />

Combine 1 tbsp brown sugar, chili powder, mustard powder, cumin, 2 tsps salt and<br />

½ tsp pepper in a small bowl, and spread over the pork shoulder. In a large skillet,<br />

heat the vegetable oil and pork shoulder on medium, rotating the pork until<br />

brown all over (5 min). Remove the pork and place on a plate. Combine<br />

¾ cup of water with the pork drippings and pour into the slow cooker. Add<br />

the vinegar, tomato paste, 2 tbsps of brown sugar, and 2 cups of water to<br />

the slow cooker and stir. Add the pork, cover and cook on low for 8<br />

hours. Remove the pork and place on a cutting board. Pour the liquid<br />

from the slow cooker into a saucepan, boil and reduce by half for<br />

approximately 10 minutes. Season with salt. Chop the pork and mix it<br />

in a bowl with 1 cup of the liquid reduction. Add salt and vinegar to<br />

taste. Serve on buns with barbecue sauce and coleslaw.<br />
