Let the Games Begin!
This month, all eyes will be on Rio de Janeiro, Brazil, for the opening
ceremony of the Games of the XXXI Olympiad. NBC will televise coverage
of the games from August 5th through August 21st on their family of
networks, in addition to streaming it live on NBCOlympics.com. The
summer Olympics feature competitions in 28 sports to include swimming,
volleyball, boxing, gymnastics, fencing, cycling, track and field, and even
trampoline! It's time to cheer on your country's athletes as they (hopefully)
take home the gold! Check out Rio2016.com for more details.
Fun Facts About Left– Handers
Did you know that August 13th is International Left– Handers Day? In honor
of this quirky holiday, here are some interesting facts about left– handed
folks. Lefties are often better at multitasking and are more likely to pursue
creative careers. It is said that left– handed college graduates go on to
become more wealthy than right– handed graduates. They are better at 3D
perception and seeing underwater. And, out of the seven most recent U.S.
presidents, four have been lefties, including President Barack Obama.
Melon Salad With Honey– Lime Dressing
Nothing is quite as refreshing as cold melon on a hot summer day. This fruit
salad will be so popular at your next event, you will see the bottom of the
bowl before you know it! Dice one cantaloupe, one honeydew, and one
small seedless watermelon, removing any seeds or melon rind. Place all of
the fruit into a large bowl. Finely chop 1⁄4 cup of fresh mint leaves and
sprinkle over the top of the fruit. In a small bowl, whisk together 1⁄3 cup
honey and 1⁄4 cup freshly– squeezed lime juice. Pour dressing over fruit
and gently toss to coat. Cover and refrigerate to chill. Serve cold.
This year’s Olympic Games in Rio de Janeiro, Brazil represent a
season of change and renewal for athletes and spectators alike.
For the first time in Olympics history, the Games are being held in
South America and in a Portuguese-speaking country. Golf and
rugby are making a comeback in Rio, chosen from among the
seven sports whose federation leaders applied to the International
Olympic Committee to be included in 2016. Golf was last included
in the 1904 Summer Games in St. Louis, Missouri, while rugby was last
included in the 1924 Games in Paris, France.
In addition to these firsts, Kosovo and South Sudan are new
additions to this year’s list of competing countries. For these
countries, only recently declared independent, the 2016 Games
represent hope and opportunity. South Sudan’s National Olympic
Committee chair, Wilson Deng Kuoirot, reflects that efforts to
rebuild South Sudan’s sports infrastructure, after months of the civil
war conflict, have fostered a sense of unity among the nation’s
sixty-four tribes.
The Rio Games take place between August 5 and 21 and
feature more than 15,000 athletes from 206 countries who will be
competing in 28 sports.
For busy weeks, try these easy-prep pulled pork sandwiches. Let your slow
cooker do the cooking while you’re away!
INGREDIENTS
3 tbsps brown sugar
2 tsps chili powder
1 tsp mustard powder
½ tsp ground cumin
Salt and pepper
1 boneless pork shoulder, 3-4
pounds, trimmed of excess fat
2 tsps vegetable oil
½ cup apple cider vinegar,
plus more to taste
3 tbsps tomato paste
6 hamburger buns
Barbecue sauce and
coleslaw, prepared, for
serving
DIRECTIONS
Combine 1 tbsp brown sugar, chili powder, mustard powder, cumin, 2 tsps salt and
½ tsp pepper in a small bowl, and spread over the pork shoulder. In a large skillet,
heat the vegetable oil and pork shoulder on medium, rotating the pork until
brown all over (5 min). Remove the pork and place on a plate. Combine
¾ cup of water with the pork drippings and pour into the slow cooker. Add
the vinegar, tomato paste, 2 tbsps of brown sugar, and 2 cups of water to
the slow cooker and stir. Add the pork, cover and cook on low for 8
hours. Remove the pork and place on a cutting board. Pour the liquid
from the slow cooker into a saucepan, boil and reduce by half for
approximately 10 minutes. Season with salt. Chop the pork and mix it
in a bowl with 1 cup of the liquid reduction. Add salt and vinegar to
taste. Serve on buns with barbecue sauce and coleslaw.
