Spicy Crab<br />

Tartar Salad<br />

Ingredients<br />

80 gr King crab flesh<br />

20 gr chili garlic mayo(mayonnaise<br />

with an essence of chili garlic sauce)<br />

1 tsp Orange tobiko<br />

2 thin slices carrot<br />

2 thin slices celery<br />

2 endive leaves<br />

1 green asparagus cut fourfold<br />

Some green salad leaves<br />

Some rocket<br />

Some sakura mix<br />

1 tsp chopped chives<br />

1 pinch of chili powder<br />

20 ml yuzu truffle dressing (10 ml yuzu<br />

juice and 10 ml white truffle oil)<br />

Preparation<br />

Mix the crab with the mayonnaise,tobiko<br />

and mix well. Put the crab in the plate and<br />

place the salad and the vegetables on it.<br />

Pour the dressing carefully around the crab<br />

and sprinkle with chili powder and chives.
