Maggie Alderson finds homes to host the most joyful of Christmas feasts 

Christmas dinner – there’s nothing like it. The one meal of 

the year when the extended family gets together to eat far 

too much and drink far too much, while wearing silly hats 

and reading out sillier jokes. Dogs may be sporting antlers. 

It doesn’t matter if you hate one of the crucial elements of 

the meal – and everybody seems to loathe one of them, be it 

Brussels sprouts or brandy butter, with even Christmas pudding 

itself anathema to many. I’m not very keen on stuffing. 

Even if this year’s cook doesn’t make gravy the way you like it (too 

thick! too thin! he’s used too much wine! she’s used Bisto!), or there’s 

one in-law who gives you a severe case of the pip, there’s an overriding 

sense of joy to the occasion, which infects even the most whinging of 

Winnies with the jolly spirit of the Ghost of Christmas Present. 

Such is the happy reputation of the occasion that citizens from many different 

religions in our multicultural society choose to join in, for the lark of it – just 

as many British non-Hindus now celebrate the spring festival of Holi. Because, 

just as there is so much to like about playfully throwing around loads of bright 

colour – what’s not to love about a proper feast of (truly) Biblical proportions? 

While religious purists may say this is coming at it from the wrong 

angle – celebrating Christmas as an excuse to eat too much and Holi 

to give yourself licence to dump bright pink gulal powder on your best 

friend’s head – that’s a miserabilist way to look at it. Both festivals and 

their traditions celebrate joy. And joy has to be a good thing for us to 

acknowledge and cover ourselves with, whatever its derivation. 

All of which makes it a very good thing to have a wonderful dining room 

to enjoy the splendid banquet in. One big enough for a table to seat everyone 

and with décor – be it traditional dark walls, or a thrillingly contemporary 

scheme – to set the mood. Here are four houses with just such rooms. 

Merry Christmas. Hic. 

1. Sussex House Farm 

Where? Sussex House Farm nestles in 

203 acres of rolling countryside to the south 

east of Cowden, a charming village on the 

tri-border of Kent, Surrey and Sussex. East 

Grinstead is 7 miles to the west, Tunbridge 

Wells 8 miles to the east. M25 junction 6 is 

about 13 miles and central London only 35 

miles away. Cowden station is one mile. 

What? This Grade II*-listed house is built 

around a two and a half storey timber-framed 

house dated 1580. It has been owned by 

the actor Sir John Mills, and later by Roger 

Hargreaves, who wrote some of his Mr. Men 

books there. Sussex House Farm has been 

beautifully renovated by its current owners. 

In terms of accommodation, the floorplan 

spreads across three pages, with three cottages, 

a barn and a gym building as well as the main 

house. The ground floor there sprawls across 

six reception rooms, two large halls, one with 

original panelling, and an eat-in kitchen.

It can sometimes take a while to find a rewarding occupation, 

especially one that has to fit around a busy family, is both 

creatively satisfying and enables a connection with people. 

But when the stars do align it’s amazing how quickly things fall into 

place. Less than a year ago Kali Hamerton-Stove and her good friend 

(and now business partner) Sarah Crysell hatched a plan to open 

a café and shop in Goudhurst. Sarah is a talented and experienced 

cook, having owned and run Olive Stores in Brenchley, but it 

was uncharted territory for Kali, whose background is in PR. 

Kali admits to being a little reluctant at first, but it was a really good 

idea; “I love finding a café with a lovely shop in one place, where you 

can sit and relax, surrounded by pretty things. The more I thought 

about it and talked to Sarah, the more I imagined that in five or

ten years’ time I would want to be doing this sort of 

thing. I simply wasn’t sure that I was ready, but you never 

are.” Their discussions started in January of this year 

and they kept talking. A decision was made by March, 

they invented a look and a name – cleverly constructed 

from Kali’s last name and Sarah’s maiden name – and by 

the beginning of May Hamerton + Jones was open for 

business. Roll forward just a few months and the business 

is thriving. Sarah, a talented cook, guides the menu and 

food offering, and Kali concentrates on the retail side. 

“Sarah does the baking in her kitchen, I help,” says Kali. 

“The menu is simple and homemade: we do three salads 

every day, a tart or quiche, sausage rolls, soup and a seasonal 

warm dahl or vegetarian soup. The most popular is smashed 

avocado and poached egg with chilli flakes on Lighthouse 

(the bakery in Ticehurst) sour dough toast.” They also sell 

Monmouth coffee, a cult brand that people travel miles for. 

When we meet at Kali’s home, plans for Christmas are 

in full swing. Lucky Kali has an expert on hand to help 

with decorations; her mother, Mary Kathryn, is over from 

Tennessee for a seasonal visit. They are busy decorating 

the house for a wonderful and very traditional family 

Christmas, using fresh foliage and greenery and gorgeous 

decorations that Kali also sells at Hamerton + Jones. 

“We mainly sell homewares and antiques, jewellery and 

stationery, but it’s always changing – at the moment we 

have lambing pens, long matches, vintage charms on

– who would have thought that scissors could be lovely? 

Lovely is really what it’s all about for Kali – lovely, but 

also quirky and well made. “I love trawling around for 

vintage finds for the shop,” she says. “I only sell things 

that I love. I don’t like throwaway objects, they have to 

last and to have a purpose. I like to keep things changing 

all the time, but it’s also important to sell things with 

history and a story.” Part of the story has to do with an 

organisation called Kisany, a Congolese women’s charity 

that Kali represents in this country. The charity makes 

and sells beautiful embroidered items. “I like to buy 

things that are responsibly made, especially those made 

by women.” She is especially pleased with the fabulous

Although originally from Tennessee, Kali lived in 

California, where she worked in PR and repeatedly 

attempted surfing. She has spent the last 18 years in 

England, living in London, moving out to Sevenoaks for 

a while before settling in Goudhurst seven years ago. “We 

knew the area well and were looking around here when the 

oast came up for sale,” she says. “It had been on and off the 

market for a while, but when I saw how much space there 

was inside, I could imagine the children scooting around

the corner of my eye, in nearly every room, I catch a glimpse of a Christmas

The oast house was originally part of a group of three 

houses: the mill house, the oast and the farmhouse. 

“There’s a round oast and a square oast here,” Kali 

explains. “We do our best with the curving walls and 

love the quirkiness. I don’t buy specially made curved 

furniture, but I choose furniture carefully so that it will 

fit the space.” The downstairs roundel has become the 

family’s library and is lined with bookcases. “It’s amazing 

how many books it takes to fill a library,” laughs Kali. 

“We thought we had a lot of books – we are both avid 

readers, but we haven’t come close to filling it.” 

The kitchen was the first space that they renovated, 

keeping the original shape and layout, but updating the 

cupboards and adding an all important island unit. “We 

live in the kitchen and living room,” says Kali, adding 

“I keep the tv in a cupboard, so that it’s not on display 

all the time, which means that if the children don’t see 

it they don’t immediately think about it, so they go and 

do other things.” A clever trick, that. Other than these 

two rooms I suspect that some visitors might choose 

to spend their time in Kali’s laundry. “It is the envy of 

all who survey it,” she laughs. “It has an extra drinks 

fridge, a wall of cupboards, a work bench for wrapping 

presents – and there’s still lots of space for our masses of 

laundry. I feel like this sort of room is a bit American.” 

From the look of it we need more of these in England. 

“We are slow to do things in the house,” says Kali. “There 

are still things that haven’t been finished after seven years. We 

do it in dribs and drabs and things change. One thing we did 

do after a couple of years was to put in a new floor on the 

ground floor and we insulated under the floorboards. It

The walls throughout the house are painted with warm, 

but muted neutrals. “They are warm colours because 

it’s a big space and I wanted to feel cosy – especially in 

the bedrooms,” says Kali, adding, “I choose colours that 

change in the light at different times of the day. It gives 

a moodiness. I love dark little rooms. The downstairs 

bathroom is painted with Farrow and Ball’s ‘Green Smoke’ 

and Richard has a dark olive study. It’s like being inside 

a little jewel box.” Kali admits to only one mistake with 

paint. “I chose a colour called ‘Arsenic’ to go on the inside 

of some of the cupboards. I thought it would brighten 

them up and chose it because of the name of course – 

who wouldn’t want to use a colour called Arsenic? It was 

this really bright tealy-blue colour but it was way too 

much and made the cupboards look hectic,” she sighs. “I 

hated going into those cupboards and had to repaint.” 

The upstairs roundel, approached up a small flight of 

stairs, is a storybook room that would be the envy of many 

a princess. The pretty bed was hand made by Kali and is 

the room’s focal point. It has been painted pale blue and

The boys’ bedrooms are strikingly different. A pair of 

stag’s horns (available in various sizes from the shop) loom 

down from a dramatic (and very useful) blackboard wall 

in one. He has chosen a theatrical dark grey (so dark that 

it looks black) linen duvet cover that matches well with 

the blackboard. The sheets and pillow have an ostrich 

theme – to remind them all of the time Kali was attacked 

by one on safari. Her other son’s room is dominated by 

two huge framed and signed jazz festival posters from New 

Orleans. The jazz festival has a special significance for the 

family, because this was where Kali and Richard first met. 

The master bedroom is uncluttered and tranquil, simply 

furnished with an old clerk’s desk and a delicate sofa that 

has been re-upholstered in bright Designers Guild green. 

“It’s my favourite colour,” she smiles. The office where Kali 

works on ideas is just outside the bedroom. There’s a mood 

wall with a desk below for putting together collections of 

finds. A new type of very sharp and functional scissors is just 

about to come on the scene – apparently every household in 

China has a pair. There are some quirky and comfortable

looking old cinema chairs that were a bargain from Bristol, 

“By the time I’d had them recovered, they weren’t such 

a bargain,” she sighs. They do look great now though. 

Back downstairs and all is calm and Christmassy. Quirky 

decorations grace the dining table: sparkly grapefruit, stripy 

crackers, an exotic looking Indian plinth holding a candle.

to collaborate with them and support their work.” This is 

going down very well. “Sarah and I have been so touched by 

the village’s support of the shop and café,” says Kali. It is the 

small businesses that are at the heart of village life and so, 

on many levels, the café is helping to promote and unite the 

local community, as well as bringing in visitors from outside. 

Perhaps one day all villages will have a Hamerton + 

Jones café, supplying good food, quirky gifts and a friendly 

atmosphere. In the meantime, Goudhurst can celebrate. 

And I need to think about getting some kitchen scissors.

This year’s Wealden Times Midwinter Fair transformed The Hop Farm in Paddock 

Wood into a winter wonderland of festive shopping for three very special days 


What a show! Over 8,000 visitors 

enjoyed a great day of sensational 

shopping and fabulous food 

and drink at this year’s Midwinter Fair, 

sponsored by Harpers and Hurlingham. 

We were back at the Hop Farm in Paddock 

Wood for the second year with over 250 

exhibitors selling gorgeous gifts plus fashion, 

furnishings and food: in fact everything you 

could possibly wish for to create the perfect 

Christmas. This year’s Best Dressed Stand 

winner was Mac Creative, judged by Emilie 

from our sponsors Harpers & Hurlingham. 

In addition to the Street Food Café 

and Café Bakery, we introduced a Café 

Bar for the first time this November 

which was sponsored by Britain’s 

oldest brewer, Shepherd Neame. 

Local vineyards, distilleries and 

brewers offered tastings in the groovy, new, 

corrugated iron-clad space while Mrs B’s Bubbles 

served prosecco from a very pret ty Piaggio van. 

Shepherd Neame created a pub space specially for 

visitors and it proved a particularly popular haven 

for our guests taking a break from retail therapy! 

We were, as always, indebted to the show’s 

sponsor Harpers & Hurlingham for their 

continued support and to Dulwich Prep and

choirs to entertain visitors in the Street Food

Going round a house with the owners for this 

magazine is always a journey. How they came to live 

there, the changes they’ve made to tailor it for their 

needs, the lovely things they’ve collected along the way... 

Touring the six-storey House in Hastings with Shaun 

Clarkson was a little different, more like a master class in 

interior design, which is no coincidence. Since the 1990s 

Shaun has been one of London’s leading designers of bars, 

nightclubs and restaurants, working with Oliver Peyton on 

the legendary Atlantic Bar and Grill (ah, youth…), as well as 

Tokyo Joe, Pop, Jerusalem, Odette’s, Spiga and many others. 

So if you’ve spent any of your adult life sipping 

cocktails in sophisticated London surroundings, it’s 

very likely you’ve sat in one of his creations. 

“In 2006, I did 18 bars in the West End,” he 

says, happily. “I originally trained as a fine artist at 

Worthing School of Art and Kingston Polytechnic, 

then I ‘fell in with a bad crowd’, as my mother 

used to say, and started designing bars.” 

But fun as it is working with the most exciting 

names in hospitality – and as one of the experts on 

Channel 4’s ‘Four Rooms’ intriguing objects TV 

 


“I always start with a mood board,” says Shaun. “A physical one, not just Pinterest 

boards and then I move on to a sample board for each room. This house is about 

colour and texture – blues and greens, reflecting the colours of the sea.”

show – at a certain point Shaun and his partner Paul 

Brewster realised they also needed to do something 

for themselves, to have their own business. 

“In 2001, we had the idea for a ‘home-tel’,” says 

Shaun, “a big house that you could rent for yourself 

and friends, but not just as a self catering, also with the 

option to have it all catered. So more like a glamorous 

boutique hotel, but you take over the whole place. 

“But of course, we couldn’t do a nice four bedroom,” says 

Shaun, laughing. “We found a big converted barn in a field 

in Norfolk and did a 20-bedroom space which we called 

Cliff Barns, after the character in Dallas, in a glamorous 

ranch style. It broke the mould, offering a sense of escapism 

through the interior design and was very successful.” 

Riding on that they did another one, which they 

called Carrington House. “It’s Georgian with shoulder 

pads,” says Shaun. Also sleeping 20, the website (which 

I recommend a look at) describes Carrington House as: 

‘Bringing the style and substance of urban living to the 

Norfolk countryside… in exquisite style and splendour.’ 

Substitute ‘East Sussex coast’ and the same could 

be said of The House in Hastings, which is the latest 

in their home-tel portfolio, although it’s a bit cosier, 

sleeping just ten people and not designed to be as much 

of a party house as the two Norfolk establishments. 

“This is more like a home for us than the other houses – 

we wanted it to be somewhere where we would also want to 

come and stay. The other houses are more like nightclubs.” 

To reassure their new neighbours – some of whom 

had been a little alarmed by the party central reputation 

of the Dallas home-tels – Shaun and Paul have had 

them in for drinks and hosted a Macmillan coffee 

morning, making it clear they want to be part of the 

very special close community of Hastings Old Town. 

Particularly because Shaun already had a very strong 

personal connection with the increasingly fashionable 

seaside town. He’s been best friends with Alistair 

Hendy – proprietor of the amazing AG Hendy & Co 

homestore, on the Old Town’s High Street – from the 

age of seven, when they were at school together. 

“Alistair had the flat underneath ours in Shoreditch,” 

says Shaun, “and we opened our shop Pitfield London, 

an interiors and lifestyle shop and café in Pitfield 

Street, in Hoxton, the same week as Alistair opened his 

home store. We’re always doing the same thing… 

“So when we sold the flat in Shoreditch and thought

already an affinity with Hastings 

from coming down to see Alistair, 

so it seemed the natural place.” 

Especially as the Grade II Listed 

six-storey Regency town house – one 

of three in a terrace built to house 

officers during the Napoleonic 

wars – with the most amazing 

views over the Old Town and out 

to sea, had just come on the list 

of a property auction house. 

Only someone with Shaun’s 

experience of overhauling properties, 

would have dared take it on. “It had 

been flats for years,” he says, “not 

touched since the 70s and it was 

pretty squalid. The flats had been 

condemned as unfit for habitation, 

which is why it came on the market. 

They were infested with wood lice, 

full of rubbish. We filled 39 skips…” 

Not only was it a massive job, with 

water running down through the bay 

windows, the listed status meant it 

all had to be restored in accordance 

with its original lathe and plaster 

construction. “We had to strip it 

right back and build it again, with all 

new windows. There was one original 

door left, so we had that copied for 

all the other rooms. We had to have 

new spindles for the bannisters, 

new stair treads... It took two years, 

using local builders and craftsmen.” 

And that was before Shaun 

could even start on putting in his 

colour scheme, although it was 

all planned in advance, as per 

his professional techniques. “I 

always start with a mood board,”

the stairs and landings are painted in Mayfair blue by 

Mylands, which Paul explains, with all the depth of his 

experience, is the oldest paint company in London, still 

based in Lambeth and by appointment to Her Majesty 

the Queen. All the paint in the house is by them. 

In a similar vein of continuity in both supplier and 

aesthetic, all the hall and stair carpets are by Designer 

Carpet, the brilliant bespoke carpet company. Shaun had 

them intercut together a dark blue centre, with a chunky sea 

green border, the edges whipped, creating a core statement 

of the overall colour theme running through the house. 

Leading off from it, the rooms on each floor are 

brought together by a unifying scheme within the overall 

themes. Starting at the top, is the family suite, which 

includes the Cabin Room, a double at the back of the 

house, but with the sea brought in via the collection of 

framed needlepoint ship pictures hanging over the bed. 

The walls are a gentle sage green, sharpened by a pair of 

magnificent emerald green satin lampshades, on a standard 

and table lamp – the first of an array of splendid shades 

throughout the house. “They are copies of my auntie’s 

lampshades,” says Shaun. “After she died, I cleared her

house and saved her lamps, but the shades were too worn 

out to use, so I had them copied.” The sort of service he can 

mention casually – knowing where to get such a thing done. 

Next door, the Crow’s Nest is a splendid bunk bed den, 

with a group of pressed brass plates with ship motifs, 

echoing the maritime theme. In both rooms, the wall 

lights are genuine nautical brass bulkhead lights from 

Trinity Marine in Exeter. Another insider gem, they are 

the world’s leading specialists in maritime antiques. 

There’s yet another in the bathroom. The splendid 

brass taps are from Barber Wilsons & Co Ltd, also by 

appointment to Her Majesty – and it would seem to 

Shaun. All the taps in the house are from there. Just as all 

the shower cubicles are bespoke, from his favourite source. 

No tooling around on Google for him. He knows his 

preferred suppliers and that’s where he goes. Job done. 

Outside the bathroom is an intriguing group of 

dramatic ornately carved dark wood pieces – a bench 

and matching mirrors. I’m scribbling in my notebook 

trying to describe them, when Shaun chips in. “I had 

a bit of a moment with the Black Forest bench…” he 

says, solving my riddle in the first of many such

instances when he knows the correct term for things. 

In the gorgeous Cliff View Room on the next floor down, 

I comment how much I love the fact that the two (simply 

heavenly) mid-century Italian chandeliers don’t quite 

match. “Ah, yes,” says Shaun. “They’re a French pair…” 

and I have another new term for my interiors lexicon. 

The curtains in here are in a very unusual multistriped felt 

in various shades of blue, complementing the blue walls – 

in the Captain’s Room next door, the curtains are the same 

fabric in shades of green, to go with the pale green walls. 

Both rooms also have a feature which is a theme 

of the house: glass fronted display frames containing 

massed collections of objects. In Cliff View there are 

18 Poole Pottery dolphins in various sizes, while in 

the Captain’s Room, it’s ranks of porcelain posies. 

The idea to put the collections in the wallhung 

glass boxes came from Shaun’s experience as 

a hotelier: “People can’t nick them.” But it’s also 

brilliantly effective. On their own, or even in groups 

of three or four, the posies would look twee and 

random, en masse they look witty and glamorous. 

He also admits that the various musters (‘group’ 

doesn’t seem to convey the scale of them) around the 

house – there are white Wedgwood unglazed stoneware 

vases in the master bedroom – are a useful outlet for 

his tendency to amass collections of things. “I’ve got 

fifty Poole dolphins in total…” he admits. “I think 

I’ve got a shopping problem.” I think what he has is an 

amazing eye – and the imagination to see how something 

quite ordinary can be rendered very special.

nice thing about design is surprises,” says Shaun in response

continues the green theme on the walls and a chaise 

longue upholstered in emerald green tweed. 

Down the stairs again and you’re on the upper entrance 

floor, up some steps from the front of the house, where 

the knocked-through salon encompasses a drawing room 

at the front and a screening room to the rear, united by 

matching dark grey and white marble fire surrounds (the 

second copied from the one original) and a pair of 1940s 

brass illuminated round mirrors, found at Clignancourt. 

The décor of the whole is the ultimate union

Above: The Cabin Room sits right at the top of the house 

of Shaun’s blue and green theme, with unifying blue 

walls throughout, Kelly green velvet upholstery in 

the rear section and wonderful marbelised turquoise 

and blue velvet on the sofas in the front. The bright 

yellow lamp shades make another appearance too. 

Also on this floor is the Net Hut Cloakroom – a 

guest loo rendered in tribute to the Old Town fishing 

community’s famous black wooden structures, the 

walls clad in horizontal black weatherboarding. 

Finally, down to the kitchen level, where the carpet 

eventually stops and the floorboards are painted in heavenly 

diamonds. The main piece in the kitchen is a marble-topped 

stainless steel unit, Shaun had made (bespoke! bespoke!) 

to house the old stone sink. A prep bench/breakfast bar 

was created by raising the legs of a lovely old table. 

Making the whole space pop is the knockout 

stainless steel 1970s light fitting Shaun bought 

in Brussels. “I go on a lot of shopping trips with 

clients and end up finding things for myself.” 

It’s an eye popper, with a huge round table painted 

bright red, with ten matching painted and upholstered 

chairs, atop a sharp black and white diamond floor, 

with one of Shaun’s signature statement light fittings 

over the table. Imagine that Dr No decided to leave his 

Pacific island and move to the East Sussex coast… 

On the far side of the room, 1950s metal and wood 

bookshelves display three large model boats from Ardingly, 

while opposite, glass-fronted original cupboards on 

either side of the fireplace display musters of stoneware, 

cabbage ware, pewter, silver and crystal. A collection of 

malachite lighthouses is grouped on the mantlepiece. 

It’s hard to think when one, relatively 

small, room packs so much punch. 

And that is the true theme of this extraordinary house. 

Even in this lengthy appraisal, there are too many amazing 

details to describe – and while they are what makes the 

whole so special, it is the combined effect, the theatrical 

drama and sheer confidence of it, which is so inspiring. 

My advice, if you want to learn from Shaun’s 

talent and experience as a decorator, is study 

these pictures, scrutinise the website for the 

house and – best of all – go and stay in it.

Jo Fairley explains how to beat end of 

year exhaustion in speedy style 

Does anyone ever have more than five minutes 

to themselves, at this time of year…? Of 

course, we’ve got our Christmas shopping 

done and dusted at Wealden Times Midwinter 

Fair (well, I will have, anyway!) – but there’s still so 

much on the To-Do list that carving out me-time for 

‘pampering’ is almost out of the question, right now. 

Yet is there a time of year when we more need a boost…? 

It’s a long time since the summer hols, the days are hideously 

short and gloomy – and everyone I know is suffering 

from general too-much-to-do-in-too-little-time syndrome. 

So: this is when we all need quick fixes. And here’s what 

I’ve learned really, really works in almost no time flat. 

For under-eye bags, reach for an ice cube. Wrap it in a cotton 

hankie, or a piece of Clingfilm, but simply stroke it around 

the eye area for a few minutes, in an outwards motion. 

Give yourself a five-minute facial massage. Everyone’s got five 

minutes, right? First, cleanse your face thoroughly. Then… 

1. Put a little of your favourite facial oil in one palm and rub 

your hands together, then smooth over face, neck and bosom. 

2. Rather than fingertips, use the big muscle in the cushion 

at the base of your thumb, always working upwards. 

3. Start by fanning out over and round your neck, then 

work round and up your jaw and cheekbones to the temples, 

then across and up your forehead to your hairline. 

4. Repeat, covering the whole face for five minutes. The oil 

will be absorbed, skin velvety, and your face rosy and ‘lifted’.

£48 for 55ml – but they truly, truly only need a capful to 

fragrance the whole house, never mind your body! I also like 

to fragrance the room I’m prepping in for the evening with 

the brilliantly uplifting Revive Room Fragrance (£25 for 

10ml), brilliant in a steam diffuser or aromatherapy burner 

(and also great for mid-afternoon brain slump, BTW.)

into cleansed skin. One tester commented: “I absolutely 

loved this cleanser as a pick-me-up when needed. It was 

great to use as a treatment, with a brightening effect that 

made my skin look fresh. Each time I used it I received 

compliments on how smooth my skin looked.” 

SILVER AWARD Caudalie Beauty Elixir, £12 for 30ml. 

Team Beauty Bible was frankly staggered that a mist could 

get such a high score – but this offering, turbo-charged by 

grape-derived antioxidants (this brand began its life on a 

French vineyard), elicited amazing comments. (The smell’s 

pretty uplifting, too: a light blend of orange blossom, mint 

and rosemary.) One tester commented: “This is a musthave 

for me now. It’s perfect for when my skin is looking 

tired, dull and taut. Great to refresh make-up, too.” 

BRONZE AWARD ESPA Tri-Active Advanced Instant 

Facial, £60 for 30ml. Actually designed to prevent signs of 

ageing on younger skins, but our testers (who are generally 

more mature) loved the immediate skin boost and the 

‘blurring’ blend of ingredients, including olive extract, 

green algae and vitamin C. Everyone agreed on this instant 

effect – as one tester commented: “Made my skin instantly 

softer and radiant. A little goes a long way,” with another 

adding: “This is one of the nicest serums I’ve ever used.” 

BEAUTY STEAL AWARD The Sanctuary Spa 1 Minute Flash 

Facial, £14 for 75ml. Beauty Bible tries wherever possible

incredibly impressive show, for the price. (Not cheap-cheap, 

but darned good value.) “Even with light movements it 

gives an instant facelift – in fact, I can’t believe the impact 

this product has in such little time with so little product!” 

Smooth in a line-blurring primer. If you’re redoing 

your make-up, a primer really will make it say put 

for longer – and my personal favourite is the new-ish 

Guerlain Blurring Active Base, £32 for 30ml, with a

fab complexion-smoothing action (and the wonderful, 

signature violet-rose scent of Guerlain’s make-up collection). 

Let Sam McKnight fix your hair. Earlier this year, Sam 

– session stylist to the stars (no kidding) – brought out 

the most brilliant collection of styling products, which 

I’ve been using as quick fixes when my own hair’s overdue 

a blow-dry. (Perfumer Lyn Harris – founder of Miller 

Harris, now with her own fabulous Perfumer H boutique 

on London’s Crawford Street) – created the scents. There’s 

a quartet of products, of which I’m using three – starting 

with Cool Girl – a lightweight texturizing spray for (and I 

quote Sam) “rock ’n’ roll and sexy, the hair that everyone 

wants”. It breaks up a too-smooth hairdo beautifully, 

delivering a great chunky finish that doesn’t have to be too 

just-rolled-out-of-bed if you use just a little. Lazy Girl is 

a terrific dry shampoo in lightweight powder-mist form. 

Don’t just think of it as something to get hair clean; dry 

shampoos can be genius for adding a bit of volume when 

hair’s gone pancake-flat. Last but not least, Easy Up-Do will 

soon become a must-have if you are fond of a chignon or 

a bun, and perhaps planning to put your hair up for a 

party. Sam describes it as “20 hairpins in a can”, because 

it literally transforms the texture of hair, to give it “hold

Thus, Cinderella, you shall go to the ball. Or the carol 

concert. Or the office karaoke ‘do’. And nobody, but

Three years ago, Julie Phillips cycled 500 miles 

across the Rift Valley in Kenya. At that time, her 

back pain and sciatica was just about manageable.

around my lower back which spread into my left

success, Julie ended up in limbo, feeling low. 

“I had physiotherapy sessions but they didn’t help.

couple of weeks – and they were incredibly painful. 

I was given stronger painkillers but these 

made me giddy. I felt very despondent 

and didn’t know which way to turn.” 

Julie finally took matters into her own hands 

and found IDD Therapy, a targeted spinal disc 

treatment which was being offered at Wealden 

Osteopaths & Spine Centre in Goudhurst. 

“I made enquiries and found that IDD Therapy 

is particularly successful for long-term back 

pain and sciatica (pain radiating from the 

lower back, usually down one leg). 

At my initial assessment, the Clinical Director,

Because my condition was severe, I knew I

Did it work? 

This is a very luxurious treatment: the time 

allowed is generous, the Kalmora Spa treatment 

rooms are large and comfortable and it includes 

a pretty comprehensive shoulder and neck 

massage as well as a hand massage and mask 

plus a scalp massage. The recommendation 

is for a series of treatments (1 a week for 4 

weeks, then monthly for maintenance) but 

I saw a real improvement after just one. 


This is definitely more than just a facial. 

The treatment’s attention to neck, shoulders, 

hands and head added a different dimension 

and made it a very relaxing experience.

What are the stated benefits of the treatment? 

Every facial at The Rye Retreat is bespoke to your skin 

type. My therapist Lucy suggested the new Aveda Tulasara 

techniques and products to deeply exfoliate and awaken my

The winter months can play havoc with 

even the most flawless complexions: the 

combination of the drying effects of central 

heating inside, and the chaffing of cold winds 

outside, can cause the blood vessels in the skin to 

change rapidly, aggravating redness on the face. 

This is a particular issue for the 10% of the 

population who the NHS estimate suffer from rosacea, 

a skin condition which mainly affects the face. In 

its simplest form, rosacea is redness on the skin 

caused by broken blood vessels and capillaries near 

the surface but more acute cases can involve spots, 

pimples and permanent thickening of the skin. 

As well as the weather, triggers to avoid for 

sufferers over the winter include spicy foods and 

alcohol as well as hot drinks and hot baths. It’s also

Wrinkle-Relaxing Injections 

What does this treatment promise? Commonly referred 

to as “Botox”, wrinkle-relaxing injections are highly 

effective treatments to smooth out the lines and wrinkles 

on the forehead, frown lines, crow’s feet, bunny lines 

and lip lines. Botulinum Toxin is a muscle relaxant that 

works by blocking nerve impulses to the muscle. It is 

injected into specific muscles using a fine needle. 

Does it hurt? No. A very fine needle is used so 

it is not painful, although you may feel a few 

small pinpricks. No anaesthetic is required. 

How long does it take? Around 10 minutes. 

How long will the treatment last? It will usually take 

between 2 to 7 days for you to notice a difference, 

with the full effects seen at around 2 weeks after 

the treatment. As the weakened muscles recover, the 

wrinkles will gradually return after 3 to 5 months. 

Can I go out that evening? Yes, it will be fine to go out but 

it is recommended that you should have no alcohol for 24 

hours. You will also need to avoid the gym and sauna for a 

day or so. There is a small risk of bruising from the injections. 

Finally the cost! From £200 

Lip Enhancement 

What does this treatment promise? Lip enhancement 

using dermal fillers is popular amongst younger patients 

who wish to increase the volume of their lips, but is 

also effective in older patients to rehydrate the lips, 

correct asymmetry, define the lip borders and address 

“smoker’s lines” or “lipstick bleed lines”. Subtle natural 

looking lips can be achieved using advanced injection 

techniques and “trout pouts” can be avoided. 

Does it hurt? Local anaesthetic cream is used 

to numb the lips before the treatment and most 

patients find the procedure comfortable. 

How long does it take? Around 20 minutes. 

How long will the treatment last? Lip fillers 

usually last around 6 to 9 months. 

Can I go out that evening? It is probably best not to plan a 

night out too soon after having lip enhancement. Your lips 

will be a little swollen after the procedure and may well swell 

up more in the 24 to 48 hours afterwards before settling 

down over the next few days. Bruising of the lips can also 

sometimes occur. You will not be able to wear lipstick and 

should avoid kissing, aspirin and alcohol for 24 hours.

Wild Chestnut and mushroom crostini with gorse flower 

Serves 8-10 Prep time: 20 mins Cooking time: 45 mins 

Crostini are an Italian appetizer consisting of small slices of grilled or toasted 

bread and toppings. The best time to forage for chestnuts is late autumn / 

early winter in the woods around Kent. Gorse flowers have bright yellow 

flowers and are edible raw. They continually flower all year round. 

Food 

• 8 tbsp rapeseed oil – Pure

• 2 garlic cloves, 1 peeled, 

1 finely chopped 

• 200g/14oz mixed 

mushrooms, chopped 

• 200g wild chestnuts, 

peeled and chopped 

• 1 tbsp coarsely chopped 

fresh flatleaf parsley 

• 1 tbsp fresh tarragon 

• salt and freshly ground 

black pepper 

• 1 large baguette (cut into 

8 slices) – I love the bread 

from Lighthouse Bakery

1. Preheat oven to 180°C. Slit the shells on the bottom of 

each chestnut in a cross. Bake until the shells split open – 

this usually takes about half an hour. (I like to shake the 

tin every 10 minutes to check on them.) Then cool and 

remove them from their shell before finely chopping. 

2. Trim the ends of the baguette and cut it into slices about 

2cm thick. Place on a large baking sheet and bake or grill 

until lightly toasted. Rub each slice of baguette lightly with 

the whole garlic clove and brush with some rapeseed oil. 

3. Heat the rest of the oil in a frying pan, add the chopped 

garlic and cook for one minute, next add the mushrooms 

and chestnuts then fry until hot all the way through. 

4. Stir in the parsley and tarragon and season with 

salt and freshly ground black pepper. 

5. Spoon the filling over the toasted baguette and serve 

with a bright yellow gorse flower on each one.

• 250g butter 

• 5 rashers smoked

• 1 bay leaf 

• 5g dried mixed herbs 

• 1 whole Gressingham 

duck leg 

• 2 wild duck breasts 

(or another duck leg) 

• 50ml red wine 

• 25ml brandy or

it slightly more

1. In a thick bottomed saucepan, place your chopped 

onions, cubed butter, chopped bacon, garlic, bay leaf 

and mixed herbs. Cook this on a medium heat for 

about 20 minutes, the butter should be simmering 

and the bacon cooked all the way through. 

2. Add your duck, bones and all, and the wine. Cover 

with lid or greaseproof paper and pop into an oven at 

150°C for another hour until it is falling off the bone. 

3. Next add the Cointreau or brandy. The 

Cointreau gives it a slightly sweet citrussy 

tang which works well with the duck. 

4. Bring to the boil, then turn off the heat 

and leave to get to room temperature. 

5. Remove the duck bones and whizz the meat with 

a stick blender (or counter blender) until smooth. 

Pour into a terrine, and leave to set in the fridge 

overnight. The next morning cover and freeze or use. 

6. To serve: When you are ready, toast 6-8 rounds of 

stale bread, then cut out with a cutter. Spread the pate 

on the toast and garnish with a sprig of thyme, and 

a clementine segment for colour. If you prefer you 

can use sliced baguette for a more rustic look.

Serves 10-12 Prep time: 20 mins 

Cooking time: 20 mins 

• 5 figs diced 

• 5 slices Parma ham 

or prosciutto 

• 100g British goat’s

• 125g filo pastry sheets 

(each about 40 x 30cm) 

• 50g butter, melted 

• 1 tbsp nigella/onion seeds 

1. Preheat oven to

squares, discarding the 

woody top. Grate the goat’s 

cheese if you can, or mash 

with a fork until spreadable. 

Combine with the figs. 

3. Lay the sheets of filo on a 

large board and cut into 

4 rectangles, each about 

10x15cm. Brush each filo 

rectangle with melted butter. 

4. Place a tablespoon of the fig 

and goat’s cheese mixture 

and spread it along the 

width of the pastry. Fold 

in at the sides and roll it 

up quite tightly to give 

a neat rolled parcel. 

5. Place on a baking tray 

lined with non-stick baking 

parchment. Brush the tops 

of the filo fingers with a little 

melted butter and sprinkle 

the nigella seeds over. 

6. Bake on the middle shelf 

of the oven for 20 minutes, 

until golden and crisp. 

7. Take a slice of the Parma 

ham and cut length 

ways into 4 stripes. 

8. When the finger roll is 

cool enough wrap one end 

with the Parma ham strip. 

I like to cut again in half 

and have some with Parma

Back to our roots 

After a lengthly wait, Jo Arnell starts to unearth her soil-dwelling home grown veg in time for Christmas 

the season for the unearthing of root crops and 

what they lack in Christmas sparkle is made up 

’Tis 

for by the comfort and joy they bring to winter 

recipes. There is magic and quite a lot of mystery to the process 

of growing an underground crop. You can’t really see what’s 

happening until it is time for the harvest, so it does feel a bit 

like opening a present when you dig around in the soil and 

unearth your treasures. Some root crops are quick and easy to 

grow – radishes can be ready to pull up within 3-4 weeks, but 

others need more patience. Parsnips and leeks take months, 

slowly maturing through the year and turning the wait for the 

harvest into an act of faith. Luckily there are other crops that 

can be grown companionably alongside them until they need 

the space, and the other benefit is that unlike some vegetables 

that need to be harvested all at once, they can be lifted as you 

need them, acting like an outdoor larder – ready whenever 

you are. Many actually improve in flavour as the temperatures 

plummet, sweetening up as their starchy carbohydrates 

turn to sugar. If you plan well, shopping for this part of the 

Christmas lunch could be as easy as going into the garden… 

Underground storage systems 

The underground vegetables aren’t always roots. There are 

several ways that edible plants conserve food and moisture in 

order to survive in conditions that aren’t always hospitable; 

usually it’s a method for coping with periods of drought. Some 

store energy in starchy tubers, such as potatoes; an onion 

bulb is really a squashed down plant in a casing, primed to 

unfurl and grow once the spring arrives. We are all familiar 

with the veg patch stalwarts, though more exotic roots are 

becoming available, but be careful, as some are not hardy. 

Sweet potatoes and Mashua (like a nutty potato) need a long, 

warm growing period and will not survive a frost. Some that 

sound exotic are actually reintroductions of ancient varieties; 

Scorzonera is a hardy, rugged looking root and Skirret, 

which is like a multi-stemmed parsnip was apparently Henry 

VIII’s favourite (but then he didn’t have to prepare it). 

All in the soil 

A lot goes on under the ground. It’s a busy place, absolutely 

 

Cultivation 

Carrots – grow best in light, sandy soil that hasn’t 

been recently manured. Sow in containers, or choose 

short-rooted varieties if your soil is unsuitable. 

Thin to 2-3cm apart. Carrot fly is the main 

enemy, protect with fleece, interplant with strong 

smelling crops like alliums, or in raised beds 

Parsnips – seeds may be slow to germinate – station sow/ 

mark the rows with a quick crop like radish. Parsnips like 

the same conditions as carrots – not too rich/heavy, stony, 

or freshly manured. Leave in the ground over winter as frost 

will sweeten the roots. Varieties: Gladiator, Tender and True 

Beetroot – don’t grow in recently manured soil. 

For an autumn/winter crop, sow in mid July. Pull 

before they become woody and keep the tops on to 

stop ‘bleeding’. Varieties: Boltardy, Chioggia, 

Leeks – sowing to harvest – 26-40 weeks, 

depending on crop (early, main or late). Start 

off inside or direct into a nursery bed. 

Transplant when pencil thick into holes that are watered, 

but not refilled with soil. Hardy through winter, easy to 

grow. Watch out for rust. Varieties: Musselburgh, St. Victor 

Potatoes – ‘Chit’ seed potatoes by leaving in a light, 

frost free place for 2-3 weeks. Plant from early March 

to mid April. Begin earthing up once seedlings are 

10cm tall. Watch out for scab, blight, keel slugs. Main 

crop varieties: Pink Fir Apple, Kestrel, Maris Piper 

Celeriac – can be slow to germinate and get going and needs 

a long growing season, often doesn’t start to bulk up until 

the end of the season, so is best grown from small plants.

be half the problem, as there’s no way of checking on things. 

Root crops need to grow in conditions that make it easy for the 

roots to expand and grow into acceptable shapes (unless you 

particularly enjoy the comedy moments that sometimes result 

from odd shaped roots). Carrots and parsnips will fang and fork 

if they have to fight their way through compacted or stony soil 

and, weirdly, are also prone to do this if the soil is too rich. They 

like a free draining situation, so it might be worth installing 

raised beds, particularly if your soil is on the clay side. Do add 

organic matter to condition the soil, but make sure this has been 

applied during the previous season. Root crops often follow 

on from greedier vegetables like brassicas in a rotation for this 

reason, as the manure or compost is added to feed the first crop, 

but also helps to improve the soil structure in the long term. 

Harvesting and storing 

Whether you lift and store your root crop, or leave 

them in the ground to harvest through the winter will 

depend on how frozen the ground may get, but also 

whether they are prone to attack from soil pests. 

Main crop potatoes – ready to harvest once the haulm (top 

growth) has died back in early autumn. They can be left in 

the ground and dug up when required, but if you need the 

space for other crops, or suffer with keel slugs (underground 

slugs that attack tubers and root crops) or blight, it is probably 

better to lift and store the tubers. Lift potatoes carefully – push 

your fork gently into the ground a distance away from the 

plant and unearth them. Spread them out to dry in the open 

air for an hour or so to enable their skins to toughen up for 

storing. Potatoes need to be stored in dry, dark conditions. 

Hessian sacks are ideal, as they allow air to circulate. 

Onions – ready to lift when the tops die down. Again, 

leave them in the open air for a while – a week or more, to 

let the papery protective layer ‘cure’. Onions are best stored 

in cool, dry conditions – plait the dried stems or store in 

a mesh bag and hang up to ensure good air circulation. 

Garlic and shallots are treated in the same way as onions. 

Carrots, beetroot, parsnips, turnips, swede – can 

be left in the ground and harvested when needed, 

but to stop them being attacked by pests and if your 

ground freezes too hard in the winter, it’s best to

lift them and store in a protected environment. 

Once lifted, cut off the leaves and stems to prevent 

moisture being drawn out of the roots. Find an old 

wooden box, or storage container and put a layer of sand, 

sawdust or multi-purpose compost (kept moist, but not 

wet) in the bottom, then a layer of roots, then more sand/ 

compost etc. Store in a shed/garage/cellar, but make sure 

no pests can get at them – don’t seal with a lid, though, 

as this may create an airless, unhealthy environment. 

If you have space outside, or have large quantities to store, 

you could build a clamp, which is a traditional way of keeping 

vegetables available all through the winter. Find a flat, dry patch 

of ground and dig a trench around it to ensure that it stays 

well drained. Put straw/gravel/bracken in the trench to stop 

earth filling it back up, then put a layer of straw on the base 

of the clamp. Arrange some roots on top, making sure they 

don’t touch, then layer straw and root crops alternately into a 

pyramid shaped mound (so that water doesn’t settle on the top). 

The earth from the trench can be piled over the final layer. 

It may be too late for a home grown Christmas lunch 

from scratch now, but if you’re fed up with shopping, this 

is a great time for planning next year’s crops and perusing 

the seed catalogues. What could be more satisfying than 

pulling up leeks and unearthing tasty tap roots on Christmas 

morning? Just add some Brussels sprouts to the list and 

your lunch will be festive – and fresh. Happy gardening.

Festive Magic 

Susan Elkin takes a look at the traditional Christmas story

Many a fond parental eye will be piped in the next 

couple of weeks when they hear toothy little voices, 

slightly off key, warbling their way through the first 

verse of Away in a Manger at the school nativity play. It’s as 

much part of Christmas as mince pies, reindeer and tinsel. 

It won’t be long though before we also hear of schools which 

have decided against any sort of traditional Christmas for 

fear of offending those of other faiths or unbelievers. Like the 

aforementioned mince pies, reindeer and tinsel, that too happens 

every year. And it tends to annoy many parents which is why we 

hear about it. They’ve stomped off to the press in indignation. 

Well I sympathise with their cause but probably don’t 

share their reasoning. The Christmas story is about family 

values (how kindly Joseph cares for Mary!), new life and 

(almost) universal rejoicing. Even the sinister Herod part 

of the story shows up everyone else in a good light in the 

face of evil: the wise men go home a different way and, 

we have to assume that Mary, Joseph and their young 

child are helped into exile by many decent people. 

For the record, I’m a religious unbeliever but there’s 

a great deal of universal human truth and love in this

worth celebrating with every child in every school. 

Second, the nativity play is a form of drama and children 

can’t, really can’t have too much of that. It teaches self 

confidence, teamwork and helps children to empathise 

with others even if they’re still in Reception or Year 1. 

Cuts have meant that many schools – of all sorts – have 

found the need to reduce drama and other arts provision. 

If you let the nativity play go for ideological or other 

reasons then it’s yet another drama opportunity lost. 

Third, traditions are part of a community’s social 

stability. Many children – sadly – don’t have much of 

that in their lives outside school. So schools have to work 

ever harder to compensate. They shouldn’t have to, of 

course, but they do. Anything which is traditional helps 

whether it’s dancing round the maypole, the end of 

term disco, the summer fete at which you’re allowed to 

throw wet sponges at the head – or the nativity play. 

So long live the sound of Away in a Manger, Joseph forgetting 

his words and chirping shepherds. Just don’t get too competitive, 

please, about what your child is given to do. The donkey, 

the policeman and the farmer are just as important as Mary. 

It’s the taking part and sharing the story which matters. 

Not too big, Not too small, Just right.

Fables from the Farm 

Jane reflects on a bountiful year at Coopers Farm 

It’s been quite a dry autumn, so 

this year the cows stayed out right 

up until the end of November. 

They’d happily stay out all winter if we 

gave them half a chance and plenty of 

hay, but weighing in at a hefty 700kg 

a piece they’d turn all the fields into a 

soupy mush with not a blade of grass 

in sight come the spring. So I’ve just 

brought them in and love the novelty 

of having them up by the house, 

bedded up and cosy in deep, clean 

straw. Having the cows in the barn also 

means that Christmas is 

coming (though no geese 

to fatten here as they’re 

one of the few animals 

not to feature in the 

Coopers Farm line-up). 

And that means I go 

into festive overdrive. My 

efforts extend far beyond 

the hall, as I deck every 

corner of this old farmhouse 

with industrial quantities 

of greenery gathered from 

around the farm. There’s 

nothing like swags of ivy 

and twigs of holly to create 

general Christmas loveliness and such 

abundance has the added advantage of 

hiding all the cobwebs. And ladies take 

note… the pagans considered holly 

to be male and ivy female, whichever 

was brought inside the home first 

would determine who would rule 

the roost for the following year!

And then there’s the seasonal menus. 

2017 was a great year for fruit and 

foraging and I’ve managed to store a 

fair amount of interesting produce for 

the Christmas table, though my girls 

make it perfectly clear that Waitrose 

would be the preferred option. I’ll be 

serving Dabinetts and Jordan’s Weepings 

– interesting old-fashioned apple 

varieties – exotically perfumed Meeches 

Prolific quinces and bowls of creamy 

medlars to go with the mince pies. 

The walnut tree went into overdrive 

– even though we forgot 

to beat it, which is 

apparently the key to 

success – and produced 

about twenty nuts. And 

while on the subject of 

beating, this year we got 

there before the squirrels 

and so will have cobnuts 

to go with the walnuts, 

and huge juicy sweet 

chestnuts, for which it 

was also a bumper year. 

And the table will 

twinkle with homemade 

beeswax candles which 

are quite easy, though time consuming, 

to make. In the autumn the wax frames 

full of honey are spun to remove the 

honey and then the wet and sticky 

frames are given back to the bees to clean 

up. The older, scruffier and now dry wax 

frames are then melted down to produce 

a pan, ideally a tall asparagus pan, full of 

molten beeswax. A long piece of wick is 

then dipped at either end into the pan of 

wax and hung over a chair back to cool. 

Once set, they can be dipped again and 

again and again until the desired length 

and thickness of candle is achieved. If 

I’m being completely honest, it’s jolly 

difficult to end up with a perpendicular 

candle, but heck, lean as they might 

they cast a far more interesting 

glow and smell utterly delicious. 

However, when it comes to alcohol, 

the family very firmly put their collective 

foot down and insist on the real thing 

– branded, bottled and bought – rather 

than obscure home-made hedgerow 

versions. It’s not for debate, although 

I do manage to slip in some sloe gin 

just to make the point! Cheers and
