Welcome to the International Family Eat and Learn book. Our family started doing this<br />
over a year ago and since then we have sampled foods and flavors from every corner<br />
of the globe. Now we and our children can tell you about different clutures, how they<br />
eat, why they eat the way they do, and also about thier economies religions,<br />
demographics and more. Doing this has not only educated our children to the world<br />
around them but also taught them how to cook and the best part is that they and we<br />
have enjoyed every minute of it. The conversations around the dinner table are lively,<br />
interesting, and always a learning experience. It is our greatest hope that this book will<br />
bring as much joy and learning to you as it has to our family.<br />

Introduction<br />
Our family includes myself, my wife Michelle, and our three hungry boys Charlie 13, Braxton<br />
12, and Joel 10. And when I say hungry I do mean hungry. Whether it's a big meal with lots<br />
of prep or just frozen pizzas, dinnertime for our family is always an event. For us it's not only<br />
a time for eating, dinnertime is also one of the only daily times when all of us can sit down and<br />
join together in conversation. Now, for those of you with children, you know that generating<br />
constructive conversation with hungry children at the dinner table can be a challenge; let<br />
alone conversation that might be educational or provide a learning experience with your kids.<br />
Expecting every dinner experience to be fun and infomative might be expecting to much when<br />
hungry kids are involved. But, we have discovered a way to make at least one dinner<br />
experience each week to be just that. My wife and I love to cook together. The kitchen has<br />
always played a central role in our family. Not only is the kitchen where we eat but also where<br />
the kids do their homework, where we pay the bills and make family decisions, it's where the<br />
kids chores are posted, and even on Friday nights it's where my wife and I have date-night<br />
and if I'm lucky, dance in the kitchen too.<br />
Over the past few years my wife and I have tried different ways of enhancing the boys interest<br />
in food and cooking. When it comes to making mac and cheese or baking brownies, our kids<br />
are pros. But when the day comes that each of them move out into a kitchen of their own or<br />
perhaps meet that special someone who expects a homecooked meal, we knew that thier<br />
kitchen survival skills needed improvment. In order to peak their interest and teach them<br />
some basic kitchen skills we needed to construct a way of making it interesting and fun. This<br />
routine gives us a chance to work with each child individually on a weekly basis with the end<br />
result being shared and discussed with the entire family. Making unique dinners not only<br />
teaches the child about measureing cups, spices, cooking temperatures, etc. but also about<br />
different flavors, textures, and smells. Then, at dinner they are required to explain their<br />
ingredients which gives a much deeper understanding and lasting impression of the<br />
experience to them. They actually learn, remember, and are able to adjust and create their<br />
own reciepes!<br />
The concept of this book is simple and easy. It doesn't require any extra time in the kitchen<br />
and over time becomes something your children actually look forward to. And we hope that it<br />
brings as much conversation, discussion, and laughter as it has ours.<br />

How to use this book and the website<br />
Using this book is simple<br />
This book contains 52 pages which will enable you to use it once a week for an entire year<br />
with your children. For us having 3 boys, one child has one assignment each week.<br />
During their week, they are giving their assignment below and expected to either make or<br />
assist with making thier chosen dinner. Then, at the dinner table, using the book they carry<br />
out the rest of their assignment.<br />
1) Using the map located in the middle of this book, have your child pick a country they are<br />
interested in. It doesn't matter where in the world or even if they can pronounce the<br />
county's name or not. Sometimes our boys will even close their eyes and poke the map at<br />
random.<br />
2) Via the library, internet, or even friends the job of your child is to find a recipe they are<br />
interested in making. Help them by choosing one that is relativly easy to make according<br />
to their skill level and also one that the ingredients are readily available.<br />
3) Instruct your child, again using the informative tools available, to find five interesting<br />
facts about the country they have chosen. Depending on their age, facts might be anything<br />
from the country's geographical location, currency, demographics, religious affiliations, or<br />
even what type of clothing or language the country's people have. Older children might<br />
even be encouraged to discuss GDP or political aspects. The important thing is that they<br />
discover the information and are able to openly and informativly discuss it with the other<br />
family members because inevidibly, there will be questions.<br />
4) As you and your child prepare dinner you can help them with their 5 topic discussion<br />
items. Help them be able to explain fully their items so they are confident when it comes to<br />
speaking and explaining in front of everyone else.<br />
5) Have the chosen child help set the table and then during dinner they will name the<br />
country they chose, explain the dish they have made, and then tell the 5 items they<br />
discovered about that country.<br />
6) In our house, those who make dinner get to watch those who didn't do the dishes. This<br />
is of course up to you. :)<br />

Stewed Cane Rat<br />
Skin and eviscerate the rat and<br />

Don't Fork Around<br />
You probably think the fork should<br />
be used to spear food from your<br />
plate in order to place it in your<br />
mouth. Not in Thailand, however,<br />
where it's considered crude and<br />
low-class to eat this way, when<br />
everybody knows the only use for<br />
this utensil is to push food onto a<br />
spoon, which is then placed into the<br />
mouth.<br />
Fried Chicken Feet Recipe<br />
1. Clip the toenails on chicken feet and wash the feet,<br />
removing the callous and any loose-hanging skin.<br />
2. Place the chicken feet in a 2 quart saute pan and<br />
add enough water to cover. Add the ingredients for<br />
simmer and bring to a boil, then reduce to a simmer<br />
and cook until feet are tender, one and a half to two<br />
hours. Remove the feet from the cooking liquid, which<br />
can be reserved for another purpose.<br />
3. Allow the feet to cool. Then dip in egg and flour,<br />
shaking off excess flour. To make sure that the feet are<br />
covered in the batter, dip in egg and flour twice if<br />
needed.<br />
4. Bring a wok with the quart of oil to 375°F. Add the<br />
chicken feet in batches and deep-fry until the batter is<br />
golden brown, 3 to 5 minutes. Have a lid ready in the<br />
event of splattering oil. Serve immediately and add a<br />
sprinkling of sea salt if needed. (Alternatively, skip the<br />
batter and fry the feet as-is. Dress in more soy sauce<br />
and chile oil, as desired.)<br />

What do they eat in space?<br />
At the beginning of the 1960's, space food was bite-sized or placed in aluminum tubes.<br />
The food was prepared this way so that they wouldn't be too heavy or take up too much<br />
space. From the 1970's, during the Apollo period, the number of space food items<br />
began to increase. Currently, there are about 150 different types of food. The meals are<br />
very similar to the meals we eat on Earth.<br />
Space foods are in plastic containers. Some space foods can resume their consistency<br />
by adding cold or hot water, while others can be heated up in the oven. Foods such as<br />
fruits, bread and nuts can be eaten just as they are. When drinking liquids, a straw is<br />
used to suck the liquid out of a sealed package. This is done so that it will not spill or<br />
possibly cause any damage to machines.<br />
At the International Space Station, 300 different types of food are planned to be on the<br />
menu.<br />

Judaism<br />
In Judaism, foods are divided into two groups—kosher, which is allowed, and treif,<br />
which is forbidden.<br />
According to the Tora, only animals which chew and have cloven hooves are<br />
permitted for eating, and four animals are expressly forbidden as food—the hare,<br />
camel, hyrax, and pig. Also forbidden are insects and reptiles.<br />
In addition to this, even kosher animals must be slaughtered using a specific<br />
process for the meat to be considered acceptable for use by the Jewish people.<br />
Because the Torah prohibits the consumption of blood, all blood must be removed<br />
from the meat through soaking, salting, or broiling before consumption. Because<br />
of the difficulty in completely removing blood from it, the liver is not eaten.<br />
Meat and dairy products may not be eaten together, and must be kept separate.<br />
Interestingly, utensils, plates, bowls, and even sinks and dishwashers can inherit a<br />
“meat” or “dairy” status through prolonged contact with either type of food. For<br />
example, if a bowl was used to contain milk, and then that bowl was placed in the<br />
dishwasher, that dishwasher rack would inherit the “milk” status. It could not, then,<br />
be used to clean a dish that had been exposed to meat. The two, and anything that<br />
touches them, must always be kept separate under Jewish law.<br />
All 35 plant-based foods are kosher except for wine and other grape products<br />
produced by non-Jews.<br />

Strange but true: Even if you generally eat a healthy diet,<br />
consuming fast food can increase your risk for depression,<br />
according to a Public Health Nutrition study of nearly 9,000<br />
participants. In fact, those who eat greasy burgers, hot dogs, and<br />
fries are 51 percent more likely to develop depression that those<br />
who don't indulge. Thankfully for those who only hit up the drive<br />
through once in awhile, the researchers observed a doseresponse<br />
relationship between the blues and the burgers. "The<br />
more fast food you consume, the greater the risk of depression,"<br />
explains Almudena Sánchez-Villegas, lead author of the study.<br />
The takeaway here: Try to limit your fast food habit to once or<br />
twice per month at the very most. Or better yet, stick to one of<br />
these healthy fast food restaurants when you need to grab grub<br />
on the run.<br />
If you're an avid Eat This, Not That! reader, you probably have a<br />
pretty good idea how many calories are in your go-to fast food<br />
order. But the majority of folks aren't as knowledgeable,<br />
according to a Harvard Medical School report. To come to this<br />
finding, researchers asked 1,877 adults, 330 school age children<br />
and 1,178 adolescents dining at Burger King, Subway, Wendy's,<br />
KFC, Dunkin' Donuts, and McDonald's how caloric they thought<br />
their meals were. Compared with the actual figures, participants<br />
underestimated their meal's calorie content by 175 calories, 259<br />
calories, and 175 calories, respectively. If the calorie information<br />
is printed on the menu, give it a peek and look for something<br />
with 500 calories or less. (At BK that's might mean ordering a<br />
Whopper Jr. Sandwich, a side salad with half a dressing packet<br />
and a water.)<br />

Iraq, officially known as the Republic of Iraq, is a country in Western Asia,<br />
bordered by Turkey to the north, Iran to the east, Kuwait to the southeast,<br />

Iraq is located in southwestern Asia, in the heart of the Middle East. Its land<br />
area is comparable in size to California. There are four distinct land regions in<br />
Iraq. The Delta region is a broad plain in the southeast. To the west are the<br />
Steppe-Desert Plains, made up of sand and stony plains. The north region,<br />
between the Tigris and Euphrates Rivers, is a fertile area of grassy flatlands<br />
and rolling hills. The Zagros Mountains rise steeply in the northeast.<br />
The climate in Iraq is as varied as the different regions, ranging from tropical<br />
in the east and southeast, to dry and desert-like in the west. The north is<br />
pleasant during summer months and freezing in the winter months. On<br />
average, Iraq is a dry country, even in the fertile lands between the rivers. In<br />
the summer, a dry, dusty wind called the shamal blasts through the country<br />
with dust storms, lasting for several days.<br />
Since the country is so dry, there are few plants, except for the date palm,<br />
known for its fruit (dates). In fact, more than 80 percent of the world's date<br />
supply is grown in Iraq.<br />

Islam<br />
Similarly, Islam also has lawful and unlawful foods, which are designated,<br />
respectively, as halal and haram.<br />
The Quran forbids meats from animals which die of natural causes, the blood and<br />
meat of pigs, and animals that have been dedicated to idols, or to any deity other<br />
than Allah.<br />
All meat must be properly prepared in order for it to be halal. The animal must not<br />
suffer, and must not see the blade used in the process. It must also be slaughtered<br />

All intoxicating drink is prohibited under Islamic dietary law.<br />
Despite these regulations, Muslims are permitted to eat any food in times of<br />
necessity, such as if they are starving. This is called the “law of necessity”. In this<br />
way, drinks like wine and foods such as pork could be eaten in order to survive.<br />
Because of the status of Islam as the second largest world religion, halal foods<br />
make up a surprising 16 percent of worldwide trade. There may even be a halal<br />
foods shop in your neighborhood!<br />

Could we see food being delivered via driverless cars? Yep - it’s possible. Google has<br />
had their very own self-driving car in the works for quite some time now. These cars are<br />
equipped with multiple sensors that allow them to detect people, vehicles, and other<br />
objects that are up to two football fields away. While Google’s focus with driverless cars<br />
is to make the roads safer, we could one day see these cars delivering our food!<br />
Drone Delivery<br />
Could food be delivered via drones? Yep - it’s possible and you could be looking to the<br />
sky for your next meal. Online retailer, Amazon, plans to use drones to deliver packages<br />
to customers with the introduction of Amazon Prime Air. Their goal is to use drones to<br />
deliver packages to customers in 30 minutes or less. There’s no reason that food<br />
delivery via drones can’t be next!<br />

Hinduism<br />
Diet in Hinduism is not as strictly regulated what we’ve seen in the Jewish or<br />
Islamic traditions, but there are a number of fascinating practices.<br />
No food is forbidden in ancient Hindu texts, but non-violence against all life is<br />
recommended. The oldest Hindu text, the Rig Veda, is often interpreted as<br />
denouncing the consumption of meat. Because of this, many Hindus prefer a<br />
vegetarian or vegan diet, and methods of food preparation that are not harmful<br />
to animals or to the environment.<br />
Those Hindus who do consume meat prefer it slaughtered in the Jhatka method,<br />
that is, killed instantly in a single strike rather than being left to suffer.<br />
Particularly important to the Hindu tradition is a food called ghee—a type of<br />
clarified butter. In Hindu culture, cows are sacred, and butter is the only animal<br />
fat that many Hindus will consume. Ghee is used in religious rituals, burned in<br />
sacred lamps. In Hindu mythology, Prajápati, Lord of Creatures, created ghee by<br />
rubbing his hands together, pouring it into fire to create his progeny. When the<br />
Vedic ritual of pouring ghee into fire is performed, it is a reenactment of creation.<br />

Wheaties is a brand of General Mills breakfast cereal. It is well known for featuring<br />

right! In Cambodia, the Thai Zebra<br />
Tarantula, which is about the size of a<br />

eating it. Century eggs or millennium<br />
eggs are a Chinese dish in which the<br />
eggs of quail, chicken, and duck are<br />
covered in ashes, clay salt and<br />

insides of the egg decompose and form<br />
a greenish jelly-like mixture which is<br />
then served straight on your plate. Their<br />
taste is extremely strong but the dish is<br />

The East- Asians do love their insects and how. This<br />

Balut is a duck meat dish. Now, eating ducks is<br />
completely normal and people from all around the world<br />
eat duck meat. But this dish serves duck with a twist.<br />
Balut is a dish served mainly in the Philippines which is<br />
basically fertilized duck egg. The eggs are served with a<br />
hole and they contain a grown duck embryo. To perfectly<br />
get the taste, you have to pierce the duck eggs first and<br />
drink all the liquid inside it and then break the shell and<br />
eat the entire developing duck baby. Mostly, Baluts are<br />
eaten when the egg is 17 days old but some people wait<br />
till it is 21 days old and the duck has developed beak and<br />

Competitive eating, or speed eating, is an activity in which participants compete<br />
against each other to consume large quantities of food in a short time period.<br />
Don "Moses" Lerman is known as having the fastest<br />
hands in competitive eating. This was never more clear<br />
than in a one-on-one baked beans title match with Leon<br />
Feingold. Lerman downed six pounds of beans in one<br />

Building Memories<br />
Growing up on a farm and the life I remember seems quite distant from what we<br />
experience today. Back then, everyone sitting around the dinning room table was a<br />
regular nightly occurance. In addition, and to show my age, I don't remember there<br />
being very many outside distractions. Talk around the table consisted of family matters<br />
and everyone was expected to be a part. Often times, long after dinner was over<br />
members of the family remained at the table talking.<br />
For better or worse, today's family dinners are typically quite different. We struggle with<br />
getting the kids off the video games, getting them to discuss their interestes (aside from<br />
video games), and then often struggle to keep them at the table long enough to just<br />
finish their food, let alone stick around for conversation.<br />
I'm not saying this book can put a stop to today's family struggles or alter the attention<br />
span of their children. But, it does offer a vialbe solution for at least one night a week<br />
and give parents a topic of discussion that not only involves the kids but also provides<br />
an educational, friendly, learning experience that they may remember forever.<br />
