Why is food so central to our culture?<br />
By AYANA MENORCA<br />
Hav<strong>in</strong>g be<strong>in</strong>g blessed<br />
enough to grow up <strong>in</strong> a<br />
<strong>Filip<strong>in</strong>o</strong> family I honestly<br />
believe that I am not alone<br />
when I say that our culture is<br />
entw<strong>in</strong>ed around God, family,<br />
celebrations and last but<br />
not least, <strong>Filip<strong>in</strong>o</strong> food.<br />
Grow<strong>in</strong>g up our family<br />
celebrations were ceaselessly<br />
associated with food.<br />
From birthdays to graduations<br />
to barkada (friends)<br />
get-togethers, down to mak<strong>in</strong>g<br />
sure that my mathematics<br />
tutor had merienda<br />
(snacks) <strong>in</strong> front of her. It<br />
was probably also the ma<strong>in</strong><br />
motive for my friends to<br />
come around all the time,<br />
It truly fasc<strong>in</strong>ates me how<br />
our culture is very much<br />
<strong>in</strong>tertw<strong>in</strong>ed with our glorious<br />
cuis<strong>in</strong>es. My theory is<br />
that hav<strong>in</strong>g food <strong>in</strong> every<br />
<strong>Filip<strong>in</strong>o</strong> household comes<br />
from the fun-lov<strong>in</strong>g and hospitable<br />
characteristics that<br />
each <strong>Filip<strong>in</strong>o</strong> has. Hospitality<br />
is one of the treasured<br />
qualities that our beautiful<br />
culture has.<br />
A writer <strong>in</strong> New York<br />
referred to this trait as someth<strong>in</strong>g<br />
that “is not conf<strong>in</strong>ed to<br />
the upper classes, or those<br />
who can afford to make<br />
some display <strong>in</strong> their homes<br />
and some effort at enterta<strong>in</strong>ment”.<br />
Thus <strong>in</strong>dicat<strong>in</strong>g that<br />
every <strong>Filip<strong>in</strong>o</strong> is blessed<br />
with this <strong>in</strong>nate characteristic<br />
to accommodate guests<br />
well and what is the best<br />
method is to welcome guests<br />
<strong>in</strong>to your household. That’s<br />
right, entic<strong>in</strong>g them with the<br />
Philipp<strong>in</strong>e cuis<strong>in</strong>e.<br />
Grow<strong>in</strong>g up my brother<br />
and I were taught to always<br />
share what we had with<br />
other people. My parents’<br />
way of educat<strong>in</strong>g us <strong>in</strong> the<br />
value of shar<strong>in</strong>g was for us<br />
to offer food to our guests.<br />
This also became a way for<br />
us to appreciate and love<br />
<strong>Filip<strong>in</strong>o</strong> food.<br />
Our family’s move to New<br />
Zealand has <strong>in</strong>troduced my<br />
taste buds to foods of other<br />
cultures. However, I still<br />
f<strong>in</strong>d myself go<strong>in</strong>g back to<br />
my roots and choos<strong>in</strong>g<br />
<strong>Filip<strong>in</strong>o</strong> food.<br />
I then decided to <strong>in</strong>terview<br />
a few of my <strong>Filip<strong>in</strong>o</strong> friends<br />
from the Otago <strong>Filip<strong>in</strong>o</strong><br />
Students’ Association (OF-<br />
SA) at Otago University <strong>in</strong><br />
Duned<strong>in</strong> to f<strong>in</strong>d out more<br />
about the <strong>Filip<strong>in</strong>o</strong> culture<br />
around food.<br />
Given a choice to eat out<br />
with friends would you<br />
choose <strong>Filip<strong>in</strong>o</strong>, Asian or<br />
Western food and why?<br />
Cheska Dela Cruz<br />
(President, OFSA)<br />
“My friends and I tend to<br />
go for Asian restaurants,<br />
s<strong>in</strong>ce there are not many<br />
<strong>Filip<strong>in</strong>o</strong> restaurants here <strong>in</strong><br />
Duned<strong>in</strong>. And we always eat<br />
<strong>Filip<strong>in</strong>o</strong> food at home.”<br />
Charlie Berja (Secretary,<br />
OFSA)<br />
“We always cook <strong>Filip<strong>in</strong>o</strong><br />
food at home and so my<br />
friends and I tend to eat at<br />
restaurants which serve<br />
Western food.”<br />
Ivor Malahay (Vice<br />
President, OFSA)<br />
“Generally, my friends<br />
and I would eat Asian food<br />
(particularly Ch<strong>in</strong>ese or<br />
Japanese), ma<strong>in</strong>ly because<br />
the friends I ma<strong>in</strong>ly eat out<br />
with are from the more<br />
Northern Asian countries<br />
and my European friends (if<br />
we do not eat fast food) generally<br />
are more comfortable<br />
with Ch<strong>in</strong>ese food.”<br />
Mary Louise Santos<br />
(Treasurer, OFSA)<br />
“Asian or Japanese,<br />
because it is cheap, easy to<br />
get and fast for busy uni<br />
people.”<br />
Given a choice when eat<strong>in</strong>g<br />
out with family would<br />
Food stall at the<br />
recent <strong>Filip<strong>in</strong>o</strong><br />
Street Food<br />
Festival <strong>in</strong><br />
Henderson<br />
you choose <strong>Filip<strong>in</strong>o</strong><br />
food over<br />
foods of other<br />
cultures?<br />
Ivor Malahay:<br />
“When I’m<br />
out with the<br />
family we tend<br />
to be more open<br />
and mix th<strong>in</strong>gs<br />
up between Ch<strong>in</strong>ese<br />
and <strong>Filip<strong>in</strong>o</strong><br />
food as<br />
Western and<br />
Japanese food<br />
are generally<br />
more pricey.”<br />
Charlie<br />
B e r j a :<br />
“Cuis<strong>in</strong>es of<br />
other cultures, but at home<br />
we eat and cook <strong>Filip<strong>in</strong>o</strong><br />
food.”<br />
Mary Louise: “<strong>Filip<strong>in</strong>o</strong><br />
food; it makes eat<strong>in</strong>g with<br />
the family fun as well as<br />
encourag<strong>in</strong>g you to eat<br />
more. The <strong>Filip<strong>in</strong>o</strong> restaurants<br />
also have bigger serv<strong>in</strong>gs.”<br />
At home how often do<br />
you eat <strong>Filip<strong>in</strong>o</strong> food and<br />
why?<br />
Ivor: “When liv<strong>in</strong>g with<br />
my parents we tended to<br />
shake th<strong>in</strong>gs up a bit and try<br />
foods from different cultures.<br />
But, s<strong>in</strong>ce I live by<br />
myself now it’s what is easiest<br />
to make.”<br />
Cheska: “When it comes<br />
to <strong>Filip<strong>in</strong>o</strong> food? Very often,<br />
for no particular reason,<br />
haha.”<br />
Mary Louise: “Two<br />
meals a day, s<strong>in</strong>ce I live at<br />
home with my family.<br />
Breakfast is usually just jam<br />
or oats.”<br />
Can you make any<br />
<strong>Filip<strong>in</strong>o</strong> food? What is it<br />
and why?<br />
Charlie: “I can make<br />
<strong>Filip<strong>in</strong>o</strong> food and I love to<br />
cook and experiment with<br />
learn<strong>in</strong>g how to make different<br />
<strong>Filip<strong>in</strong>o</strong> dishes, Pancit,<br />
Adobo, Caldereta, etc. I like<br />
to cook for my family, especially<br />
mum and dad. My dad<br />
is English and s<strong>in</strong>ce my<br />
mum would always cook<br />
<strong>Filip<strong>in</strong>o</strong> food I also learnt<br />
how to make it.”<br />
Cheska: “Def<strong>in</strong>itely! Because<br />
we would always eat it<br />
at home I know how to make<br />
most <strong>Filip<strong>in</strong>o</strong> food, like<br />
Adobo and S<strong>in</strong>igang.”<br />
Mary Louise: “I can cook<br />
everyth<strong>in</strong>g, but I especially<br />
love cook<strong>in</strong>g <strong>Filip<strong>in</strong>o</strong> food.<br />
Cook<strong>in</strong>g is one of my hobbies.<br />
Personally, I th<strong>in</strong>k<br />
cook<strong>in</strong>g is very relax<strong>in</strong>g.”<br />
So there you go, when it<br />
comes to <strong>Filip<strong>in</strong>o</strong> food it<br />
always <strong>in</strong>volves our families.<br />
Eat<strong>in</strong>g <strong>Filip<strong>in</strong>o</strong> food is<br />
def<strong>in</strong>itely equated with<br />
spend<strong>in</strong>g quality time with<br />
your family and most of us<br />
students liv<strong>in</strong>g away from<br />
our families can identify<br />
with this. Our culture around<br />
food is not just for welcom<strong>in</strong>g<br />
guests <strong>in</strong>to our humble<br />
abodes. Most importantly it<br />
is for br<strong>in</strong>g<strong>in</strong>g our families<br />
together.<br />
As bus<strong>in</strong>ess, trade, cultural and<br />
direct air l<strong>in</strong>ks between<br />
the Philipp<strong>in</strong>es and New Zealand<br />
is grow<strong>in</strong>g at a fast pace,<br />
we have revamped the orig<strong>in</strong>al<br />
