in Lake Bluff, gaining<br />
knowledge about healthy<br />
foods and different ways<br />
to prepare them to make<br />
your taste buds ask for<br />
more began 10 years ago.<br />
After watching his<br />
mother lose her life to<br />
cancer, and struggling to<br />
understand why we get<br />
cancer and why we get<br />
sick, Sankar turned to research.<br />
He spent 10 years<br />
researching ways to prevent<br />
sickness and heal<br />
our bodies. His research<br />
taught him the answer to<br />
living a healthier life, and<br />
it all started with changing<br />
his diet.<br />
Ten years ago Sankar<br />
thought he was living a<br />
healthy lifestyle, but after<br />
his diet change he lost a<br />
lot of weight and found he<br />
was getting sick less often.<br />

After seeing the positive<br />
effects a healthy diet<br />
can have, Sankar decided<br />
to share it with others at<br />
a variety of workshops.<br />
Eventually his products<br />
became popular among<br />
those who knew about it,<br />
which prompted him to<br />
open Be Market in October<br />
2017.<br />
“Be Market is a place<br />
for people to try different<br />
healthy foods and see<br />
what it is like,” Sankar<br />
said. “I feel like there is<br />
this misconception that<br />
healthy food is boring,<br />
and I like to have fun with<br />
healthy food.”<br />
As Sankar began crafting<br />
his menu he named the<br />
restaurant after a theme he<br />
felt like the establishment<br />
was taking.<br />
“When we were designing<br />
our menu [it] really<br />
[represented] ourselves.<br />
We are being our version<br />
of healthy, we are not following<br />
your conventional<br />
model of a restaurant.<br />
A lot of things are made<br />
from scratch,” Sankar<br />
said. “Be Market is really<br />
allowing you to be yourself<br />
and to be creative.”<br />
To ease customers into<br />
Be Market’s healthy food<br />
options, Sankar chose to<br />
start with a smaller menu.<br />
“At the end of the day<br />
this business is built on a<br />
relationship with our customers,<br />
connecting with<br />
them and serving their<br />
needs. We started with a<br />
small menu to see what<br />
they are looking for,” Sankar<br />
said.<br />
