Crayfish with cheese<br />

• Clean the crayfish and wash them well.<br />

• Put them <strong>in</strong> a pot of boil<strong>in</strong>g water for 5-10 m<strong>in</strong>utes and remove from heat.<br />

• Heat some olive oil <strong>in</strong> a fry<strong>in</strong>g pan and sauté the chopped mushrooms, the<br />

garlic, the bay leaves and the black peppercorn.<br />

• Add the crayfish, the green peppers, the chopped tomatoes and the sliced<br />

lemon. Let the mixture cook for 3-4 m<strong>in</strong>utes over high heat.<br />

• Then, place it <strong>in</strong> an earthenware pot, spr<strong>in</strong>kle with cheese and put it <strong>in</strong> a<br />

preheated oven (200 o ) for about 5 m<strong>in</strong>utes.<br />

• Remove from the oven, spr<strong>in</strong>kle the chopped parsley on top, and serve.<br />

• Bon appétit.<br />
