Holden was born in Peru and came from a family of
restaurateurs with over 40 years of experience in the business.
He says that while he was working in real estate last year he
was presented with the opportunity to do something that he
had wanted to do for a very long time. He explains, “It was a
great investment opportunity that has now become so much
more.”
Ceviche Makes A Mark
Mancora Ceviche Bar opened two years ago and specializes
in Peruvian cuisine. The restaurant brings a trendy and
healthy option to Coral Springs using the freshest ingredients

The roots of Peruvian cooking come from Andean, European,
African, and Asian cultures and beautifully combines these
