Spring Farewell<br />
It has been another fantastic school year in <strong>UTD</strong> <strong>Dining</strong> <strong>Services</strong> with new challenges,<br />
innovations and events. I would first like to thank and congratulate all of our <strong>UTD</strong> Class of<br />
<strong>2018</strong> graduates. We at <strong>UTD</strong> <strong>Dining</strong> <strong>Services</strong> thank you for allowing us to serve you during your<br />
career as a <strong>UTD</strong> student, and we wish you the best of luck in your future endeavors!<br />
We have had some unforgettable events this Spring semester, including the always successful<br />
Pop-Up Farmers’ Market, supporting Earth Week with our <strong>UTD</strong> campus community, and<br />
introducing our new Teaching Kitchen series with Chef Gene Christiano. We also cannot forget<br />
<strong>The</strong> Good Week where we brought the “good” to all those in our campus community, educated<br />
everyone on food insecurity and ultimately supporting our partners at Comet Cupboard.<br />
As we end the school year, we are incredibly excited to start creating and planning new<br />
programs for the fall. If you’re on campus this summer, we are prepared to provide some great<br />
experiences for summer meal plan students, campers and faculty/staff. Make sure to stop in<br />
and dine with us!<br />

Healthy Finals Survival<br />
Your brain is a huge organ that needs to be fueled right to perform your best. Unfortunately the stress and anxiety of<br />
finals leaves many students reaching for comfort foods. But there is another way! Use these tips to boost your brain<br />
power, increase your energy, and reduce your stress.<br />
Eat Balanced Meals Stress can cause you to skip meals or binge on comfort foods. If you follow this pattern your<br />
energy will be zapped and you won’t have the fuel you need to deal with the crazy events in your life. When you are<br />
stressed, your body needs healthy food more than ever. Focus on eating three balanced meals and snacks daily for a<br />
steady supply of energy and defense-boosting nutrients.<br />
Fit in Exercise Exercise is one of the most effective stress relievers. Aerobic exercise releases endorphins, which make<br />
you feel happy. Yoga also has proven calming benefits. Next time you need a study break or an energy boost, go for a<br />
walk or do some stretching!<br />
Eat Breakfast Breakfast may make you a better student. Research shows that students who eat breakfast have great<br />
attention spans, improved concentration, and perform better on spatial and cognitive tests. Breakfast eaters have better<br />
school attendance and are less apt to show up tardy.<br />
Choose Healthy Snacks When your schedule is hectic, it can be hours until you find time to sit down for your next<br />
meal. It is important to keep healthy snacks on hand to keep your energy levels high and to provide fuel for your brain.<br />
Try to pair healthy protein with complex carbohydrates with fiber, like whole grains, to keep you feeling full for a longer<br />
period of time. Remember it’s easy to eat extra calories when snacking so only snack when you are hungry, watch portion<br />
sizes, and snack consciously.<br />
<strong>The</strong> Path to a Healthier Lifestyle with Tracking<br />
Want to know the simplest and most effective way to change your eating habits? Write down everything<br />
you eat! Even if you think you have a good idea what you are putting in your mouth, I guarantee you will<br />
learn more about your eating habits <strong>by</strong> writing it down. <strong>The</strong> few seconds it takes to reflect on what you ate<br />
throughout the day is sometimes all it takes to jump-start behavior change.<br />
Writing down what you eat with old-fashioned paper and pencil is one great way to keep your habits in<br />
check. <strong>The</strong>re are also many websites and apps available to help. MyFitnessPal is the most popular website<br />
and app on the market. It’s easy to use and has a huge database of foods you can log- including Chartwells<br />
recipes! Search for “Chartwells HE” or scan the barcode found on items to add Chartwells recipes to your<br />
MyFitnessPal tracker. Lose It! is another popular website and app for tracking what you eat and also contains<br />
Chartwells recipes in the food database. Apps and websites have other features to help you achieve a healthy<br />
lifestyle including activity trackers (most also sync with wearable activity trackers), challenges, communities<br />
for support and accountability, and health information.<br />

Balanced Bite<br />
Get enough sleep! Adequate sleep decreases stress and anxiety. Not getting enough sleep decreases cognitive<br />
performance including decision-making and memory, and impairs your immune system.<br />
Smart Study Snack - Chocolate Dipped Banana Bites<br />
Ingredients<br />
3 Large bananas<br />
½ cup nut butter of choice<br />
½ cup melted chocolate of choice<br />
Instructions<br />
1. Slice banana into slices about ¼-1/2 inch thick.<br />
2. Spread nut butter onto a slice and sandwich two slices together.<br />
3. Place on wax paper of a cookie sheet and freeze until solid, at least an hour.<br />
4. Melt chocolate in a double boiler and remove frozen banana bites from freezer.<br />
5. Dip each banana bite into chocolate and place back on wax paper. Freeze for another<br />
hour.<br />
6. Transfer and keep in an airtight container in the freezer for up to 2 weeks.<br />

Cuisine<br />
Congratulations are in order for our very own<br />
Chef Gene Christiano! Chef Gene was nominated<br />
and elected as the <strong>2018</strong> Texas Chef Association<br />
Dallas Chapter Chef of the Year. As the Director<br />
for the Dallas Chapter of TCA, Chef Gene<br />
will receive his award in August at the state<br />
convention. We are incredibly proud of all the<br />
hard work, innovation and creativity that Chef<br />
Gene brings to the table, and we are so lucky to<br />
have him on our team!<br />
Culture<br />
Our semi-annual Late Night Breakfast at <strong>Dining</strong> Hall West was once again a<br />
fun and successful event! Students came in to relieve some stress brought on<br />
<strong>by</strong> finals and graduation. <strong>The</strong>y were able to relax with a plate (and most often,<br />
two!) and enjoy some down time with their friends for a night before finals<br />
and graduation came in full force. We want to thank the Student Organization<br />
Center and our faculty and staff whom we partner with to bring this amazing<br />
event to life!

Hermenia Stokes<br />
Administrative Assistant<br />
<strong>UTD</strong> was asked to support another campus in our<br />
district, and Hermie stepped up and spent 5 weeks<br />
away from her family to help support another<br />
school in need. Hermie has a wealth of knowledge<br />
in numerous aspects of our business. She spent<br />
time assisting with audit, running the office, helped<br />
in Catering, was a cashier in Retail, even helped<br />
with dish room support. She had many long days<br />
at work but stayed positive through it all. She is<br />
the perfect person to represent Chartwells on other<br />
campuses. We truly appreciate all of her support.<br />
