Do you know what the phrase “dog days of summer” actually<br />

means? I always assumed it referred to the sticky, sweltering<br />

days of the season when man’s best friend lethargically lazes<br />

around panting in the heat. Silly me. According to Wikipedia,<br />

the expression has nothing to do with Fido and was originally<br />

coined by ancient Greeks and Romans when the “dog star,” Sirius,<br />

shined the brightest—typically in late <strong>July</strong>—which they believed,<br />

when combined with the sun’s intensity, caused blisteringly hot<br />

summer temps. You learn something new every day, right?<br />

I still prefer my interpretation (astrology’s never been my strong suit) so I find it particularly<br />

fitting that this month’s issue is dedicated to actual dogs—and all our other beloved furry<br />

and feathered friends—that we<br />

lovingly call family.<br />

Animals aside, we have much more in store too. For those<br />

nearing or who have reached retirement, I recommend reading<br />

“Senior Center Activities for All” (page 62). You might be surprised<br />

to learn about the array of offerings available, which definitely<br />

go beyond bingo (think clogging, crafts, computer classes, monthly movies, and so much more).<br />

My grandma—who turns 97 next month(!)—is living proof that staying active and connected to<br />

community are key components to aging gracefully.<br />

<strong>July</strong> also happens to be National Grilling and Ice Cream Month and—with Independence Day,<br />

and blazing temps, upon us—it’s a prime time to indulge in both. Invite your friends, neighbors,<br />

and family over for a backyard BBQ starring juicy, build-your-own cheeseburgers with homemade<br />

pickles (see page 78 for the recipe) and make sure to save room for one of our six frozen favorites<br />

in “The Cool List” on page 72.<br />

As we journey into the upcoming “dog days,” I hope you find somewhere nice and cool to flip<br />

through the pet-filled pages of this issue. Cheers!<br />

pre-K?<br />

We believe that education can<br />

start as early as 18 months, as<br />

toddler programs offer children<br />

an environment where he/she<br />

can learn to socialize and use<br />

large and small motor skills, as<br />

well as be exposed to sensory<br />

building, music enrichment,<br />

and movement. The younger<br />

you can introduce your child to<br />

these things, the better prepared he/she will be. With that, a pre-K<br />

classroom usually starts at the age of four, where children learn to<br />

expand their learning through name writing, counting, math skills,<br />

and phonics. It’s important to find a pre-k that offers extracurricular<br />

activities—such as Spanish, ballet, and soccer—to further enhance<br />

their growth and abilities.<br />

selected individuals will attend a small group boot camp<br />

Rodriguez still looks back<br />

fondly on childhood<br />

summers in Mexico, making<br />

tortillas by hand with her<br />

aunts and grandmothers. She<br />

grew up surrounded by foodie culture in San<br />

Francisco, but she attributes her love of cooking<br />

and good food to the rich flavors of her youth.<br />

Two years ago, she opened Sutter Street<br />

Taqueria, making the leap from successful<br />

health care administrator to small business<br />

owner. Although it was a frightening prospect<br />

at first, it was her parents’ absolute faith in her<br />

that enabled the entrepreneur to pursue her<br />

dream. “I went to them and said, ‘Hey, I want<br />

to take my lifelong knowledge of Mexican food<br />

and open a restaurant,’” she recalls. “It took<br />

my father five seconds to say, ‘sure,’ and give<br />

me the money.”<br />

Since then, Rodriguez has built a reputation<br />

around being a hard worker, once putting in 240<br />

days straight without any time off. “My friends<br />

had to force me to go on vacation,” she says<br />

with a laugh. She also does what she can to give<br />

back, by being a Rotarian, board member for<br />

the <strong>Folsom</strong> Chamber of Commerce and Twin<br />

Lakes Food Bank, and a commissioner for the<br />

Historic <strong>Folsom</strong> Commission. In addition, she<br />

regularly donates food to area nonprofits, even<br />

establishing a “suspended meal initiative” at<br />

the taqueria, where diners can purchase a<br />

meal for those who are hungry and may be<br />

experiencing financial difficulties. For her<br />

efforts, she received the 6th Assembly District’s<br />

Woman of the Year Award for <strong>2018</strong>. “When you<br />

invest back in community, it builds a stronger<br />

area,” Rodriguez shares. “It’s why <strong>Folsom</strong> is<br />

such an attractive place to live.”<br />

Econome Family Park Grand Opening<br />

The public is invited to a ribbon-cutting<br />

ceremony at 7:30 p.m. for <strong>Folsom</strong>’s new<br />

Econome Park. Located at 1900 Parkway<br />

Drive North and named to honor brothers<br />

George and Nick Econome and their<br />

respective wives, Marilyn and Ann, for their<br />

collective contributions to the community,<br />

the park incorporates state-of-the-art design<br />

features and environmental components.<br />

Recreational amenities include bocce ball<br />

courts, synthetic and natural turf soccer<br />

fields, tennis courts, and an open-play turf<br />

area. A half-mile perimeter walking path<br />

connects to two play areas and covered picnic<br />

areas and provides access to the Parkway<br />

trail system. The park’s environmental<br />

components include LED lighting for reduced<br />

energy use, vegetative swales to filter rain<br />

water and help replenish the aquifer, and<br />

reduced water-use landscaping.<br />

Summer is here, and so is a plethora of<br />

live music at local outdoor venues. Grab<br />

various concert series! The <strong>El</strong> <strong>Dorado</strong> <strong>Hills</strong><br />

Community Services District’s Summer<br />

Concert in the Park runs on select Fridays<br />

through August, with local band Clean<br />

Slate taking the stage on <strong>July</strong> 20. This free<br />

concert is held at the EDH Community Park and offers food for purchase,<br />

a bounce house, and other children’s activities. “[This is] the best venue in<br />

<strong>El</strong> <strong>Dorado</strong> <strong>Hills</strong> to enjoy entertainment in a fun, safe, and family-friendly<br />

environment,” explains Michael Cottrell of the EDH CSD. <strong>Folsom</strong> Concerts<br />

in the Park is held at <strong>Folsom</strong> City Lions Park on Fridays through <strong>July</strong> from<br />

7-9 p.m. Food trucks are present, although picnics, along with blankets<br />

and chairs, are encouraged. Genres of music range from R&B to classic<br />

rock and country, and the <strong>July</strong> lineup includes artists Innersoul, Simple<br />

Creation, Have Mercy Band, and <strong>El</strong>ana Jane. “The concerts are a nice,<br />

relaxing way to spend Friday evenings with family and friends. The best<br />

part is it brings the community together in a beautiful outdoor setting,”<br />

says Lesley Miller of the City of <strong>Folsom</strong>. Additional offerings include<br />

Palladio at Broadstone’s Wednesday Night Summer Concert Series,<br />

which runs through August from 7-9 p.m., Live on<br />

the Boulevard at Steven Young Amphitheater in <strong>El</strong><br />

Experience—a<br />

nature-based educational center that provides guests with fun and<br />

interactive learning experiences at the <strong>Folsom</strong> City Zoo Sanctuary—is<br />

finally open. The 3,400-square-foot barn is the new and improved<br />

home for rescued farm animals like miniature donkeys, Hallie and<br />

Rosie; Gus the draft horse; miniature horse Dasher; zebu Ernie, and<br />

more. Guests can also view an active bee hive as the busy workers<br />

produce honey and honeycomb in their indoor hive, pan for<br />

gemstones (additional fee) in the 40-foot C.J. Harrison memorial<br />

sluice, milk an artificial cow, and view a historic display of the Empire<br />

Ranch Barn via artifacts and photos donated<br />

Kamlika Chandla<br />

Creative Spirit<br />

With a background in and passion for psychology, artist Kamlika Chandla uses her insight to paint<br />

portraits teeming with deep, often pensive emotions. Relocating to <strong>El</strong> <strong>Dorado</strong> <strong>Hills</strong> two years<br />

ago, Chandla is also a published poet and art instructor, as well as the founder of Musart, a<br />

nonprofit she manages alongside her younger brother. Standing for “music and art,” Musart<br />

aims to collaborate with schools and organizations by creating a forum where children can<br />

explore their creative spirit, especially those who have experienced trauma and abuse.<br />

Though she’s painted since childhood, Chandla didn’t Participating become a full-time artists artist from till the 2011. Friends In of the<br />

addition to teaching workshops, commissioning work, and traveling, the Harris artist Center is also hard Art Association<br />

work producing a series of abstract paintings as part of two solo shows: Cosmos and Beauty in<br />

Diversity. “With [Beauty in Diversity], I intend to trigger a dialogue on the notions of beauty and<br />

how real beauty, in fact, lay in diversity,” shares Chandla.<br />

HLB: WHAT WERE YOU LIKE AS A YOUNG ARTIST?<br />

KC: Growing up in a traditional, conservative Asian [household], only academics were considered respectable routes<br />

forward; all creative pursuits were expected to be treated as vocational, free-time pursuits. As a child and young adult,<br />

I constantly daydreamed [about being] an artist and a writer and would fantasize about exhibitions and art shows,<br />

publishing books, and being besieged by the world of ink and color. Nevertheless, I drew and painted consistently, had<br />

my parents adorn all the walls of our house with my art, and requested art supplies and drawing books as gifts. They<br />

considered me unstoppable and stubborn but also recognized that my creative spirit couldn’t be bottled for long.<br />

HLB: DO YOU HAVE ANY ADVICE FOR ARTISTS JUST STARTING OUT?<br />

KC: It takes courage, because oftentimes people think they have to be talented to begin in the first place, and that’s not<br />

true. All you need is interest and patience to learn a new skill. It’s best to have an open mind and explore the myriad of<br />

possibilities that creativity renders in terms of style, complexity, content, or composition. For those exploring painting<br />

for the first time, I can’t stress enough the importance of observation and drawing skills. There’s no such thing as a bad<br />

drawing or an ugly painting—it’s all about getting mileage on the canvas. Most importantly, stay curious and open to<br />

your unique instinct and inner voice—it can be your best friend.<br />

About 95 percent of pet owners consider their furry friends to be<br />

family members, and about half will buy them a birthday or holiday<br />

present this year, according to a Harris Poll. But did you know these<br />

relationships also have positive effects on your physical and mental<br />

health? Read on for the myriad of ways pets help humans heal.<br />

1 The Feeling is Mutual<br />

“There have been studies [done proving that] the benefits are mutual, and<br />

the relationship is essential to the well-being of both the human and the animal,”<br />

says Wendy Goossen, CTR, director of cancer services at Marshall Medical Center.<br />

“Studies have shown that oxytocin levels are increased in dogs when they interact<br />

with their owner as opposed to strangers.”<br />

2 Unconditional Love<br />

Something that makes the human-animal relationship so easy is that it’s<br />

not complicated, says Jeremy Ernst, DO, psychiatrist at Marshall Medical Center.<br />

3 Let’s Get Physical<br />

in Cameron Park, says dog owners, on<br />

average, tend to walk almost twice as<br />

much per week as non-dog owners, and<br />

are 54 percent more likely to meet the<br />

recommended levels of physical exercise.<br />

4 Allergy Alleviation<br />

Having a family pet will benefit the<br />

health of your kids, too. “In young families,<br />

according to a study published in Clinical & Experimental Allergy, children exposed to pets in<br />

their first year are less likely to suffer from allergies and eczema as adults,” Garlinghouse says.<br />

5 Bonded for Life<br />

According to Garlinghouse, “Studies have indicated that young adults with deep<br />

bonds to a pet feel more connected in relationships and to their communities, and are<br />

more likely to take on leadership roles than those without pets.”<br />

6 No Judgement Zone<br />

Garlinghouse says pets don’t care how you look, how much money you make, or what<br />

kind of car you drive—they’re just happy to be with you and to have your attention. “A good<br />

portion of these feelings of higher self-esteem probably stem from that. It’s hard not to feel<br />

better about yourself when your dog thinks you’re terrific just the way you are,” she says.<br />

7 Creature Comforts<br />

And it’s not just dogs that help our well-being. “A lot of these benefits come from<br />

caring for almost any pet,” Garlinghouse says. “In one study, stressed adults decreased<br />

their anxiety levels when they stroked a rabbit or a turtle but not when they handled a<br />

toy rabbit or turtle.”<br />

8 In Sickness and in Health<br />

Facility dogs Henry, Penny, Marty, Feather, and Glimmer are graduates of Canine<br />

Companions for Independence who, along with child life specialists at Sutter Children’s<br />

Center, help make life in the hospital a little less stressful by providing joy and comfort<br />

to pediatric patients and their families. [Studies show that] pain reduction is four times<br />

greater in children undergoing animal-assisted therapy compared to those relaxing for 15<br />

minutes,” says Amy Medovoy, child life coordinator at Sutter Medical Center in Sacramento.<br />

“Patients feel less lonely, less depressed, and enjoy the change in routine. For inpatient<br />

adolescents, the presence of a dog on the unit improve outcomes by redefining the inpatient<br />

environment and providing unconditional acceptance.”<br />

9 Mood Booster<br />

Forming an attachment to animals is a combination of both biological and social needs.<br />

“Those endorphins released when we have a positive interaction with an animal just makes<br />

you feel good,” Garlinghouse says. “No matter how rotten your day has been, no matter how<br />

judged or criticized you might feel from people around you, no matter how lonely or isolated<br />

you might be feeling, it’s a great feeling to come through the door and know your pets are always<br />

delighted to see you and think you’re absolutely wonderful.”<br />

There was no missing the girls—four young ladies in floating gowns, looking<br />

like fairy tale princesses waiting to be whisked to a ball. Sisters Sydney,<br />

Emma, and Kenna Warney, along with Ainseley Kay, had dressed up to<br />

talk about Rainbow Girls, a nonprofit service organization for young<br />

women ages 11-20. The formal attire is standard at many Rainbow<br />

events, including meetings, a requirement the girls say they like.<br />

Rainbow—officially the International Order of the Rainbow for Girls—was founded in<br />

1922 to foster self-confidence and leadership skills in girls via service to their community.<br />

Justice Sandra Day O’Connor, actress Lily Tomlin, and former Senator Olympia Snowe<br />

have all been members.<br />

The <strong>Folsom</strong>-based Natoma Assembly, to which the Warney sisters and Kay belong, is<br />

the largest chapter in California with 26 members. Though originally created for daughters<br />

of Masons, the organization now welcomes young women of all backgrounds and beliefs.<br />

“Service is the cornerstone of Rainbow,” says Katy Warney, who, along with Suzanne Kay,<br />

accompanied their daughters. “I love the service we provide. Kids nowadays don’t have<br />

Rainbow Girls volunteer at both state<br />

and local levels. Each year, California<br />

Rainbow chooses one nonprofit that all<br />

assemblies fund-raise to support. Last year,<br />

which concluded in April, the members<br />

statewide contributed more than $60,000<br />

to Families Forward, a Southern California<br />

organization that helps empower families<br />

who are homeless or at risk of becoming<br />

homeless. Locally, the Natoma Assembly<br />

performs an exhausting schedule of<br />

activities—a partial list that includes<br />

mulching at <strong>Folsom</strong> High School for<br />

Community Service Day; raising money<br />

and collecting toys for Shriners Hospitals<br />

for Children; marching in the <strong>Folsom</strong><br />

Veterans Day Parade and cooking breakfast<br />

afterward at the local Masonic lodge;<br />

preparing monthly dinners at the lodge;<br />

helping clean creeks; filling hundreds of<br />

prize eggs at the <strong>Folsom</strong> Eggstravaganza;<br />

and running craft booths at local events.<br />

Throughout their community<br />

service, Rainbow Girls are being trained<br />

in leadership and self-confidence. To<br />

that end, the girls run their meetings,<br />

progressing through officers with such<br />

titles as Faith, Hope, Charity, and—in<br />

place of president—Worthy Advisor. Each<br />

group also has a Mother Advisor and<br />

adult advisory board who mentors and<br />

coaches the girls, providing guidance and<br />

support as they plan and execute projects<br />

like membership events, charitable fundraisers,<br />

and social activities.<br />

Faith, hope, and charity are also<br />

among the list of values Rainbow teaches.<br />

Others include love, the beauty of nature,<br />

patriotism, fidelity, and service. To help<br />

build confidence and self-respect, the<br />

group offers public speaking opportunities,<br />

leadership training, and scholarships to<br />

its members. The girls eagerly added a<br />

few benefits of their own. “I would never<br />

have met one of my best friends if I didn’t<br />

have Rainbow,” Ainseley says, indicating<br />

Sydney, who added that she liked “the<br />

ability to serve our community and<br />

Rugs are must-haves for every major room, tying in the<br />

décor and creating a cozy place for pets to curl up (that isn’t on<br />

your brand-new furniture). Opt for a pet-proof rug like an indoor/<br />

outdoor one that’ll keep stains away. The beauty of them is their<br />

ability to deflect dirt, spills, and stains—all while providing a<br />

relatively comfortable feel under those paws. Great for hightraffic<br />

areas and available in just about every pattern and color<br />

imaginable, they double as a way to play up your interior palette.<br />

Acupuncture has been used in China for thousands<br />

of years to promote healing. The process involves<br />

inserting tiny needles into certain points of the<br />

body known as acupoints—which can be tied to<br />

muscle groups, nerve bundles, blood vessels, and<br />

even organs or larger body systems—to enhance<br />

blood and nervous system circulation, thereby<br />

stimulating the release of anti-inflammatory and<br />

pain-relieving hormones, which encourages the body to correct imbalances and help<br />

heal itself.<br />

The use of acupuncture in pets is part of an Eastern medicine approach called<br />

Traditional Chinese Veterinary Medicine (TCVM). The insertion of the acupuncture<br />

needles is virtually painless for animals, and many owners find their pets become<br />

relaxed or even sleepy when the needles are in place. However, some human<br />

acupuncture patients have noted feelings such as tingling or numbness during<br />

treatments, so animals may show small amounts of discomfort from these new<br />

sensations during initial treatments. Some of the issues that can be treated and<br />

managed with TCVM include:<br />

• Musculoskeletal conditions<br />

• Neurological disorders<br />

• Respiratory disorders<br />

Unlike some medical treatments, there’s a very low risk of<br />

side effects from TCVM; however, acupuncture should always be<br />

performed by a certified veterinary acupuncturist.<br />

Dogs are susceptible to heat-related<br />

injuries just like humans, which is why<br />

we need to be aware of the indicators of<br />

overheating including excessive panting<br />

or difficulty breathing, increased heart or<br />

respiratory rate, drooling, glazed eyes, and<br />

lethargy or wobbly feet when standing.<br />

Here are some preventative measures you<br />

can take to keep your pets safe during the<br />

hot summer months.<br />

»»<br />

Always have fresh clean water ready for<br />

Fido. Dogs can get dehydrated quickly if<br />

they’re in the heat for too long.<br />

»»<br />

Make sure they have plenty of shade if<br />

left outside for the day. Bring your dog<br />

inside during extreme heat.<br />

»»<br />

Provide frequent breaks while playing<br />

hard or if exposed to hot temps for<br />

longer periods of time.<br />

»»<br />

Never leave a dog in a hot vehicle.<br />

Consider putting a note on the<br />

dashboard to remind you that your dog<br />

is in the car so you won’t forget to take<br />

them out.<br />

»»<br />

Dogs with pushed-in faces or shorter<br />

muzzles have a harder time breathing<br />

and therefore have a harder time<br />

cooling themselves down; watch extra<br />

closely for signs of heat exhaustion.<br />

»»<br />

Dogs sweat but not much—they mainly<br />

sweat from their pads. Most of their<br />

heat is released by panting and if they<br />

breathe very hot air they have difficulty<br />

cooling down. Note: Dogs that are lower<br />

to the ground tend to heat up more<br />

quickly from the radiant heat.<br />

»»<br />

Dogs’ paws a can be sensitive to hot<br />

surfaces. Asphalt tends to get the<br />

hottest, so if you see your dog “tap<br />

dancing” their paws are hot. Get them<br />

moving or get under the shade. Try to<br />

exercise them in the earlier hours of the<br />

day.<br />

»»<br />

Look for a dog-approved sunscreen<br />

that’s usually for their noses.<br />

»»<br />

It is not recommended to shave dogs<br />

since their fur protects them from the<br />

UV rays.<br />

much of his sight due to retinitis<br />

pigmentosa, but his blindness hasn’t<br />

stopped him from achieving a long list<br />

of accomplishments—some of which<br />

multiple times, being the second blind<br />

American runner to complete a 100-<br />

mile endurance run, and receiving the<br />

Sacramento Running Association’s 2017<br />

Community Runner of the Year Award.<br />

After he was struck by a car while<br />

riding his tandem bicycle and seriously<br />

injured, Hunter’s middle daughter<br />

encouraged him to get a guide dog.<br />

Awards, an annual campaign that recognizes heroes on<br />

cancer when he comes to work<br />

they receive is part medication and<br />

part love from the soft dog. “I love<br />

that Max makes so many [patients]<br />

smile. It really makes their day to<br />

have someone to hug,” Goossen<br />

Officer Gage Lawley and Eros<br />

Don’t let Eros’ dashing good looks deceive you. This fierce K-9 officer on the Roseville Police<br />

Department loves tug-of-war, chicken, and justice. The handsome sable colored dog is originally<br />

from Germany and was<br />

sent to Canada where he was<br />

unfortunately injured.<br />

In August 2010, Eros was<br />

transferred to California and<br />

paired with his owner, Officer<br />

Gage Lawley, where he<br />

underwent what is equivilent<br />

to the police academy for<br />

dogs—a 12-week intensive<br />

training session. In addition<br />

to initial certification, each<br />

K-9 team trains two days a<br />

month with other K-9 units<br />

in the region to stay sharp in<br />

the field.<br />

“Eros is always wanting to<br />

work,” Officer Lawley says,<br />

and he appreciates that.<br />

The canine is cross-trained<br />

in patrol and narcotics<br />

detection, which means<br />

he works on a patrol team<br />

and also detects narcotics<br />

in buildings, vehicles, open<br />

areas, and packages. Eros’<br />

position was funded by drug<br />

asset forfeiture funds, so the<br />

dog is giving back by being<br />

time, Eros is a huge hit.<br />

Officer Lawley says what<br />

makes him most proud of<br />

the German shepherd is his<br />

ability “to be a ferocious,<br />

hardworking K-9, then go to<br />

a demonstration at a school<br />

and become a loving, regular<br />

dog.” Because of this, the dog<br />

is a reliable worker and even<br />

better pet. Officer Lawley could not have asked for a more<br />

perfect fit to his K-9 team.<br />

Longtime <strong>Folsom</strong> favorite Back Bistro recently made the<br />

leap from its cozy, neighborhood location to the glitz<br />

and glamour of a 4,500-square-foot destination at the<br />

Palladio. Featuring an impressive craft cocktail bar<br />

that commands attention as soon as you enter, the<br />

restaurant also serves up the same quality fare that<br />

made loyal fans of its original customers—with a few<br />

new dishes and a boutique wine selection.<br />

I started with the sautéed artichoke hearts, whose<br />

presentation was a bit of a surprise, as it’s served “bruschetta style”—<br />

topped with olives, fennel confit, capers, roasted garlic, and the namesake<br />

artichoke hearts over grilled French bread. The real plot twist, however,<br />

was the white wine cream sauce the sliced baguettes were perched atop—a<br />

very creative and tasty application, indeed.<br />

Next came the warm arugula salad with pancetta, quinoa, red onions,<br />

toasted almonds, and shaved Parmesan. The balsamic dressing was applied<br />

sparingly (thank you), and the tasty, texture-rich toppings were the perfect<br />

pairing to the peppery baby arugula.<br />

As I ordered “steak and potatoes,” the server asked if I wanted to “surf<br />

and turf” it. He barely got the words out of his mouth when I hit him with<br />

a resounding “yes!” The resulting plate featured grilled steak over fondant<br />

potatoes and garlic aioli with a skewered shrimp crowning each of the three<br />

brochettes. Not surprisingly, this is one of Back Bistro's most requested small<br />

plates, and if you’re just looking for a quick bite, there’s plenty of protein here<br />

to hold you over.<br />

Warm Arugula Salad<br />

Between this and the other two starters, I was content, but all willpower went<br />

out the window when I saw the bistro’s version of shrimp and grits. Ever since ordering and falling in<br />

love with the dish at Luke in New Orleans, I’m tempted to try it everywhere. Whether it’s breakfast<br />

(with a poached egg), lunch, or dinner, I’m a devout fan, and Back’s entry hit the mark. The option here<br />

featured an Italian twist (creamy polenta in lieu of grits) but still boasted some of the NOLA traditions<br />

(andouille sausage and roasted tomatoes).<br />

I’m sure I didn’t need dessert at this point, but when a menu offers “The Famous Triple Pot de Crème,”<br />

how can you not find out if it lives up to its nom de plume? After all, it’s French pudding…right? You’ll<br />

have to stop by Back Bistro and see for yourself (spoiler alert: My “pot” was spotless).<br />

Falafel Corner // For just a short time now, Falafel Corner has been serving <strong>Folsom</strong> residents mouthwatering, made-from-scratch<br />

Mediterranean dishes with a side of friendly service. Upon entering, you’re instantly hit with the enticing aromas of spices and fresh local veggies.<br />

Thanks to the warm atmosphere and amiable employees, I instantly felt at ease and ready to dive into their intriguing menu. The eatery is unique<br />

in that they cater to every customer’s needs—from offering high-quality zabiha ingredients (including premium, corn-fed Harris Ranch beef) to<br />

classic and familiar dishes (burgers, curly fries, and quesadillas), as well as authentic Mediterranean cuisine that runs the gamut from gyros to<br />

their namesake falafel. For my inaugural visit, I tried the Combo Platter and was instantly transported to foodie heaven. The plate came with a<br />

heavy helping of protein (perfectly seasoned chicken and tender, rotisserie cooked then grilled lamb/beef) as well as buttery rice pilaf, a fresh<br />

Greek salata, house-made hummus, pita bread, and tangy tzatziki sauce that had my mouth burning but begging for more. The sheer amount of<br />

food wasn't the only thing that was impressive about this dish, however; the way that all the flavors—from the rice, meat, and the sauces—melded<br />

together was truly an experience that everyone needs to understand firsthand. Now that I know what Falafel Corner is capable of, I’ll be back to<br />

for 5 minutes until the sugar has dissolved. Pour the hot mixture over the cucumbers, cap with a<br />

2Place the beef in a bowl, season with salt and pepper, and mix to combine. Gently shape the<br />

meat into four patties about 1 inch thick. Using your thumb, gently make a small indentation<br />

in the center of each patty. This ensures they will keep their shape when cooking. Heat a grill/<br />

barbecue to medium–high. Brush the grate with oil. Place the patties on the grill and cook for 5<br />

minutes. Flip them over and continue to cook for another 5 minutes for medium-rare, or longer<br />

for well done. For the last 2 minutes of cooking, place a slice of cheese on top of each patty to melt.<br />

3Slice and toast the buns on the grill, then serve alongside the patties, pickles, and platter<br />

We specialize in providing award-winning frozen drinks, both<br />

alcoholic and non-alcoholic, to any and all events—from weddings<br />

and corporate parties to golf tournaments, fund-raisers, graduations,<br />

and more. My amazing wife found the business, since she loves<br />

margaritas.<br />

How are you involved with both the community and your<br />

customer?<br />

I’ve coached youth basketball for years and love watching a kid’s<br />

confidence blossom like a flower. I also enjoy making people happy…<br />

and margaritas seem to do just that!<br />

Being married to an amazing woman for 26 years and raising four<br />

Tennis With Cole specializes in private and group tennis instruction for<br />

adults and children. All skill levels are welcome, especially beginners.<br />

What was the first job you ever had, and what did you learn from<br />

the experience?<br />

Working on a farm. I learned hard work builds character and gained<br />

an appreciation for hard-earned money.<br />

How are you involved with both the community and your<br />

customer?<br />

I offer after-school lessons for children and work closely with<br />

homeschooled children. I also offer risk-free trial lessons and free<br />

assessments for all students.<br />

Why is your staff the best in the business?<br />

I’m passionate about helping people improve and offer a selection of<br />

programs that fit any budget.<br />

What life accomplishments are you most proud of?<br />

Starting my own business and seeing it succeed; also, playing tennis<br />

I take a vacation to Hawaii every year.<br />
