Behind The Barside
Come closer, you who enter here
Behind the barside - it’s a mysterious world.
Inspired by secret companies, endless mystical
stories and the famous locked nights, we
know. The inspiring unrevealed speakeasy
bars were born in the 20s of America, in the
prohibiton era, when these uncommunicated
bars became wide popular by word-of-mouth.
For bartenders a school was born: the prominent
bars of San Francisco and New Orleans
are still icons for all of us. The playful name is
talking, coming from its nature that in these
hidden spots you could speak easily anytime,
where the ladies were dancing, and gents were
playing at cards with cigar in mouth and smoky
whiskey on the table.

The cocktail shakers
can be traced to
7000 BC in Mexico
and South America.
The modern version
has 3 varieties:
The Boston Shaker,
The Cobbler Shaker,
The French Shaker.

SHAKING
The cocktail shakers got their special form,
as we know them, by the mid-19th century.
During the late 19th century with several
patent improvements the design changed and
been advanced, however they became wide
popular in the 1920s prohibition era and Jazz
Age when bartenders started to use it “for
a bit of a show”.

all we need is ice,
a bar spoon and a
proper stirring glass.

STIRRING
Stirring is the most basic technique of
mixing a cocktail. However it seems to be
the easiest way to create a drink, stirring
is the most essential one. Bartenders
often play with the temperatures by using
minimal energy which has little effect on
the temperature of the finished cocktail.
There are almost as many different bar
spoons as stirring glasses on the market,
and small tricks to heat up and cool down
a drink like pre-freezing or chilling a
glass. It’s just the soul of the real classic
cocktails..

The most spectacular
technique comes
from the West Indies,
however it could be
originated from several
other cultures as well.

THROWING
In Europe, the technique of throwing was
first used in Spain for serving ciders, while
upon the other side of the world, was used
to cool the teas down or just refresh them.
Nowadays, this method is often used with
wine and vermouth based drinks, making
them more delicate and airy. As the name
suggests it is achieved by pouring the
ingredients from one vessel to an other
one. The added tiny bubbles make every
drink soft and gentle. Throwing comes
with a balletic and a very elegant move.

Bloody Mary
It was back in the 1920s when Fernand Petiot, an American bartender at
As the 1980s disco fever
decade passed, something
changed in the bar
culture: well-known
and celebrated old-new
techniques came into
the limelight.

AGEING
Something we could say: back to the basics,
After the disco era, a new beginning has
come into the history of bar culture, and
more and more bartenders started to use
again the classic style methods like the art
of ageing. Ageing is a slow, time-consuming
and artistic process for experimenting.
Sometimes it’s even magical. With this way
of mixing, the sophisticated and very unique
drinks started to flourish again, and people
become more cocktail-savvy like before.

The genre everybody
knows. Sometimes, even
too well. Shots became
incredibly popular from
the 1970s-1980s.

SHOTS
This is the time when the short cocktail
variations started to appear on the bar
tables and the famous icons were born
like Kamikaze, B52 and among others,
Blow Job as well. The shots are still the
spicy queen and kings of the night. In this
genre the limit is the sky. An elegant and
naughty, small irony for those who think
the size really matters.
