THE EDITOR'S NOTE V.<br />

IT IS always slightly disconcerting to come<br />

back from a sunny holiday abroad, return<br />

to work and immediately have to deal with<br />

adverts and events that are all promoting<br />

Christmas. The move from summer to autumn this<br />

year seemed to be almost instantaneous, so I have<br />

gone from shorts and polos to jumpers and jackets<br />

overnight. Let’s hope that we can hold off using<br />

scarves for a good few months yet.<br />

At the time of writing, my friend Jane and I are just<br />

about to see off 50 vintage, veteran and classic<br />

motor cars on the annual GUTS Motor Tour, which<br />

raises money for Guildford Undetected Tumour<br />

Screening at the Royal Surrey hospital. This year,<br />

we are visiting the Wellington Country Park,<br />

followed by a picnic lunch at the Royal Military<br />

Academy, Sandhurst. This is the fifth tour we have<br />

organised and after this year, we will have raised<br />

close to £20,000 for a very worthwhile local charity.<br />

with this endeavour next year (and beyond), please<br />

would love to have a bit more help!<br />

You will note this month that we have slightly<br />

redesigned the cover and the insides of the<br />

magazine to incorporate our new logo, which is one<br />

we have been using for the past few months on our<br />

social media pages. These are just a few cosmetic<br />

changes to the magazine as we approach our tenth<br />

year of publishing community magazines next year.<br />

How time flies!<br />

On page 10 of this month’s issue, you can read<br />

HALLOWEEN<br />

Over the past few years Halloween has quickly become the<br />

party occasion of the year, says Sindy Hammond-Jones.<br />

TEN YEARS ago, you may have seen a few carved pumpkins<br />

dotted about, and the odd little ghost draped in bed linen<br />

wandering the streets, but now, in 20<strong>18</strong>, Halloween really<br />

is big business.<br />

Love it, or hate it, this celebration is not going anywhere,<br />

and in fact, it will only get bigger. With schools, businesses<br />

and work places all embracing Halloween, it’s hard not to<br />

get involved one way or another.<br />

Halloween for any party shop is the busiest time of year.<br />

People celebrate it in so many different ways, from great<br />

big parties to simply going out trick or treating. It is quite<br />

often a drawn out celebration, with perhaps a party<br />

at the weekend before (this year it is Saturday 27th<br />

<strong>October</strong>) and then out trick or treating on the<br />

actual night, Wednesday 31st <strong>October</strong>. At The<br />

Party Company in Godalming, we have been<br />

planning for the big event since March, but so<br />

many people leave it to the last minute.<br />

Hare are a few survival tips to get you through<br />

the ghoulish part of the season:<br />

Trick or treating<br />

If you’re not a fan of trick or treaters knocking<br />

on your door, then baton down the hatches, close the<br />

gates and leave your porch light off! Many newspapers<br />

now publish a poster you can put up to say no to trick or<br />

treaters. So this is always worth looking out for.<br />

Alternatively, if you’re happy to supply everyone with the<br />

sugar rush of the century, maybe put a carved pumpkin or<br />

a candle outside your house to show parents and children<br />

that you’re happy for people to knock on the door.<br />

If you’re feeling generous when handing out treats, make<br />

sure they are wrapped. I personally give an option of<br />

It’s always a tricky one as everyone always<br />

thinks they have to go for the blood and<br />

gore... when actually if you look at the<br />

Americans, who in my opinion are the Kings<br />

and Queens of Halloween (they’ve been all<br />

out celebrating this for much longer), it’s<br />

more about imagination and creating the<br />

funkiest characters from their favourite<br />

books or TV shows. This I feel can take the<br />

pressure off and makes it a lot easier, as<br />

you can just accessorise day-to-day outfits<br />

or add to fancy dress costumes you already<br />

have. For instance, pirate or princess<br />

costumes can be turned into dead pirates<br />

or princesses... spray with some fabric<br />

blood and paint yourself white and then<br />

add a dash of talcum powder through back<br />

combed hair.<br />

Decorations<br />

Another favourite part of Halloween is<br />

decorating, purely because there are SO<br />

many options these days. You can go<br />

from decorating your porch with a carved<br />

pumpkin and some spiders webs, to<br />

silhouettes in your windows or go the whole<br />

hog with the entire house. Just do what you<br />

are happy to put up and take down, after all<br />

sometimes it’s only just for the day.<br />

Food<br />

This is something fun to do with the children,<br />

from making edible fingers out of hot dogs,<br />

stuffed eyeballs from lychees to jelly brains,<br />

the creativity is endless. Pinterest is a<br />

fountain of knowledge for all your<br />

creative needs…<br />

Finally, if you do decide to<br />

celebrate the frolics of Halloween,<br />

make sure you get to enjoy it<br />

and don’t make the to-do list the<br />

impossible list.<br />

On Saturday the 27th <strong>October</strong>, just<br />

outside The Party Company in Godalming<br />

at the Pepperpot from 10am-4pm, they are<br />

celebrating Halloween with lots of activities<br />

for children. They’ll have face painting, glitter<br />

tattoos, lantern making and biscuit decorating<br />

on the go all day, alongside a Pumpkin Trail in<br />

conjunction with other shops in the town.<br />

tour of the home and art of England’s<br />

Michelangelo.<br />

HIDDEN AWAY in the beautiful Compton countryside near<br />

Guildford is a unique celebration of the ‘Art for All’ passion<br />

of the Victorian artists George and Mary Watts.<br />

I confess that, apart from a brief visit some years before The<br />

Watts Gallery was completely renovated following a very<br />

effective fundraising drive, I had not taken much interest.<br />

However during a tour of the gallery a few weeks ago I very<br />

quickly started to scold myself for having missed out on a<br />

truly fascinating and absorbing experience.<br />

“This is the main gallery,” Susanna explained<br />

as we walked into a very spacious well-lit<br />

area with tall ceilings divided by a series of<br />

arches. The first room boasted an amazing<br />

rich red flocked wallpaper, and the second<br />

a deep blue - both of which so impressed<br />

me with the way they didn’t detract as<br />

you’d perhaps expect, but instead provided<br />

a perfect backdrop for the collection of<br />

paintings displayed there.<br />

This not only for the art I was to enjoy, but also learning how<br />

‘make’ sessions.<br />

As we approached the main building my guide, Susanna<br />

Plummer, explained what a critical role volunteers play in<br />

keeping the gallery open. “We have over 300 volunteers<br />

who you will meet throughout your visit. They literally help<br />

everywhere and are hands-on with everything ensuring we<br />

stay open. A hard core of about 50 put in a lot of hours on a<br />

constant and ongoing basis. They’re brilliant!”<br />

strength. Barack Obama, who apparently<br />

had also been deeply moved by the painting,<br />

used this as the theme of a keynote address<br />

and for a book he had written.”<br />

for positives, and perhaps what is so clever here is that<br />

perhaps a sunrise as a beginning is more positive than a<br />

sunset which represents the end. Or does a glorious sunset<br />

augur well for a perfect day tomorrow?<br />

Susanna broke me away from my conundrum as she<br />

steered me towards the second painting, although I was not<br />

in any way prepared for the emotional response this was to<br />

trigger for me. “This is Hope which Watts painted around<br />

the same time,” explained Susanna. “I went to a talk awhile<br />

ago in which I learned that Nelson Mandela had snuck a<br />

Now initially, as I started to examine the<br />

painting, all I could see was a female figure<br />

sitting hunched on a rock blindfolded and<br />

holding a lyre. But as I looked deeper I could<br />

see that she was actually seated on a globe,<br />

her face looked totally at peace, and despite<br />

the fact that there was only one string left<br />

on the instrument, she could still play it.<br />

Susanna had obviously noted my deepening<br />

response, and smiling she asked: “And can<br />

you make out the star at the top? One little<br />

star – and that’s hope isn’t it? Children tend<br />

to spot that star straight away!”<br />

I must admit that I hadn’t, but thanks<br />

to Susanna I realised not only what a<br />

remarkable gallery this was but what an<br />

incredible artist Watts had been. I had<br />

already been challenged prior to my visit<br />

by a description of the artist as ‘England’s<br />

Michelangelo’ - which to me as an<br />

uninformed visitor seemed perhaps overstated.<br />

But I very quickly came around to<br />

the realisation that he was so capable of<br />

delivering very enquiring interpretations of<br />

what he saw and experienced around him,<br />

and with such deep emotion. Surely, he and<br />

Michelangelo were not dissimilar in that<br />

respect?<br />

Where to next? The Sculpture Gallery<br />

of course where you’ll encounter the<br />

monumental 20ft tall Physical Energy,<br />

featuring a horse with rider scanning the<br />

horizon. The sculpture here is the original<br />

plaster one and from which full-sized<br />

bronze statues have been cast and that now<br />

stand in London, Cape Town in South Africa,<br />

and Harare in Zimbabwe.<br />

“It’s absolutely spectacular – and this has<br />

again been re-cast in bronze and is coming<br />

to stand on the edge of the Artists’ Village<br />

estate,” said Susanna. “You should be able to<br />

see it when driving both ways along the A3!”<br />

We explored Limnerslease, the imposing Arts<br />

and Crafts half-timbered home of George<br />

and Mary on the other side of the estate.<br />

“When they came to Compton they realised that not only had<br />

a lot of the traditional crafts fallen out of favour, but that the<br />

largely local agricultural economy was declining in the face of<br />

the modernising Victorian era,” explained Susanna. “So they<br />

decided to help train the local community in practical crafts<br />

and founded The Compton Pottery in <strong>18</strong>98. In fact the Watts<br />

Chapel was crafted and built by Mary, an acclaimed designer<br />

in her own right, with the help of the community.” If you’ve<br />

not visited the extraordinary red brick domed chapel a few<br />

hundred yards down the lane from the house you must. It<br />

is an Arts and Crafts masterpiece adorned with terracotta<br />

tiles and boasts breathtaking blue-green-bronze panels<br />

sympathetically illuminated by recently upgraded lighting.<br />

A visit to the house provides an opportunity to explore<br />

George and Mary’s adjoining studios where they worked<br />

tirelessly on pushing the bounds of their creativity. “Here in<br />

The Compton Gallery you can watch a film about the Estate<br />

and see the Artists’ Village being born,” said Susanna. “You<br />

can also see personal effects in the display cases. This one<br />

for example has Mary’s diary in it. And you learn about how<br />

successful the Compton Pottery was trading as it did until<br />

the 1950s. Pieces from the pottery were sold at Liberty’s,<br />

the famous store in London.” I was particularly taken by<br />

George’s own studio where he worked every day, and which<br />

is dominated by the huge canvas of The Court of Death, his<br />

last major work. It hangs on a hoist above a trap door so<br />

it could be lowered in to the room below enabling him to<br />

effortlessly work on the higher parts.<br />

Oh, and don’t forget to ask to see the skeleton in the<br />

cupboard…<br />

On the ground floor there are two learning studios where<br />

hands-on educational visits are hosted. Madeleine Pike,<br />

who helps organise the studios’ activities, explained: “We<br />

tend to tailor the workshop visits to what they’re studying in<br />

school. So they can be quite specifically geared for example<br />

to look at pottery, sculpture, or printmaking, with the<br />

creative workshop led by the artist. And we also have makebased<br />

workshops open to everyone.”<br />

As well as a visit to the gallery shop, housed<br />

in the old Compton Pottery and where you<br />

can browse a wide range of bespoke and<br />

artisan products, also enjoy The Tea Shop<br />

went to Susanna: “Nowhere else in the<br />

Pets and Fireworks<br />

Zoe Blake considers some precautions to keep your pet calm on fireworks night<br />

WE ARE getting nearer to that time of year<br />

that many a pet owner fears… fireworks<br />

night!<br />

This can be a stressful time for our pets and<br />

us owners. Sadly it’s not just a ‘one night’<br />

occurrence anymore, they can continue on<br />

for a few weeks making it impossible for us<br />

to know when we might get caught out.<br />

It’s natural that our pets may show a mild<br />

reaction to the noises, however reactions<br />

can be severe and put our pet at risk of<br />

injury. Dogs may pant, shake, hide away,<br />

bark, toilet themselves, and some may<br />

even destroy their immediate environment<br />

almost trying to dig themselves free. Cats<br />

will hide, become withdrawn, urinate in the<br />

house and over groom.<br />

If we plan early we can hopefully reduce the<br />

stress and anxiety that is felt by our pets<br />

(and us). So what can we do?<br />

Before the night<br />

First set up a den; often animals will feel<br />

safer if they have a hiding place to go to.<br />

This can already be an area that our pets<br />

like to spend time in, such as a crate/bed/<br />

wardrobe. Provide plenty of bedding and<br />

padding to ensure the animal sees it as<br />

inviting. Pop a blanket over the top if you<br />

can as this can muffle the external noises.<br />

If you don’t have this sort of set up already<br />

then now is the time to think about where<br />

you might be able to make one. Moving<br />

furniture and clearing out cupboards can<br />

free up areas that can be adapted but<br />

please remember that your pet needs to feel this is a place<br />

of safety and not somewhere that is seen as a punishment.<br />

Ideally set this up a good few weeks before you anticipate<br />

them starting.<br />

There are a number of calming products/supplements on<br />

the market which may help, I am happy to discuss these<br />

with you if you contact me. Sadly for some, these products<br />

are not enough and so medication can be prescribed<br />

but you would need to discuss this with your veterinary<br />

surgeon. I often recommend a ‘dummy run’ before the<br />

night if using medication to check that the dose prescribed<br />

has the desired effect.<br />

On the night<br />

Ensure all windows and doors are closed and you have the<br />

TV on or music playing. Distract your pets by offering them<br />

toys, treats or playtime. Walk all dogs early so as not to get<br />

caught out by the early evening fireworks. Keep all cats<br />

inside overnight and consider bringing in rabbits/guinea<br />

pigs that live outside. Ensure all resources are provided for<br />

your pet if you have changed their normal circumstances,<br />

so a normally outdoor cat will require a litter tray etc. Most<br />

importantly don’t punish your pet for displaying unwanted<br />

behaviour as this can make them more distressed. Consider<br />

a natural supplement or pheromone product to make them<br />

feel calmer. Use medication as prescribed.<br />

After the night<br />

Consider a de-sensitizing programme once firework season<br />

is over.<br />

Highways England - motorway heroes!<br />

MOST DRIVERS will have grumbled about whoever was<br />

responsible for setting the overhead warning signs on a<br />

motorway after obeying their warnings of problems ahead,<br />

only to find the road completely clear.<br />

However, Highways England is the organisation responsible<br />

for those messages, and a visit to their south-eastern control<br />

centre in Godstone made us see the signs in a new light.<br />

Highways England, not the police, are responsible for getting<br />

motorway obstructions safely cleared and the road reopened<br />

as quickly as possible.<br />

Traffic conditions are monitored by cameras mounted high<br />

up alongside the motorway. Whilst these are separate from<br />

the police speed cameras, anyone of a less than law-abiding<br />

disposition should note that the footage is recorded and<br />

could be used as evidence of bad driving.<br />

Each control centre operator has a bank of screens and<br />

controls to monitor the relevant cameras, switch on<br />

overhead sign information as required, and communicate<br />

with their traffic officers on the motorways.<br />

Other operators handle communications into and out of<br />

the centre, for example, to alert local radio and TV stations<br />

of incidents as they develop. Indeed, BBC Radio Surrey and<br />

Sussex's traffic reporter, Sylvie Blackmore, works from a mini<br />

studio in the Godstone Centre.<br />

The initial report about an incident is usually a phone call<br />

from a member of the public. The operator's first task is then<br />

to warn traffic heading towards the scene, so an overhead<br />

sign warning must be set within those first<br />

few seconds. At that stage, the incident is<br />

probably still unverified (yes, people do<br />

sadly raise false alarm calls), so these<br />

messages will include the word ‘reported’,<br />

for example, ‘report of accident ahead’.<br />

And guess what the biggest problem they<br />

face in responding to a caller’s message is?<br />

Us, the road users!<br />

Why? Because usually, the caller has no real<br />

idea of where they are on the motorway,<br />

or sometimes even which motorway they<br />

are on, particularly when they call using a<br />

mobile phone. If it's safe to do so, it's better<br />

to use one of the emergency phones at<br />

the side of the motorway, which connect<br />

directly to the nearest control centre and<br />

automatically identifies the location. If you<br />

have to use a mobile phone, try to give<br />

the operator the number of the closest<br />

marker post – these are located around<br />

100 metres apart on every motorway.<br />

As soon as the incident has been assessed,<br />

the overhead messages are changed to<br />

give more information or instructions. So<br />

if you see an overhead sign which does not<br />

include the word ‘reported’, be especially<br />

wary – because it is telling you that an<br />

incident really has taken place.<br />

If the incident is a breakdown, Highways<br />

England traffic officers (not the police) are solely responsible<br />

for dealing with these, using their familiar black and yellow<br />

chequered 4x4s.<br />

Despite the traffic officers being the first attendees at many<br />

incidents and so acting almost as a fourth emergency service,<br />

they are amazingly not allowed to drive using blue lights or<br />

sirens, or even exceed the speed limit. This often results in<br />

a crew rushing at their maximum-permitted speed to an<br />

incident whilst traffic hurtles past them blatantly ignoring the<br />

speed limit and the overhead warning signs!<br />

Once at an incident, the crew will assess the situation and<br />

update control. Their duty is to then get the motorway open<br />

again as soon as possible. For example, if it’s a breakdown in<br />

one of the ‘live lanes’, the disabled vehicle is dragged off the<br />

road to a place of safety. If you've ever wondered why the<br />

traffic officers need to use big 4x4s, it’s because they are able<br />

to drag a 44-tonne articulated truck.<br />

Often the crew need to make a temporary motorway<br />

closure to allow a vehicle or debris to be removed from the<br />

carriageway, and this is done by just one two-man crew.<br />

Starting at motorway speed with ‘Do Not Pass’ warning signs<br />

illuminated, the 4x4 then gradually slows all lanes of traffic,<br />

stopping them at a safe distance from the<br />

incident. One crew member starts dealing<br />

with the incident whilst the other speaks to<br />

the lead drivers in the stationary traffic lanes<br />

to ensure that they do not drive off until<br />

given the all-clear.<br />

Once the motorway has been cleared, the<br />

traffic officers then restart the traffic flowing<br />

as quickly as possible. Not until then can<br />

the centre operator switch off the overhead<br />

signs.<br />

The work of the traffic officers can be<br />

incredibly dangerous: close proximity to a<br />

busy motorway is a very dangerous place to<br />

be, and sadly more than one of them has lost<br />

their life whilst performing their duties.<br />

So next time you see the overhead warning<br />

signs operating, drive accordingly, but spare<br />

a thought for all the work going on behind<br />

the scenes to keep us all safe, and moving,<br />

on our motorway network.<br />

Charcoal Making by the Wey Valley Woodman<br />

Phil Kemp meets up with artisan Ian Baldwin to learn how charcoal is made sustainably<br />

WE ALL enjoy a good barbecue in the<br />

summer, don’t we? And the majority of us<br />

still enjoy and champion the traditional<br />

smoky sizzle over red-hot charcoal, rather<br />

than the more clinical cook on a fancy gasflame<br />

grill. As you noisily tip a good pile<br />

of lump charcoal into the bowl of your<br />

barbecue have you ever wondered how it is<br />

made and where it comes from?<br />

I went to see local artisan charcoal burner<br />

Ian Baldwin who with over 20 years’<br />

experience was to really open my eyes on<br />

this traditional craft in action. As we walked<br />

towards his yard on the Birtley Estate near<br />

Bramley, I could see his three kilns with neat<br />

wood piles surrounding each of them. One<br />

was in full burn, chimneys smoking.<br />

“I worked as a ranger for nearly <strong>18</strong> years at<br />

various locations for the council,” explained<br />

Ian in response to my question as to how<br />

he got involved in charcoal. “Working in<br />

countryside management provided me<br />

with a good skills-base and knowledge of<br />

everything woody. And the nice thing about what I’m doing<br />

now is that I’m able to deal with say a problem dangerous<br />

tree and turn it into something useful. A lot of the timber<br />

you see sitting around here you couldn’t do much with. A<br />

lot is very knotty and low-grade firewood, and I can re-use<br />

in effect old fencing posts for example - and we’ve even<br />

turned an old butcher’s block into charcoal!”<br />

Standing next to the closest of the kilns, each of which<br />

endearingly have their own names, these being Hermione,<br />

Ron and Harry (the oldest one) which you may have already<br />

twigged are Potteresque, Ian started to explain the process.<br />

“A normal bonfire has unlimited oxygen available. Inside a<br />

kiln you can restrict this. Around the outer circumference<br />

and level to the ground are four air vents. With the four<br />

chimneys you have in effect eight points of the compass,<br />

four in and four out, providing a constant but controllable<br />

feed of oxygen.”<br />

CHARCOAL MAKING<br />

We looked inside one of the kilns being<br />

prepared for a new burn. “We stack the kiln<br />

to the top and then pour hot coals down<br />

into the middle to get it going, so effectively<br />

starting a small fire in the centre fed by a<br />

limited supply of oxygen. It's more like<br />

baking wood in a process called pyrolysis.<br />

This is where you’re using fire to boil off the<br />

more reactive chemicals first. The water<br />

boils off as steam. The slowest in the queue<br />

to grab oxygen is carbon - which is handy of<br />

course as that’s exactly what you’re after.”<br />

Ian pointed to the smoke coming out of the<br />

chimneys of the kiln in full burn. “First you<br />

get white smoke which is mainly steam as<br />

the water boils off. Then the smoke turns<br />

blue, to grey, to colourless. And it is at that<br />

point that we stop any more oxygen getting<br />

in by filling in the vent holes at the bottom<br />

to close the burn down.”<br />

I watched Ian’s team for the day hard at<br />

work unloading freshly-made charcoal from<br />

one kiln in readiness for grading on what<br />

Ian fondly refers to as Santa’s sleigh, as the<br />

chute is remarkably similar in shape. And<br />

then loading it with fresh logs. Mike, Ollie<br />

and Richard were only recognisable by the<br />

colours of their t-shirts as all were wearing<br />

respiratory masks. “And what’s nice about<br />

it really is that it is sort of ‘grunty’. You’re<br />

humping bits of wood around and putting<br />

them in the right place. There is a degree<br />

of technicality of course but it i s<br />

minimal.”<br />

go on sale I felt that<br />

this was quite a degree<br />

of understatement,<br />

but I was in the<br />

company of undoubtedly a highly<br />

experienced specialist. And this view was<br />

endorsed by what Ian explained next.<br />

“Biochar is a new word you need to look<br />

up. It’s very small bits of charcoal that are<br />

an extremely clever soil improver. First<br />

discovered in the Amazon as thick layers of<br />

charcoal from a long-lost civilisation - added<br />

to the soil it grabs hold of not just water but<br />

trace minerals that would otherwise leach out and be lost.<br />

I’m currently investigating with Secretts on trials using my<br />

biochar, and hopefully involving Surrey University too.”<br />

Ian had also shown me some large flat tins with holes<br />

punched into the lids, and in which he’d burned<br />

willow to make charcoal pencils favoured by artists.<br />

And this is something you could do at home. But could<br />

you start your own charcoal kiln? Well yes, if you can<br />

find an acceptable location given smoking chimneys – and<br />

have around £1,300 to spend on a new one. You could<br />

build one I suppose if you have the metalworking skills –<br />

but achieving the highly effective burns of The Wey Valley<br />

Woodman would take a lot of learning.<br />

and peeled, 750g pumpkin, peeled and diced into 2cm<br />

pieces, 1 red chilli, deseeded and finely chopped, 4 garlic<br />

cloves, peeled and crushed, leaves of one sprig of thyme, 1.2<br />

litre good vegetable stock, 100ml double cream (optional),<br />

sea salt and black pepper. For the candied shallots: 250g<br />

unsalted butter, 1/4 tsp of cumin seeds, 8 (250g) shallots,<br />

peeled and sliced, 1/4 tsp ground cumin, 1/4 tsp paprika,<br />

1 tsp honey. To serve: 2 tsp chives, finely chopped, 30g<br />

pumpkin seeds, toasted, 120ml low fat crème fraiche.<br />

Method:<br />

1. Place the peppers skin side up, on a baking sheet<br />

and roast in the preheated oven for 20-25 minutes,<br />

until the skins are charred. Remove from the oven and<br />

place in a bowl. Cover with cling film and leave to cool.<br />

Once cool, peel off the skins, and reserve the flesh.<br />

2. Meanwhile, melt the butter with oil in a large, heavy<br />

based saucepan. Add the shallots, pumpkin and red<br />

chilli, season with sea salt and black pepper and sweat<br />

the vegetables for 5-10 minutes without browning.<br />

Add the garlic and thyme and cook on a low heat for<br />

a further minute. Pour in the vegetable stock, bring to<br />

the boil and simmer gently for 15 minutes. Add in the<br />

red peppers and cook for a further 5 minutes.<br />

3. For the candied shallots, melt the butter in a small<br />

pan over a medium heat, add the cumin seeds and<br />

shallots and fry until soft. Add the ground cumin and<br />

paprika and cook the shallots for a further 1 minute,<br />

stirring the shallot mixture all the time to prevent<br />

burning. Fry until caramelised for approx. 1-2 minutes.<br />

Remove from the heat and season with sea salt and<br />

stir in the honey.<br />

4. Blend the soup in a food processor or with a hand<br />

blender and adjust the seasoning to taste. Return to<br />

the pan, if a little thick add more stock and if you wish,<br />

stir in the cream. Gently reheat the soup and ladle<br />

into warmed bowls. Place a spoonful of low fat crème<br />

fraiche in each and sprinkle with the chives, toasted<br />

pumpkin seeds and candied shallots.<br />

Ingredients:<br />

1 medium butternut squash (approx 600-800g), cut into<br />

2.5cm chunks (leave the skin on for added texture), 12<br />

shallots, peeled and left whole, 6 sage leaves, roughly<br />

chopped, 3 tbsp extra virgin olive oil, 3 cloves garlic,<br />

crushed, 1 heaped tbsp flour, 175ml white wine, 1 tin<br />

butterbeans, drained and rinsed, 400ml vegetable stock, 2<br />

tbsp sundried tomato paste. For the dumplings: 200g self<br />

raising flour, 100g vegetable suet, 2 tsp dried mixed herbs,<br />

salt and freshly ground black pepper, 5-8 tbsp cold water.<br />

Method:<br />

1. Place the butternut squash and shallots in a roasting<br />

tin along with the olive oil, sage leaves and a good grind<br />

of pepper and salt to taste. Roast in a hot oven (220°C/<br />

Gas 7) for 20-30 minutes until the vegetables are tinged<br />

with colour at the edges.<br />

2. Whilst the squash and shallots are cooking make the<br />

dumplings by combining all the dry ingredients in a<br />

large bowl. Add enough cold water to bring it together<br />

to make a soft dough. Shape the dough into 8 small<br />

balls and set aside.<br />

3. When the squash and shallots are cooked, remove<br />

from the oven and turn the temperature down to<br />

<strong>18</strong>0°C/Gas 4.<br />

4. Add the flour to the roasting tin, stirring to coat the<br />

vegetables and soak up all the roasting juices. Add the<br />

garlic and white wine to the roasting tin, scraping the<br />

bottom to release all the sticky caramelised bits.<br />

5. Transfer to an oven proof casserole and add the<br />

beans, sundried tomato paste and enough vegetable<br />

stock to cover the vegetables. Give everything a good<br />

stir, Bring to the boil and cover. Cook in the oven for<br />

30 minutes.<br />

6. Remove the casserole form the oven and carefully<br />

add the dumplings so they float on the surface. Return<br />

to the oven, uncovered, for 20 minutes until the<br />

dumplings are crispy on the outside and fluffy and<br />

cooked through on the inside. Serve immediately with<br />

mashed potatoes and green beans.<br />

I LOVE terrariums and bottle gardens! I<br />

so enjoy designing tiny plant worlds and<br />

creating miniature gardens. This is the ideal<br />

time to build a terrarium or bottle garden,<br />

and these Lilliputian microcosms are fun to<br />

make. They really will enhance your home<br />

and provide the perfect gardening therapy<br />

through the autumn and winter months.<br />

If you’d like to create your own terrarium<br />

or bottle garden you will need:<br />

• A clear glass vessel: you could use an old<br />

fish tank, a glass jar, or an old carboy.<br />

• Grit or gravel: to form a drainage layer at<br />

the base of your terrarium.<br />

• Activated charcoal (available online and<br />

from aquarium shops) to keep the compost<br />

sweet.<br />

• Peat free coir compost: for planting.<br />

• A bucket and water: to soak your block of<br />

coir compost in, prior to planting.<br />

• A piece of weed suppressant fabric, or a<br />

remnant of cotton material: to keep the<br />

compost above from blending into your<br />

drainage layer below – cut your material to<br />

size to cover the base of your terrarium.<br />

• Terrarium plants: Choose plants that<br />

are suited to lower light levels and high<br />

humidity. For this terrarium I have used<br />

Pileas, ferns, and Fittonias, but the choice<br />

is yours, you’ll find an extensive plant list at<br />

www.pumpkinbeth.com.<br />

• Wash your clear glass vessel and allow to<br />

dry.<br />

• If your coir compost arrives in block form you will need<br />

to soak the block in a bucket of water for up to 45 minutes<br />

before planting. It’s wise to check the compost after 15<br />

minutes, as you may need to add more water.<br />

• Water your plants to ensure that they are hydrated and<br />

ready to be planted.<br />

• Place a 2-3cm (1”) layer of grit and activated charcoal in the<br />

base of your terrarium.<br />

• Sprinkle a thin layer of activated charcoal over the top.<br />

• Then place your piece of weed suppressant fabric, or<br />

cotton material over the top to cover the grit and keep your<br />

compost separate from the drainage layer below.<br />

• Ensure that your coir compost is moist but not waterlogged,<br />

then mix some activated charcoal into your coir compost<br />

and add this compost mix to your terrarium. The compost<br />

should be about 6-7cm (2-3”) deep.<br />

• Now it’s time for the plants! You may wish to position<br />

your plants inside your terrarium first, so you can find an<br />

arrangement you’re happy with before you begin planting.<br />

• Place your planted terrarium in a bright to semi shaded<br />

position, away from harsh, direct sunlight and cold drafts.<br />

The middle of the room is often a good location, or the<br />

corners of a bright room.<br />

WEEKEND WALK V.<br />

Thursley to Grayswood<br />

This interesting walk takes you through woods and fields, up and down hills and offers some splendid views.<br />

It was submitted by Guildford Rambling Club (see guildfordramblingclub.org.uk)<br />

TURN LEFT along the road and walk about 300 yards<br />

to find a tunnel, on the right, under the A3. You will<br />

need to hop over the low safety barrier to go down<br />

steps and under the A3. On the other side, turn left<br />

and walk out into a field. Follow the path down the<br />

slope half-left to reach trees and a stile.<br />

Climb over the stile and drop down left onto a track<br />

and follow it to pass the house at Hole Farm. Go out<br />

of the entrance gate and turn right. Quickly fork left<br />

to follow the wide track for about 1.25 miles. Along<br />

the way pass a lake, on your right, ignore a finger<br />

post pointing left and eventually emerge on a bend<br />

in a metalled lane. Blackhanger Farm is down to the<br />

right but you continue forward over Halnacker Hill,<br />

passing a lone house to reach a road.<br />

Turn right and walk 350 yards, passing Halnacker<br />

Cottage, to reach a road junction. Here hook back<br />

left, signed to Brook. After about 0.25 miles, find<br />

a finger post pointing right. Follow this down<br />

and then on for over a mile, along a wide grassy<br />

corridor, sometimes along the left-hand side of<br />

fields and through a number of gates until you<br />

reach a T junction with a very wide corridor. You<br />

can see the large modern barns of Witley Farm<br />

away to your left.<br />

Here, turn right and walk up and over slight rise<br />

and on until you reach trees. Immediately you will<br />

see, on your right, an information plaque for the<br />

site of a medieval moated manor house. There is<br />

a little island, covered in primroses and daffodils in<br />

the Spring. Continue on, quickly passing a pond on<br />

your left and swinging right to follow the path into<br />

a large field. Turn right and walk along its edge to<br />

a gate onto a metalled drive. To the left is a railway<br />

bridge but you turn right.<br />

Walk a little way, almost to South Park Farm and,<br />

here, take a footpath left and into a field. Follow<br />

the path alongside the garden fence, around the<br />

end of the garden and though a gate. Turn left and<br />

follow the hedge along the grassy track to a railway<br />

embankment. The path takes you right, through a<br />

gate and up to emerge at the start of the drive to<br />

Damson Farm. Turn left and immediately go under<br />

a railway bridge. Continue along the track, passing<br />

scattered houses until eventually emerging on the<br />

Grayswood Road with All Saints Church and the<br />

green to your right and with the Wheatsheaf further<br />

along. You could picnic in the churchyard or on the<br />

green.<br />

After lunch, walk past the pub a little way and turn<br />

right, down a private road. Just beyond the first<br />

house, take a path forking off to the right. Follow<br />

this down into trees and then up to reach and cross<br />

the railway line. On the other side, continue forward<br />

to reach a junction with a yellow arrow pointing left<br />

(towards Haslemere) and another pointing right,<br />

into a small field. Enter the field and go straight<br />

across and out onto a track. Turn left.<br />

Now comes a steady one mile climb. You continue<br />

along the track, ignoring a faint fork right at a point<br />

where the track swings left. Reach a T junction with<br />

another track and turn right. Pass a lone house and<br />

ignore an immediate left. The track soon swings<br />

left and you follow it, ignoring a track right. Reach<br />

a fork and follow a yellow arrow right. The track<br />

climbs steeply and swings left. At a junction with a<br />

track heading off to the left and down, go right.<br />

The track levels out and passes the site of the<br />

Temple of the Four Winds, which was a lodge built<br />

in 1910 by Viscount Pirrie. Continue on up and then<br />

down to a barrier at a 5 way junction. Ignoring a<br />

left turn and two forks right, go straight ahead and<br />

steeply up onto Gibbet Hill. There is a trig point<br />

here, also a memorial to a murdered sailor and<br />

splendid views. Go straight across and down onto<br />

the Quiet Lane, a metalled lane. Turn right to walk<br />

along it for about 0.75 miles to its end and then<br />

beyond. A lane merges in from the left.<br />

a green metal barrier. Here, turn right. Follow the<br />

path down and on until reaching a T junction with<br />

a wide track. Turn right and walk through to the<br />

starting car park.<br />

(2) Or, simply continue forward down a wide<br />

metalled lane, Punchbowl Lane, to reach the<br />

starting car park.<br />

Either:<br />

(1) To see views down into the Devil’s Punchbowl,<br />

just beyond this point turn left up a track signed<br />

“Unsuitable for motor vehicles”. The Punchbowl will<br />

appear to your left. Continue up and over the top<br />

and on until encountering, on the right-hand side,<br />

STARTING POINT: Car park in Boundless Road, nr Thursley.<br />

HOW TO GET THERE: Turn off the A3 southbound for<br />

Thursley turning right to cross the A3. On the other side<br />

turn left then quickly left again down the start of the slip<br />

road up from the A3 (if coming north, this is on your left<br />

just after you turn off for Thursley). A short way down<br />

here, turn right into Boundless Road. Drive about a<br />

mile to find a small car park on the right, just before the<br />

Boundless Road dives under the A3.<br />

I must admit to having done very little over the past<br />

month as I have been recovering from having a new knee,<br />

albeit a partial replacement. I have been fairly diligent on<br />

the exercise front and after 50 years of being told to “get on<br />

yer bike” by Angie I have done just that. Luckily the cricket<br />

has been on so I have been able to peddle away and watch at<br />

the same time. Actually, if any of you are contemplating new<br />

knees, I can say that the experience is not as bad as I thought.<br />

It’s all about exercising and being patient. Full recovery does<br />

take time but everyone I have spoken to says it is absolutely<br />

worth it. Anyway, it seems looking through the Jottings, that<br />

there is quite a bit going on in <strong>October</strong> so I will definitely be<br />

getting “on me bike”!<br />

Remembering the First World War<br />

There is an exhibition by Godalming Museum and Godalming<br />

Town Council to mark the centenary of the end of the First<br />

World War. This exhibition remembers those who fought and<br />

explores the impact on the lives of residents of Godalming,<br />

Farncombe and the surrounding villages. Discover the stories<br />

which lie behind the war memorials we pass every day and<br />

the characters and events which shaped the local experience<br />

of 'The Great War'. By the way, there will be the Museum’s<br />

usual great selection of Christmas cards and seasonal items<br />

determination, Police Dog Hogan has finally been brought in<br />

for questioning! Police Dog Hogan (https://policedoghogan.<br />

com/), are a hard-to-pin-down mix of Americana influences<br />

and British song writing tradition. They combine fiddle,<br />

trumpet, banjo, mandolin, accordion, drums and guitars<br />

with four-part harmonies-then fuse it all into songs whose<br />

subjects range from ‘shi**y white wine’ to the first day's<br />

battle at Passchendale. These guys are rapidly becoming the<br />

go-to and must-see Festival band and this summer played<br />

to huge audiences at Wickham, Cropredy and Cornbury<br />

Godalming Cyclathon<br />

ON SUNDAY <strong>18</strong>th November, the Rotary<br />

Clubs in Godalming will present the<br />

Godalming Cyclathon at Snap<br />

Fitness, High Street.<br />

The Godalming Cyclathon is a fun<br />

event, which is organised by Rotary in<br />

Godalming to raise money for charity<br />

through the sponsorship of riders<br />

and teams. Each team of 1 to 5 riders<br />

cycles for a session of 50 minutes,<br />

shared between them as they wish.<br />

Our hope is that in addition to the<br />

entry fee of £50, each team will raise much-needed<br />

additional funds for our charities.<br />

Cycling on an exercise bike for about 10 minutes<br />

per rider may not sound too demanding, but<br />

remember that this is a sprint event and the<br />

winners are people who have determination and<br />

stamina! There are different categories of teams<br />

and prizes for the winners in each category.<br />

The Ladies Hockey Club celebrated their 40th anniversary last<br />

year and has 2 teams in Surrey League Div 5 & Friendly<br />

in Division 1. A Men’s 2s team is newly formed this year<br />

and will play in Division 5 – so they have games to suit all<br />

Edinburgh Festival Fringe in 2017, award-winning storyteller,<br />

Danyah Miller presents a UK tour of the production this<br />

autumn and it is coming to Cranleigh Arts Centre on Friday<br />

5th. The play explores what drives us to want to live perfect<br />

lives as mothers, daughters, wives, sisters and breadwinners.<br />

Looking at our society the play questions what<br />

makes women want to be perfect and asks - what is so bad<br />

about imperfection anyway? Focusing on five generations<br />

of Miller’s own family, this universal and archetypal story<br />

examines the, often complex, relationship between mothers<br />

and daughters (and family dynamics). Incidentally, Danyah<br />

Ramster Garden<br />

Traditionally Ramster Garden in Chiddingfold has only opened<br />

for two weeks during <strong>October</strong>, but this year the family run<br />

garden has decided to stay open for an extra week. This<br />

means visitors have a greater opportunity to see the many<br />

seasonal highlights; including the unique 100-year-old avenue<br />

of maples which burst into life with coppery orange and<br />

vibrant reds to produce an incredible show of autumn colour.<br />

Visitors can also enjoy the maze of different paths around<br />

the 20-acre woodland garden to discover hidden sculptures,<br />

natural carvings and the tranquil lake setting. New on the<br />

map is the viewpoint of the Valley of the Giants which features<br />

exotic trees including Eastern Hemlock, the Giant Sequoia, the<br />

Grand Fir, currently standing at 47m and the prized Japanese<br />

Cedar which can reach an age of 7000 years. Entry fees<br />

Elstead Village WWI Commemoration Group<br />

From the WWI camp set up on the Village Green there will be a<br />

very moving silent march to the War Memorial – ‘Bring Him<br />

Home’ is set to be a fitting tribute to Elstead’s 38 WWI fallen.<br />

After this there will be an exhibition of war memorabilia in the<br />

Elstead Youth Centre with a talk and refreshments. Muster<br />

outside the SPAR in Elstead at 10.15am to join the final<br />

walk with the village’s Silent Soldiers to the memorial for<br />

Ewhurst Players and friends present an anthology in poetry,<br />

prose and music of the Great War and is a commemoration of<br />

the 1914-19<strong>18</strong> Armistice. The evening will contain moments<br />

both sad and funny and will be a fitting tribute to the men<br />

and women involved in the conflict. All proceeds will go to<br />

the charity Resolution, a national organisation that offers<br />

counselling to ex soldiers and their families suffering from<br />

Concert for Peace<br />

Saturday 10th November 7.30pm<br />

Vivace Chorus together with the award-winning Friary<br />

Guildford Brass Band, presents Concert for Peace at G Live in<br />

Guildford. It’s a moving and uplifting tribute to all those people<br />

from Guildford and the surrounding area who gave their life in<br />

the Great War, and in all the conflicts since. The narrators are<br />

Dame Penelope Keith and Michael More-Molyneux, HM Lord<br />

Lieutenant of Surrey. Music includes Elgar’s Nimrod, selections<br />

from Holst’s The Planets, and Karl Jenkins’ The Armed Man,<br />

a medley of Great War troop songs, and much more. Tickets<br />

for this concert are £10 for under <strong>18</strong>s and for serving military<br />

personnel and £20 for general sales. There will also be a<br />

range of events in the GLive foyer in the afternoon.<br />

Centenary Garden<br />

Saturday 10th November 11am<br />

The garden, next to the children's play area on Snoxhall Fields<br />

in Cranleigh, will be opened by the Deputy Lord Lieutenant of<br />

Surrey and former High Sheriff, Robert Napier. It will be a<br />

simple affair with a WW1 poem read out and the Last Post.<br />

The garden has been created entirely from voluntary effort<br />

and the generosity of local people and companies, and will<br />

be completed mid <strong>October</strong>. It has been designed to reflect a<br />

natural English meadow with 415 steel poppies collected into<br />

a sculpture to reflect the number of people in Cranleigh and<br />

surrounding villages who lost their lives in the Great War.<br />
