What’s your relationship with winter sports? Do you<br />

buy a season ski pass before the first snowstorm of<br />

the season hits or is your idea of a winter workout<br />

maneuvering Christmas cookies to and from your<br />

mouth? My courtship is complicated. Growing up so<br />

close to the Sierras meant Friday field trips to Boreal<br />

Mountain Resort and Sunday fundays sledding.<br />

Though it sounds like a<br />

postcard-perfect childhood,<br />

the reality was much different.<br />

My inaugural experience<br />

downhill skiing was one of<br />

the most frigid, frightening<br />

days of my life. I cried more<br />

than I laughed and was on<br />

my fanny more than my<br />

feet. Subsequent attempts<br />

included injuries and a general<br />

fear factor that I never could<br />

conquer. Needless to say,<br />

when I moved to San Diego and traded the snow for<br />

the sand, I didn’t miss the mountains one bit.<br />

It wasn’t until returning to my roots that I truly<br />

started appreciating the beauty and flurry of fun we<br />

have in this winter wonderland of ours. Downhill<br />

skiing aside, residents can go snowshoeing, crosscountry<br />

skiing, ice-skating, or even join a curling club.<br />

And in this month’s Health & Wellness article, “Work<br />

it Out(side)” (page 26), Kourtney<br />

Jason guides you through various<br />

ventures, with the benefits/<br />

calories burned, local places to try<br />

it, and a beginner tip for each. Even<br />

when the temps are tempting you<br />

inside, I hope it inspires you to soak<br />

up the snow and opt outside.<br />

Winter sports aren’t the only nod to the season<br />

this issue. We’ve packed these pages with a plethora<br />

of holiday fun, including “31 Ways to Give Back in 31<br />

Days” (page 30) where Sharon Penny proves it is indeed<br />

better to give (of your time and talents) than receive.<br />

University hired Tom Sasser, an administrator from University<br />

of the Pacific (UOP), as chief development officer. Sasser and his<br />

team were able to elevate fundraising productions at UOP by<br />

120 percent and he’s planning to bring that same enthusiasm<br />

and effort to Jessup...The California-Hawaii Elks Association<br />

presented the City of <strong>Roseville</strong> with an award that honored Mayor<br />

Susan Rohan for her patriotism and excellence in promoting<br />

Americanism...A new authentic Italian restaurant, Trattoria<br />

Da Gino—owned by Betsey Alessi and her husband, Mario,<br />

who’s from Italy, is opening at 1465 Eureka Road, Suite 100, in<br />

<strong>Roseville</strong>...The Blue Line Arts Board of Directors has confirmed<br />

Brooke Abrames and MaryTess Mayall as their new co-executive<br />

directors. Abrames heads the development efforts, and Mayall<br />

is the lead for programs. The two have been<br />

interim co-directors for a few months, and<br />

will continue driving the mission of the<br />

organization...The <strong>Roseville</strong> City School<br />

Board is welcoming two new board<br />

members on <strong>December</strong> 13: Rob Baquera<br />

and Valerie Gross. Baquera has served as<br />

a <strong>Roseville</strong> City School District Foundation<br />

board member, and Gross developed leadership<br />

during her three years as the Stoneridge PTC president...The<br />

annual Hot Pink Fun Run this October had more than 500<br />

participants clad in pink, all walking and running to aid the<br />

Placer Breast Cancer Foundation. The family-friendly event<br />

allowed children and pets to participate in a one-mile survivor’s<br />

walk/run in addition to the 10K run and 5K walk. In total, the<br />

event raised $22,000 in the fight against breast cancer...Auburn’s<br />

Old Town Pizza was ranked 30th in Pizza Today magazine’s<br />

annual Hot 100 list. Rising a<br />

reported gross sales of almost<br />

Extend the gift of compassion, patience, and<br />

Service. I feel most alive when I’m in service to<br />

another soul. It gives my life great meaning and<br />

leaves me feeling purposeful.<br />

WHAT’S YOUR BIGGEST PET PEEVE?<br />

When someone uses a pronoun (i.e., he or she)<br />

in place of someone’s name when the person<br />

they’re referring to is standing next to them.<br />

BIGGEST LIFE INSPIRATIONS?<br />

My greatest desire in life is to be a beneficial<br />

presence and use storytelling as a means to<br />

heal the wounds inflicted by mental illness and<br />

restore hope to those in need.<br />

FAVORITE HUMANITARIAN CAUSE?<br />

The worldwide effort to normalize the<br />

conversation around all forms of mental illness,<br />

and the global push to reduce the numbers of<br />

deaths by suicide.<br />

BEST WORDS OF WISDOM YOU’VE RECEIVED?<br />

My big brother, Major General John R. Bartley<br />

(Ret.), taught me the true meaning of servant<br />

leadership, the impact of remembering a<br />

person’s name, and the healing power of a<br />

good old-fashioned handwritten note.<br />

Although he didn’t know it<br />

at the time, the day David<br />

Woods Bartley found<br />

himself standing on the<br />

edge of the Foresthill Bridge in Auburn—<br />

planning to jump—would prove to only be<br />

the beginning of his journey, not the end.<br />

It had been a long and difficult road to<br />

that fateful day in August 2011. Bartley<br />

had spent his youth dealing with chronic<br />

depression, following a series of childhood<br />

traumas including the early loss of his<br />

father and sexual abuse at the hands of a<br />

trusted community leader. He later found<br />

solace in running an animal sanctuary<br />

for senior and special-needs pets, but the<br />

pressure of caring for over 100 animals<br />

took its toll on his already-tenuous mental<br />

health. “My self-care went out the window,”<br />

he recalls. Fortunately, first responders<br />

were able to bring Bartley down from<br />

the precipice and get him the help he so<br />

desperately needed.<br />

Bartley is now a public speaker and<br />

mental health advocate (davidwoodsbartley.<br />

com)—using stories of his experiences with<br />

animals to help destigmatize mental illness<br />

and reach out to those struggling to go<br />

from “mental hellness to mental wellness.”<br />

He also serves on numerous community<br />

and nonprofit boards, including the Placer<br />

County Mental Health Alcohol and Drug<br />

Advisory Board (MHADAB), the National<br />

Storytelling Network’s Healing Story<br />

Alliance, and Bread of Life, a communitybenefit<br />

educational organization. For Bartley,<br />

it’s all about spreading a message of hope.<br />

“My life was saved, and now my purpose is<br />

to be a beneficial presence in the world,” he<br />

shares. “I want people to know it’s possible to<br />

achieve mental health.”<br />

NUTRITION // When life gives you<br />

lemons, it must be winter at the<br />

farmers’ market! High in vitamin<br />

C and antioxidants, citrus is a great<br />

way to put sunshine on your plate.<br />

The two most common types in our<br />

area are Eureka (also known as Lisbon) and Meyer. Eureka<br />

lemons are larger, with thick, textured, bright skin and<br />

medium yellow pulp. These lemons are highly acidic<br />

and only moderately sweet, so you get a real “pucker”<br />

with them. Meyer lemons are smaller and rounder with<br />

a smooth, thin orange skin, dark yellow pulp, and a spicy bergamot fragrance on their rinds<br />

that tastes and smells more like an herb or spice. They’re only moderately acidic so they taste<br />

much sweeter and can be added raw to salads or desserts . They’re also a favorite with cooks,<br />

thanks to their abundance of juice. While Eurekas are readily available year-round, Meyers<br />

are more seasonal and available <strong>December</strong> through May.<br />

The Christmas tree is lit, and we’re eagerly awaiting<br />

Santa’s return to town on <strong>December</strong> 4-13. If you want<br />

holiday visitors busy this month? The <strong>Roseville</strong> Utility<br />

exhibit where you can gain helpful hints on how to ease<br />

the holiday stress on you and your home this season.<br />

The Maidu Museum & Historic Site has extended hours following the Christmas holiday;<br />

be sure to stop by between 9 a.m.-4 p.m. on <strong>December</strong> 26-29 to check out this historical<br />

and cultural gem in Maidu Regional Park.<br />

This past October, 25 local residents out<br />

of 80 overall winners earned national<br />

championship titles at the United<br />

World Taekwondo Association (UWTA)<br />

Grand National Championships.<br />

Remarkably, all of the 25 winners train<br />

at Pourarian's Taekwondo at THE<br />

STUDIO Martial Arts & Fitness, located<br />

in <strong>Roseville</strong>. Master Amitis Pourarian,<br />

a former U.S. team member herself, is<br />

incredibly proud of her students and<br />

says it takes "years of training under<br />

a certified instructor" to earn a black<br />

belt. "A good taekwondo student is one<br />

who wants to continuously improve<br />

as a person and a martial artist," she<br />

continues. The UWTA Grand National<br />

Championships is for black belts only,<br />

and competitors compete within<br />

their age range and skill levels. The<br />

local winners range in age from 8-60,<br />

proving taekwondo is an activity for<br />

all. "[Taekwondo is] for anyone seeking<br />

personal growth and mental and<br />

physical development. Kids and adults<br />

of any age can benefit from this selfimprovement<br />

program," says Pourarian,<br />

who got involved in taekwondo after a<br />

A Monumental<br />

Success<br />

Ronnie Frostad grew<br />

up in an artistic<br />

home. Her mother, a<br />

talented multimedia<br />

painter, was the<br />

inspiration and<br />

influence behind<br />

her creative passion. Although fear of<br />

being a starving artist lead her to pursue<br />

a formal education in dentistry, Frostad’s<br />

artistic ardor eventually found her<br />

studying sculpture at Sierra College and<br />

UC Davis. The artist—who also teaches<br />

weekend workshops on basic sculpting<br />

techniques—is now the only woman<br />

in the country to own a bronze casting<br />

foundry: Frostad Atelier. “I’m definitely<br />

a woman in a man’s world, and I was<br />

not well-received in the early days,”<br />

shares Frostad. “I think because mostly<br />

men dominated my position, I took<br />

risks not fully understanding the high<br />

consequences that hung in the shadows.”<br />

Frostad’s newest work is an eight-foot<br />

personal piece that will debut this spring<br />

at her gallery, which is open to the public<br />

every second Saturday.<br />

HLB: WHAT’S THE STORY BEHIND FROSTAD<br />

ATELIER?<br />

RF: When I took one of my sculptures to<br />

a small foundry to be cast, my thirst for<br />

bronze began, and I’m not sure the thirst<br />

can be quenched in one lifetime. In 1998,<br />

Frostad Atelier Foundry was born in <strong>Rocklin</strong>’s<br />

Stanford Ranch Business Park. I began with<br />

a crew of one and breathed, ate, and slept<br />

with bronze. When I outgrew the facility, I<br />

moved to the former Air Force foundry at<br />

McClellan Park, which was 26,000 square feet<br />

and had overhead cranes left from World War<br />

II. This allowed me to grow and construct<br />

monumental size sculptures for artists from<br />

all over the U.S. After 10 years at McClellan,<br />

I decided to build a more state-of-the-art<br />

foundry and gallery in North Natomas.<br />

HLB: HOW DO YOU FEEL BEING ONE OF FEW WOMEN IN YOUR INDUSTRY?<br />

RF: New clients often expect to hear a man’s voice when they call for the first time because<br />

of my name. Foundry work is hot, dangerous, and labor-intensive—we pour molten bronze<br />

at 2,000 degrees Fahrenheit and have forklifts and cranes for extremely heavy lifting. Over<br />

the years, I trained myself through on-the-job experience to the point where I can consult<br />

artists, both men and women, about bronze casting their work. I feel I’m now accepted as<br />

an equal in the field.<br />

HLB: WHAT’S YOUR “WHOLE LOTTA LOVE” PROGRAM?<br />

RF: “Whole Lotta Love” began as a tribute to my first-born grandson Tyler, 13 years ago. I<br />

wanted to preserve his cute baby hands and feet forever. My husband is a dentist, and we<br />

took impressions of Tyler’s hand and foot and formed wax replicas. The replicas were then<br />

cast in bronze and finished, patined, and mounted on a base producing a living sculpture.<br />

We now offer the service to other parents/grandparents, in addition to making sculptures<br />

of couples holding hands, dentists and physicians holding instruments, and even replicas<br />

of dogs’ paws.<br />

HLB: HOW DO YOU SEEK INSPIRATION?<br />

RF: My inspiration is everyday life—it’s not always something visual. Sometimes a smell<br />

can ignite a memory and inspire an idea. I think artists are born with a sixth sense that<br />

fun winter activities that double as great<br />

workouts, from skiing and snowboarding to ice-skating and<br />

Jason Collin, a physical therapist at the Barton Center for<br />

Orthopedics & Wellness as well as a winter sports enthusiast,<br />

says: “Studies show that spending time outside, in nature,<br />

reduces stress levels, helps balance metabolism, lowers blood<br />

pressure, and creates a better workout.” Collin adds, “For all<br />

activities, remember that cold temperatures can cause your<br />

body to lose heat faster than your body can produce it. As you<br />

head outside, always dress properly, stay hydrated, know your<br />

surroundings, and use common sense.” Grab your skies, ice<br />

skates, or a sled, and have a (snow)ball this season!<br />

1 ICE-SKATING<br />

BENEFITS/CALORIES BURNED: Brian Jackson, owner of the Folsom<br />

Historic District Ice Rink, says you can burn 250-670 calories ice-skating<br />

for 30 minutes, though it depends on how much you weigh and how<br />

fast you’re skating. “Ice-skating is a great way to increase your cardio<br />

while having fun gliding on the ice and listening to music,” he says.<br />

“You’ll improve your balance as well, so don’t be surprised if you feel<br />

it in your thighs, lower back, and stomach muscles.”<br />

Sports staffer Janice Pilkington says crosscountry<br />

skiing (also known as Nordic skiing)<br />

is one of the best aerobic activities you can<br />

do. It’s an endurance sport that’s good for<br />

the heart and lungs, similar to running or<br />

cycling. It can burn 500-1,000 calories per<br />

hour, depending on whether the trail is flat<br />

or uphill.<br />

improves your strength and balance,<br />

Pilkington says. “When you do longer runs<br />

without stopping, you’ll also notice that you’re<br />

a bit out of breath,” she says. “If you choose to<br />

be really adventurous and go backcountry<br />

skiing—where you put climbing skins on<br />

your skis and go uphill outside the resorts<br />

under your own power—you’ll get a great<br />

aerobic workout.” Kristl adds that downhill<br />

skiing builds leg muscles and core strength,<br />

and you can burn 300-500 calories in an hour,<br />

depending on the intensity. “Powder-skiing<br />

will burn more calories; groomed skiing will<br />

burn less,” he says.<br />

5 SNOWBOARDING<br />

BENEFITS/CALORIES BURNED: Nadia<br />

Guerriero, vice president and general<br />

manager at Northstar California, says<br />

snowboarding, like skiing, is a full-body<br />

activity, which means doing it requires<br />

feeling the position of different body<br />

parts and having an awareness of the<br />

effort that goes into moving those parts.<br />

It can burn between 300-600 calories an<br />

hour, depending on how hard you work.<br />

Guerriero says. “Join a small group or private<br />

lesson from a certified instructor to learn<br />

the basics. Not only will this save you time,<br />

frustration, and a strained relationship, but<br />

on the mountain.” She also says to drink<br />

water, as many first-timers aren’t acclimated<br />

to performing physical activity at a higher<br />

elevation. “Water is the key to helping your<br />

body get used to the altitude and have a great<br />

day on the mountain.”<br />

6 SLEDDING<br />

BENEFITS/CALORIES BURNED: “Sledding<br />

is fun,” Collin says. “It doesn’t require fancy<br />

or expensive equipment, making it more<br />

accessible and affordable. Plus, the walk up<br />

that hill each time is good for your legs and<br />

your heart.” Sledding for 30 minutes on a<br />

medium-sized hill burns about 240 calories.<br />

Second, join a ‘learn-to-play’ hockey class<br />

at a local rink—this is a low-pressure way<br />

to learn the game with others in the same<br />

situation. And third, play as much as you<br />

can. There are drop-in pickup sessions and<br />

skill sessions offered where you can finetune<br />

your skating and your skills.”<br />

8 Curling<br />

BENEFITS/CALORIES BURNED: Sweetser<br />

says curling is an aerobic workout,<br />

increasing your heart rate and improving<br />

the cardiovascular system. “You can put<br />

on about two miles walking up and down<br />

the ice during a game,” she says. “Plus, the<br />

sweeping motion involved in directing the<br />

rock increases heart rate and improves your<br />

cardiovascular system.” It also strengthens<br />

your muscles, improves flexibility, and can<br />

Surprise. This was my first impression<br />

as I walked through the doors<br />

of El Dorado Hills’ newest Asian<br />

restaurant. White leather chairs,<br />

colored LED lights illuminating Chinesethemed<br />

art, and a modern mix of light and dark<br />

wood joined the sounds of four chefs working<br />

at a feverish pace in the open kitchen. The<br />

result? An über-contemporary, cool, and lively<br />

take on family-style Chinese dining.<br />

My wife and I started with a fun twist on<br />

one of her favorites: honey walnut prawns. In<br />

this case, the crowd-pleasing plate was served<br />

as a Singapore-style salad. Although I adore<br />

the entrée, it can be heavy and doesn’t reheat<br />

well as leftovers; conversely, the salad was<br />

light and boasted all the favorable textures<br />

and flavors found in the original with plenty<br />

of fresh veggies (lettuce, carrots, cucumber,<br />

and red cabbage) to cut through the protein’s<br />

deep-fried richness and creamy, sweet sauce.<br />

The shrimp dumpling appetizer—served<br />

in a bamboo steamer basket with eight silky,<br />

plump, shrimp-stuffed bundles of delicate<br />

delights—was an instant hit. Mix a little chili<br />

paste and soy sauce tableside, and everyone<br />

will be fighting for the last one.<br />

Next, we moved to the spicy side with<br />

an order of Sichuan shrimp—a sizzling<br />

portion of prawns alongside colorful bell<br />

peppers, bamboo shoots, onions, shiitake<br />

mushrooms, zucchini, and (a curious but<br />

welcome South of the Border addition) chayote<br />

in a fiery-sweet Sichuan sauce. A quick note<br />

here about Szechuan and Sichuan; in short,<br />

they’re interchangeable and both refer to the<br />

Sichuan province in China—famous for the<br />

wonderfully piquant Sichuan peppercorn and<br />

a cooking style featuring intense flavoring of<br />

garlic and chili peppers. If you’re brave, ask<br />

for it SPICY!<br />

Once again acquiescing to my wife’s tastes,<br />

we ordered lemon chicken, her “safety dish.”<br />

She’s not a very adventurous diner, so the fried<br />

chicken breast in a luscious lemony glaze hit<br />

the mark for her timid taste buds who weren’t<br />

willing to venture in or near the red (hot) zone.<br />

Thankfully, all of their spicy dishes are<br />

defined by a red chili pepper on the menu,<br />

ensuring it’s easy to avoid or invite the heat.<br />

What’s more, each lunch special is served with<br />

soup and your choice of white rice, fried rice,<br />

chow mein, or brown rice—meaning there’s<br />

plenty of food and flavors to go ’round.<br />

Baked Butternut Penne<br />

into 1/2-inch cubes<br />

• 2 tbsp. extra-virgin olive oil<br />

• 1 tsp, kosher salt<br />

• 1/2 tsp. black pepper<br />

• 1/2 tsp. ground nutmeg<br />

• Pinch of red pepper flakes (optional)<br />

• 1/2 lb. penne<br />

• 2 tbsp. unsalted butter<br />

• 1/2 cup white onion, finely diced<br />

• 5 sage leaves, roughly chopped<br />

• 2 tbsp. all-purpose flour<br />

• 2 cups whole milk<br />

• 1/2 cup parmesan cheese<br />

TOPPING:<br />

Drizzle of pesto (optional)<br />

Chopped walnuts (optional)<br />

Preheat oven to 375 degrees. Peel and chop<br />

butternut squash. Toss with olive oil, salt,<br />

pepper, nutmeg, and red pepper flakes.<br />

Roast for 40 minutes,<br />

until squash is tender.<br />

Remove from oven and<br />

mash in a bowl with<br />

a fork. Reduce oven<br />

temperature to 350 degrees.<br />

Cook pasta according to instructions.<br />

Heat a saucepan on medium-high heat.<br />

Melt butter and add onions; cook until<br />

onions become translucent and tender,<br />

add sage, and cook for 1 minute. Add flour<br />

and cook for 1 minute until consistency<br />

becomes grain like. Slowly add milk,<br />

whisking constantly. Add in mashed<br />

butternut squash and mix until combined.<br />

Place cooked penne in the bottom of a<br />

baking dish and pour butternut squash<br />

sauce over the top. Sprinkle cheese over<br />

the top and place in the oven for 20<br />

minutes, or until cheese is golden brown.<br />

Remove from the oven and drizzle with<br />

pesto and chopped walnuts, if using.<br />

• 5 lbs. pork shoulder, cut into 3” x<br />

3” pieces<br />

• 1 onion, quartered<br />

• 3 tbsp. salt<br />

• 4 whole garlic cloves<br />

Add water, yuca, and 1<br />

tablespoon salt to large<br />

saucepan and boil until fork<br />

tender (about 15 minutes).<br />

In a large pan filled with water,<br />

add 2 tablespoons salt, pork,<br />

onion, and garlic. Let water boil;<br />

once water has reduced by<br />

half, stir pork every 10 minutes<br />

until the water has evaporated and the pork is soft.<br />

Remove garlic.<br />

Deep-fry the yuca in oil heated to 350 degrees for<br />

about 10 minutes, or until crispy.<br />

Deep-fry the pork for about 5 minutes, or until crispy,<br />

and serve with curtido (coleslaw) and tomato salsa.<br />

• 1 tsp. pure vanilla extract<br />

• 2 1/2 cups whole milk<br />

• 1/2 cup heavy cream<br />

• 1/3 cup brown sugar<br />

• 2 tbsp. unsweetened cocoa powder<br />

• 2 tbsp. cornstarch<br />

• 1/3 tsp. ground cinnamon<br />

• 1 pinch cayenne pepper<br />

• 1/4 tsp. kosher salt<br />

In a small heatproof bowl, whisk<br />

together the egg and yolks, set<br />

aside. Place chocolate, butter,<br />

and vanilla in a food processor<br />

(don’t turn on). In a medium pot<br />

over low heat, whisk together<br />

milk, cream, brown sugar, cocoa,<br />

and cornstarch and cook until<br />

it begins to boil. At that point,<br />

it will start to thicken; when it<br />

does, immediately pull off the<br />

heat.<br />

Pour a little of the hot cornstarch mixture into the<br />

eggs, stirring constantly, then whisk the eggs back<br />

into the pan with the remaining cornstarch mixture.<br />

Cook over low heat, whisking constantly, until<br />

mixture just returns to a bare simmer.<br />

Immediately pour into the food processor and<br />

blend until very smooth. Pour into individual bowls,<br />

teacups, or 1 large decorative bowl. Cover with plastic<br />

wrap and refrigerate until firm and cold. Garnish with<br />

whipped cream, shaved chocolate, and cinnamon.<br />

• 1 lb. nuts (walnuts, almonds, pistachios),<br />

SYRUP<br />

• 2 cups granulated sugar<br />

• 2 cups water<br />

• 2-3 drops lemon juice<br />

Make the syrup. Bring the sugar, water, and<br />

lemon juice to a boil and cook about 15<br />

minutes over medium heat. Let cool.<br />

Preheat oven to 325 degrees. Take the<br />

phyllo dough and layer one by one on a<br />

sheet pan or cooking tray. Spread melted<br />

butter on each layer until you’re done with<br />

half. Spread the chopped nuts on top of<br />

the phyllo surface evenly. Cover the nuts<br />

with another layer of dough and keep<br />

spreading melted butter on the layers<br />

of remaining dough until the last sheet.<br />

Leave in the refrigerator for 10 minutes.<br />

Remove and cut the baklava shape of your<br />

choosing. Bake for 35-40 minutes or until<br />

golden brown. Remove and pour the cold<br />

syrup on it. Allow to cool before serving.<br />

The Dive Burgers & Brews // If you’re searching for the perfect burger joint, I found<br />

it. Nestled in a strip mall across the street from Sierra College, you’ll find The Dive Burgers & Brews. Though<br />

unassuming on the exterior, it has charming décor (reclaimed wood and galvanized metal), a super friendly<br />

staff, and seriously good food. They have an extensive menu, which can pose to be problematic for indecisive<br />

palates, so I left my choice up to the helpful lady taking my order. She recommended the Redneck Burger,<br />

which features fresh, 100-percent certified Angus beef, chopped bacon, melty cheddar, sautéed mushrooms,<br />

fried green beans (which I initially questioned but came to love), redneck slaw, jalapeños, and beast sauce.<br />

I loved every messy mouthful of it and found the buttery brioche bun to be the perfect, pillowy soft vessel<br />

for all the fresh fixin’s. My mom had the Lamb Burger and said she would definitely order it again; and my<br />

husband had the Dive Burger, which came with an over-easy egg and demanded napkins…and a hearty<br />

appetite. We shared fried pickles, house fries, and sweet potato fries—all were easily above average—but next<br />

time I’m digging into their namesake Dive Fries; they’re covered in nacho cheese sauce, house slaw, redneck<br />

sauce, sour cream, and jalapeños, so they’re destined to be delicious. The eatery also serves sandwiches,<br />

salads, and craft beer from the region’s best breweries. Bring your appetite, and get ready to “dive” into<br />

This crowd-pleasing cocktail is a take on the<br />

classic mint julep, except it uses absinthe rather<br />

than bourbon. As you start sipping, the light<br />

sweetness of sugar and anise are the cocktail’s<br />

dominant yet delightful first impressions. After<br />

the anise passes, savor hints of blackberry and<br />

soothing mint.<br />

• 1.5 oz. Wheel House Absinthe Verte<br />

• .5 oz. blackberry liquor<br />

• 1 sugar cube<br />

• 1-2 springs of fresh mint<br />

• 2 oz. ice water<br />

Muddle mint sprigs and sugar in<br />

a cocktail shaker. Add ice, absinthe,<br />

blackberry liquor, and water. Shake well and<br />

pour into a chilled martini glass or over ice in<br />

• 2 cups raw honey<br />

• 1 cup water<br />

• 6 bags rooibos chai tea<br />

.75 cups pomegranate molasses<br />

Make pomegranate-rooibos honey.<br />

Combine honey and water in a saucepan<br />

on medium heat until incorporated. Add<br />

tea bags and let steep for 1 hour. Remove<br />

tea bags, add pomegranate molasses, and<br />

stir. Keep refrigerated for up to 2 weeks.<br />

Combine gin, pomegranate-rooibos honey,<br />

lemon, and cider in a cocktail shaker with<br />

ice. Strain mixture into a chilled cocktail glass<br />

and garnish with apple slices and freshly grated<br />

cinnamon.<br />

rare botanicals and the complex<br />

over medium heat, stirring to<br />

dissolve sugar. Add cranberries;<br />

simmer 10 minutes or until<br />

cranberries soften and pop.<br />

Remove from heat; cool to room<br />

temperature. Strain through a<br />

fine-mesh strainer and discard<br />

cranberries. Refrigerate.<br />

Combine gin, lemon juice, and<br />

simple cranberry syrup in a<br />

cocktail shaker filled with ice.<br />

Shake and strain into a chilled<br />

Champagne flute; top with<br />

a lemon twist and sugared<br />

cranberries.<br />

We teach private swim lessons year-round. Our warm water (92<br />

degrees) is perfect for little swimmers and adults. Lessons start as<br />

early as four months old; no one is too young (or old) to learn how<br />

Sea Otter has been around for over 25 years, and we love serving<br />

the community. It's fun to hire new staff members who learned to<br />

swim here as a kid!<br />

Our instructors truly care about water safety and really want to help<br />

little ones learn to swim, because it can make a difference. Drowning<br />

is such a scary, real thing, and we want to prevent it from happening.<br />

Where do you go when the going gets tough?<br />

The pool, of course! Or the gym. We love physical fitness.<br />

What’s your biggest job perk?<br />

Hearing stories from parents about how their child overcame a fear,<br />

gained confidence, and learned to swim with us. It gives us all the<br />

warm fuzzies when we know we made a difference in someone's life.<br />

What’s your favorite place to eat out locally?<br />

Chipotle and Farmhaus.<br />

Where do you and your family go locally to have fun?<br />

Anything sports-related. We love the 49ers! Our kids play soccer,<br />

basketball, baseball…you name it.<br />

So important. We strive to treat our customers like family.<br />

Describe your business. Did you find it, or did it find you?<br />

I was starting college, trying to figure out what to study, and began<br />

reading health books that spoke highly of Chinese medicine and<br />

acupuncture. At the time, the Internet was just beginning; I did my<br />

first web search and found there were traditional Chinese medicine<br />

schools in California. The rest is history. I got all of my prerequisites<br />

and at 21 was off to Five Branches University in Santa Cruz. I opened<br />

my first practice at 25. Never in my my wildest dreams did I imagine<br />

the success and growth over the years, but I feel incredibly grateful<br />

for the opportunities afforded to me as a result. I’ve had my private<br />

practice for 13 years now.<br />

How are you involved with both the community and your<br />

customer?<br />

Our customers are the community, and we do our best to offer the<br />

community the highest quality care we can.<br />

Why is your staff the best in the business?<br />

We recognize the importance of offering patients exceptional<br />

customer service; also, our accessibility—we’re open seven days a<br />

week from 8 a.m. to 8 p.m.<br />

What’s your biggest job perk?<br />

Working hand-in-hand with each patient and doing my best to help<br />

others through health and acupuncture.<br />
