THE HOT LIST
6 Best Pies
SIP ON THIS
3 Festive
Cocktails
What’s your relationship with winter sports? Do you
buy a season ski pass before the first snowstorm of
the season hits or is your idea of a winter workout
maneuvering Christmas cookies to and from your
mouth? My courtship is complicated. Growing up so
close to the Sierras meant Friday field trips to Boreal
Mountain Resort and Sunday fundays sledding.
Though it sounds like a
postcard-perfect childhood,
the reality was much different.
My inaugural experience
downhill skiing was one of
the most frigid, frightening
days of my life. I cried more
than I laughed and was on
my fanny more than my
feet. Subsequent attempts
included injuries and a general
fear factor that I never could
conquer. Needless to say,
when I moved to San Diego and traded the snow for
the sand, I didn’t miss the mountains one bit.
It wasn’t until returning to my roots that I truly
started appreciating the beauty and flurry of fun we
have in this winter wonderland of ours. Downhill
skiing aside, residents can go snowshoeing, crosscountry
skiing, ice-skating, or even join a curling club.
And in this month’s Health & Wellness article, “Work
it Out(side)” (page 26), Kourtney
Jason guides you through various
ventures, with the benefits/
calories burned, local places to try
it, and a beginner tip for each. Even
when the temps are tempting you
inside, I hope it inspires you to soak
up the snow and opt outside.
Winter sports aren’t the only nod to the season
this issue. We’ve packed these pages with a plethora
of holiday fun, including “31 Ways to Give Back in 31
Days” (page 30) where Sharon Penny proves it is indeed
better to give (of your time and talents) than receive.
Make it your mission to try everything on the list or
commit to one cause and see just how warm and fuzzy
it makes you feel.
When it comes to giving more material things
this month, because Christmas, I encourage you to
check out our Holiday Gift Guide on page 35, chock-full
of over 75 presents that’ll please the most discerning
person on your list. The best part? Almost everything
is available at small-box brick and mortars, so you
can rest assured you’re doing your part to support the
away a few of the featured gifts; follow us on Instagram
(@stylemags) for the details and how you can walk
away a winner.
For people planning to host a holiday party (bless
you), flip to Kerrie L. Kelly’s article, “4 Tips for Effortless
Entertaining” on page 32, featuring suggestions on
how to be the hostess with the mostess, including
investing in actual invites to truly set the soirée’s
scene. And what’s an affair without alcohol? Make it
extra spirited by preparing one of the 3 festive cocktails
(each using locally made liquor) in Sip on This (page 55).
Whether you loathe or love this time of year,
remember to take a moment to appreciate the people,
places, and things that abound and surround. Happy
holidays!
“Christmas music. I’m a Christmas
“Code names! As a child, my
Even though the nosiness
BEST WORDS OF WISDOM YOU’VE RECEIVED?
My big brother, Major General John R. Bartley
(Ret.), taught me the true meaning of servant
leadership, the impact of remembering a
person’s name, and the healing power of a
good old-fashioned handwritten note.
Although he didn’t know it
at the time, the day David
Woods Bartley found
himself standing on the
edge of the Foresthill Bridge in Auburn—
planning to jump—would prove to only be
the beginning of his journey, not the end.
It had been a long and difficult road to
that fateful day in August 2011. Bartley
had spent his youth dealing with chronic
depression, following a series of childhood
traumas including the early loss of his
father and sexual abuse at the hands of a
trusted community leader. He later found
solace in running an animal sanctuary
for senior and special-needs pets, but the
pressure of caring for over 100 animals
took its toll on his already-tenuous mental
health. “My self-care went out the window,”
he recalls. Fortunately, first responders
were able to bring Bartley down from
the precipice and get him the help he so
desperately needed.
Bartley is now a public speaker and
mental health advocate (davidwoodsbartley.
com)—using stories of his experiences with
animals to help destigmatize mental illness
and reach out to those struggling to go
from “mental hellness to mental wellness.”
He also serves on numerous community
and nonprofit boards, including the Placer
County Mental Health Alcohol and Drug
Advisory Board (MHADAB), the National
Storytelling Network’s Healing Story
Alliance, and Bread of Life, a communitybenefit
educational organization. For Bartley,
it’s all about spreading a message of hope.
“My life was saved, and now my purpose is
to be a beneficial presence in the world,” he
shares. “I want people to know it’s possible to
achieve mental health.”
SEASON’S EATINGS: PlacerGROWN by CAROL ARNOLD
LEMONS
DID YOU KNOW // Meyer lemons were first introduced to
the U.S. from China in the early 1900s by Frank Meyer, from
whom they got their name. They are thought to be a cross between a lemon and a mandarin
orange, hence their sweeter taste.
NUTRITION // When life gives you
lemons, it must be winter at the
farmers’ market! High in vitamin
C and antioxidants, citrus is a great
way to put sunshine on your plate.
The two most common types in our
area are Eureka (also known as Lisbon) and Meyer. Eureka
lemons are larger, with thick, textured, bright skin and
medium yellow pulp. These lemons are highly acidic
and only moderately sweet, so you get a real “pucker”
with them. Meyer lemons are smaller and rounder with
a smooth, thin orange skin, dark yellow pulp, and a spicy bergamot fragrance on their rinds
that tastes and smells more like an herb or spice. They’re only moderately acidic so they taste
much sweeter and can be added raw to salads or desserts . They’re also a favorite with cooks,
thanks to their abundance of juice. While Eurekas are readily available year-round, Meyers
are more seasonal and available December through May.
The Christmas tree is lit, and we’re eagerly awaiting
Santa’s return to town on December 4-13. If you want
SELECTION AND STORAGE // It’s important to note that citrus is picked at optimal
ripeness and won’t ripen further on the counter. Knowing this, you should look for fruit
with clear, blemish-free rinds that feel heavy and avoid those with soft, tender spots
or wrinkled skin. Smell the citrus and choose ones with a strong, sweet smell. You can
This past October, 25 local residents out
of 80 overall winners earned national
championship titles at the United
World Taekwondo Association (UWTA)
Grand National Championships.
Remarkably, all of the 25 winners train
at Pourarian's Taekwondo at THE
STUDIO Martial Arts & Fitness, located
in Roseville. Master Amitis Pourarian,
a former U.S. team member herself, is
incredibly proud of her students and
says it takes "years of training under
a certified instructor" to earn a black
belt. "A good taekwondo student is one
who wants to continuously improve
as a person and a martial artist," she
continues. The UWTA Grand National
Championships is for black belts only,
and competitors compete within
their age range and skill levels. The
local winners range in age from 8-60,
proving taekwondo is an activity for
all. "[Taekwondo is] for anyone seeking
personal growth and mental and
physical development. Kids and adults
of any age can benefit from this selfimprovement
program," says Pourarian,
who got involved in taekwondo after a
friend invited her to a class. In addition
to taekwondo, THE STUDIO offers
fitness, dance, and self-defense classes,
ninja obstacle courses, kids’ camps, and
classes for families and seniors. —Emily
Later, welcome the new year with champagne or apple cider and
noisemakers. Call 916-353-1001 to make a reservation.
Pruning—such as deadwood removal or
thinning—is acceptable year-round in
Northern California, but tree species can
also determine timing. Small trees should
be pruned carefully, and newly planted trees
shouldn’t be pruned heavily. Structural
pruning early on in a tree’s life can prevent
other issues that’ll help it grow correctly. Recent research has
proven that aboveground growth encourages root growth. We
recommend consulting with an arborist to determine what
your trees needs are.
Ronnie
Frostad
A Monumental
Success
by HEATHER L. BECKER
Ronnie Frostad grew
up in an artistic
home. Her mother, a
talented multimedia
painter, was the
inspiration and
influence behind
her creative passion. Although fear of
being a starving artist lead her to pursue
a formal education in dentistry, Frostad’s
artistic ardor eventually found her
studying sculpture at Sierra College and
UC Davis. The artist—who also teaches
weekend workshops on basic sculpting
techniques—is now the only woman
in the country to own a bronze casting
foundry: Frostad Atelier. “I’m definitely
a woman in a man’s world, and I was
not well-received in the early days,”
shares Frostad. “I think because mostly
men dominated my position, I took
risks not fully understanding the high
consequences that hung in the shadows.”
Frostad’s newest work is an eight-foot
personal piece that will debut this spring
at her gallery, which is open to the public
every second Saturday.
HLB: WHAT’S THE STORY BEHIND FROSTAD
ATELIER?
RF: When I took one of my sculptures to
a small foundry to be cast, my thirst for
bronze began, and I’m not sure the thirst
can be quenched in one lifetime. In 1998,
Frostad Atelier Foundry was born in Rocklin’s
Stanford Ranch Business Park. I began with
a crew of one and breathed, ate, and slept
with bronze. When I outgrew the facility, I
moved to the former Air Force foundry at
McClellan Park, which was 26,000 square feet
and had overhead cranes left from World War
II. This allowed me to grow and construct
monumental size sculptures for artists from
all over the U.S. After 10 years at McClellan,
I decided to build a more state-of-the-art
foundry and gallery in North Natomas.
HLB: HOW DO YOU FEEL BEING ONE OF FEW WOMEN IN YOUR INDUSTRY?
RF: New clients often expect to hear a man’s voice when they call for the first time because
of my name. Foundry work is hot, dangerous, and labor-intensive—we pour molten bronze
at 2,000 degrees Fahrenheit and have forklifts and cranes for extremely heavy lifting. Over
the years, I trained myself through on-the-job experience to the point where I can consult
artists, both men and women, about bronze casting their work. I feel I’m now accepted as
an equal in the field.
HLB: WHAT’S YOUR “WHOLE LOTTA LOVE” PROGRAM?
RF: “Whole Lotta Love” began as a tribute to my first-born grandson Tyler, 13 years ago. I
wanted to preserve his cute baby hands and feet forever. My husband is a dentist, and we
took impressions of Tyler’s hand and foot and formed wax replicas. The replicas were then
cast in bronze and finished, patined, and mounted on a base producing a living sculpture.
We now offer the service to other parents/grandparents, in addition to making sculptures
of couples holding hands, dentists and physicians holding instruments, and even replicas
of dogs’ paws.
HLB: HOW DO YOU SEEK INSPIRATION?
RF: My inspiration is everyday life—it’s not always something visual. Sometimes a smell
can ignite a memory and inspire an idea. I think artists are born with a sixth sense that
helps us to see, hear, and feel on a different level. frostadatelier.com
Your Guide to Winter Sports
by KOURTNEY JASON
E
ven if the temperature is low, you don’t
have to move your workout indoors.
Whether you stay in town or drive to the
mountains, our area offers an array of
fun winter activities that double as great
workouts, from skiing and snowboarding to ice-skating and
even curling.
Jason Collin, a physical therapist at the Barton Center for
Orthopedics & Wellness as well as a winter sports enthusiast,
says: “Studies show that spending time outside, in nature,
reduces stress levels, helps balance metabolism, lowers blood
pressure, and creates a better workout.” Collin adds, “For all
activities, remember that cold temperatures can cause your
body to lose heat faster than your body can produce it. As you
head outside, always dress properly, stay hydrated, know your
surroundings, and use common sense.” Grab your skies, ice
skates, or a sled, and have a (snow)ball this season!
1 ICE-SKATING
BENEFITS/CALORIES BURNED: Brian Jackson, owner of the Folsom
Historic District Ice Rink, says you can burn 250-670 calories ice-skating
for 30 minutes, though it depends on how much you weigh and how
fast you’re skating. “Ice-skating is a great way to increase your cardio
while having fun gliding on the ice and listening to music,” he says.
“You’ll improve your balance as well, so don’t be surprised if you feel
it in your thighs, lower back, and stomach muscles.”
TRY IT: Folsom Historic District Ice Rink (200 Wool Street, Folsom, 916-
936-4410, folsomicerink.com); Skatetown Ice Arena (1009 Orlando
Avenue, Roseville, 916-783-8550, skatetown.biz)
BEGINNER TIP: “If you’re a beginner, there are some balance techniques
that can be practiced at home or school, such as standing on one foot
while doing tasks such as preparing dinner or talking to your friends.
Do this for as long as you can before switching feet and as often as you
can before skating. While you might look a little silly, who will have the
last laugh when skating?” Jackson says.
CROSS-COUNTRY
SKIING
BENEFITS/CALORIES BURNED: Alpenglow
Sports staffer Janice Pilkington says crosscountry
skiing (also known as Nordic skiing)
is one of the best aerobic activities you can
do. It’s an endurance sport that’s good for
the heart and lungs, similar to running or
cycling. It can burn 500-1,000 calories per
hour, depending on whether the trail is flat
or uphill.
TRY IT: Tahoe Cross-Country Ski Area (925
Country Club Drive, Tahoe City, 530-583-5475,
tahoexc.org); Royal Gorge Cross-Country Ski
Resort (9411 Pahatsi Road, Soda Springs, 530-
426-3871, royalgorge.com)
BEGINNER TIP: “Even if you’re an avid downhill
skier, don’t expect to be a great cross-country
skier. Soft boots and edgeless skis provide
a challenge for all first-timers. When in
doubt, hire an instructor,” says Sean Kristl,
director of sales and marketing at Alpenglow
Expeditions.
3
DOWNHILL
SKIING
BENEFITS/CALORIES BURNED: Skiing
improves your strength and balance,
Pilkington says. “When you do longer runs
without stopping, you’ll also notice that you’re
a bit out of breath,” she says. “If you choose to
be really adventurous and go backcountry
skiing—where you put climbing skins on
your skis and go uphill outside the resorts
under your own power—you’ll get a great
aerobic workout.” Kristl adds that downhill
skiing builds leg muscles and core strength,
and you can burn 300-500 calories in an hour,
depending on the intensity. “Powder-skiing
will burn more calories; groomed skiing will
burn less,” he says.
TRY IT: Sierra-at-Tahoe (1111 Sierra-at-
Tahoe Road, Twin Bridges, 530-659-7453,
sierraattahoe.com); Sugar Bowl Resort (629
Sugar Bowl Road, Norden, 530-426-9000,
sugarbowl.com); Northstar California (5001
Northstar Drive, Truckee, 530-562-2267,
northstarcalifornia.com); Squaw Valley-
Alpine Meadows (1960 Squaw Valley Road,
Olympic Valley, 800-403-0206, squawalpine.
com); Heavenly Mountain Resort (4080 Lake
Tahoe Boulevard, South Lake Tahoe, 775-586-
7000, skiheavenly.com); Kirkwood Mountain
Resort (1501 Kirkwood Meadows Drive,
Kirkwood, 209-258-6000, kirkwood.com)
BEGINNER TIP: Pilkington recommends,
newcomers take advantage of [a resort's]
packages that [typically] include lift tickets
with rentals and lessons. “The resorts offer
them at discounts because they want you to
come back and know your experience will
be better if you take a lesson and have good
equipment.”
4
SNOWSHOEING
BENEFITS/CALORIES BURNED: “Similar to
hiking or running, snowshoeing is
a fantastic cardiovascular
workout. Deeper snow
makes it more difficult
and a harder workout,
while sturdy snow
underfoot makes it
drastically easier,”
Kristl says. Depending
on pace and snow type,
a snowshoer can burn
between 500-1,000 calories per hour.
TRY IT: California Sno-Parks, including Donner
Summit (near Truckee off I-80), Blackwood
Canyon (near Tahoe City off Highway 89),
Carson Pass (off Highway 88), Echo Lake (off
Highway 50), Iron Mountain (off Highway
88 near Kirkwood ski area), Lake Alpine (off
Highway 4), Meiss Meadow (off Highway
88 near Carson Pass), Spicer Reservoir (off
Highway 4), Taylor Creek (off Highway 89 near
Fallen Leaf Lake), and Yuba Pass (off Highway
49)
BEGINNER TIP: “Hiking boots with a pair of
warm wool socks work well for footwear.
Snowshoes come in a variety of sizes and
materials. The bigger you are, the bigger
the surface area you need to keep you from
sinking. Also, deeper/softer snow requires a
bigger snowshoe,” Pilkington says. “Going out
in deep, untracked snow is very physically
demanding. Most people try to find a trail
that’s been groomed at a Nordic skiing center
or a packed snowmobile trail.”
5 SNOWBOARDING
BENEFITS/CALORIES BURNED: Nadia
Guerriero, vice president and general
manager at Northstar California, says
snowboarding, like skiing, is a full-body
activity, which means doing it requires
feeling the position of different body
parts and having an awareness of the
effort that goes into moving those parts.
It can burn between 300-600 calories an
hour, depending on how hard you work.
TRY IT: Sierra-at-Tahoe (1111 Sierra-At-
Tahoe Road, Twin Bridges, 530-659-7453,
sierraattahoe.com); Sugar Bowl Resort (629
Sugar Bowl Road, Norden, 530-426-9000,
7000, skiheavenly.com); Kirkwood Mountain
Resort (1501 Kirkwood Meadows Drive,
Kirkwood, 209-258-6000, kirkwood.com)
BEGINNER TIP: Have a professional coach you,
Guerriero says. “Join a small group or private
lesson from a certified instructor to learn
the basics. Not only will this save you time,
frustration, and a strained relationship, but
you’ll also feel accomplished and confident
on the mountain.” She also says to drink
water, as many first-timers aren’t acclimated
to performing physical activity at a higher
elevation. “Water is the key to helping your
body get used to the altitude and have a great
day on the mountain.”
6 SLEDDING
BENEFITS/CALORIES BURNED: “Sledding
is fun,” Collin says. “It doesn’t require fancy
or expensive equipment, making it more
accessible and affordable. Plus, the walk up
that hill each time is good for your legs and
your heart.” Sledding for 30 minutes on a
medium-sized hill burns about 240 calories.
TRY IT: California Sno-Parks, including Donner
Summit (near Truckee off I-80), Blackwood
Canyon (near Tahoe City off Highway 89),
Carson Pass (off Highway 88), Echo Lake (off
Highway 50), Iron Mountain (off Highway
88 near Kirkwood ski area), Lake Alpine (off
Highway 4), Meiss Meadow (off Highway
88 near Carson Pass), Spicer Reservoir (off
Highway 4), Taylor Creek (off Highway 89 near
Fallen Leaf Lake), and Yuba Pass (off Highway
49)
BEGINNER TIP: “Sledding has risks that aren’t
always obvious,” he warns. “It’s important to
check out the environment before sledding,
because sleds pick up speed quickly and don’t
steer well. Look for any obstacles, such as
trees, rocks, and people. If possible, sled at a
resort where an appropriate sledding slope
has been identified.”
7
ICE
HOCKEY
BENEFITS/CALORIES BURNED: Susan
Sweetser, a spokesperson at Skatetown
Ice Arena, says ice hockey develops
endurance and the cardiovascular system,
boosts metabolism, is a full-body workout,
enhances muscular strength, develops
hand-eye coordination, improves body
coordination and balance, develops
social skills and the spirit of team work,
improves communication, and boosts
brain and mental acuity. Calories burned
can depend on how much you weigh, how
fast you move, and how hard you play. For
example, if you weigh 150 pounds, you
can burn approximately 285 calories in
30 minutes.
TRY IT: Folsom Historic District Ice Rink
(200 Wool Street, Folsom, 916-936-4410,
folsomicerink.com); Skatetown Ice Arena
(1009 Orlando Avenue, Roseville, 916-783-
8550, skatetown.biz)
BEGINNER TIP: Ryan Frisch, a local hockey
player, shares three tips to those interested
in picking up the sport. “Make sure to
invest in a good-fitting pair of skates—they
don’t need to be top-of-the-line, but go to
a pro shop and have them fit you properly.
Second, join a ‘learn-to-play’ hockey class
at a local rink—this is a low-pressure way
to learn the game with others in the same
situation. And third, play as much as you
can. There are drop-in pickup sessions and
skill sessions offered where you can finetune
your skating and your skills.”
8 Curling
BENEFITS/CALORIES BURNED: Sweetser
says curling is an aerobic workout,
increasing your heart rate and improving
the cardiovascular system. “You can put
on about two miles walking up and down
the ice during a game,” she says. “Plus, the
sweeping motion involved in directing the
rock increases heart rate and improves your
cardiovascular system.” It also strengthens
your muscles, improves flexibility, and can
be done by anyone. Curling burns a lot
of calories—356 calories an hour for an
average man and 304 for a woman—yet
because you’re playing on ice, you don’t
perspire as much, she says.
TRY IT: Skatetown Ice Arena (1009 Orlando
Avenue, Roseville, 916-783-8550, skatetown.
biz)
BEGINNER TIP: “Start at a learn-to-curl clinic
(the Wine Country Curling Club hosts
them year-round) where you’ll get an
overview of the game, etiquette and on-ice
safety, learn delivery basics and sweeping,
and play a short game (if time and space
permit),” she says.
Deck the Halls
4 Tips for Effortless Entertaining
by KERRIE L. KELLY, FASID
When it comes to the holidays, I’m always looking for a thoughtful,
polished aesthetic that’s simple to put together and any type
of shortcut that allows for effortless entertaining. Read on for
my favorite holiday hacks that enable you to have a stylish yet
stress-free, beautiful season.
1
INVEST IN INVITES
Personal paper invitations via
individual cards or boxed sets are always
best. While digital invites are convenient,
a paper invitation makes guests feel
special. What’s more, they set the tone for
your event and add a personal touch for
those receiving them. Coordinate
stamps for the season and send off.
Outside of food prep (and I say enlist a
caterer or incorporate some ready-made
foods!), this is the most difficult thing
you’ll do in preparing for your party—it’s
all downhill from here!
2
DRESS (THE TABLE) TO IMPRESS
With sweet, nostalgic charm,
elements of holiday
collections can be styled
multiple ways to achieve
many different looks. A
palette of traditional reds,
greens, and jewel tones
quickly creates a playful
yet sophisticated
vibe—perfect for an
elegant Christmas
dinner or vibrant
holiday party. Reusable
Incorporating recipe cards can easily become the perfect guest favor.
THAT’S A WRAP
Are you hosting a gift exchange? Grab some patterned
tissue paper, a coordinating bag and hang tag and—viola(!)—
within seconds, you’re prepared to exchange your gift. Wrapping
paper, bags, and hang tags that coordinate with your table theme
will have you feeling organized and confident during the most
chaotic time of year.
Surprise. This was my first impression
as I walked through the doors
of El Dorado Hills’ newest Asian
restaurant. White leather chairs,
colored LED lights illuminating Chinesethemed
art, and a modern mix of light and dark
wood joined the sounds of four chefs working
at a feverish pace in the open kitchen. The
result? An über-contemporary, cool, and lively
take on family-style Chinese dining.
My wife and I started with a fun twist on
one of her favorites: honey walnut prawns. In
this case, the crowd-pleasing plate was served
as a Singapore-style salad. Although I adore
the entrée, it can be heavy and doesn’t reheat
well as leftovers; conversely, the salad was
light and boasted all the favorable textures
and flavors found in the original with plenty
of fresh veggies (lettuce, carrots, cucumber,
and red cabbage) to cut through the protein’s
deep-fried richness and creamy, sweet sauce.
The shrimp dumpling appetizer—served
in a bamboo steamer basket with eight silky,
plump, shrimp-stuffed bundles of delicate
delights—was an instant hit. Mix a little chili
paste and soy sauce tableside, and everyone
will be fighting for the last one.
Next, we moved to the spicy side with
an order of Sichuan shrimp—a sizzling
portion of prawns alongside colorful bell
peppers, bamboo shoots, onions, shiitake
mushrooms, zucchini, and (a curious but
welcome South of the Border addition) chayote
in a fiery-sweet Sichuan sauce. A quick note
here about Szechuan and Sichuan; in short,
they’re interchangeable and both refer to the
Sichuan province in China—famous for the
wonderfully piquant Sichuan peppercorn and
a cooking style featuring intense flavoring of
garlic and chili peppers. If you’re brave, ask
for it SPICY!
Once again acquiescing to my wife’s tastes,
we ordered lemon chicken, her “safety dish.”
She’s not a very adventurous diner, so the fried
chicken breast in a luscious lemony glaze hit
the mark for her timid taste buds who weren’t
willing to venture in or near the red (hot) zone.
Thankfully, all of their spicy dishes are
defined by a red chili pepper on the menu,
ensuring it’s easy to avoid or invite the heat.
What’s more, each lunch special is served with
soup and your choice of white rice, fried rice,
chow mein, or brown rice—meaning there’s
plenty of food and flavors to go ’round.
Stop in for lunch or dinner and see what
surprises await—you’ll be glad you did.
• 1 whole egg
• 2 yolks
• 6 oz. bittersweet chocolate (66-
74% cacao)
• 2 tbsp. unsalted butter, softened
• 1 tsp. pure vanilla extract
• 2 1/2 cups whole milk
• 1/2 cup heavy cream
• 1/3 cup brown sugar
• 2 tbsp. unsweetened cocoa powder
• 2 tbsp. cornstarch
• 1/3 tsp. ground cinnamon
• 1 pinch cayenne pepper
• 1/4 tsp. kosher salt
In a small heatproof bowl, whisk
together the egg and yolks, set
aside. Place chocolate, butter,
and vanilla in a food processor
(don’t turn on). In a medium pot
over low heat, whisk together
milk, cream, brown sugar, cocoa,
and cornstarch and cook until
it begins to boil. At that point,
it will start to thicken; when it
does, immediately pull off the
heat.
Pour a little of the hot cornstarch mixture into the
eggs, stirring constantly, then whisk the eggs back
into the pan with the remaining cornstarch mixture.
Cook over low heat, whisking constantly, until
mixture just returns to a bare simmer.
Immediately pour into the food processor and
blend until very smooth. Pour into individual bowls,
teacups, or 1 large decorative bowl. Cover with plastic
wrap and refrigerate until firm and cold. Garnish with
whipped cream, shaved chocolate, and cinnamon.
FOODIE
FIND
by JULIE RYAN
The Dive Burgers & Brews // If you’re searching for the perfect burger joint, I found
it. Nestled in a strip mall across the street from Sierra College, you’ll find The Dive Burgers & Brews. Though
unassuming on the exterior, it has charming décor (reclaimed wood and galvanized metal), a super friendly
staff, and seriously good food. They have an extensive menu, which can pose to be problematic for indecisive
palates, so I left my choice up to the helpful lady taking my order. She recommended the Redneck Burger,
which features fresh, 100-percent certified Angus beef, chopped bacon, melty cheddar, sautéed mushrooms,
fried green beans (which I initially questioned but came to love), redneck slaw, jalapeños, and beast sauce.
I loved every messy mouthful of it and found the buttery brioche bun to be the perfect, pillowy soft vessel
for all the fresh fixin’s. My mom had the Lamb Burger and said she would definitely order it again; and my
husband had the Dive Burger, which came with an over-easy egg and demanded napkins…and a hearty
appetite. We shared fried pickles, house fries, and sweet potato fries—all were easily above average—but next
time I’m digging into their namesake Dive Fries; they’re covered in nacho cheese sauce, house slaw, redneck
sauce, sour cream, and jalapeños, so they’re destined to be delicious. The eatery also serves sandwiches,
salads, and craft beer from the region’s best breweries. Bring your appetite, and get ready to “dive” into
one of the best burgers you’ll ever have! 5050 Rocklin Road, Rocklin, 916-824-1411, dineatthedive.com.
THE HOT LIST
Slice of Heaven
6 Best Pies compiled by STYLE STAFFERS // photos by DANTE FONTANA
Raise your hand if you agree that everything tastes better in a buttery, flaky crust. Whether your palate
prefers sweet or savory pies, we have a local slice you’ll want to savor. In no particular order…
Sweetie Pie’s
Fat’s Asia Bistro
Ikeda’s California Country Market
Hog Wild Bar-B-Que
Karen’s Bakery
La Provence Restaurant & Terrace
“There isn’t much that
hasn’t been said about the
olallieberry pies at Sweetie
Pie’s in Placerville, but I’m
still going to say my piece. No
matter how many other pies
I try, I keep going back to
the Peach-Olallieberry
Pie that’s a notch above
the regular olallieberry.
Deep purple berries and
golden yellow peaches come
together in this sweet-butnot-sickeningly-so
pie that’s
a true treasure. Try not to
judge when I lick the plate
clean.” sweetiepies.biz
“I’d heard of Fat’s Asia
Bistro’s legendary Banana
Cream Pie and didn’t
believe the hype till I tried
it myself. The crust is very
different from others I’ve
had—glossier and slightly
sweeter—and the filling itself
is freshness personified. The
heaped whipped cream is
homemade (not that artificial
store-bought stuff), and
the custard between the
just-ripe-enough bananas
is luxurious and creamy.
This is the real deal, folks.”
fatsasiabistro.com
“I consider myself a local pie
expert and for me, nothing
beats the Chicken Pot Pie
at Ikeda’s California Country
Market in Auburn. When
I’m not scarfing down their
perfectly balanced strawberryrhubarb,
I’m reveling in their
savory pot pie that’s packed
with the usual suspects:
chicken, carrots, potatoes,
peas, and celery, all cradled
in their legendary buttery pie
crust. They’re known for their
pies, so you can’t really go
wrong with any of the umpteen
options they offer.” ikedas.
com
“If there’s ever a perfect way
to end a BBQ meal, it’s with
the Chocolate Fudge
Pecan Pie from Hog Wild
Bar-B-Que in Placerville. Not
overwhelmingly chocolate-y
or pecan-y, it provides a sweet
respite from all that delicious
meat. I’d never tasted chocolate
and pecans together in a pie
before but it’s now my favorite
filling. Thick fudge, spicy pecans,
and a side of whipped cream
make for a sensual dessert
that I can’t get enough of.”
“Just when you thought
Pumpkin Pie couldn’t get
any better, Karen’s Bakery
in Folsom ups the ante with
a gingersnap crust. They also
make it with a plain crust,
but gingersnap is next-level
goodness. The spiciness of the
crust doesn’t overpower the
earthy pumpkin filling and still
manages to stand out from
a plain Jane pie crust. Come
Christmastime, it’s the only pie
I get—family and friends have
even come to expect it each
year!” karensbakery.
“The Quiche of the Day from
La Provence Restaurant &
Terrace in Roseville is a brunch
must-have for those with a savory
tooth. It’s typically filled with
seasonal ingredients or whatever
the chef fancies, but no matter
the combination, it’s always
delicate, well-balanced, and filling. I
personally like the leek offering for
its simplicity, but I’ve also tried the
spinach and feta variety, which was
absolutely delicious; and the familiar
yet flavorful quiche Lorraine.”
This crowd-pleasing cocktail is a take on the
classic mint julep, except it uses absinthe rather
than bourbon. As you start sipping, the light
sweetness of sugar and anise are the cocktail’s
dominant yet delightful first impressions. After
the anise passes, savor hints of blackberry and
soothing mint.
• 1.5 oz. Wheel House Absinthe Verte
• .5 oz. blackberry liquor
• 1 sugar cube
• 1-2 springs of fresh mint
a cocktail shaker. Add ice, absinthe,
blackberry liquor, and water. Shake well and
Describe your business.
We teach private swim lessons year-round. Our warm water (92
degrees) is perfect for little swimmers and adults. Lessons start as
early as four months old; no one is too young (or old) to learn how
to swim.
How are you involved with both the community and your
customer?
Sea Otter has been around for over 25 years, and we love serving
the community. It's fun to hire new staff members who learned to
swim here as a kid!
Why is your staff the best in the business?
Our instructors truly care about water safety and really want to help
little ones learn to swim, because it can make a difference. Drowning
is such a scary, real thing, and we want to prevent it from happening.
Where do you go when the going gets tough?
The pool, of course! Or the gym. We love physical fitness.
What’s your biggest job perk?
Hearing stories from parents about how their child overcame a fear,
gained confidence, and learned to swim with us. It gives us all the
warm fuzzies when we know we made a difference in someone's life.
What’s your favorite place to eat out locally?
Chipotle and Farmhaus.
Where do you and your family go locally to have fun?
Anything sports-related. We love the 49ers! Our kids play soccer,
basketball, baseball…you name it.
And finally, customer service is…?
So important. We strive to treat our customers like family.
Describe your business. Did you find it, or did it find you?
I was starting college, trying to figure out what to study, and began
reading health books that spoke highly of Chinese medicine and
acupuncture. At the time, the Internet was just beginning; I did my
first web search and found there were traditional Chinese medicine
schools in California. The rest is history. I got all of my prerequisites
and at 21 was off to Five Branches University in Santa Cruz. I opened
my first practice at 25. Never in my my wildest dreams did I imagine
the success and growth over the years, but I feel incredibly grateful
for the opportunities afforded to me as a result. I’ve had my private
practice for 13 years now.
How are you involved with both the community and your
customer?
Our customers are the community, and we do our best to offer the
community the highest quality care we can.
Why is your staff the best in the business?
We recognize the importance of offering patients exceptional
customer service; also, our accessibility—we’re open seven days a
week from 8 a.m. to 8 p.m.
What’s your biggest job perk?
Working hand-in-hand with each patient and doing my best to help
others through health and acupuncture.
What’s your favorite local event that you go to?
The local farmers’ markets.
What’s your favorite local business other than your own?
My family and I enjoy an occasional breakfast at Peg’s Glorified Ham
N Eggs.
And finally, customer service is…?
Extremely important. We pride ourselves on treating all of our
patients well.
DO YOU KNOW THAT OUR EDITORIAL IS NOT PAID FOR, NOR CAN IT BE PURCHASED?
