DOUG AND I ALWAYS LIKE TO TAKE THE TIME TO<br />

EXCHANGE CARDS AND CELEBRATE OUR LIFE TOGETHER<br />

WITH DINNER OR EVEN A SPECIAL PERFORMANCE. Even if<br />

there’s no one in your life that fits the romance bill, you can always<br />

give your mom or favorite grandmother a card–or call them and<br />

speak on the phone.<br />

This issue’s Valentine story is quite lovely. You will enjoy reading about how Ashleigh Aitken<br />

and Michael Penn met on a blind date, and that pretty much sealed the deal! Michael had to<br />

wait three months for lunch to ask Ashleigh’s father, high-profile trial lawyer Wylie Aitken, for<br />

her hand. He was that busy! Once they tied the knot, they never looked back. Today, 16<br />

years later, they are both very successful lawyers, community philanthropists and exceptional<br />

parents to three beautiful daughters. But, through it all, they continue to show their love for<br />

each other and never take themselves too seriously. Laughter is a huge part of their success<br />

together.<br />

You will enjoy our Chef’s Corner column this month with Chef Josef Lageder’s recipes for a<br />

Chocolate Molten Lava Torte and Strawberry Bellini. Plan on delighting your loved one with<br />

these sweet concoctions and enjoying the accolades.<br />

If planning a romantic trip is on your horizon, take some suggestions from our Romantic<br />

Getaways feature. Writer Andrea Poe takes you from Wentworth Mansion in Charleston,<br />

MONUMENTAL EXHIBITION<br />

COMING TO BOWERS MUSEUM<br />

Prepare to be impressed! Renowned Chinese couturiére Guo Pei,<br />

who has gained an international reputation through her world-class<br />

exhibitions, is coming to the Bowers. Pei was thrust into the<br />

international spotlight in 2016 when she dressed Rihanna for the<br />

Met Gala and soon after made her Paris Haute Couture debut. The<br />

Bowers West Coast Premiere of “Guo Pei: Couture Beyond” will<br />

feature 40 extraordinary pieces from her grandest, most dramatic<br />

runway shows. The exhibition is organized by the Bowers Museum<br />

in collaboration with Guo Pei’s Rose Studios, SCAD FASH Museum<br />

of Fashion + Film and SCAD: The University for Creative Careers.<br />

Bowers will host a gala fundraiser on March 7 and on March 9, when<br />

it opens to the public, there will be a public conversation in Kershaw<br />

Auditorium between Guo Pei and SCAD President and Founder<br />

Paula Wallace. The exhibition continues through July 14.<br />

VANGUARD UNIVERSITY PRESENTED<br />

ITS ANNUAL CHRISTMAS CLASSIC<br />

If you haven’t attended Vanguard University’s award-winning Music<br />

Department’s celebrated “Christmas Fantasia” concert, makes<br />

plans to do so this coming December. The 22nd annual<br />

performance was held at the Renée and Henry Segerstrom Concert<br />

Hall on December 10 and gathered 1,500 attendees to witness 150<br />

talented students perform. The performance saw the Vanguard<br />

University Concert Choir and Orchestra, University Women’s<br />

Chorus, Jazz Ensemble, Guitar Quartet, Beautyshop Quartets and<br />

WHEN YOU VISIT CHAPMAN UNIVERSITY IN OLD TOWNE<br />

ORANGE, YOUR ATTENTION MAY UNDERSTANDABLY TURN<br />

FIRST TO THE SPARKLING MUSCO CENTER FOR THE ARTS,<br />

HISTORIC MEMORIAL HALL OR THE NEW STATE-OF-THE-ART<br />

KECK CENTER FOR SCIENCE AND ENGINEERING.<br />

But keep walking and looking. In each building, along the<br />

hallways, tucked into lobbies and offices, installed in outdoor spaces<br />

and displayed in library corridors, is a collection of some 800 pieces<br />

of fine art that enrich the everyday moments of campus life. Call it<br />

the “museum without walls.”<br />

Happily, it’s not intended for students only. University art<br />

collections are common, but Chapman’s approach to displaying its<br />

$3 million assemblage of fine art to the public is not.<br />

“Chapman is open to visitors, so the art is accessible to<br />

everyone,” says Lindsay Shen, director of Art Collections at<br />

Chapman. “There’s even art outside the gym.”<br />

Most of the openly displayed exhibits are part of the Escalette<br />

Permanent Collection of Art, established by the late Phyllis and Ross<br />

Escalette. On the west end of the Orange campus near the Orange<br />

Metrolink Station is the Hilbert Museum of California Art, a<br />

traditional museum setting but still free to the public, thanks to the<br />

support of founders Mark and Janet Hilbert.<br />

All the collections grow and evolve continuously, offering plenty<br />

of reasons for return visits. The most recent acquisitions explore the<br />

intersections of art and science and are on display – and sometimes<br />

incorporated into the architecture – at Keck Center. For example,<br />

images of biological structures float within a multi-layered wall of<br />

lighted glass. The work by artist Peter Bynum doubles as a wall for<br />

the dean’s suite.<br />

Artwork featured elsewhere in the building ranges from prints<br />

incorporating mathematical equations to a shimmering mural that<br />

invites viewers to consider the theory of infinity.<br />

“This work will interact with viewers in meaningful ways, and that<br />

will encourage them to ask questions, just like a scientist or engineer<br />

would,” says Andrew Lyon, the newly named dean of Fowler<br />

School of Engineering and former dean of Schmid College of<br />

Science and Technology, both of which are housed at Keck.<br />

Other highlights around campus include artworks throughout<br />

Beckman Hall by Ed Ruscha, Roy Lichtenstein, Tony DeLap and<br />

Mary Corse.<br />

A landmark is a large outdoor sculpture called “The Levitation<br />

of the Enchanted Princess” by DeLap, an Orange County artist.<br />

Students used the sculpture as one of the backdrops for a modern<br />

dance performance last summer.<br />

“We want to inspire students every day with<br />

thought-provoking art that they can see as they walk between<br />

classes, or as they study in the library, or take a break,” Shen says.<br />

And that invitation extends to all.<br />

“Art creates its own space,” Shen says. “We hope to build an<br />

environment that’s refreshing and enjoyable and welcoming for<br />

campus and community visitors.”<br />

• The outdoor sculptures, fountains and most building displays<br />

are generally accessible daily from 8 a.m. to 9 p.m. Parking in<br />

campus lots requires purchasing a permit at one of the<br />

designated parking permit machines.<br />

• Leatherby Libraries houses a variety of rotating and<br />

permanent exhibitions, including a series of Chuck Jones<br />

lithographs. In <strong>February</strong>, the library will host an exhibition of<br />

the newest Escalette acquisitions in its Henley Galleria. Hours<br />

THE NEW JAGUAR F-PACE SVR DEBUTED AT THE NEW YORK<br />

INTERNATIONAL AUTO SHOW IN MARCH 2018 AND WILL BE<br />

AVAILABLE TO THE PUBLIC IN THE SECOND QUARTER OF <strong>2019</strong>.<br />

The vehicle is an extreme variant of Jaguar’s best-selling F-PACE<br />

performance SUV. With a starting price of $80,000, a 5.0-liter<br />

supercharged V8 engine and top speed of 176 mph, the F Pace SVR is<br />

the ultimate Jaguar performance SUV.<br />

The vehicle incorporates an enhanced chassis, improved<br />

aerodynamics, and 170 more horsepower than the current<br />

range-topping F-Pace S. The new F-Pace SVR is built for maximum driver<br />

reward in various conditions.<br />

Mike Cross, Chief Engineer of Vehicle Integrity at Jaguar Land Rover,<br />

describes the car by saying,<br />

“Everything from the steering to the bespoke suspension set-up has<br />

been tuned specifically for our performance SUV, and the result is a<br />

vehicle that lives up to the promise of both the F-Pace and SVR names.”<br />

The new model incorporates a unique rear spoiler and bumper to aid<br />

aerodynamic performance The upgraded chassis features a set of<br />

progressive front and rear springs that are 30- and 10-percent stiffer<br />

respectively; incorporating an anti-roll system that contributes to a 5%<br />

overall reduction in body roll.<br />

The F-Pace SVR is also equipped with new lightweight forged 21 and<br />

optional 22-inch alloy wheels. The brake discs feature an advanced<br />

two-piece construction on both the front and rear, and, when combined<br />

with the lighter wheels, reduces unsprang mass and contributes to better<br />

handling.<br />

Another bonus is an F-TYPE inspired Variable Valve Active Exhaust<br />

System; providing not only a charismatic soundtrack, but also increasing<br />

exhaust gas flow as another factor behind the SUV’s increased<br />

performance capability. The SVR exhaust is 14.5 pounds lighter than the<br />

standard exhaust system in the F-Pace.<br />

MADELINE GOMEZ HAD BEEN CAROL PENN’S HAIRDRESSER<br />

FOR YEARS WHEN ONE DAY SHE HANDED CAROL A POST-IT<br />

SUGGESTED HER SON, MICHAEL, CONTACT ASHLEIGH FOR<br />

“We both had our hair cut by Madeline,” Michael explains, “and<br />

she thought we would be perfect for each other.”<br />

Ashleigh was a little leary. “I had never went on a blind date, but<br />

Madeline vouched for him.”<br />

Ashleigh says there were subtle clues that hinted she should take<br />

a chance.<br />

“Madeline went to Garden Grove High School with my parents,<br />

her daughter was my dear friend and tennis partner and she had<br />

known me my whole life. Plus, I never thought he would actually<br />

call.”<br />

When the courtship began, Ashleigh was a law student and<br />

Michael was working in his family 3rd-generation produce business.<br />

“I thought he was smart and funny, with good values.” Ashleigh<br />

says.<br />

Michael’s take was a little more direct.<br />

“It was love at first sight for me. I just knew,” he says.<br />

Six months into dating, Ashleigh asked Michael, then 23, when<br />

he saw himself getting married. When he answered when he was<br />

about 30, she quipped.<br />

“I hope you meet someone really nice,” and they both laughed.<br />

Michael had already intended to call Ashleigh’s father, Wylie<br />

Aitken, to ask him to lunch to ask for her hand in marriage. That was<br />

March, 2001, and Wylie wasn’t free until June for a lunch date.<br />

Wylie, a top trial lawyer proved to have a very busy schedule.<br />

Chagrined, Michael had no choice but to wait.<br />

As it turned out, by June, the two had been dating a year and<br />

Ashleigh suggested they go to Las Vegas to celebrate. Ashleigh<br />

told Michael they were scheduled for a historic bus tour of the city,<br />

which was really a surprise trip via small plane to the Grand Canyon,<br />

which Michael had always wanted to see.<br />

Michael had been looking at rings but didn’t know how to get<br />

Ashleigh’s size. Shopping in a Hopi Indian store at the Grand<br />

Canyon, they picked out Hopi rings to commemorate their<br />

one-year anniversary. Michael was happy because he now had<br />

Ashleigh’s ring size.<br />

Moments later, the couple visited Rainbow Ridge. When it<br />

started raining and everyone ran inside, Ashleigh recalls,<br />

“I proposed to him, getting down on one knee.”<br />

Michael responded, “No, no, no,” to which Ashleigh thought he<br />

was turning her down. It was then that he explained he was<br />

planning on asking her to marry him the next weekend, after his<br />

three-month-long wait for lunch with her father.<br />

The lunch proved positive with an “of course” from Wylie, and<br />

that night Michael proposed to Ashleigh on the patio of Orange Hill<br />

Restaurant.<br />

GIVING BACK<br />

Giving back was part of their upbringing so doing so comes<br />

naturally.<br />

“It is important for Michael and I to use our law degrees to<br />

provide representation to those who otherwise cannot afford it,”<br />

Ashleigh says. “We do a lot of pro bono work,” Michael adds.<br />

The couple are generous supporters of arts and culture in<br />

Orange County, in particular Anaheim’s Chance Theatre and South<br />

Coast Repertory. Chapman University is also a recipient of their<br />

support. Michael is a member of the Board of Governors, and they<br />

chaired the school’s major scholarship fundraiser, Chapman<br />

Celebrates, in 2017. Michael has volunteered as attorney coach for<br />

Canyon High School’s Mock Trial Team since 2006, and Ashleigh is<br />

passionate about Girl Scouts and serves as troop leader for all three<br />

girls. She even stepped into the political arena this year to run for<br />

mayor of Anaheim, and says Michael was her best door-to-door<br />

canvasser.<br />

THE HAPPY ENDING<br />

The couple’s greatest joy is their children and family time at<br />

home. The family lives with an “arc of animals,” which includes two<br />

cats, a horse and a 125-pound tortoise.<br />

“The chicken coup is on its way!” Ashleigh adds.<br />

The big gift for Christmas was a dog–a Shorkie (a cross between<br />

a Shih Tzu and a Yorkshire Terrier). His name is Franklin Delano Dog,<br />

the “New Big Deal,” and he is smothered in love by everyone in the<br />

family.<br />

It would be hard to find a couple better suited for each other.<br />

“When I look back, I feel like I won the lottery,” Ashleigh says,<br />

“because Michael is the love of my life and my best friend. He<br />

supports me emotionally as well as professionally. And, he’s<br />

romantic–he framed and gave me the post-it note Madeline gave<br />

him as an anniversary present.”<br />

Michael says, “From the moment I met Ashleigh, I saw that she<br />

was beautiful, smart and strong. I was inspired by her fearlessness,<br />

but, not only that, she’s just fun to be around. At the end of the day,<br />

I’m the luckiest guy I know!”<br />

MAKES 6-8 RAMEKINS<br />

INGREDIENTS<br />

2 Eggs<br />

1/2 cup sugar<br />

1/2 cup grated 72% chocolate<br />

1/3 cup salted butter (or regular butter, add<br />

a pinch of salt)<br />

1/4 cup flour or gluten free flour<br />

METHOD<br />

Prep the Ramekins<br />

Brush the ramekins with butter. Dust evenly with sugar, tipping out<br />

the excess. Set aside.<br />

1. Whip eggs and sugar to ribbon consistency<br />

2. In same bowl, sift the flour on top of egg mixture and mix<br />

carefully<br />

3. In a separate bowl, mix melted butter and melted chocolate; add<br />

to mixture and stir carefully until all is combined<br />

4. Pour mix into pre-buttered-and-sugared ramekins<br />

5. Place ramekins directly on the oven rack and bake for 8-10<br />

minutes in preheated 375 oven<br />

6. Should be crunchy on the outside but soft in the center<br />

a. Ribbon consistency means to whip the egg and sugar until<br />

almost white; the batter should fall slowly through a whisk<br />

forming a ribbon<br />

b. Delicious served with whipped cream<br />

c. Placing the chocolate torte right on the oven rack will help them<br />

rise, due to air circulation<br />

d. Molten chocolate torte can be refrigerated for up to one week<br />

when well wrapped in plastic, and they bake better when<br />

refrigerated first<br />

SERVINGS: 6-8 GLASSES<br />

INGREDIENTS<br />

1 pint Strawberries - ripe, stem removed and rinsed<br />

2 Tablespoons confectioners sugar or honey<br />

¼ cup brandy<br />

1 bottle sparkling wine or Champagne-chilled<br />

METHOD<br />

Place strawberries, sugar and brandy in a blender and blend<br />

until smooth. Chill in refrigerator for 15 minutes<br />

Add 3 Tablespoons of mixture to champagne flutes; top<br />

each with chilled sparkling wine, garnish with a fresh<br />

strawberry and serve<br />

INGREDIENTS<br />

1 cup Sugar<br />

1/4 cup Water<br />

METHOD<br />

1. Add water and sugar to sauce pot, stir until sugar<br />

and water is combined (one minute)<br />

2. Reduce for about 10-15 minutes until the<br />

mixture turns brown in color<br />

3. Cool down for about 5 minutes until syrup-like<br />

texture<br />

4. Using a fork, drizzle the mixture in a circular<br />

motion on parchment paper–be very careful, the<br />

sugar is extremely hot<br />

5. Set aside for 1 minute and peel the sugar design<br />

from the parchment paper<br />
