of darkness and cold, we emerge back<br />
into the bright world and go to “The Hills.”<br />

I have been on a mission to discover the<br />
best patio dining that the Hills have to offer,<br />
and the Dough Trader in Spearfish is one<br />
of my favorites. It checks all the boxes of<br />
good patio dining for me: both covered and<br />
uncovered seating options, a solid view,<br />
pet-friendly, delicious food, warm service,<br />
and an unbeatable neighborhood vibe.<br />
Located at the west end of Jackson<br />
Boulevard in a building that was once a<br />
Tastee Freeze, the Dough Trader is the<br />
epitome of laid-back and relaxed summer<br />
dining. Situated at the base of “Big Hill”<br />
patio diners can see across downtown to<br />
a craggy range of hills north of I-90. It is a<br />
quintessential view of bright blue sky offset<br />
by rolling and rugged hills covered in varying<br />
depths of green and the comforting shape<br />
of our ever-present pines. It looks and feels<br />
like home.<br />
A cold craft beer or glass of wine and one of<br />
their famous sourdough crust pizzas is the<br />
perfect finale to a hike up Crow Peak or a<br />
drive through the Canyon. They take great<br />
pride in their crust, a handmade sourdough<br />
version—which requires a “starter”: a<br />
combination of flour, water, and yeast or<br />
sugar that is allowed to sit and ferment over<br />
a day or two. This process creates a dough<br />
which is both light and airy, but still crispy<br />
and chewy. It also creates a depth of flavor<br />
that is a little tangy and which pairs well<br />
with both red sauces and cream sauces.<br />
Like other locally owned and operated<br />
pizzerias they offer a feature pizza that<br />
regularly changes in addition to a range of<br />
refreshing and delicious salads. When you<br />
find yourself adventuring near Spearfish<br />
this summer, stop in and see for yourself<br />
how warm and pleasant this patio dining<br />
