It’s one of life’s ever-present phenomena:<br />

man’s quest to eat crazy amounts of<br />

food in an outrageously short space of<br />

time. Gone are the days of enjoying a<br />

leisurely meal without a care in the world;<br />

there are now more important things to<br />

think about like devouring obscene<br />

amounts of chilli when all your friends<br />

think you can’t. <strong>London</strong> isn’t a stranger to<br />

the ‘Man Vs Food’ phenomenon – quite<br />

the opposite in fact – and we<br />

consequently felt the need to inform you<br />

of the latest homegrown challenges so<br />

you can attempt to become fully-fledged<br />

(perhaps slightly nauseous) food heroes<br />

yourselves.<br />

1. ‘Triple Chilli Challenge’<br />

(Meat Liquor Restaurants)<br />

This challenge has been going for some time<br />

now but evidently hasn’t lost any of its<br />

appeal, not least because it appears that<br />

people love eating chilli. For this challenge all<br />

you have to do is demolish a jalapeño burger,<br />

jalapeño hot dog and jalapeño fries, all in the<br />

space of 10 minutes… No big deal, right?<br />

2. ‘Crabby Patty Challenge’ (Red Dog<br />

Saloon, Hoxton Square and Soho)<br />

Hot on the heels of their ‘Naga Viper<br />

hot wing challenge’, the Red Dog<br />

Saloon are now inviting guests to see<br />

how many patties they can cram into a<br />

burger for the joy of not having to pay<br />

for it afterwards. FYI, the record so far is<br />

14 patties in 19 minutes!<br />

3. ‘Dude Vs. Dough’ Pizza Challenge<br />

(Tank & Paddle – Heddon Street/<br />

Minster Court/Bishopsgate)<br />

The pizza chefs at Tank & Paddle have very<br />

much hopped on the Food Challenge<br />

bandwagon with their yard long pizza<br />

challenge, which requires you to chow<br />

down the whole thing (plus a mac and<br />

cheese) within 15 minutes. If you do this<br />

you’ll be crowned the ‘Doughminator’,<br />

winning a £40 bar tab and a snazzy t-shirt.<br />

Worth it? We think so.<br />

4. Florentine Ostrich Egg<br />

It’s not every day you get the chance to up the<br />

ante of your meal with an ostrich egg and we<br />

have to say this won’t be an experience you’ll<br />

forget in a hurry. This is also a chance for<br />

vegetarians to get in on the action with the egg<br />

taking centre stage on a Full English, with or<br />

without the meat. Hurry though, they won’t be in<br />

season for long.<br />

5. ‘Chicken Parm Pile Up’<br />

(The Pride of Paddington, W2)<br />

No stranger to ‘Man Vs Food’ events,<br />

Pride of Paddington have come up with<br />

an Aussie-inspired challenge which<br />

invites participants to see if they can<br />

polish off four layers of chicken<br />

parmigiana, complete with salad and<br />

chips, in 20 minutes. If you can manage<br />

this they’ll take it off the bill.<br />

Florentine’s Vegetarian Ostrich Egg Full English<br />

This amazing brunch will feed<br />

4-6 people and is complete<br />

with roasted sweet potatoes,<br />

halloumi cheese, broccoli,<br />

mushrooms, plum tomatoes<br />

and pitta bread. This dish<br />

STEFANO MOTTA<br />

HEAD CHEF AT KITCHEN AT HOLMES IN MARYLEBONE<br />

How did you find yourself working as Head<br />

Chef at Kitchen at Holmes and getting into<br />

the restaurant industry?<br />

I was born and raised in Biella, a small town<br />

in the North of Italy and I have always been<br />

very close to my grandmother who loved to<br />

cook. Every Sunday the whole family would<br />

get together at her house and I would go to<br />

the kitchen to see if there was anything I could<br />

help with – from peeling potatoes to setting<br />

the table. I loved to see my grandma<br />

working away in the kitchen from<br />

the early hours of the morning.<br />

Looking back, I think the love<br />

that my ‘nonna’ had for<br />

making a Sunday feast<br />

for the whole family was<br />

what drove me to look to<br />

the kitchen for a career.<br />

Now, many years later, I<br />

am the one in the kitchen<br />

following in her footsteps.<br />

What can we expect from the menu and dining<br />

experience at Kitchen at Holmes?<br />

The menu is very much a reflection of who I am.<br />

Working on the initial stages of the menu we<br />

always found ourselves coming back to the same<br />

fundamentals. We wanted to create the perfect<br />

blend between some of the best seasonal produce<br />

as well as delivering dishes using international<br />

influences and techniques. Coming from Italy, I<br />

was fortunate to have the chance to visit markets<br />

every day and learn what the best ingredients for<br />

the season were and how to pick the finest ones.<br />

What do you think will make Kitchen at Holmes<br />

special and make people return?<br />

Kitchen at Holmes is coming at the right time to<br />

an area that is growing in the <strong>London</strong> culinary<br />

scene. Marylebone has always been a very<br />

affluent neighbourhood however, we felt that<br />

the area was missing a place where people could<br />

grab a relaxed and hearty breakfast, lunch or<br />

I would start with the Aubergine Tempura with<br />

Tell us a bit about the Marylebone<br />

area around Kitchen at Holmes.<br />

Marylebone is quite an<br />

interesting part of <strong>London</strong><br />

and, like the rest of the city,<br />

it is constantly evolving<br />

due to the exposure to<br />

so many different and<br />

wonderful cultures.<br />

I know the area quite well,<br />

funnily enough, I used to<br />

work in Marylebone about<br />

ten years ago before moving to<br />

New York, so for me coming back is<br />

almost completing a cycle.<br />

What do you enjoy most about your job?<br />

I really enjoy working and mentoring<br />

my younger chefs. Watching them grow<br />

professionally is something that I wouldn’t<br />

change for anything. Usually, when they leave<br />

culinary school they come very well prepared,<br />

but struggle with adapting to the fast-paced<br />

reality of working in a fully functioning kitchen.<br />

I try to be as open as possible to any questions<br />

that they might have and try to guide them. It<br />

can be anything from how they set up a work<br />

area to how to walk around the kitchen. I only<br />

ask them that they to show respect for their<br />

colleagues and their food, this is key if you want<br />

to work in a kitchen as a team.<br />

Is there anything about your job that you<br />

think people would be surprised to hear<br />

about?<br />

I try to take as much time as possible to get to<br />

know my team. If there is someone working in<br />

my kitchen, I like them to think of the whole<br />

kitchen team as their family and me personally,<br />

I want to get to know them, so when they have<br />

any sort of problem they know they can turn<br />

to me. In a kitchen your time is very limited to<br />

actually catch up, so I try to take my chefs out<br />

for dinner and make sure they know how much I<br />

appreciate their efforts in the kitchen every day.<br />

I want them to know that I am there for them if<br />

they wish to talk, being that of a professional or<br />

a personal nature.<br />

What do you like to cook for yourself at<br />

home?<br />

Being Italian I am always cooking recipes from<br />

back home, from melanzane parmigiana to any<br />

type of pasta, including lasagne or tagliatelle<br />

with mushrooms.<br />

A quick and easy pasta recipe that showcases delicious<br />

courgette notes, accentuated by the profile flavour of<br />

pistachio and smoked ricotta<br />

Ingredients<br />

⁄ 100g courgette spaghetti<br />

⁄ 2 tbsp. extra virgin olive oil<br />

⁄ 20g smoked ricotta<br />

⁄ Handful of basil to garnish<br />

For pistachio pesto<br />

⁄ 100g basil blanched<br />

⁄ 50g toasted pistachio<br />

⁄ 50g grated Parmesan<br />

⁄ ¼ garlic clove blanched<br />

⁄ Salt and pepper<br />

Method<br />

Start by blanching 100g of basil and ¼ garlic clove for the<br />

pistachio pesto.<br />

To make the pistachio pesto, combine the blanched basil and<br />

garlic clove, 30g toasted pistachio and 20g grated Parmesan<br />

in a bowl and season with salt and pepper.<br />

Heat the olive oil in a large wok and stir fry the courgette<br />

spaghetti until it softens (to a similar consistency of al dente).<br />

Turn up the heat and add the remaining grated parmesan and<br />

pistachio pesto. Season to taste with salt and pepper.<br />

Plate your dish and garnish with smoked ricotta, crumbled<br />

pistachios and basil leaves.<br />

THE BEEKEEPER<br />

LESLEY HIPPLE<br />

We interviewed beekeeper Lesley Hipple to find<br />

out about life looking after the capital’s hives<br />

(including some on our hotel roofs). Park Plaza<br />

<strong>London</strong> Waterloo will be using their honey in a<br />

variety of different ways including honey infused<br />

massages at Mandara Spa, a honey menu in<br />

Florentine and in guest breakfast dishes.<br />

What’s your background? Have you always been<br />

a beekeeper?<br />

I have a very varied background working in bars,<br />

gardening and spending many happy years on the<br />

high seas as a sailor.<br />

How long have you been working as a beekeeper?<br />

I began beekeeping three years ago when I met Dr<br />

Luke Dixon from Urban & Community Beekeeping<br />

on the roof of City University. He was teaching<br />

beekeeping to a group of students on the roof of<br />

City University. I immediately became hooked and<br />

have never looked back.<br />

What made you want to be a beekeeper?<br />

A lifelong interest in the natural world, the<br />

importance of bees and other pollinators, and a<br />

fascination with the complexities of the honey bee<br />

world led me to that rooftop.<br />

What does your usual day at work entail?<br />

It can be very varied. There is a lot of clambering<br />

over rooftops where many of the city’s beehives are<br />

based. There are regular hive inspections checking<br />

on the health of the bees. There is also the<br />

very messy business of harvesting the honey<br />

at the end of the summer.<br />

What’s been your career<br />

highlight so far?<br />

It’s difficult to pick one out as<br />

there have been so many but<br />

opening a hive for the first time and<br />

seeing the amazing world inside has still<br />

not been bettered. I love seeing <strong>London</strong><br />

from the tops of some iconic buildings<br />

and teaching children about bees is<br />

really satisfying.<br />

What are the best and worst parts of the job?<br />

The freedom and independence is really great. I<br />

love being in touch with the weather and the<br />

seasons. The changing world of nature is always<br />

exhilarating. I would say the worst part of the<br />

job would have to be getting stung.<br />

How often do you get stung?<br />

Too often.<br />

How do you become a<br />

beekeeper?<br />

Find someone to take you under<br />

their wing or come along to our bee<br />

club at Coram’s Fields and learn the basics.<br />

Is there anything surprising that people<br />

wouldn’t know about beekeeping? Or<br />

anything you wished they knew?<br />

People have no idea how many hives there<br />

are in <strong>London</strong> and how many bees. A lot of<br />

people also don’t realise how green the city is.<br />

How easy is it to spot the queen bee?<br />

You learn to pick her out after a while. She’s<br />

bigger and a different shape to the other bees<br />

and she scuttles around in a particular way.<br />

Many of our queens are marked with a little<br />

blob of paint to make her stand out from the<br />

crowd.<br />

Is beekeeping a solo job or are you<br />

part of a team?<br />

It’s a bit of both. Often I am<br />

out on my own, but I also<br />

work very closely with Luke<br />

and other beekeepers, so it<br />

can be quite sociable.<br />

What do you do in your spare time?<br />

What spare time? During the season the bees<br />

keep me busy 24/7. When things calm down in<br />

the winter I get back to catching up with friends,<br />

learning about permaculture and campaigning<br />

for a better world. I also love spending time with<br />

my ferret called Rolly.<br />

LORNA WANT<br />

What has been your best gig to date?<br />

This is a bit of a tricky one to decide but my career<br />

has mainly been in musical theatre and I’ve had the<br />

opportunity to be in lots of musicals. But ‘Beautiful -<br />

The Carole King Musical’ would have to be my best<br />

one to date. I started in it in 2015 and was with<br />

them for two and a half years. It was an amazing<br />

role with an amazing company and I had the<br />

opportunity to sing with Carole King in Hyde Park.<br />

How would you describe your music?<br />

As my career has predominantly been in musical<br />

theatre my gig will be focused on this but<br />

I’m inspired by lots of different artists<br />

and genres, especially folk and<br />

jazz. I love musical theatre songs<br />

though because you can really<br />

emote through the lyrics - it’s a<br />

character telling a story and you<br />

can really put feeling through<br />

the song.<br />

Who inspires you and why?<br />

To be honest, at the moment it’s<br />

actually my daughter. She’s two years<br />

old and a bundle of energy. If I’m having a<br />

bad day she inspires me to keep cracking on. I want<br />

her to be proud of me in my career and doing gigs<br />

and I can’t wait for when she’s old enough to come<br />

and watch me perform.<br />

What is your favourite cocktail?<br />

It’s a caipirinha. My husband and I were on holiday<br />

in Puglia, Italy when we discovered them and it’s<br />

where he proposed to me. We sat drinking them<br />

on the beach and it’s always our go-to cocktail<br />

although we don’t get to drink them that often now<br />

we have a two-year-old!<br />

What has been the craziest moment in<br />

your career so far?<br />

During ‘Beautiful’, I was nominated for an Olivier<br />

Award and I won! I still can’t quite believe it<br />

happened. I got to go to the awards ceremony<br />

and when they called my name it was such a<br />

shock but such an honour.<br />

What are some of your favourite songs in<br />

your set?<br />

In a gig environment, I like to do acoustic<br />

versions of some of the songs and one of my<br />

favourites is ‘Defying Gravity’. It makes them<br />

a bit different. ‘Someone To Watch Over<br />

Me’ is a really nice jazz number too.<br />

Who have you had the<br />

pleasure of working with?<br />

So many people but I loved<br />

working with Katie Brayben who<br />

played Carole King and she won<br />

the Best Actress Olivier Award. I<br />

played Cynthia Weil - the lyricist -<br />

and won Best Supporting Actress. To<br />

have that experience together - playing<br />

strong female roles and also both taking<br />

away those awards as women - was incredible.<br />

What have you got coming up?<br />

I’m just writing a cabaret with two other mummy<br />

friends of mine who also did ‘Beautiful’. We all<br />

have children about the same age and the show<br />

is called ‘Mums the Word’. It’s a comedy and a<br />

fun night of truthful songs about juggling being<br />

a mum and an actress at the same time. The first<br />

show has sold out so we’ve added a second show<br />

on Monday 15th <strong>July</strong> at Crazy Coqs, Live at Zedel<br />

in Soho.<br />
