INGREDIENTS:<br />

1. <strong>Crème</strong> Sauce –<br />

• Milk – 6 tablespoons<br />

• Egg yolk – 1 (large)<br />

• Sugar – 2 tablespoons or 25 grams<br />

• Flour – 1 tablespoon or 10 grams<br />

• Butter – 2 tablespoons (room<br />

temperature)<br />

2. Yolks –<br />

• Yolk – 1 egg<br />

• Sugar – ½ tablespoon<br />

• Milk – 2 tablespoons<br />

• Flour – 3 tablespoons or 30 grams<br />

• Baking powder – ¼ teaspoon<br />

3. Whites –<br />

• Whites – 2 eggs (large)<br />

• Tartar cream – 1/8 teaspoon<br />

• Sugar – 1 tablespoon<br />

METHOD:<br />

• To prepare the crème sauce; first blend the egg yolk,<br />

flour and sugar until the mixture becomes smooth.<br />

Whip it up with milk and pour it in<strong>to</strong> a small pot. Heat it<br />

on medium flame for the custard <strong>to</strong> thicken up.<br />

Remove from the flame and add butter. Now set it<br />

aside<br />

• Mix 1 tablespoon of sugar with the egg yolk<br />

and let it become pale and frothy. Blend the<br />

milk in batches. Transfer the baking powder<br />

and flour <strong>to</strong> the yolk mixture and beat it well<br />

so that everything becomes incorporated<br />

• Beat the tartar cream and the egg whites<br />

until pale and foamy. Also keep adding bits<br />

of sugar in between, till the whites become<br />

glossy thick meringue with a peak. Take care<br />

not <strong>to</strong> overdo<br />

• Mix 1/3 of the whipped whites with the yolk<br />

mixture. Add half of the remaining whites<br />

and whisk in<strong>to</strong> the yolk batter, being<br />

careful not <strong>to</strong> deflate. Transfer the egg yolk<br />

mixture <strong>to</strong> the remaining egg whites, whisk<br />

and then use a spatula <strong>to</strong> fold <strong>to</strong>gether<br />

• Heat a non-sticky pan. Carefully brush it with<br />

oil and rub it around with a paper <strong>to</strong>wel<br />

• Scoop out ¼ cup batter in<strong>to</strong> the pan. Cover<br />

and cook for 3 minutes.<br />

• Remove the cover and pile the pancake with<br />

more scoops. Cover and cook for another 3 –<br />

4 minutes. Use a spatula <strong>to</strong> carefully peek the<br />

pancake base. The pancake should release<br />

easily. But don’t force if it doesn’t<br />

• Repeat the process with remaining batter<br />

• Once the pancakes turn golden and are<br />

cooked well, transfer the pile in<strong>to</strong> a plate.<br />

Add crème sauce and sugar sprinkles on<br />

<strong>to</strong>p. With a cooking <strong>to</strong>rch brulee it.<br />
