MIANG KHAM

Miang Kham is a snack from Thailand and

Laos, which is a traditional Asian snack.

This dish was introduced in the Siamese

court during the reign of King Rama V by

the princess Dara Rasmi.

The origin of this Thai snack food was in

the northern part of Thailand. It was

initially made by using the pickled tea

leaves known as miang in the north of the

Thai language. This dish was also

mentioned in the Epic of the verse of foods,

a book which was penned by King Rama

ii.

Miang Kham in Thailand was usually gorged

upon when there were social gatherings.

The dish later then became popular in the

central region of Thailand. Miang Kham is

traditionally eaten when during the rainy

season in Thailand, the reason behind this

is that the leaves are known as Cha plus

are available abundantly. Moreover, during

the rainy season, the teal grows its leaves

and its shoots.

In the capital of Laos, Vientiane, the dish

Miang is often cooked in cabbage leaves

known as Kaalampii or lettuce leaves.

Other leaves can also be used alternatively

like spinach etc.

There is also a variation of this dish, which is

known as Miang pla, which includes

deep-fried fish, along with the standard

ingredients that are involved.

Moreover, in the Thai royal cuisine, in the

central part of Thailand. An alternate wrap of

this dish was adopted to represent and show

the beautiful and social status like the Miang

Kreep Bua or Miang Kham Bua Lhuang

As you all know by now that Mian Kham Bua

is a traditional Siamese snack dish that was

originated in the central part of Thailand and

is eaten with friends and family.

But what you didn’t know is that Miang Kham

BuaLhuand is actually lotus petals that are

wrapped as a bite-sized appetizer is

consumed in between meals. As the name

suggests, Miang Kham means one bite-size

wrap. Miang means (snack packed in piper

Sarmentousm leaves, and Kham says one

bit in Thailand. Also, this dish can be covered

in many kinds of things like Piper

Sarmentosum and also pickled teal leaves

that are originated in the northern part of

Thailand.

HOW IS

MIANG KHAM

MADE ?

The primary ingredient Lotus is something

that is perceived to be an offering to the

monks or buddha. But what a lot of people

are not aware of is that the lotus petal, if

eaten, is actually very beneficial for our

body. Its high in fibre, so it works as

detoxifying and the nourishment of the

health. Lotus leaves can also be cooked

as side dishes with ingredients like Miang

Kham Bua Lhuang, shallots, gingers, chili

peppers, garlic, limes, coconut sugar. This

traditional Thai snack is perfect for health.

While making this dish and before

wrapping the filled leaves, they are topped

with palm syrup or sugar cane syrup. This

syrup is often cooked in with lemongrass,

galangal, ginger, and fish sauce.

This one-bite appetizer has all the bold

Thai flavours in it like the spicy ginger, the

Thai chilis, the sour lime segments, the

nutty roasted peanuts, and coconut. It also

has a sweet and salty shrimp-based sauce,

which is all wrapped together in the leaf,

which is slightly bitter. It truly is an

appetizer and does what it is meant to do,

which stimulates your taste buds and will

make you ask for more.

One Bite Appetizer Miang Kham

Though Miang Kham can be made with

lettuce leaves or Chinese broccoli leaves.

But the taste doesn’t remain to be the same

as It does with wild pepper leaves. These

leaves are tender and fresh, and moreover,

they impart a subtle yet spicy and

additionally a bitter flavor into the dish

Ingredients

For the Sauce:

1 tbsp galanga

2 tbsp shallots

1 tbsp ginger

2 tbsp emongrass

1 tbsp shrimp paste

2 tbsp fish sauce

1/2 cup palm sugar

1 tbsp toasted coconut flakes

1 tbsp toasted peanuts

For the Appetizer:

20 wild pepper leaves

2-5 Thai chili peppers

1/4 cup lime segments

1/4 cup shallots

1/4 cup ginger

1/4 cup toasted peanuts

1/4 cup toasted coconut

1/4 cup toasted dried shrimp

INSTRUCTIONS:

To Make the Sauce:

For making the sauce, start by roasting the

shrimp paste. Then spread a thick layer

onto the surface of the banana leaf. Fold

the leaf into the package and then place it

on the over for approximately 10 minutes

at 350 degrees. Once it’s done that the

banana leaf that is charred. The foil can be

used if you don’t have banana leaves.

While your shrimp paste is getting roasted,

cut the ginger, the galangal, the shallots,

and lemongrass into small pieces. Then

roast these herbs by placing them into a

pan over medium heat on the stove, then

stir it occasionally until they are dried out

and toasted.

Then place these roasted herbs in mortar

pestle and the pound it until the coarse

paste is formed. Then further add the

roasted shrimp paste and then continue to

pound it till the paste is smooth.

Then in the small saucepan, and then start

heating the paste, which has been

prepared by you with the fish sauce and

the palm sugar over the medium heat.

Further, continue to cook it until; a slightly

sticky sauce is formed. If you think, it is

becoming too sticky start adding water into

it so that it can be thinned.

Now that your sauce is ready to pour some

chopped and toasted peanuts into it and

the toasted coconut flakes.

Steps to Make Miang Kham:

The first and foremost step is to wash the

wild pepper leaves and then pat dry them.

Then prepare the peanuts, coconuts, and

the dried shrimps by roasting all of them

separately in the pan, which is kept at

medium heat. Keep one thing in mind, and

that is, you need to use raw peanuts and

coconut flakes that are unsweetened for

the best results. Now remove these

ingredients from the pan after they are

toasted and let them cool.

Now prepare the fresh ingredients. For this,

you need to slice everything into small and

bit sized pieces. You can thinly slice the

peppers, and the lime can be sliced into

wedges to keep the sin of the lime intact.

How to eat this?

For eating the dish, you need to take one

pepper lead and then spread a dollop of

sauce into the leaf in the middle. Then add

the rest of the ingredients that have been

toasted onto the leaves. Wrap them, so

they don’t fall apart, then pop it into your

mouth. Your bundle of fresh flavour is ready

to hijack your taste buds.

Thunberg’s speech at the United Nations

earlier this year, the focus on climate

change and the pressing need for all of us

to do our bit for our surroundings is only

gaining momentum. A change in the way

we live, be it a simple modification like

taking your bicycle to work or a

magnanimous change like large scale

rainwater harvesting, we all have become

more aware and more responsible than any

of our previous generations.

WHY IS IT IMPORTANT TO SWITCH TO VEGAN

OR CRUELTY FREE SKINCARE?

While we talk the talk about Sustainability,

we’ve all at some point in the age of

YouTube and Instagram influencers

watched and gawked at the various

skincare routines and headed to the

nearest Sephora to empty our wallets and

returned with bags full of fancy toners and

moisturizers.

Personally, I’d been hooked on to the very

extensive 10 step Korean skincare rituals

publicized by the YouTubers for the longest

time. Each night I used to spend 20 minutes

carefully layering my face with numerous

skincare products packed with chemicals.

So then, what really are Vegan products

you may ask, well they are products that

are free from any animal by-products (bees

wax, insect dyes, milk etc) and have not

been tested on animals. Some of the

skincare brands that I have been using

since are not only organic, made from

natural ingredients but also are not tested

on animals. China as a norm, needs all the

imported beauty and skincare products to

be tested on animals, hence it being a large

consumer market, majority of the brands

tend to adhere to the norm to be able to

cater to the Chinese market.

It was during one of these nights when I

was applying a thick layer of moisturizer

on my face, did I happen to look at the list

of ingredients mentioned on the product

and to my surprise not even one name

mentioned was natural. To add to it, the

product was tested on animals and I almost

instantaneously made a conscious decision

to not buy another product the ingredients

of which I didn’t know or understand and

was most definitely not tested on animals.

My objective was plain and simple – I would

not put anything on my face that I would

be sceptical about putting in my mouth.

So, if you’re considering switching to

cruelty free skincare and beauty products

do a double check to ensure whether the

brand is actually cruelty free or not. A few

things to consider when you’re buying your

vegan, cruelty free skincare products are

– Be sure to always check the ingredients,

to ensure that the ingredients used are

completely natural and do not have any

animal by-products. Also much like the

regular skincare products, all the products

may not be suitable for all skin types and

you may be allergic to some of them, so I

suggest you buy samples, try them out and

then go for your actual purchase.

A homegrown Indian brand, Forest

fragrance. Furthermore, the products are

cruelty free and even measures are taken

to make the packaging too from

biodegradable or recyclable materials as

much as possible. The philosophy of Pai

has been as good as their product range

and for several years now, they’ve shown

consistency in both. I would highly

recommend trying out their product range,

and even if you don’t have a store near

you, their products can be found on

several ecommerce portal easily.

free brand from the home of tropics

– Australia, Metapora skincare products are

freshly made in smaller batches with

locally sourced ingredients and are made

from all-natural ingredients. For these

products, once you start using them, you

from all-natural ingredients, they tend to

have a smaller shelf life since there are no

added preservatives. Another upside to

buying Metapora is that they ship their

products worldwide so be sure you check

However, the most important aspect when

Emerald Lake

Remember the blue lagoon catching

your attention in Leonardo Di Caprio’s

Hollywood movie, ‘The Beach’, it’s the

emerald lake located in the Mu Koh Ang

Thong National Park. The locals call it

‘Talay Nai, while the tourist know it as

‘Inner Sea’. It is easily accessible by a

motar boat and is located in the Gulf of

Thailand within the Koh Samui

Archipelago of Islands. Besides the

green foliage and the limestone walls

this minty blue lagoon, the local

Phi Phi Island

Amidst the large island of Pohuket and the

Sraits of Malacca coast, south west of the

Krabi, in the clear water, stands an island

like a fortress, the Phi Phi islands. It is one

of the most visited natural site in Thailand

and for some the only reason to come to

Thailand. While some call it the partly

lovers destination, it is lao famous for it’s

serene and calm waters. People come here

for diving and snorkelling and to see the

magnificent coral reefs. Peace spreads in

the wings of nature in the Phi Phi Islands.

Erawan Falls

At a distance of 200 km northwest of

Bangkok in the Tenasserim Hills in

Kanchanaburi Province is the Erawan Fall.

This seven-tier fall is a delight for visitors

in Thailand and a blessing for adventure

lover. Each tier of the fall is unique in it’s

way. While the first tier is easy to access,

a skilled explorer can only reach the

seventh tier. But remember, the best view

comes from the hardest climb.

Undoubtedly it is the most beautiful fall of

Thailand. You can take a enjoy the

waterfall or go for some wildlife spotting in

the lake.

Khao Yai National Park

Three hours drive from Bangkok is the

UNESCO World Heritage Site, Khao Yai,

which is Thailand’s third largest national

park and is known for its diverse pool of

bio diversity. The park was established in

1962 and is spread in area of 2,000 square

kilometres. To visit the park one can rent

a car or bike. Visitors from around the globe

come for hiking in Khao Yai National Park.

To experience the rich flora and fauna one

can plan staying inside for a night stay. The

park is known for its lush green landscape,

bushy forests, pristine waterfall and more

than 200 species of birds and animals.

Tham Lot

If archaeology is your power capsule

Thailand’s one of the longest cave system

Tham Lot awaits you for being explored on

foot or by a guided tour accompanied by

remains. Tham Lot is located in the Mae

Hong Son Province which is on the border

of Myanmar and Thailand. These caves

stretch to upto 1666 metres and have

limestone stalactites and stalagmites

INDUS – A ROYAL

INDIAN FEAST IN THE

HEART OF BANGKOK

There are two kinds of people in the world

– the ones who eat to live and the others

who live to eat, I tend to fall in the second

category. One of my favourite excuses to

indulge in good food is telling people that

there is no better way to explore a new

culture or a place than through its food. So,

as I was wandering around the Phrom

Phong area of Bangkok, I came across

Indus - a quaint little Indian restaurant

located in Sukhumvit Soi. Along with a

bunch of friends we decided to explore the

much talked about cuisine of the Indian

subcontinent.

The restaurant in itself has a regal charm

– all done up in vintage Rajasthani style

with plush interiors and stately pieces of

art dotting the walls. The vibe of the

restaurant is very regal and adds up to give

you a true fine dining experience. The

restaurant is spread across different areas

comprising an ornate dining room, a private

dining room for intimate lunches, a

capacious bar to get a quick drink before

heading to one of the dining rooms and a

beautiful garden with alfresco seating. The

beautifully manicured gardens and the

lounge music add a contemporary fine

dining experience to the otherwise

old-world charm of the restaurant.

Martinis and Musings

Known for its Mughlai inspired cuisine and

the ostentatious presentation of the north

Indian fare, I was looking forward to an

afternoon of gastronomical delight. We

commenced our meal with ordering a set

of cool refreshing cocktails from the petite

cocktail menu and the wine list too had a

good selection of local and imported wines.

The drinks arrived almost as soon as we

placed the order and were presented in a

truly exquisite fashion, the cucumber basil

martini in particular was blended to

perfection and was much needed after the

walk in the hot humid afternoon.

Since we were not on a tight schedule, we

took our time to order and when we did,

the spread was enough to satiate all our

gastronomical appetites. The

amuse-bouche as the French call it, was

a surprise presented before the meal which

set the expectation of the meal to follow.

We ordered a selection of vegetarian as

well as non-vegetarian options along with

a basket of assorted Indian breads. The

appetizers from the tandoor cooked in true

Mughlai fashion were the stars of the meal.

The lamb and the chicken cooked in the

tandoor (Indian clay oven) with mild spices

melted in the mouth and had us reaching

for seconds; as for everyone’s favourite

- the samosas, they were well spiced and

crunchy yet not overtly greasy. If you’re like

me and take hours to decide on what to

order I suggest you go with the assorted

platter that lets you taste-test a selection

of different appetizers. Be sure you don’t

overindulge since the curries are what the

place is known for.

Getting Curried Away

Curry or “Kari” as it is called in the Indian

subcontinent was publicised by the

Portuguese and the British when they

landed on the coast of southern India

sometime in the 17th century. What is a

staple in most parts of Asia is also a

popular takeout in Europe and America in

the recent times. The curries on offer at

Indus predominately are from the northern

parts of India where there has been a

strong influence of the Mughals in the

Punjab and Sindh provinces. The

butter-chicken cooked in a buttery creamy

tomato sauce with succulent pieces of

chicken went well with the hot fluffy garlic

naans. The raan which is the leg of the

lamb slow cooked for hours and spiced

with cumin, paprika and other Indian

spices had us licking our fingers.

The meat came off the bone at the slightest

touch and the meat had a lovely smoky

texture. The bhagara-e-baingan which is

a rich spicy curry with eggplant made in

the ancient times exclusively for Royals,

hails from the Hyderabad region. The

curry has a nutty and a sweet-spice flavour

profile that can be had with the authentic

roomali roti which is literally translated to

an Indian flat bread which is as thin as a

handkerchief. The option of Biryani which

is fragrant long grain rice cooked with either

meat or vegetables, spiced and coated with

a light layer of saffron is a must if you’re

visiting a north Indian or a Hyderabadi

restaurant. Here at Indus, it is served in an

Indian clay pot accompanied with yogurt

and fried papad.

On a Sweet Note

With all of chef Amit’s fare, we were stuffed

to the brim, but of course when has a meal

ever been complete without some dessert?

The very courteous and polite staff who’d

been waiting on us, offered us suggestions

on the dessert specials, and soon we were

eagerly waiting for the hot gulab-jamuns.

For those of you who don’t know what these

amazing balls of heaven are – they are

small spongy balls of flour soaked in a rose

flavoured sugar syrup often served piping

hot with vanilla ice-cream on the side and

just a sprinkle of cardamom to bring out the

flavour. We indulged ourselves into the

syrupy goodness and let the flavours do

their magic.

For the price of the meal, although on a

pricey side, the experience and the food

seem worth it and it truly is an indulgence.

The meal was definitely one of the best

ones I’ve had in a long time and Michelin

awarded to the restaurant is totally well

deserved. After a long afternoon well spent

with food and friends, it was time to head

back out in the city to walk off all the

calories piled on. If you are visiting Bangkok

anytime soon or simply wish to indulge

yourself in some hearty Indian fare – I

would highly recommend you plan a visit

to Indus. Making a reservation would be

advisable since the restaurant is very often

pre-booked for lunches and dinners. Its

located on 71, Sukhumvit Soi 26 in the

Phrom Phong area of Bangkok.

the globe, India is a land of varied culture,

customs, geography, climate, and

costumes too. For reasons like climate,

traditions, and culture, both men and

women in the different corners of the

country wear different types of clothes that

they call their traditional attire. It is either

the fabric, or a particular design, or the

style of wearing the dress, etc. that

distinguish one attire from the other. There

are 29 states and seven union territories

in India and almost every state has its own

traditional attire. In this article, we have

tried to enlist the different Indian

traditional dresses for men and women.

Traditional Attire for

North India

The north Indian states include Haryana,

Himachal Pradesh, Jammu and Kashmir,

Punjab, Uttarakhand, Uttar Pradesh, and

the union territories of Chandigarh and

Delhi. In Jammu and Kashmir, women wear

colorful Pherans (Phyaran) and Shawls that

are unique due to their intricate embroidery,

bright colors, and brocade styles. For the

bottom, women and sometimes men too

wear poots that look like gowns.

Women cover their heads with beautifully

embroidered scarves. Kashmiri men are

also found wearing Goucha that is a long

robe made of pure wool that is tightened

at the waist. In Haryana, women wear short

Ghaghras, that look like skirts, with a

Kurti on top. They cover their heads with

colorful Chunris that look like scarves. Men

wear dhoti and kurta and tie a pagri (turban)

around their head. In Himachal, men and

women mostly wear woolen clothes due to

the cold weather. It is the colorful caps that

stand out in their attire.

Traditional Attire for

South India

The traditional attire of almost all South

Indian states is almost the same. The

women wear sarees, while men wear

dhoti/lungi and kurta or shirts on top. The

traditional for women in Kerala is a

white-colored silk sari with a broad golden

zari border. And men wear lungis at the

bottom and a shirt or short Kurta on top.

On certain special occasions like a festival

or wedding, men wear white-colored lungis

with a golden border that are known as

Mundu/Neriathu. In the remaining parts of

South India that includes Andhra Pradesh,

Karnataka, and Tamil Nadu, women wear

sarees of various color combinations,

which mostly include bright colors, and the

fabrics mostly include silk, cotton, and

chiffon. Mean wear dhoti and kurta.

Traditional Attire for

West India

attire is primarily known for its bright colors,

that also have intricate detailing work on

them.

Traditional attire for men includes

Angrakha, dhoti, Banda, Poti, Dhabla,

Bugatari, and Pachewara and Bugatari. In

certain areas of Rajasthan, men also wear

dhotis. Men also tie safa around the head.

It is a kind of turban that is died very

differently. The traditional attire of Haryana

includes Chaniyo choli for women.

Chaniyo is a multicolored petticoat that has

embroidered glass pieces on it, while

choli is a colored piece of cloth that works

as the top. The traditional attire for men

includes Chrono and Kediyu, which is the

short and top respectively.

In Maharashtra, men wear a Dhoti and shirt

along with a headgear that is called a

Pheta or r Rumal. The traditional dress for

Maharashtrian ladies is a saree, known as

Lugade. The style of draping is very

different and this traditional attire must

accompany a nose pin, known as nathni.

East India

The states that make up the whole of East

India include Bihar, West Bengal, Orissa,

and Jharkhand. While the north-eastern

states include Assam, Mizoram,

Meghalaya, etc. The traditional dress for

women in West Bengal includes saree,

while for men, it is dhoti-kurta or kurta

pajama. In Assam too, women and men

wear the same kinds of clothes like West

Bengal, however, it is the fabric that

distinguishes one from another. Assam is

famous for its beautiful mekhola-chador,

which is a three-piece dress that is worn

like a saree. Manipuri women wear Innaphi

the shawl, Phanek, a wrap-around, and

Sarong, which is a skirt.

While westernization has brought about a

change in the style of clothing in all parts

of India, people still wear these traditional

clothes on various occasions like

weddings, festivals, etc. After all, it is these

little things that keep us grounded to our

culture and tradition.

The History Ayutthaya

Historical Park

Founded by Prince U Thong (later known

as King Ramathibodi I), the kingdom of

Ayutthaya lasted from 1350 to 1767. King

Ramathibodi built Ayutthaya in such a way

that the city remained protected from both

invaders and floods. Given its strategic

location, Ayutthaya developed into one of

the largest urban hubs in the world at that

time. Located between India and China,

Ayutthaya was then the hub of diplomacy

and trade and a place where the East met

West and signed business deals. The city

was also a shining example of

craftsmanship and artistic brilliance that

was evident from the beautifully crafted

temples that lined the borders of Ayutthaya.

However, the Burmese invaded Ayutthaya

in 1765 and that is when the Thai capital

came crashing down. The kingdom’s

treasures were stolen, the people were

killed, and many of the temples were burnt

down by the Burmese. Centuries later, the

temples were restored and the site was

given a UNESCO World Heritage tag in

1991. Today, the Ayutthaya Historical Park

stands as a testimony to what used to be

a beautiful and prosperous kingdom.

Surrounded by the Pa Sak, Chao Phraya,

and Lopburi rivers, Ayutthaya is located 80

kilometers north of Bangkok. It can be

reached by train, bus, car, and by the river

as well.

temple. Located on the banks of the Chao
