Branzino – sea bass fillet filled

with pancetta bacon black mussels

ragout in saffron sauce

(for 5 people)

10 sea bass fi llets

FOR THE FILLING:

1500 g mussels

10 g garlic

10 g parsley leaves

120 g smoked pancetta

200 ml white wine

150 g dried tomatoes

200 g cream

100 gr Sicilian 'Pecorino' cheese

breadcrumbs

salt, pepper

FOR THE SAUCE:

20 g butter

20 anchovies in oil

100 g mirepoix (fi naly chopped

carrots celery, onions)

500 ml fi sh stock

2 g saffron

100 g cream

400 ml dry white wine

20 g roux (fl our fried in butter)

PREPARATION

FOR THE FILLING:

In a pan, fry the mussels in

olive oil togheter with the garlic.

Add the parsley leaves and

the chili pepper, pour in a little

white wine and boil it off. After

frying, take ¾ of the mussels

out of their shells, cut them

into little pieces then strain the

broth. Finely chop the gralic

and fry in a pot with the dinely

diced pancetta. After a few

minutes, add the cleaned and

cut mussels and continue frying

at a high temperature for a few

more minutes. To fi nish off, stir

in the chopped tomatoes and

the cream, then bring to the

boil. Take off the heat and add

some breadcrumbs to get a

perfect thickness for the fi lling.

While still hot, slowly add the

cheese, season with pepper to

taste and leave to cool.

PREPARING THE BASS

FILLETS

Finally, lightly sprinkle salt on

the Branzino fi llets and pile

some of the fi lling on the middle

of half the fi llets, then cover

them with other slices as if

making sandwiches. Line a preheated

frying pan with baking

parchment and fry both sides

of the fi sh slices in olive oil (only

turn them once as the fi llets can

easily fall apart). Put the slices

in a pre-heated oven and roast

them at 200 C for 5-8 minutes.

PREPARING THE SAUCE

Fry the the anchovy pieces and

mirepox in a pan with the butter

and then put the fi sh stock and

white wine and cook for 20

minutes.

After cooking, pass through the

mass a tip fi lter and thicken with

cream, then add the roux and

saffron, and after thickening,

remove from heat and keep

warm until served.

Passe Partout had the pleasure of photographing a collection of sofas

and armchairs a few years ago in the villa on the Paltz estate.

Later we discovered some of the stories behind the art. We are happy

to give them a place in this edition. In the meantime, some of the

works have been sold, and therefore no longer part of the collection.

For more than 50 years Herman Van Veen has been singing,

acting and writing about what fascinates him.

Later painting was added to this. He works on a painting as he

sings and acts, undisturbed and for hours in great concentration,

sometimes almost out of breath, in order to apply that one line that

was somehow still necessary.

There is even a gallery of his own. In this arts center there are

canvases that have often only just left the studio. Some of the

works cannot be sold because these are part of private collections

of various collectors.

The Villa also houses part of the art library that offers everyone

the opportunity to borrow or acquire a Herman canvass.

Selma Meerbaum-Eisinger

Selma Meerbaum-Eisinger born 5 February

1924 in Czernowitz, Ukraine.

Died in the Arbeitslager Mikhailowka in Ukraine,

December 16, 1942).

Jewish German-speaking poet, who died in

1942 at the age of 18 from hardship in the

labour camp.

Her work is considered part of world literature.

She left 57 love and nature poems to the world.

Under her last poem is still written in pencil:

“Ich habe keine Zeit gehabt zu Ende zu

schreiben…” “… dann hat der Rauch aus

sich eine Wolke gemacht.”

Her last words were:

“Das ist das Schwerste: sich verschenken

und wissen, daß man überflüssig ist, sich

ganz zu geben und zu denken, daß man wie

Rauch ins Nichts verfließt”.

Herman, together with Edith Leerkes with

‘Songs in the distance’, dwelled on the life of

Selma Meerbaum-Eisinger.

This painting symbolizes the hope she had

to live. Halfway through, she loses hope. She

then regains hope to finally die from the typhus

of stain and literally goes up in smoke.

Amadeus Mozart for all the wonderful things

he left us.

Red, dedicated to Mata Hari, pseudonym of

Margaret Geertruida (Griet) Zelle who was convicted

of serious treason by the French for suspected

espionage and executed on 15 October 1917.

In 2012 a number of canvases by Herman Van Veen

about her were exhibited in the exhibition “Guilty or

naive” in the Frysk museum in Leeuwarden.

The canvas Red was made for hotel Espace Pierre

Gardin in Paris. Herman had once been there and

the owner proudly told him that Mata Hari had also

stayed there, on which he dedicated this painting

to her. The dark red middle surface represents the

colour of her dress.

This canvas is an essential part of our collection

because of its history.

1. What makes an interior inspiring for you?

Purity, simplicity, intelligence, stylish and practical.

2. Which evolution in ‘living’ have we gone

through in the past five years, and how do

you think people will live in 2025?

The past 5 years and most probably the future 5

years will be focused on a smaller habitat with all his

functions. A new trend will be to rent, lease rather

than buying your home, so the evolution will be a

neutral approach in all what is fi xed and only movable

parts and products will give you the possibility for

personalisation.

3. Is it really true that we will live in smaller places?

Or is that an evolution we might only see in the

cities where people live close to each other?

Yes, but this is a general question so I give a general answer.

For other countries and continents it will be different and

certainly for other generations and other social profi les.

4. More and more people combine living and

working at one place. What is according to you the

most appropriate interior to make that combination

work well?

A space where you can isolate yourself.

An interior with big sliding doors and walls and fl oor with

perfect acoustic solutions. Ventilation with the latest quality

norms as well lighting with a system for light therapy.

5. Do you think social media has an effect on the

living behaviour of people?

Of course.

6. In what way furniture stores can anticipate on

this contemporary way of living?

You may not and can not predict today the future. To much

fundamental changes will take place.

Corona will be our guide and inspiring, but again where on

the globe do we focus.

I expect an totally new situation, new behaver, new norms,

new ethics, and new habits which will bring new styles rather

than new trends.

Finding new details which are never done before. Design

is in the details. Overall concepts will not change a lot.


through in the past five years, and how do you

As an designer for outdoors it is obvious that the

outdoor living space has become a more and more

serious part of the living space instead of an area where

sometimes a dinner or a BBQ was taking place. In the

future all functions as cooking bathing working will be

done from the outdoor space including electronics like

flatscreens, movie screens, sound equipment will be

adapted for outdoor use.

3. Is it really true that we will live in

smaller places? Or is that an evolution

we might only see in the cities where

people live close to each other?

I believe after finding the unlimited possibilities

of the internet some people will be starting to

feel the need to simplify and live with less stuff.

Living smaller will only be an issue in the big

cities where property will be more and more

expensive.

4. More and more people combine

living and working at one place. What is

according to you the most appropriate

interior to make that combination work

well?

Offices at home don’t look like an office garden

anymore. People enjoy that. With a laptop a

good table and an internet connection they

don’t have to stay in a dull office space anymore.

Work is blended in in the home interior of your

own taste. As long as there are good tables/

desks and good room dividers this will be

enough . There is no need any more to store

paper files so good desks in different designs

with good solutions for hardware like printers,

usb hubs a.s.o. will become important.

5. Do you think social media has an

effect on the living behaviour of people?

Yes very much but I also believe It will be a luxury

to be off line for a while. Just as a short holiday

to reload it can be very relaxing to disconnect

for a short period. I don’t believe people will

be able to stay off line for long. So also in the

interior being online will be a normal behaviour.

This will influence designers for sure.

6. In what way furniture stores can

anticipate on this contemporary way of

living?

Tell designers the needs of the public and

show future possibilities in their stores. In a

store settings of furniture can be demonstrated

better then online.

7. Which trends can we expect in

2020/2021?

For the outdoor market upholstered furniture for

outdoor will be a more and more common thing.

This is a result of advanced technical possibilities

of outdoor textiles. Also the looks of the outdoor

textiles are not inferior to interior textiles anymore.

In 2021 we will see combinations of upholstered

furniture with woven rope details.

5. Do you think social media has an effect

on the living behaviour of people?

For many people, platforms like Facebook,

Instagram and Pinterest have peeked their interest

in interiors. Here, more so than in the physical

world, trends are born and manufacturers can

reach people in great quantities.

Few things are more personal than an interior,

so there’s no ”one size fits all” interior solution. It

always inspires me when I feel an interior really fits

the people that live in it.

2. Which evolution in ‘living’ have we

gone through in the past five years, and

how do you think people will live in 2025?

In the past years we’ve seen a growing

group of people who really understand and

appreciate quality products. Sustainability

and durability play a big role in this. We don’t

want to buy a sofa that lasts only a short time.

I expect this trend to continue, in furniture as well

as other products. What will change further is the

appreciation of family life. The scarier the world

gets, the more important it is to feel safe and

comfortable in your own home.

6. In what way furniture stores can

anticipate on this contemporary way of

living?

By making use of the possibilities that Social Media

present: New kinds of exposure, for example

human interest stories. Websites also need to

be inspiring. Many stores are already doing this,

they know their websites are the first contact with

most of their clients. My advice to all interior stores

would be: Let your message be clear, what you

tell and show people on your website and on

social media has to be in perfect sync with what

people see and hear in your store. The goal is to

let expectation and experience go hand in hand.

7. Which trends can we expect in

2020/2021?

We are living in uncertain times. As I write this, the

world is dealing with the Corona crisis. We all have

to stay at home a lot, so I expect people will be

extra aware of their interior. The internet and social

media will temporarily become the main source of

information for our interior. My “trendy oneliner” is:

Soft fabrics, round shapes, comfortable seating!

3. Is it really true that we will live in

smaller places? Or is that an evolution we

might only see in the cities where people

live close to each other?

As the population grows, there will be less room

for everyone. But I don’t believe that everybody

wants to live in a small apartment in the city. Cities

have become expensive to live in, unaffordable for

many people. So I think we will live more or less the

same as we do now, we just need more houses.

4. More and more people combine living

and working at one place. What is according

to you the most appropriate interior to

make that combination work well?

I work at home and find it very comfortable. For

many years now, offices have gotten a more

domestic look. The workplace feels softer, more

like an extension of home.

As an architect, I see a building, space and its interior

as one strengthening whole. Architecture does not

only communicate with the city and the landscape, it

also forms and creates interior worlds which facilitate

everyday life. In this way, an object can already

determine the entire space or way of living. This is

why it is important to treat them with a sensitive, pure

and evident choice of materiality and an eye for detail.

4. More and more people combine living and

working at one place. What is according to

you the most appropriate interior to make

that combination work well?

As I write this during corona-times, whilst working

already 3 weeks from my home in Antwerp, I think it’s

important to create a shift in your living environment

between what is work and what is living, in order to

guarantee an effective moment of relaxation. Besides,

the act of a ‘working day’ means for me, that I am part

of the moving city and its economy. I want to feel a

connection with the tumult of public, daily life, which

is contrary to the comfortable privacy of one’s own

home. To open up a part of the house or interior to

participate actively to the city life, and to keep a part

for the intimate, private life behind the scenes is what I

see as an appropriate combination.

An interior is inspiring to me when it has been given

a prominent identity by the architecture or design,

but is open to flexibility and above all freedom to

adapt to someone’s own way of life.

On the scale of the house, there is a shift to the

concept of an open-floor arrangement: spaces are

literally more connected to each other and functions

or actions are no longer linked to a fixed space in the

house. Besides, the boundary between inside and

outside has faded, the outside space has gained

more importance in the quality of life.

Concerning the scale of living together, the trend of

cohousing has become very popular. Living together

with friends, another family or even with a group of

complete strangers has proven its advantages to be

very valuable. Within this concept, it’s a challenge for

the nearby future to investigate where the boundary

lies between private and shared spaces and in what

way someone can still develop their own way of living.

3. Is it really true that we will live in smaller

The so-called ‘building shift’ (bouwshift) implies the

idea of living smaller and closer together, both in

villages as in cities. Within this new framework, we

have the opportunity to rethink standard ways of

living and even discuss the possibilities of collective

forms of living. As I mentioned before, the concept

of cohousing has become very popular, but also

living together in a larger collective housing project

is something to look out for. Different spaces can be

shared with many financial and social advantages

as result, but the concept still comes with many

Social media has strongly become an integral part of

daily habits. Sedentary behaviour is increasing and a

daily dose of ‘screen time’ is being implemented. The

act of ‘sharing’ and ‘liking’ shifts the perception of

what has to be the ideal life. On the one hand, a lot

of people tend to follow the newest trends, but on the

other hand, consciousness about enjoying screen-free

time with family and friends is also found very valuable.

6. In what way furniture stores can anticipate

on this contemporary way of living?

Furniture stores and designers should anticipate

the outdoor spaces and shared spaces.

7. Which trends can we expect in 2020/2021?

There is a general trend, both in architecture and interior

design, of the designer as a craftsman, using natural

and sustainable materials and trying out minimalistic

geometric forms, with a shift from rigid and linear forms

to smooth, organic and sensual ones. This results in

the exciting prospect of designers experimenting with

new and unusual materials, balanced between nature

and new technologies.

Dirk loves Dirk, the

jenever of Ruben,

Sam and Hilmar. A

Rotterdam trio that

started brewery de Kopstoot in

2018 and was successful with

their fi rst beer, Tarwelijer, at a

supersonic speed.

According to good Dutch

tradition, beer also comes with a

glass of jenever, fi lled to the top.

That crazy combination is called

a ‘kopstootje’ (‘headbutt’).

KEKKE KASTELEIN

In the meantime, the trio also knew in which

environment these refreshing headbutt

should be served. In the violence of modern,

industrial pubs, the atmosphere of the old

brown wood of vague pubs was missed,

with visitors falling asleep and a bartender

who threw them out at some point. In short,

cosy and cozy. With hard-boiled eggs on

the bar, Russian salad next to it, a cheeky

chestnut and then those headbutt.

With this concept in their pocket they can

be seen as a pop-up at many beer festivals

with always Dirk, the pheasant in the ridge

of their bar.

HUH... DIRK, THE PHEASANT?

The pheasant is a beautiful animal,

but always hunted through the

centuries. A bit pathetic, the

brewers thought, and high time

for an ode. An ode to Dirk, that

somewhat silly, but beautiful

pheasant cock with its velvet

feathers and raw cries.

VELVETY SOFT

So on a beautiful Friday afternoon the three of them

ended up in the tasting room, in Vlaardingen (NL),

of a crazy jenever distiller who also turned out to

be the royal supplier. So they were all right. After

several tasting sessions the genius plan was born

to use the hops that were used in the Tarwelijer for

their fi rst jenever. Even the self-willed, crazy stoker

didn’t say ‘no’.

With ten percent malt wine from the city of

Schiedam, plus the tones of American Citra Hop

and some more secret additions Dirk was born. A

velvety genever that fi ts seamlessly with the fresh

Tarwelijer. The name was dropped halfway through

the second tasting bottle when creativity started to

fl ow. Dirk because Dirk is also a friend of yours.

To start with, the city itself is easily

and very original accessible:

come by train. The majestic

Antwerp-Central station has

already won many beauty awards.

According to many, the monumental

building is one of the most beautiful

train stations in the world. Definitely

worth thinking about. And something

that will make leaving the city a little less

troublesome.

On the Grote Markt you immediately take

some nice pictures. The eye-catcher on

this place is the 450 year old town hall.

The statue of Brabo tells the story of the

hero who, according to the legend, faced

giant Antigone and liberated Antwerp from

its rule. Don’t miss the various old guild

houses: admire their beautiful facades

and the golden statues on the gable tops.

From the Grote Markt it is only a fifteen minute

walk, for example along the docks with a view of

the Scheldt, to the MAS: in that Museum aan de

Stroom the most beautiful work of art is perhaps

the view. From the 60 meter high roof you can

admire the whole city.

In the Antwerp skyline, the O.L.V. cathedral

proudly takes its place: it is the tallest church

tower in Belgium and is on the UNESCO World

Heritage list. At the same time, it is the largest

Gothic building in Belgium and the Netherlands

and you will discover great work of baroque

painter Rubens, for example.

In addition to the MAS, Antwerp has

many other special museums. All of

them offer special extras in addition

to their top collection: the Middelheim

Museum is a park full of sculptures, in

the Rubens House you walk through the

home of Rubens and Plantin-Moretus

was the first museum in the world to be

listed as a UNESCO World Heritage Site.

And then there are the museumworthy

buildings, in which you ‘just’

shop or eat: such as the neo-classical

Stadsfeestzaal, which contains a

shopping centre, a former chapel that

houses the star restaurant The Jane,

and the palace on the Meir (once

Napoleon’s) where you can have lunch

or sip cacao with a chocolate shooter.

BIRTHPLACE OF DIAMOND AND

FASHION

Antwerp people are trendsetters. You

can notice this in the many pop-ups

and startups, and of course also in the

fashion and diamond district. You’ll

find more diamonds in the Diamond

Square Mile than in the rest of the

world. In DIVA, the diamond museum

in the historic heart of the city, you will

be immersed in the wonderful world

of diamonds and jewellery.

Antwerp also leads the way when it

comes to fashion: fashion doesn’t

only live here in the many boutiques,

but also on the streets, in the MoMu

(FashionMuseum Antwerp) and at

school, the fashion department of the

Royal Academy of Fine Arts is one of

the most influential in the world.

DO YOU LIKE CITYTRIPS, BUT IN A

DIFFERENT WAY?

Antwerp is full of surprising highlights. For

example, there is the ZOO of Antwerp, one

of the oldest and most beautiful city zoos in

Europe.

Antwerp even has a beach, the famous beach

of Sint-Anneke, on the left bank of the Scheldt.

And to link that river bank to Passe Partout:

since 2018 Passe Partout has switched

Hangar 19 for location KAS to organise the

annual house show. From the KAS (Kunst aan

de Stroom), you have a fantastic view of the

city and the Scheldt. So don’t miss a single

O

ne of my passions in life is riding the

motorcycle. I have been driving motorised

cycles since I was 6, my first experience

being with my granddad’s Solex. I then

drove mopeds and dirt bikes, and by the time I was

20 I owned my very own Suzuki touring motorcycle.

Already then I had the dream of one day owning and

riding a Harley Davidson. Finally, when I was 50, I

bought my first Harley; a 2-year-old Street Glide.

After 30 years my dream had finally been realised.

So, what is so special and mystical about a Harley?

Many would say the sound, the aesthetics, or the

feeling of freedom that’s associated with driving a

Harley Davidson. It is difficult to describe what the

experience is really like.

What I do know is that every time I step on my bike

and take it for a ride I fall into a state of pure bliss. A

Harley is admired, it’s respected. I always find people

will stop and look at one. And even if people aren’t

motorcycle enthusiasts, they recognise Harley from

movies and motorcycle gangs with pretty women

leaning attractively against the side.

I think for me what it really is, is the feeling of

belonging. The feeling of being part of a larger family.

And this is a feeling I too share with what is created

by us at Passe Partout.
